Among many foods you should try during your visit to Turkey is börek.
Börek/ burek/ borek is made in numerous different shapes and filling.
Börek can be either oven-baked, pan fried or slightly deep fried. Generally, the preparation method is adapted to the given shape of the pastry.

In Turkey there are a few types of Poğaça... some use yeast (they call mayalı Poğaça) and some use baking powder. My post now it's yeast poğaça type.

No yeast version close to pastry texture or shortbread more than bread-y texture. For the non-yeast version, you can visit my previous post here. Or Check the category section " Börekler" for more variation.

And as I mentioned before, my today post is poğaça with yeast- so I can call it breakfast bread. Because the texture is more to soft bread (typical Asian soft bread). Poğaça have many topping and filling variation. 
Start from potato, cheese, sesame paste, sausage, and more.

Most of the time, the word "börek" is accompanied in Turkish by a descriptive word referring to the shape, ingredients of the pastry, the cooking methods, or for or a specific region where it is typically prepared.

In Turkey, we know many varieties of börek depends it filling and how to make it. 
Su böreği  literally means 'water börek' is one of the most common types. Layers of dough are boiled briefly in hot water, then a mixture of feta cheese, parsley, and oil is scattered between the layers. The whole thing is brushed with butter and laid in a masonry oven (we call it taş fırını) to cook.

For example we have Gül böreği  or 'rose börek', also known as Yuvarlak böreği  or 'round or spiral börek' in English, which are rolled into small spirals.

Çiğ börek or Çibörek or 'raw börek' is a half-round shaped börek, filled with raw minced meat and fried in oil on the concave side of the sac, very popular in places with a thriving Tatar community, such as Eskişehir, Polatlı, and Konya.

And what I am going to share today is one of our family favorites and also mostly Turkish people's fave, Çiğ Börek.
Çiğ börek or just Çibörek, is a deep-fried turnover-like with ground or minced meat filling and onions. It is made with a single round piece of dough folded over the filling in a crescent shape. 
This pastry, also called Tatar pastry.

Merhaba dari Türki semuanya 👋


Kali ini saya ingin bagikan lagi satu makanan khas Türki, namanya dızmana (bacanya; dezmana, "e" nya sprti kata beras).
Dızmana ini konon banyak dibuat oleh imigrant suku Trakya di Bulgaria yang datang ke Turki. Maka itu banyak yang menyebutnya göçmen böreği. Dalam bhs Türki göçmen berarti imigran, börek/ böreği artinya pastry.
Tapi ada juga yang menyebutnya dizman atau dıclama

Walaupun disebut börek/ pastry, makanan ini tidak seperti umumnya pastry di Turki pada umumnya yang terbuat dari adonan phyllo yang berlapis-lapis. Bukan pula dari jenis puff pastry dan semacamnya.
Dızmana berteksture mirip roti empuk dengan siraman saus yogurt+telur yang biasa dibuat untuk saus turkish börek pada umumnya. Mungkin karena itulah makanan ini disebut börek juga.
Jika ingin tahu aneka börek khas Turki lainnya, bisa dilihat di kategori "Börekler" .

Göçmen böreği ini bisa dibuat dengan isian, biasanya keju putih, kentang yang dihaluskan atau yang lainnya. Tapi sering juga dibuat tanpa isian (plain) dan tak kalah enaknya.... apalagi dinikmati ketika hangat di saat sarapan atau brunch (sarapan kesiangan 😏)

Pogačice (diminutive of pogača) is a type of pastry. Pogača, Poğaça or Pogacha (Cyrillic: Πогача) is a type of pastry eaten in Bosnia and Herzegovina, Bulgaria, Croatia, Slovenia, Republic of Macedonia, Serbia (in Serbia, traditional in Belgrade bakeries), Montenegro, Hungary, Greece (where its called Bogatsa Μπογατσα) and Turkey (where it is called poğaça) with variations. It is called pogatschen in Austria. 









Pogača is sometimes served hot as an appetizer instead of bread. Hot pogača filled with sour cream (or feta cheese in Turkey and Bulgaria) is considered a particularly delicious specialty.
Mostly eaten for breakfast but also as appetizer during noon together with Turkish bulgur salad (kısır), or potato salad and hot tea.

