Sambal is a staple condiment in most Indonesian cuisine. Almost all Indonesian food requires sambal to be served together with it.

Sambal is an Indonesian chili sauce or pastes, typically made from a mixture of chili peppers with secondary ingredients, such as shrimp paste, garlic, shallot, sugar or palm sugar, and tomato or even peanut or other ingredients.

Besides the ordinary main course, Indonesian people also like to eat snacks (snacking).
We have many kinds of snacks or we call them "kue" or "jajanan"
Kue in the Indonesian language is used to refer to not only these kinds of traditional snacks, but also all types of cake and some types of pastries. Kue is more often steamed than baked and normally has a sweet taste, but some are savory. Kue is categorized under " jajanan pasar" (market buys) or street food.

Indonesian cuisine is one of the richest culinary traditions in the world and is full of intense flavors. The richness of its cuisine is a reflection of the diversity of cultures and traditions of the archipelago, which consists of about 6,000 inhabited islands, and plays an important role in Indonesian national culture in general. Almost all Indonesian dishes are rich in spices derived from spices such as candlenut, chili, temu kunci or fingerroot, galangal, ginger, kencur or kaempferia galanga, turmeric, coconut, and gula jawa or coconut/ palm sugar.

Just like what I am going to share today, it calls "Karedok". It is very similar to gado-gado, except all the vegetables are raw, while most gado-gado vegetables are boiled
Karedok is a raw vegetable salad in peanut sauce from Sundanese region, West Java, Indonesia. It is one of the Sundanese signature dishes. It traditionally includes long beans, cucumbers, bean sprouts, cabbage, Indonesian basil or lemon basil (Ind: kemangi), and small green eggplant, covered in peanut sauce dressing.

Muḥarram (Arabic: مُحَرَّم‎‎ muḥarram) is the first month of the Islamic calendar. It is one of the four sacred months of the year. 
Aşure Günü or in Arabic ʻĀshūrā’ (عاشوراء) day is the 10th day of Muharram month (the first month in the Islamic calendar). In Islamic believed many important occurrences happened in this month. This month also important for Muslims and we also do Fasting a couple days in this month.

The word "Muharram" means "forbidden". It is held to be the second holiest month, following Ramadan. Some Muslims fast during these days. The tenth day of Muharram is the Day of Ashura or Aşure Günü in the Turkish language.

Gado gado is one of the popular Indonesian dishes. It is on the list of Indonesian national dish among with others.
It's a dish consisting of mixed pre-boiled vegetable and fried tofu (or sometimes with tempeh) and dressing with creamy umami peanut sauce then served with kerupuk (shrimp cracker or other types of cracker). Lontong or rice cake also serves as a compliment. Adding simple chili sambal is most people's choice to enjoy this delicious and healthy gado gado.

We have a dozen types of gado gado. Every region has its own version of gado gado. From East Java, Surabaya gado gado is most popular. İt is slightly different from gado gado in Jakarta / Betawi. In middle java, people also serve different kinds of gado gado. But all gado gado uses one same ingredient; Peanut sauce as dressing.

The difference between those 2 cities is the vegetables used and how to make the peanut sauce.
Surabaya gado gado uses coconut milk to make the sauce and then cook and thicken by adding a small amount of rice flour solution. 
While Jakarta/ Betawi style gado gado, peanut sauce grind with fresh garlic, chili, and palm sugar. Besides tamarind paste,
 Jeruk nipis (kaffir lime juice) is added into it so the taste is slightly sweet, umami with a sour touch of tamarind and jeruk nipis. If you don't have kaffir lime simply use lemon or lime juice instead.

PEANUT BUTTER CHIFFON CAKE | Çitra's Home Diary

Chiffon cake is a very light cake made with vegetable oil, eggs, sugar, flour, baking powder, and flavorings.

Its distinctive feature is from the use of vegetable oil, instead of the traditional fat which is solid at room temperatures, such as butter or shortening. This makes it difficult to directly beat air into the batter. 
As a result, chiffon cakes (as well as angel food cakes and other foam cakes) achieve a fluffy texture by having egg whites beaten separately until stiff and then folded into the cake batter before baking. Its aeration properties rely on both the quality of the meringue and the chemical leaveners.

