This is my advanced posting from my previous shawarma spice mix before. 

We, especially husband very much enjoy fast food style homemade meal on our menus e.g döner kebab or pizza.

İn Turkey we have dozens types of döner base on meat used, origin and the way it cooked. 

İ already posted some of homemade style Turkish fast food on some of previous posts. 
Many of them for example famous Istanbul street food Kumpir or food you should eat when you are in Bursa city; Pideli Köfte ( meatball served over sauced flat bread). And the world class famous Adana Kebab . For you who enjoy vegetarian food, you should try my meatless Çiğ Köfte (raw "meat"ball)

Imitating a good habits of most Turkish women who prefer to make everything homemade, today İ am going to share another Turkish-middle eastern street food which also famous as many other kebab here, shawarma.

Shawarma or shawerma or shawurma is meat preparation ( lamb, goat, chicken, turkey, beef, or mixed meats) are placed on a rotating meat spit (commonly a vertical meat spit on restaurants) and grilled slowly for crusty meat. Shavings are cut off the block of meat for serving, and the remaining meat is kept heated on the rotating spit.

The Arabic word shawarma comes from the Turkish word çevirme= ‘turning’, and has its origins in Antalya. It is similar to the dish called döner kebab ‘turning kebab’ in Turkish
Served in pita bread or can be rolled in lavash bread with some vegetable salad. Sometimes you can find it served over delicious fluffy and buttery pilaf/ rice.

Making this kind of kebab is actually very easy. Just prepare meat we want; chicken, turkey, beef, or lamb and mix it with spices and let stand for a while until spice marinate the meat perfectly before grilled.

Few posts ago I already shared one of Turkish spice mix that is commonly used, see this link  for it. But today İ'll share my turkey shawarma making at home with my shawarma spice rub İ previously posted. 

This shawarma kebab is different from my previous kebab but one thing in common; they are ssooo good! Note this recipe and make your own homemade shawarma for family or friends. 


Turkey or Chicken Shawarma Recipe
Serve 5-7 shares

İngredients:
🍗 2-3 kg turkey breast (you use chicken or beef)
🍗 Salt and black pepper
🍗 6-7 cloves of garlic, finely minced
🍗 2 tsp sweet smoked paprika powder
🍗 3 tbsp lemon juice
🍗 2 tbsp vinegar
🍗 ¼ cup olive oil
🍗 3 - 4 Tbsp full shawarma spice rub 

For serving:
🍗 Garlic yoghurt sauce for serving
🍗  tomato, red or yellow sweet onion, lettuce, arugula, parsley
🍗 pickles
🍗 lemon
 🍗 pita bread or lavash flat bread


How to cook:

🍗 Mix minced garlic, sweet smoke paprika,lemon juice, vinegar, olive oil and spice rub in medium bowl.



There are 2 ways İ cook my turkey/ chicken shawarma;

1) Thinly slice turkey breast, season with salt and pepper, and mix with spice above. Cover tightly and let it sit in the refrigerator for at least 3 hours. İ always marinate them overnight. Heat grill pan over medium heat, lightly brush with olive oil or butter. Grill the marinated meat until cooked and tender.

Serve with pita bread or lavash flatbread with salad and yogurt sauce.

2) Pat dry turkey/chicken breast season with salt and pepper, then rub the spice mix all over it. Cover and let it sit at least 3 hrs or overnight. Preheat oven at 180 °C.
Heat your iron skillet over medium heat, lightly brush with olive oil or butter. Put the meat over the skillet and brown the skin for a few minutes both side. Cover the skillet with aluminum foil then move it into the oven than roast it for about 45 minutes. 
Remove the aluminum cover then continue to cook until the thermometer inserted to the thickest part of the meat reads 165-170 °F / 74-76 °C.

Remove from oven. Slice it thin then serve.

Update: you also can roast it over char coal-it's even better! 😋

Serve with pita bread or lavash flat bread with salad and yogurt sauce.

Postingan kali ini adalah kelanjutan dari postingan saya sebelumnya ; membuat bumbu campuran shawarma siap pakai.

Jadi ceritanya hari ini eksekusi dari bumbu shawarma yang saya bikin sebelumnya. Bumbu shawarma yang saya posting itu bisa untuk beberapa kali pakai- untuk sekitar 5-6 kg daging. Bisa daging ayam, sapi, kambing, atau kalkun.



İya.. Kalkun. Daging kalkun ini enak, kesukaan keluarga saya. Tapi karena harganya agak mahal, jadi jarang-jarang saja kita makannya 😉
Kalau bulan-bulan November sampai januari banyak ayam kalkun murah dengan harga diskon di supermarket besar. Per kilo 15-17 TL, biasanya tanpa diskon bisa 19-20 an TL / kg.  Note; harga lokal thn 2017-2018 ya.


Weekend lalu pas jalan beli lah kita kalkun. Beli separuh badan, sekitar 6-7 kg, dapat paha atas bawah dan dada. Waahhh... senangnya. Sudah terbayang mau bikin apa aja.


Karena kesukaan suami adalah kebab döner maka kali ini saya ingin sharing membuat döner kebab. Di Turki sendiri ada banyak macam ragam kebab berdasarkan daging yang dipakai, kota asal dan bagaimana cara memasaknya.