We call this dızmana (read;desh-mana), dizman or dıclama. But mostly people just named it göçmen böreği

İt's not really like pastry you probably know which made from thin layers of phyllo dough or puff pastry or flaky dough pastry.
İt's a pastry dish, bread-like pour with yogurt egg sauce then bake.
Sometimes fill with cheese or mashed potatoes, but plain without any filling also as good as with filling.

This dızmana is commonly made in Bulgaria by Thracian immigrants. But now everybody across regions also love to bake it.

Börek’ is usually savory, filled with meat or cheese or even vegetables. 
But my today post is one of Turkish dessert called ‘Laz böreği’   (LAHZ’ buer-EY’-ee)
İt’s not savory borek that commonly known.

İt's a sweet dessert, made from layers of phyllo dough ( Türk; baklavalık yufka) and a filled with delish creamy vanilla custard. 
The best way to describe ‘Laz böreği’ is like baklava filled with rich vanilla custard instead of pistachio or nuts.


Laz’ is the nickname in Turkish given to people from Black sea region - where this dessert comes from


What makes this dessert really unique is its secret ingredient – black pepper! ‘Laz böreği’ made the traditional way, has generous amounts of black pepper added to the custard.
But for my version İ added small pinch of nutmeg powder also to give richness to the custard, you can skip that or try my version.

The recipe is for 30 x 40 cm baking tray, fit with baklava phyllo size. But İf you have a small family member you can half the recipe and cut phyllo in half. So you will need a 15 x 20 cm baking tray.
This dessert best consume while still fresh and crunchy so you don't want too many leftover.

Börek (Turkish pronunciation: [bøˈɾek]; also burek and other variants) is a family of baked filled pastries made of a thin flaky dough known as phyllo (or yufka), found in the cuisines of the former Ottoman Empire. A börek may be prepared in a large pan and cut into portions after baking, or as individual pastries. The top of the börek is often sprinkled with sesame seeds.

I bought some bunchs of leek from farmer market a day before, so today I make another Pırasa Böreğı or Turkish Leek Pastry börekPırasa means leek in Turkish. It's a börek filled with chopped leek. Different from my previous leek borek, I make this börek with sauce or in Turkish we call it terbiye.

This sauce makes börek soft so gives such a chewy texture on phyllo sheet, just like my husband's prefer. 
Making this börek is very easy than you think. Just prepare your yufka phyllo sheets, brush it with the sauce, sprinkle with filling, roll then slide to oven. That's it.

Serve this börek with salad and ayran drink. Mostly I serve with light soup or çorba as an entree.

In Turkey, we know many variety of börek depends it filling and how to make it. 
Su böreği  or 'water börek' is one of the most common types. Layers of dough are boiled briefly in large pans, then a mixture of feta cheese, parsley and oil is scattered between the layers. The whole thing is brushed with butter and laid in a masonry oven to cook.

Sigara böreği 'cigarette börek' or kalem böreği 'pen börek', a smaller, cylindrical variety is often filled with feta cheese, potato, parsley and sometimes with minced meat or sausage. A variety of vegetables, herbs and spices are used in böreks, such as spinach, nettle, leek, and courgette, and usually ground black pepper. The name kalem böreği was adopted in September 2011 by some Turkish pastry organizations in order to avoid alluding to smoking.

Paçanga böreği, is a traditional Sephardic Jewish specialty of Istanbul filled with pastırma or kaşar, and julienned green peppers fried in olive oil and eaten as ameze.

Saray böreği 'palace börek' is a layered börek where fresh butter is rolled between each of the dough sheets.

Talaş böreği or Nemse böreği 'sawdust' or 'Austrian' börek, is a small square börek mostly filled with lamb cubes and green peas, that has starchier yufka sheets, making it puffy and crispy.

Kol böreği 'arm börek' is prepared in long rolls, either rounded or lined, and filled with either minced meat, feta cheese, spinach or potato and baked at a low temperature.

Sarıyer böreği is a smaller and a little fattier version of the "Kol böreği", named after Sarıyer, a district of Istanbul

Gül böreği 'rose börek', also known as Yuvarlak böreği 'round or spiral börek' are rolled into small spirals and have a spicier filling than other börek.
Çiğ börek or Çibörek 'raw börek' is a half-round shaped börek, filled with raw minced meat and fried in oil on the concave side of the sac, very popular in places with a thriving Tatar community, such as Eskişehir, Polatlı and Konya.