A chiffon cake combines methods used with sponge cakes and conventional cakes. It includes baking powder and vegetable oil, but the eggs are separated and the whites are beaten before being folded into the batter, creating the rich flavor like an oil cake, but with a lighter texture that is more like a sponge cake.

They can be baked in tube pans or layered with fillings and frostings.

Posting kue kering lagi ya...... Gak papa donk...sebab orang rumah (aslinya saya sih..hihihihhi) doyannya ngemil kukis dan kebiasaaan di rumah sih toples kukis nggak pernah kosong. Beneran.... at least ada satu jenis kukis di lemari.

Ya maklum....kebiasaan orang Turki kan minum teh. Pagi siang malam, minum teh. Cuaca dingin atau panas cetarrr yaa minunya teh panas.. ☕
Jadi kalau gak ada camilan bagi saya kok kurang afdol minum teh nya... 😊

I think now everyone is familiar with sate/ satay. One of Indonesia's most popular traditional foods and become everyone's favorite. And it's one of Indonesian national dishes among others eg; Rendang, nasi goreng, gado gado and more.


I am personally the number one fan of satay . In Indonesia itself there are many types of satay from various regions and of various ingredients.
For example, from Padang city (Sumatra), I like satay Padang. It made of beef/ ox tongue mix with beef meet, flush with thick yellow, curry-like sauce. Sumatranese typical food.
There is also "sate kelapa" (beef / chiken satay coated with grated coconut-My best favorite) -its mostly from Madura Island. Served with peanut sauce or simple dark sweet soy sauce.

Besides of many variations of satay, satay is usually also served with various sauces. "Sate Padang" has a different sauce from mostly generally satay sauce --You can check recipe here . There is also satay with sweet soy sauce (kecap manis) here the recipe . This time I made chicken satay with peanut sauce--the most common and popular sauce among of all.

And today I will show and share my recipe on how to make authentic famous Indonesian satay with satay peanut sauce, all from scratch. No worry... it's easy than you think 😊
First thing first. We must make satay peanut sauce in ahead. You can keep this sauce in an airtight clean jar, store in the refrigerator up to 5 days. in the freezer for up to 2 weeks, defrost before use. Warm up in a microwave or over low heat stove for 2 minutes or so.

Satay is a grilled meat dish famous throughout Southeast-Asia. Indonesians consider it a national dish conceived by street vendors. These tasty meat skewers are most popular with chicken, beef also lamb or mutton. We also have vegetarian satay version use tofu and tempeh instead of meat. 
Traditionally it served with white steamed rice or cake rice (Ind; ketupat and lontong). 

And generally it served with fresh cucumber pickle as well. Some area (like Madura island) serve together with bone soup or in middle Java serve this satay with gulai tongseng.

So if you want this satay in quick, you should prepare your white rice or cake rice in advance. Also you need to make peanut sauce and fresh pickled cucumber ahead.

This Peanut cookie is one of many other İndonesian old traditional cookies. İ grew up with these cookies. İ remember had these cookies every Eid Fitr holiday when my late grandmother or my family took me and siblings visited some relatives and family's friend.
At that time (around 1980's) we still could find this peanut cookie easily, at least every Eid Fitr or Christmas holiday. Until İ think around the middle 1990's it became less popular among other classic cookies (kaastengels, nastar, butter cookies, etc).

Even it became less popular compare to other classic and modern cookies, still, some small stalls sold this peanut cookie until İ didn't remember exactly when it became less and less to find especially in big cities.

İ left my homeland Surabaya around the year 2000 and started my new academic career in Jakarta and since then İ never ate or saw those cookies anymore until now year 2017 😢
But İ still remembers exactly how it tastes and İ miss it now.

Selam everybody..... Merhaba from Turkey....

