Making Blackberry jam

Summer time, as many other 'berries' comes in summer time, we can find many blackberries on market. Many kind of dessert or food we can make with this black fruit. This time I will make blackberry jam for my Cheese cake topping...

Cheese Stick

One of my favorite for spending my weekend in front of TV all day. With big cup of tea or coffee, I can eat one whole jar alone. Simply to make and quick... let's prepare.

- 250 grams  flour
- 50 grams  Tapioca.
- 1/ 4 teaspoon baking soda
- 50 ml of cooking oil.
- 1 egg
- 25 ml water
- 100 grams of cheddar cheese, grated
- 1/ 4 teaspoon pepper
- 1/ 2 teaspoon of garlic powder.
- 1 teaspoon salt
- A little bulyon block (optional)

How to make:
1. Mix flour, tapioca and baking soda, set aside.
2. Stir in cooking oil, eggs and water until blended. and add into the flour mixture.
3. Add the other seasonings and cheese. Knead until smooth. In this process there may be additional wheat flour if the dough is not yet smooth. Let stand for 15 minutes.
4. Milled dough thin and cut into pieces. Fry in hot oil until golden brown and crispy.
5. After the cold keep into airtight  jar and serve.

I love this cake because it's so soft and delicate.. can not avoid to eat more than one piece.. first time you read the recipe, maybe you think the step so complicated, but actually it's simple as long as you follow step by step.

Ingredients A:
1) ½ cup whole milk
2) 40 g unsalted butter
3) 125 g cream cheese

Ingredients B:
1) ½ cup flour
2) 1 full tablespoon cornstarch
3) 2 egg yolks
4) 1 teaspoon lemon juice / lemon
5) 1 tsp lemon Zest

Ingredients C:
1) 3 Whites egg
2) ½ cup granulated sugar

Ingredients D:
Blackberry jam 1 tablespoon (or other fruit jam)
1 tablespoon warm water
Strawberry / peach / orange / kiwi, as your like for topping

How to make:
1. Prepare a 18cm baking dish, spread with butter, cover with baking paper, grease with butter again. If using a pan that can be dismantled confirm watertight pan (wrap with aluminum foil). Prepare marinade pan for water, fill with water until 1/4 only. Enter the water-filled pan to oven, pre-heat the oven to 160 ° C.

2. Mix ingredients A: butter, milk, and cream cheese in small saucepan, heat over low heat, stir until all ingredients melt and blend. Use medium heat so cream will not burn.

3.When the cream still warm, add flour and cornstarch (Ingredients B) into the pot of cream cheese. Stir until blended. put the egg yolks, lemon zest and lemon juice .Make sure all the ingredients perfectly blended. set aside.

4. Beat the egg whites, granulated sugar until the 'soft peak' . Add this egg whites into previous batter in 3 batches. Fold to combine well. Pour batter into greased pan and lined with baking paper. And water bath bake/au bain marie.

5. Bake for 45 minutes. Test with a toothpick. If still sticky, baking time can be added 10-15 minutes.
Note: recognize you own oven character, the surface of the cake should be golden yellow (not brown) 

6.After cake set, while it's warm, take out carefully the cake. Because the cheese cake is very delicate, be careful when flipped it.

7. For topping: warm blackberry jam with boiled water on the stove (just make it warm and can be mixed). Brush the surface of the cheese cake with jam. Garnish with blackberry. Or you can vary with other fruits as desired.



Fındık Patatesli Tavuk Budu Paçası (Turkish Chicken thighs and potato)

  • 6 adet tavuk budu
  • 1 çay bardağı mısır yağı
  • 3 adet büyük domates (kabuğu soyulup kare doğranmış)
  • 3 adet soğan (ince doğranmış)
  • 8 diş sarımsak
  • 4 adet büyük patates
  • Tuz, karabiber
  • ½ demet maydanoz (İnce kıyılmış)
  • ½ demet nane (ince kıyılmış)
  • 2 çorba kasığı sirke
  • 2 su bardağı su
 Yapılışı :
Tencere içinde yağı kızdırın. Soğanı ve sarımsağı koyup. Karıstırarak biraz renk aldırın. Butlari ilave ettikten sonra. Agaç kaşık ile alt üst ederek biraz kızartın. Uzerine domates ve 2 bardak su ekleyin. Kaynamaya bırakın. Üzerinde olusan köpüğü alın. Patatesleri ilave edip.. 20 dakika kısık ateşte pişirin. Lezzetini kontrol ettikten sonra. Nane veya maydanoz serpiştirerek. Servis yapın. 
Afiyet Olsun.


