Hello.... summer is really at its peak this end of June. And guess what, all my favorite fruits are everywhere 😍. And our table full of fresh fruits every day. start from watermelon, melons, until strawberry 🍓. Aaaannndddd... talking about strawberry, I will share something today about it.

And to festive this summer, I made this Strawberry Chiffon Cake. You may remember my previous Strawberry chiffon cake I posted before. This recipe is slightly different from that first time. These crumble bar is so moist and delicious. With fresh fruit in it make this dessert so easy to become everybody's favorite. I bake this cake twice this week and all gone in a flash.

We love to enjoy this cake after dinner. Enjoy them with hot Turkish tea or sometimes with my afternoon coffee. Yep, this is also so great as a coffee cake.

Yes, summer still around, even the weather forecast said the heat will be increase to around 39℃ this week in my area. Nothing tastes better on a hot summer day than fresh-from-the-freezer ice pops. I know, we can get any kind of ice pops at any market around the corners, easy and "no pain" at all. Unfortunately, many store-bought ice pop varieties contain artificial ingredients, high fructose corn syrup, and food dyes 😣

So why don't we make our own? We can control the ingredients we use. There are so many different combinations and flavors we can make, just be creative 😊

Like these healthy yet refreshing strawberry popsicles is the best-frozen treat for the whole family.

STRAWBERRY CHIFFON CAKE, best recipe from fresh strawberry

Weekend in my house means "cake day" or "more snack" day. Because mostly I bake a cake or make another special dessert at weekend. When all family stays at home the whole day.
Even sometimes I bake a cake at weekday but mostly end up keeping at refrigerator cause after dinner my husband doesn't want to eat cake. We prefer to have something light and creamy like milk pudding or bake rice pudding.

It has been a while I didn't post any chiffon cake again after my last "Pandan Chiffon cake". So for my weekend baking, today is this yummy, cotton soft, and good looking strawberry chiffon cake. A very light spongy cake with a soft crumb, made from fresh strawberry. I like chiffon cake and my kid loves it so much. The light of the cake is so perfect for our tea time. You'll not feel too full that's why you can not eat only one slice 😏

Chiffon cake is such a beautiful and easy cake to make and widely can vary in flavor we like. Check also my hearty spinach chiffon cake also, you gonna love it and your kid will never notice they eat vegetables in their cake too.

İ always love roll cake.
İt's like enjoy b'day cake with delish buttercream or whipped cream in a small version.

And nothing more refreshing and indulging our summer taste than a fluffy and soft sponge cake rolled with sweet whipped cream and fresh strawberries.
This combination has a perfect balance between sweet and sour, fluffy and creamy and fruity. It’s amazing with a cup of tea in a sunny breezy summer day 😃

İf you are my regular reader you should probably familiar with my labneh cheese recipe. You may already know (or tried-maybe) my latest Labneh souffle cheesecake with spicy warm honey fig.
What about my fave dessert ever; Three tone Labneh "Cheese" Chocolate mousse . Or simply delicious Yogurt "Cheese" Souffle Cake
Well yes..İ am using labneh a lot daily not even for dessert but also for soup and other cooks.

What is labneh cheese? it's yogurt that has been strained to remove its whey, resulting in a thicker consistency than unstrained yogurt. Due to the straining process to remove excess whey, even non-fat varieties of strained yogurt are much thicker, richer, and creamier than yogurts that have not been strained.

Fresh labneh, made from yogurt with live or active cultures are a very healthy food that contain probiotics, that enhance the immune system, lower cholesterol, aid in digestion, protect against constipation, protect against diarrhea, improve lactose digestibility.
Labneh is like yogurt is an excellent source of protein, casein, whey, beneficial fats, carbohydrates, as well as vitimins and minerals (B12, Calcium, Phosphorus and Riboflavin.) Labneh has less lactose and sugar than regular yogurt.

Strawberry Cobbler with Oatmeal streusel

Just before strawberry out of season soon and they will be more and more expensive, yesterday I bought another kilo of fresh strawberry. Yes, I love and enjoy eating them fresh or make it for delightful dessert. 

Strawberry with crunchy flaky pie is my number one favorite. But of course together with Panna cotta would be a fancy and special dessert for your romantic dinner.

And today I made this delish strawberry cobbler. What's special about my cobbler this time is I add some yummy crumbly oatmeal streusel on top of it. So you can imagine the crunchiness topping twisted with delicious sweet slightly sour strawberry filling inside.

My family like it, especially that topping. So I am thinking to make other cobbler with other filling later. Cherries maybe?

Strawberry yogurt cupcake with strawberry buttercream

What I like about yogurt cake is very simple and quick to make. Like this fresh strawberry yogurt cupcake I made today. The cake was so fresh with fresh strawberry chunk inside yet fluffy and moist cake.

