Besides the ordinary main course, Indonesian people also like to eat snacks (snacking).
We have many kinds of snacks or we call them "kue" or "jajanan"
Kue in the Indonesian language is used to refer to not only these kinds of traditional snacks, but also all types of cake and some types of pastries. Kue is more often steamed than baked and normally has a sweet taste, but some are savory. Kue is categorized under " jajanan pasar" (market buys) or street food.

Just like what I am going to share today. It is called "otak-otak".

Rempeyek is derived from the Javanese onomatopoeia "peyek", depicting the sound of a crisp cracker breaking.

Rempeyek is often associated with Javanese cuisine, served to accompany "pecel/ petjel" (vegetables in peanut sauce) or other meals, or as a snack. Today, it is common throughout Indonesia, and is also popular in Malaysia following the migration of Javanese immigrants in the early 19th century.

It's my favorite cracker. Made from rice flour with some spices and fried in deep oil. The frying and making methods are typical and very unique. That is, on a deep frying wok, spread out the batter dough on the edge of the wok until it produces a very thin layer of cracker, I made a simple video also to give you an illustration of how to make this unique and traditional Indonesian "rempeyek".












Topping can vary from peanuts, green beans, black eye beans, small soybean, or dried small anchovies until dried small shrimp. A little tricky and need more patience in making it.

The combination of geographic and cultural diversity in Indonesia has resulted in one of the most unique cuisines in the world. In addition, Indonesia is rich in spices and herbs.
Foods vary from one region to another. The food from the east is really different from west Indonesia. Sumatran cuisine, for example, often features Middle Eastern and Indian influences, such as the use of curry spices in meat and vegetable dishes, while Javanese cuisine evolves from indigenous Indonesian cooking techniques.











Just like what I am going to share today. "Pecak ikan" is a dish made from fried/grilled fish (any kind of fish) then flush with "pecak" spicy dressing. The spices used for "pecak" dressing are very typical of Javanese food.
This dish easily can be found in West Java, Jakarta, and regions surrounding it like Cirebon town, Tasikmalaya, or even Tegal town.

Dumpling is one of ancient food from east to west cuisine world. And it's lovable food to enjoy young to older generations.
Dumpling is my favorite choice when we talk about what food to accompany us for afternoon tea. Not only for snacking between lunch to dinner, but dumpling also satisfying meal for my brunch.

We can vary the dumpling filling start from fish, chicken, meat even vegetables. The cooking method also many, we can steam, boil, panfry (half boil), or even deep fry.

BALIK EKMEK / ISTANBUL STREET FLAVOR, FISH SANDWICH | Çitra's Home Recipe.

My post today is about one of the street food in Istanbul - Balık ekmek, literally means fish bread.
This fish sandwich is one of the traditional street flavors of Turkish cuisine, is identified with Eminönü in particular. When you walk along the Galata bridge and Eminönü port area, you will find many fisherman boats decorated in such colorful and beautiful ornaments with Turkish red flags selling this popular Istanbul street food.

People queue up in a long line at a certain boat that is believed "the best" among others. Last summer, I was among that crowded. But since I was with my girl, I was just looking for a less queuing seller not to make my kid suffer for boring 😊

This fish sandwich prepared with typical Turkish sandwich bread, pan-grilled fish, mostly mackerel (turk; uskumru) or bonito (turk; palamut),with various vegetables and pickles. I saw some served with onion/ red onion sliced some didn't. No fancy plate, fork, and knife nor whatsoever, it's just wrapped with a piece of paper and you are good to go. We can sit down to enjoy our fish sandwich at some stools and bench prepared by the seller near their boat. Don't forget to order şalgam suyu or a turnip juice drink to enjoy with this dish.

This street food is prepared and sold on (fisherman) boats, sold on the coastal shores which are also of great interest to tourists.

Kabar baik semua ya Inshaallah. Sudah seminggu ini hawanya menggigit sekali, tapi sejak awal musim dingin salju belum juga turun. Tahun ini di Turki tidak seperti tahun-tahun lalu, salju tidak turun terutama di wilayah Turki Barat. Saya masuk di wilayah Marmara.
Kalau salju tidak turun seperti semestinya, hawa cenderung dingin "kasar" menggigit sampai tulang, udara juga terasa tak nyaman. Ditambah bau kayu bakar atau batu bara dari rumah-rumah yang "bandel" tetap menggunakan dua bahan itu untuk penghangat- menambah polutan di udara makşn parah dan bikin nafas sesak.