Töbörek is another Tatar variety, similar to a çiğ börek, but baked either on the convex side of the sac, or in a masonry oven instead of being fried in oil.

Laz böreği, a specialty of the Rize region, is a sweet version, filled with muhallebi (Ottoman-style milk pudding or custard) and served sprinkled with powdered sugar. It similar with Greek Bougatsa.

Kürt Böreği is similar to Laz böreği, without the custard filling. It is also called sade (plain) börek and served with fine powdered sugar.


And my post today is one of common börek people make here, Spinach börek or Ispanaklı börek. Most of time I use cheese or peynir (turk) to mix with spinach as filling. Tavada Böreği / Borek pastry in pan

Are you a mom who always wandering around the web or cookbooks looking for rich, quick and healthy breakfast variety everyday? 
With a growing kid around the house, no wonder if you are in situation like that. Especially my kid is "no same meal in a raw" type... You know what I mean?

Different from my husband, he likes to have egg almost everyday for is breakfast, no matter just boiled egg, omelet, with sücük (Turkish spicy sausage).... just egg enough for him.

And this tavada böreği (borek pastry cook on pan) is now become my new list for quick breakfast idea. It's easy and fast to prepare yet freshly yummy. 
As other typical turkish börek you can vary the filling with anything you like such as, potato, spinach, any kind of cheese or even minced meat.

But for easy and quick version I just use cheese and filling, optionally you can add chopped parsley as well.

Serve 4~6 portion.

Ingredients:
  • 3 phyllo sheets (for börek pastry)
  • 300 ml milk
  • 2 Tbsp yoghurt
  • 1 large egg
  • 100 ml sunflower oil
  • 100 gr butter, melted
  • salt and pepper to taste
  • Crumbled cheese, either ricotta or white cheese
  • margarine/ butter for brush the pan

Poğaça (read: po a tja, with "a" vague). In Turkey it's savory pastry with various filling, start from cheese, meat, potatoes, olive and more. Mostly eaten for breakfast or brunch with hot Turkish tea. 

But I often find this food during afternoon aile toplantı(*) together with bulgur salad, couscous salad, potato salad, pasta salad and more.

(*) Casual family gathering which sometimes Turkish women (or family) do in afternoon. They talk and share news/ story among them or family, drink tea, with light lunch such pastry ( börek poğaça çörek, etc) with salad ( like kısır, potato salad) and more. and close the gathering with turkish coffee.



In Turkey there are few type of Poğaça... some use yeast (they call mayalı Poğaça) and some use baking powder. 
And my today post is Poğaça with baking powder, so the texture is more to shortbread. Different with Poğaça with yeast which has texture to bread, but I like them both.... They just perfect for quick and light breakfast/ brunch.

Gözleme is a savoury traditional Turkish flatbread, made of hand-rolled dough that is lightly brushed with butter and eggs, filled with various toppings, sealed, and cooked over a griddle.

The name derives from the Turkish word göz meaning "compartment", in reference to the pocket of dough in which the various toppings are sealed and cooked. Traditionally, this is done over a saç griddle.

Börek in Turkish refers to any meal made from Yufka (phyllo dough). Thinly rolled pastry, often the paper-thin variety known as yufka, is wrapped around various savory fillings or arranged in layers . The myriad types of börek are unmatched delicacies when cooked to perfection. Boreks can be fried, baked, cooked on a griddle or boiled. Traditionally it was said that no girl should marry until she had mastered the art of börek making. Preferred fillings are cheese, minced meat, spinach and potatoes. In the form of rolls filled with cheese or minced meat mixtures and fried, böreks are known as "Sigara (cigarette) boregi". Böreks should be light and crisp, without a trace of excess oil.

Börek's type also named by it shape... Like I made today known as Kol böreği  is prepared in long rolls, either rounded or lined. Generally filled with minced meat or you can vary them with feta cheese, spinach or others. This Börek is commonly eaten during breakfast or brunch with hot Turkish-style tea or with ayran.