When latest week of Ramadhan like now days.... and when eid-el Fitr getting near...most muslim family in Indonesia would be very much busy to prepare  things for welcoming biggest Muslim religion festivals.

If you live in Indonesia, the vibrancy and spirit of Eid-el Fitr sorely can be felt from malls, supermarket, offices, terminals until kitchen at the last week of Ramadhan like now days.
Malls gets very much crowded triple like normal days. Kids are the happiest one cause they will have plenty of new clothes for Eid-el Fitr * I'm missing my childhood.
Hectic also increase at many terminals since people start flooded the terminal for travelling to their home town.

And since many family member mostly already home for spending last week of Ramadhan, the most busy person at home of course, MOMS! (^,^)



And part of the kitchen hectic in Indonesian families is making cookies. A lot of them. We make any kind of traditional cookies like Kaastengel, Nastar (pineapple tart), semprit butter cookies, and many others. Also this Putri Salju cookies. 
These cookies are like "must cookies" on our living room table during eid-el Fitr.

My today's post is another Putri Salju cookies. I made these cookies before but with a different recipe, check my previous Putri Salju cookies here for another version.
Both recipes I think is great and will give you the best snow white cookies for your family and friends.

If you are a peanut butter lover, you should love these cookies. It's my new fave! The texture is so perfect, it will melt in your mouth with a light sweetness. I use crunchy peanut butter with tiny chunks in it, so it even gives me an additional crunchy texture in every bite. 
If you can't find crunchy peanut butter you still can make this with smooth peanut butter.

And do you believe that I made these yummy cookies from leftover egg white which stays in my fridge for a while. Well... I'm kinda not in the mood making macarons lately, so I decide to use my leftover egg white for baking some cookies. After all, Eid-al Fitr will come in a couple of weeks and Eid-al Fitr is always celebrating with jars and jars of cookies in my house (^,^)

Definisi baklava sendiri adalah sejenis pastry manis yang terbuat dari berlapis lapis lembaran pastry phyllo yang tipis dengan taburan -umumnya walnut dan/ atau pistasio, hazelnut atau almond diantara beberapa lapisannya. Dan direndam dalam sirup gula yang kental atau madu. Ada juga jenis lain yang disiram susu (sütlü nuriye baklava).

I was so exciting dengan tema Idfb bulan ini sebab daily I cook Turkish food! Makanan dan kebudayaan Turki sangat kental dengan pengaruh Timur Tengah, terutama di daerah South east. Karena wilayah geografi Turki yang berbatasan dengan beberapa wilayah bekas Uni Soviyet (north east), Timur tengah (south east) dan Eropah (bagian barat), menjadikan Turki sebagai negara yang unik baik dari segi kebudayaan dan cuisine nya. Banyak sekali hal yang bisa digali dan diketahui dari negara asal suami saya ini.

Awalnya saya ingin menampilkan cuisine dari negara tetangga middle east yang lain yang juga sangat mendunia kelezatannya. I like Moroccan Lamb yang dimasak dalam tagine. Atau Chicken Mandi dari negara Yaman yang sudah saya bikin sebelumnya. Atau saya ingin sertakan Palestenian Musakhan, bahkan famous Hawawshi dari Mesir...ppffff.... 
Semua masakan middle east are rich! seperti kaya-nya masakan Nusantara kita. We should digging deeper to their history... so you'll find keanekaragaman makanan mereka.

Tapi setelah memilah milih dan buka-buka file buat bikin apa, finally saya pilih ..taarrraaa.. Baklava! Why baklava?

Siapa yang nggak kenal Baklava? Kenalan dulu yuk buat yang belum pernah dengar ..... hehehe...😄  Sebab baklava ini termasuk dalam top famous dessert around the world lho. Baca link nya disini, disini dan disini juga. Jadi hampir semua orang sudah familiar, pernah mencicipi atau ingin mencicipi baklava ini. 
Oleh karena 'pesona' baklava yang sudah terkenal selevel Angelia Jolie.. (hahahaha...apa'an sih?!) maka saya pengen tampilkan baklava ini di even Idfb kali ini.