Tapi tetap saja di tempat yang lebih tinggi seperti gunung Uludağ, musim dingin terasa kental dengan banyaknya salju dan turis yang datang 😊
Wilayah Turki sebelah timur, timur laut atau yang berbatas dengan bekas wilayah uni soviet, salju tebal dan beku disana.
Mudah-mudahan salju turun dalam waktu dekat ini, supaya udara lebih bersih dan hawa agak melembut. Amin.

Jadi critanya postingan kali ini menghibur diri dengan makanan tropis karena sangat merindukan suasana tropis yang hangat plus " sumuk" nya 😁

I am pretty sure that you’ve heard of Indonesia or maybe some of you think that Bali is somewhere near Indonesia and thought that it is a country of its own. Maybe it was all because the diversity of Indonesian culture that made us (or some of us) think that way. 
Well, for you who didn't know yet, Bali is one of Indonesian islands among more than 17.000 others.

There are so many ways to explore Indonesia and if you have little time to actually travel to the beautiful Indonesia, you can do it by tasting our FOOD! 😊

Indonesian cuisine often demonstrates complex flavor, acquired from certain ingredients and bumbu spices mixture. Indonesian dishes have rich flavors; most often described as gurih (savory which equate to umami) and pedas (hot and spicy), and also a combination of basic tastes such as manis (sweet), asin (salty), asam (sour) and pahit (bitter). 


Seven main Indonesian cooking methods are goreng (frying), bakar (roasting) or panggang (grilling), tumis (sautéing), sangrai (roasted), rebus (boiling) and kukus (steaming).
Talking about how rich İndonesian food is... today İ'll share you one of İndonesian favorite; Sate Lilit Bali. It's one of famous food from Bali island, beside Balinese grilled fish ( ikan bakar) or urap sayur and ayam pelalah (spicy shredded chicken).


The various spices used to make this meal so rich and umami. The herbs and fresh vegetables added also enrich and distinguish this dish from other places in Indonesia.

Throughout it's history, İndonesian has been involved in trade due to its location and natural resources. Additionally İndonesian indigenous techniques and ingredient were influenced by İndia, middle eastern, China, even Europe.

And as an archipelago country with the longest coastline on earth İndonesia has countless type of fish and seafood as protein source beside poultry and meat.


And my today post is one of everybody's favorite and any kids will love it, call "kaki naga". "Kaki naga" literally means dragon feet 😊 . Don't ask me why we call this food dragon feet.. İ don't think it's looking like dragon feet either 😃.

Anyway, this "kaki naga" mostly using minced fish as main ingredient, sometime combine with chicken or shrimp as well. But today İ am going to share shrimp version of "kaki naga" / dragon feet. İ combine with chicken meat to ease the sharpness of shrimp taste and also to add the texture of final product because when İ use whole shrimp, sometimes it ends up with more runny batter. 

So.. if you are ready to try new cuisine for your family.. note this recipe down. Believe me your kids would love it too! 😏

This is my kind of comfort food. Nothing more indulges and fulfills my longing for my mom's cook than this hearty, warming and rich flavor of this curry noodle. This bowl always my number one choice whenever İ want to be "selfish" in my dinner table 😏
Selfish.... yes cause my husband doesn't like this kind of curry. He prefer simple food with "simple" flavor 😔

Whenever İ want to cook curry..İ always remember my mom. She is the best cooks around the house. İ learnt many foods from her. We (me and my siblings) all grew up with my mom's heavenly yummy food. İ Love and always remember her curries especially crab and seafood curry.
And my curry noodle also inspired by my mom's curry style. Traditionally we eat curry with white steamed rice. But today İ like to combine my mom's style curry with another İndonesian staple; Mie or Noodle

My today today post is another Surabaya-nese ( if I may say so for things from Surabaya 😊 )

Surabaya is the capital city of East Java province and it's my homeland. The second largest city in population after Jakarta.

And as other regions/cities in İndonesia Surabaya is also famous for the richness of its own typical cuisine. Talking about Surabaya food is like holding a very long shopping list that you want and need them all! Surabaya foods are rich and full of flavor distinguish from other cuisines from other İndonesian cities/regions.
And one of the typical ingredients from Surabaya (and neighboring towns) is "petis". Petis is a product ingredient made of shrimp in paste form. Some call it shrimp paste butcall İ  it just "petis" so not being confuse with "terasi" or "belacan" (another shrimp product). Below here you can see the difference between "petis" and "terasi/belacan".
But both shrimp products are staple ingredients in most İndonesian cuisines. İ brought them from İndonesia last year during my family visit.

