The diversity in Indonesia has led to a rich culinary heritage. From the famous Satay to Indonesian salad gado-gado, every Indonesian food is really worth to try. Just like this "Ayam Taliwang"

Ayam Taliwang is made with chicken (preferably free-range), which is grilled previously. Once it has been grilled halfway, then it marinates and tenderizes with a spice paste. Then it grilled until cook trough.

Although Ayam Taliwang is said to be a dish favored by Sasak nobility, Abdul Hamid claims to have invented the dish in 1970. It is named after Karang Taliwang in Mataram, the capital of Lombok.

Ayam Taliwang is a grilled chicken with spicy savory with distinguished taste from one key ingredient; Kencur root or sand ginger.
Known as Kaempferia galanga, kencur is a plant in the ginger family that is found primarily in open areas in Indonesia, southern China, Taiwan, and Cambodia. At a glance, the rhizome (root) of Kencur resembles ginger appearance but has a different, distinctive flavor. It has a strong taste with a pungent after taste.
This herb root commonly used in many Indonesian foods, especially Balinese and Javanese foods.
You can find in Asian market or Indonesian market at your local.

This Ayam bakar Taliwang has a spicy savory taste and slightly sweet with a pungent taste from that kencur root.
It can be served with a side of water spinach in chili relish (Plecing kangkung) or eggplant (beberuk) covered with chili relish/ sambal

The cultural diversity in Indonesia makes Indonesian cuisine has the most unique and rich in the world. 
Meals are generally simple, the plentiful use of various roots, spices, grasses, and leaves adds zest to most dishes. The common use of the chili pepper may mislead some to believe that all Indonesian dishes are spicy and hot. But actually not really true. Most of our meals have relatively mild spices and tastes. 
In addition, most Indonesian food is prepared with contrasting flavors, such as a spicy-sweet or hot sauce served over a bed of plain white rice, a popular meal throughout the country.

And today I will share one of vegetarian food that fresh yet flavorful; Plecing kangkung

Plecing kangkung is an Indonesian spicy water spinach dish from Lombok island. Plecing kangkung made from blanched kangkung leaf (water spinach) served cold with fresh plecing sambal relish made from ground red chili pepper, shallots, and bird's eye chili.

As a side dish for Lombok Ayam taliwang dish, plecing kangkung usually also served with additional vegetables such as bean sprouts, string beans, fried peanuts and urap's grated spicy coconut dressing. Outside Lombok island, plecing kangkung is also commonly served in neighboring island Bali.

Tas Kebab is a Turkish style meat stew. The meat used can vary like beef, lamb, or veal. One of traditional home meal that serves at local restaurants here.
It is one of the meat dishes sitting in the corner of the Ottoman kitchen. It got its name from the way it is cooked. Traditionally it cooks in a copper pan.

This dish can be served with Turkish bread or with Turkish pilav (rice).

In addition, traditionally, while tas kebab was served, yogurt with garlic was also served.