Every evening after dinner we-like other Turkish family- always have our Turkish tea time. For me drinking tea without any snack along with it, is just not like my style, so these strawberry cupcake are perfect for our tea time cake in front of TV.

Also if you are coffee lover, you should make them also. Cause these delish cupcake it's just perfect for afternoon coffee. Enjoy it with your favorite coffee, on your very comfortable couch with unfinished fave book. ^,^
Strawberry yogurt cupcake with strawberry buttercream
For the complete beautiful touch I made fresh strawberry butter cream icing for garnish and enrich this tasteful strawberry yogurt cupcake.
Look at them with that high cone ice cream-look alike..aren't they just adorable? Almost too cute to eat.... ALMOST. 😍

But if you want to skip the butter cream it's okay, replace it with some strawberry or lemon icing glaze. They are still tasty as should be.

Strawberry Galette

I like galette. No.. I love it! Especially fruity galette for dessert. The combination from flaky buttery crust and fresh fruits as topping is my number one list for my afternoon tea time. 
And also it's perfect for our after dinner dessert cause it's fresh and light. Mostly I serve it with yummy creamy kaymak (Turkish clotted cream), but sometimes with simple vanilla ice cream. Or you can serve it with whipped cream, YUM!

Strawberry Galette| Çitra's Home Diary

Beside sweet galette for dessert, we can make a savory one as well with a vary of topping, my most fave is cheese combine with any vegetables and sausage. 
But today I want to make a strawberry galette. I already made my homemade flaky pie crust a day before, so it's gonna be easy to go.
You can check my recipe for flaky pie crust here. But feel free to use your own pie crust recipe. Another idea is you can use pastry puff dough as well.

Strawberry Blackberry Pie dessert and award

Nothing more I can say about this fave dessert. Combination of the crunchy pie as a base and creamy yummy cheese cream, topping with fresh fruits which covered by yummy jam... Hmmm.. who's gonna refuse this??



İngredients for 9 inch Pie Crust:
 1 ¼ cup flour
 2 tbsp caster sugar
 115 grams butter, cut into cubes and store in refrigerator until ready to use
 5 ~ 6 tablespoons ice water
 ¼ tsp fine salt
For the Filling:
 ¾ cup cream cheese
 ½ cup powdered sugar
 1/3 cup heavy cream
Topping:
 3 tablespoons strawberry/ blackberries jam
 2 tablespoons cherry liquor
 ½ tbsp gelatin, dissolved in 2 tablespoons water
 Strawberry and fresh blackberries (or fresh fruit to your taste)


Method:
>> Pie Crust:
In a food processor, put flour, salt and sugar. Gradually mix in cold butter, pulse a few times, mix in cold water and pulse to resamble (crumble). Pour into the work table, gather the dough and fist forms a ball, wrap plastic wrap and refrigerate for a few moments ± 45 minutes
Pre heat oven at 190 ⁰ C. Sprinkle your work desk with a little flour, roll dough crust wider than your pie mold. Moving into your pie mold, bake until cooked ± 25 minutes
>> Filling and topping:
Combine cream cheese, powdered sugar and heavy cream, mix until smooth and well blended, set aside in the refrigerator.
Mix the strawberry jam / blackberries with cherry liquid. Heat the gelatin by double boil until gelatin dissolves, mix in liquor mixture, stir well. Remove from heat, let it slightly cool at room temperature, mix in Fruits (strawberries and Blackberries), stir them carefully to cover them with that liquor-jam mixture
>> finishing:
Pour the cream filling over the pie crust and smooth the surface. Arrange the fresh fruit.
Store in refrigerator before serving.

Who doesn't like cheese cake? I think everybody like it and even more.. addict of it :)) .. like my hubby.. I think he addict cheesecake or anything made from cheese :))

Cheddar Cheesecake with Fruits Topping

my another Cheddar Cheesecake post. My previous post was Cheddar cheese Cupcake . After succeed with Cup cake trial, I was trying to make a bigger dessert, cheddar cheese cake. I use mix fruit as topping. Beside pomegranate jam  I also use fresh kiwi and fresh navel oranges. But of course topping your cheese cake is about your own style and taste. Just be more creative and have fun with it d(^_^)b

The ingredients and method is almost the same with the cupcake, only you will need 7" fixed based baking pan (If you are using springform pan, make sure it's wrap tidily with heavy duty-aluminium foil to make it waterproof). You also need bigger pan for water bath baking. Fill it with hot water. Set a side.


Ingredients A:
- 1 fully press cup grated unsalted cheddar cheese.
- 130 ml whole milk
- 40 gr unsalted butter
Ingredients B:
Sifted ¼ cup all purpose flour. 
Sifted ¼ cup cornstarch.
Ingredients C:
- 4 medium egg yolks
- 1 tsp lemon zest
Ingredients D:
- 4 medium egg whites
¾ cup caster sugar
- 1 ½ tsp lemon juice