Kari (kare) Udang terong / Shrimp and eggplant curry- my mom's style

I crave for curry for this couple weeks. I made chicken or fish curry mostly. Actually I miss my mom's crab curry with eggplant and long beans in it.
But what to do... sadly I couldn't find any big crab here in town I'm living. The last time I ate crab was 3 years ago when I was in my homeland.

After I checked up my freezer, I found a kilo of shrimps-I almost forgot I have a shrimp from last 2 months ago.
So I should cook them soon. And since I miss to eat my mom's crab curry, so I wanna try to substitute crab with shrimps for my mom's curry.

Immediately I whatsapp my sister asking mom's crab curry recipe--glad living in fast technology era--I got answer instantly for the recipe...But as usual (or like mostly 'homy chef'), mom's answer only the ingredients...not specify how much for each ingredients.
She said: "dikira-kira saja" means approximately/ as your prefer taste.

Well.... if you are asking any moms out there about their recipe they cook almost everyday for the family... probably you'll get same asnwer as mine (^,^)
All you should do is just remembering actual taste of the meal your mom cooked for you.

Yep..so here I am making my mom's version of crab curry using shrimps with ingredients "clue" from my mom with flavor/ taste I should adjust to make it same as my mom's.
And the result..... taaddaaa.... yes! I can feel like home when I eat it. So I can say It's my mom's curry indeed...
I wish my mom could taste it s well....... ☺

If you want veggie version of this curry, you can! Sometimes I made just with long bean or green bean and eggplant only. Add some fried tofu puff before serving and you'll get best veggie curry ever. But please don't skip the eggplant. 
Do you know that eggplant has ssooo many benefit and full of nutrient? Yep.. most of us should knew that all vegetables have many benefit and nutrition.

My post today is about indulge my craving of Indonesian food. It has been a while I didn't spoil my self with this best fave of mine ; Balinese grilled fish / Ikan Bakar khas Bali with sambal matah.

This grilled fish is commonly found when you were visit Bali. I think most of you already know where Bali island is. Sambal matah is Balinese style raw sambal. With sharp lemongrass and kaffir leaves flavor distinguish this sambal from other sambal types we have. And this sambal matah always serve with that full tropical flavors of Balinese grilled fish. Enjoy them with warm steamed rice, some raw vegetables salad, you'll get best Balinese grilled fish on the planet 😃




You can prepare the fish marinate 1st a night before if you plan having bbq/ grill time the next day. The fish should marinate in bumbu /spice at least 2 hours before the get best flavor mingle in fish meat. 
For fish I use local çipura/ çupra balık (gilt-head bream). You can sea bream or sea bass or snapper or yellow tail fish.

The best way to grill this fish is over charcoal-like my mom always does. Take your grilling stove outside and invite your neighbours with this fabulous fragrant of this Balinese grilled fish ^,^

Ikan means Fish in Indonesian. Saus Lada hitam means black pepper sauce. The humble of lightly crushed black peppercorn mix with oyster sauce and ginger-garlic spices is a fusion of Indonesian flavor with Chinese influence. The sauce mixture in this dish make it so special and really gets along with fish or any seafood you cook with this sauce. Eg, crab, calamari, lobster, or prawn.

This dish is one popular as street food along with other kinds. If you were live in big city like surabaya, jakarta and some other cities, you might find some Chinese food street vendors along the main street open their "kitchen" after the afternoon. And also you can find at some Indo-Chinese restaurants which open mostly almost 24 hours.

But even it's popular as street food, still some moms-like my mom- sometimes cooked it for us at home. Usually, she uses crab for this black pepper sauce. Yes, this black pepper sauce is just perfect for crab.

And since I couldn't find any crab until now in Bursa I want to fulfill my craving on some my homeland food like this crunchy fish cooked in black pepper sauce. Making it is actually very simple and quick for prepare-as many types of Indo-Chinese food.

If you far away from homeland..and you are in a place which has totally different culture (read; in cuisine) from yours.. believe me, your longing is worst than broken heart 😄
 hahahha.. I just exaggerate it.
But honestly I'am talking real story here. Especially anything you need to make your own homeland food isn't available locally or it's very difficult to find. I remember earlier years I'd staying here, it was around 2008 or 2009, even egg noodle was very difficult to find. I must went to big chain supermarket (where far away from my house), then sometimes I got painfully heat broken cause couldn't find it there. 

When I got lucky, my husband surprisingly brought it for me from another big supermarket near his office. To buy soy sauce, we must buy it online which sometimes also no stock.... Yes...that was my earlier year living in Turkey. Maybe local people are't familiar to Asian culinary.