Now I will share my recipe how to make this Börek at home

 Ingredients for filling:
- about 500 gr minced meat (you can use beef or lamb)
- 2 big onions, finely chopped
- 2 stalks of leek, finely chopped
- salt and pepper to taste

Gözleme

Gözleme is a savoury traditional Turkish hand made and hand rolled pastry. Fresh pastry is rolled out, filled and sealed, then cooked over a griddle. The name derives from the Turkish word göz meaning eye. Traditionally, this is done on a sac.

Tepsi Ispanakli börek (Spinach pastry)

It's my another version of Ispanakli börek (spinach pastry), different from my previous Ispanakli börek, it's "tepsi" (Tray=English) Ispanakli börek cause I made it in tray (not individually like before). With yogurt-butter sauce spread between the layer, I believe it will be your favorite too.

Sigara börek.. (Fried Pastry with feta cheese)

This Fried Pastry, I guarantee you'll gonna love it ! It's easy and quick to make, light meal in any occasion. With hot tea or coffee as side dish I think you will have great time with it.

Ingredients and how to make:
 Several sheets of phyllo dough.
 Crumble Feta cheese.
 Dill or parsley, finely chopped.
 Enough Oil for frying.

Mix feta cheese with chopped dill or celery. If you use plain feta cheese, you can add salt if you like. Set aside.
Prepare the phyllo dough, cut lengthwise (about 10 x 15 cm). If you use round shape phyllo dough (like I did) you can cut it like the illustration below. Cut phyllo dough right in the middle into 2half-circle, then cut into 8 pieces.

Take one sheet of phylo pieces, place feta cheese mixture on the edge of phyllo (wider side-if you use round shape one), fold and roll it to form cigarette like. Heat enough oil, fry till golden red. Serve warm as snack complementary tea or coffee. You Can also serve them as your breakfast menu.

Peynirli Mayalı Poğaça



Pogačice (diminutive of pogača) is a type of puff pastry. 
PogačaPoğaça or Pogacha (Cyrillic: Πогача) is a type of pastry eaten inBosnia and Herzegovina, Bulgaria, Croatia, Slovenia, Republic of Macedonia, Serbia (in Serbia, traditional in Belgrade bakeries),Montenegro, Hungary, Greece (where its called Bogatsa Μπογατσα) and Turkey (where it is called poğaça) with variations. It is calledpogatschen in Austria. Pogača is sometimes served hot as an appetizer instead of bread. Hot pogača filled with sour cream (or feta cheese in Turkey and Bulgaria) is considered a particularly delicious specialty.

If you are looking for something for your breakfast or brunch, or maybe for Kid's lunch box, you should try this one.  I guarantee It is repeatable menu for that...


Ingredients:
Ingredients A:
 3 tablespoons all purpose flour
 1 cup warm milk
 1 package (10 grams) dry yeast
 3 tablespoons granulated sugar
Ingredients B:
 3 cups all purpose flour (plus a few tablespoons if necessary)
 ½ cup plain yogurt
 1 teaspoon salt
 1 egg, lightly beaten.
 ½ cup olive oil
Ingredients C (for topping):
 1 egg yolk, beaten with 1 tbsp water and 1 tablespoon olive oil (vegetable oil).
 enough black sesame and white sesame.
Stuffing ingredient:
Enough Feta cheese.


Method: 
1) In large bowl, combine and mix all ingredients A as the starter. Cover with towel and let stand in warm place until fluffy (I need ± 30 minutes) 
2) Whisk eggs with yogurt and olive oil until blended. Add 3 cup of flour and egg mixture into ingredients A (fluffy starter) and knead until smooth and soft. If you feel the dough is too wet, add flour a spoonful after spoonful while continue to knead until smooth and not sticky at your fingers. Cover with plastic wrap or towel and let stand a warm place until dough doubles (I need time ± 50 minutes) 
3) Flat the dough for remove the air and divide into 13 ~ 15 small balls. Fill with stuffing ingredient and round shape them. Cover with towel and rest again about 30 minutes. 
4) preheat oven to 180 º C. Place dough on baking sheet coated with baking paper or grease with margarine. Smear top each ball with egg yolk mixture and sprinkle with sesame. Bake 15 ~ 20 minutes or until golden color. 



::Note
 Rocognize your own oven's condition is recommended. Different size and condition gives 
different heat result.