Salah satu yang populer disini ya kebab döner
Seperti döner khas Turki lainnya, Shawarma atau shawerma atau shawurma adalah daging yang dibumbuhi lalu disusun dan ditumpuk lalu ditusukkan ke tusukan besi yang besar. Lalu dibakar dengan perlahan-lahan sambil diputar (bhs Turkinya döner = berputar/putaran). Bagian luar yang matang kemudian disayat tipis, disajikan dalam roti pita atau bisa juga lavash bread beserta sayuran sebagai salat dan digulung.


Membuat döner kebab ala rumahan sebenarnya sangat mudah dan tidak perlu menggunakan "burner" besar seperti foto diatas. Cukup dengan grilling pan dan dimasak diatas kompor atau arang bakar.

Prosesnya pun terbilang mudah dan cepat. Daging yang sudah dibumbuhi disimpan dalam waktu tertentu hingga cukup meresap sebelum dipanggang.
Kali ini bikin shawarma kebab dengan bumbu racikan yang sudah saya posting sebelumnya disini.
Berbeda dengan bumbu kebab yang biasa saya pakai.. resep kali ini saya jamin bakal jadi andalan keluarga dan pasti "keeper recipe".

Yuk... yang ingin berpetualang selera dengan shawarma kebab.



Resep ayam/ kalkun shawarma kebab-Çitra's Home Diary

Serve 5-7 porsi

Bahan-bahan:
🍗 2-3 kg ayam kalkun bagian dada (bisa gunakan ayam, sapi, kambing atau campuran
🍗 garam dan merica secukupnya
🍗 6-7 siung bawang putih, cincang sangat halus
🍗 2 sdt bubuk paprika
🍗 3 sdm perasan jeruk lemon
🍗 2 sdm cuka masak (saya pakai cuka apel)
🍗 ¼ gelas minyak zaitun
🍗 3 - 4 sdm bumbu shawarma yang sudah dibikin sebelumnya.

For serving:
🍗 Garlic yoghurt sauce 
🍗  sayuran untuk salad: tomat, bwng bombay, selada, arugula, daun parsley
🍗 acar timun & cabe
🍗 lemon
 🍗 pita bread atau lavash flat bread


Cara membuat:

🍗 Campur jadi satu; bwng putih cincang, bubuk paprika, perasan jeruk lemon, cuka, minyak zaitun dan campuran bumbu shawarma.

Ada beberapa cara bagaimana saya biasa masak shawarma;

1) Dengan wajan grill / grilling pan.
Potong daging kalkun/ ayam tipis dan lebar. Bumbuhi dengan garam dan merica secukupnya. Lalu tambahkan campuran bumbu diatas, tutup dengan plastic wrap dan diamkan dalam lemari es minim 3 jam atau semalaman.
Panaskan wajan grill atau wajan datar, olesi dengan sedikit minyak atau mentega. Masukkan potongan daging kalkun dan masak hingga matang. Cicipi rasanya.


2) Dipanggang dalam oven.
Keringkan daging kalkun /ayam dengan cara dilap kering. Bumbuhi garam dan merica secukupnya. Diamkan beberapa saat. Lalu rendam dalam bumbu marinate yang sudah disiapkan diatas. Diamkan dalam lemari es minim 3 jam atau semalaman.

Panaskan oven suhu 180 °C.
Panaskan wajan besi datar (iron skillet) dan olesi dengan sedikit mentega / minyak. Masak daging kalkun hingga permukaannya merah kecoklatan di kedua sisinya selama beberapa menit. Lalu tutup wajan dengan aluminium foil dan panggang dalam oven sekitar 45 menit.
Buka penutup aluminium foil dan lanjutkan memanggang hingga matang sempurna, caranya dengan menusukkan thermometer daging ke bagian yang paling tebal. Jika menunjukkan suhu  165-170 °F / 74-76 °C , daging bisa dikeluarkan dari oven. 
İris tipis melebar dan sajikan hangat.

Selain di panggang di oven, suami lebih suka dipanggang diatas arang.. ini cara yang paling nikmat! 😍

3) Dipanggang diatas arang.
Bisa seperti cara no ; 2 diatas lalu dipanggang diatas arang hingga matang. İris tipis melebar dan sajikan hangat dibungkus flat bread atau pita bread.
Atau potongan daging dipotong tipis lebar seperti no :1 Lalu tusuk dengan tusukan sate banmbu atau besi dan panggang diatas arang hingga matang.

Sajikan dengan roti pita atau lavash dan pelengkap serta  saus yogurt.

  6. We go crazy for homemade shawarma! this is something I usually make during summer time in India because it can get super hot here and I crave for dishes such as your gorgeous looking shawarma. A plus point of homemade shawarma is the own flavor choice of the marination and at least you know what's in it.

    I can get good shawarma here in New York, but I'm moving out of the city. I've been told that my new city has a good variety of international foods, but I don't yet know what to look for where... or if any of them are near places I will be, and for other reasons also I'll be cooking mostly at home. So I'm collecting recipes! Adding this one to the list...