That's why I start to make some homemade thing start from egg noodle, tofu, tempeh, even I sprout my own bean sprout..  So true that said: lack condition/ limitation drives you to be creative person 😄

And years gone by.. and I was so happy cause some ingredients I need to make my own style food become easier to find here.. don't know why..maybe Asian foreigners getting more settled here..😄  dunno!

Surabaya is capital city of East Java province in Java island, also well-known as one of famous culinary destination in Indonesia. Yes, when you visit Surabaya you'll find widely various of delicious foods-traditional or even international.

And like as many other Asian cities, Surabya is also paradise of street food which mostly open almost 24 hours or start at evening. I am originally from Surabaya, so I know what kind of food you should try and where is the best around my city.

Among many famous foods, there is one which I will share today. Nasi Udang ala Bu Rudi. Nasi means rice, Udang means shrimp. Bu Rudi or madam Rudi is founder/ owner of the restaurant that serve this food.
The dish consist of white steam rice, crunchy fried shrimp, chili sambal, serundeng kelapa (spiced shredded coconut) and some fresh cucumber and Indonesian basil/ kemangi.

The typical of this famous menu is the extremely hot spice of it's chili sambal. I am talking very very seriously hot- even for some local people. You know east java food especially Surabaya's food famously spicy and hot in taste. But you can make your own sambal as your liking.

Nasi Goreng Seafood (Indonesian style fried Rice)

Rice is staple dish in Indonesia. We eat rice in breakfast, lunch and even for dinner. We make many food's variant made from rice. Not just for pilaf and rice cake (lontong or ketupat), we even process rice to become traditional snack and dessert.

And one of popular dish is Nasi Goreng or fried rice. Fried rice it self has many kind of varieties. You can check my lamb/mutton fried rice for one of variety.

And today I am gonna share my seafood fried rice. You can vary the ingredients as your liking beside shrimp and calamari as long as there is seafood in it, like fish meatball or slice of fish. And for the greens you can add some baby spinach too...

Ingredients:
• 500 gr white steamed rice (preferable left over one)
•3 medium calamari, cut into square or ring
•200 gr shrimp
•½ cup peas
• a hand full mung bean sprout
•1 spring onion, finely slice
•2 tsp oyster sauce
•2 Tbsp kecap manis/ sweet soy sauce
•1 tsp salt or to taste
•2 tsp black pepper powder
•1 tsp sesame oil
•2 + 1 Tbsp cooking oil
• 1 large egg, lightly beaten

Indonesian food recipe, Bandung style steamed fish dumpling /Siomay Khas Bandung

Siomay (some people also call somay) is steamed fish dumpling serve with mix vegetables and tofu, flush with peanut sauce, kecap manis (sweet soy sauce), chili sauce and lemon juice or kaffir lime. So it's deliciously sweet-sour spicy dish.

Siomay is ubiquitous in Indonesian cities, It can be found in street-side food stalls, mobile carts, bicycle vendors, or even in restaurants. But the most popular place is in Bandung (West Java) so people call it siomay Bandung.

This food derived from Chinese cuisine shui mai (or shumai or shaomai). Beside influenced by Dutch cuisine (in Dutch colonial long time ago), Indonesian cuisine also had influence by other countries like India, Arabic, and Chinese. 


And my today's post is Bandung style siomay. I use haddock fish fillet mix with shrimps, but optionally feel free to use chicken minced mix with shrimp/ fish. But my suggestion if you mix with chicken, use bigger portion of fish/ shrimp than chicken meat. 

For other vegetables complements, usually people use bitter gourd/ bitter melon, white cabbage- boiled and rolled, boiled potato. There's also tofu and hard-boiled eggs. 
Enjoy your siomay with lime juice (mostly from kaffir lime), sweet soy sauce and chilly sauce.

Kari Ikan / Indonesian style fish curry

My today post is Kari Ikan or Indonesian Fish Curry.
Generally we serve this curry with steamed rice together with some steamed simple steamed vegetables side dish like steamed casava's leaves or papaya leaves. 
It best makes this curry spicy as our original Indonesian style.


Ingredients:
  • 500 grams of mackerel/ bonito/ tuna. Cut into approximately 1 inch thick
  • half medium lemon, take the juice
  • some birds eye chilies, according how spicy you wanna go
  • about 2 cm ginger, bruised
  • about 2 cm galangal, bruised
  • 4~6 kaffir lime leaves
  • 1 stalks lemongrass, white part only, bruised
  • 1 curry leaves--> I didn't use it, I use bay leaf
  • 1/2 tsp turmeric powder
  • 1 Tbsp  salt or to taste
  • 1/4 tsp ground pepper
  • 1/2 teaspoon sugar
  • 700~800 ml of coconut milk, medium thick
  • enough cooking oil.