  • 6 pieces chicken leg
  • 1 tea cup corn oil
  • 3 large tomatoes (chopped square shell peeled)
  • 3 onions (finely chopped)
  • 8 cloves garlic
  • 4 large potatoes
  • Salt and pepper to taste
  • ½ bunch parsley (chopped fine)
  • ½ bunch mint (finely chopped)
  • 2 tablespoons vinegar
  • 2 cups water

How to cook:
Heat oil in saucepan. Put the onion and garlic. Stir a little until transparent. add Chicken legs. With wooden spoon upside down and fry a bit. Add the tomato slices and 2 cups water. Let it boil. Remove the foam that might be appear. Add potatoes and stir again .. Cook on low heat 20 minutes. After checking the taste. Sprinkle with mint or parsley. Serve.

Sehriyeli Pilavı (Turkish Pilaf)

Turkish Pilavı or Pilaf  has a different cooking method compare to Indonesian rice cooking method, which through two stages (We're talking "old fashioned way", not using an electric rice cooker ). That is cooked 1st in boiling water until half cooked and then steam it.
Turkish Pilavı only through one cooking stage. Another difference is mostly Turkish pilaf used vegetable oil (or olive oil) and butter and adds arpa şehriye (orzo)

Ingredients and How to make:
- 2 cups of rice, wash and soak with warm water approximately 30. Drain.
- 1/2 cup 
arpa şehriye / 
orzo pasta
- 1/4 cup olive oil
- 2 Tbsp butter
- 4 cups hot chicken broth (can be replaced with hot water plus stock bullion). If the type of rice you used, will need more broth, can be added the amount.
- Salt to taste.

Heat olive oil and butter in a heavy-bottomed pot. Put arpa şehriye (orzo pasta) stir until dark brown color (do not let burn). Then add rice, stir again until rice mix with oil. Reduce heat to medium. Add hot broth and salt, stir well again. Close tight and shall not be opened until the water dries out about 10 minutes. 
Lowest the heat as possible you can, lid on again, and continue to cook over the lowest heat for approximately 15 min. 
Turn off the heat. But do not open the lid during the first 5-10 min.
After 5-10 min, the lid can be opened and Turkish Pilavı can be served warm.


Arpa Şehriye

Arpa Şehriye (Turkce language) or Barley noodle, is one kind from pasta / macaroni family. Can be use as mixture to make Turkish Pilavı , soup ( Çorba) or other food in Turkish kitchen.

Chicken Steak with mushrooms sauce.

Selam Everybody...Merhaba from Turkey...

One of my Favorite meal is Steak. Since I'm in Turkey, I hardly ever to find Steak restaurant in my city, maybe because people here prefer to eat local food or some worldwide food with local taste.. so, I tried to make my own steak in my small kitchen.. here the result.. Chicken steak with mushrooms sauce..


For chicken Steak.
* 4 boneless chicken breasts-Gently smashed to slightly flattened.
¾ cup corn flour
¾ cups AP flour
* about 1 tbsp bread crumbs
* Pepper powder, salt, garlic powder.
* half lemon, juiced
* 50 gr of butter for frying.

For the mushroom sauce.
* 300 g button mushrooms, washed and chopped.
* 2 cloves garlic, finely chopped.
* 1  medium onion, finely chopped
½ tbsp flour, dissolve with ½ cup water.
Worcester sauce and light soy sauce (each about 1 tablespoon)
* Pepper powder, sugar, and salt to taste.
½ cup chicken broth or bouillon block.
* 1 tablespoon butter for sauteing.

How to make the steak:
1) Rub chicken with lemon juice, salt, garlic powder, and pepper. Let stand until the spices soak, keep in the refrigerator.
2) Mix all the flours. Coat the chicken with the flour both side and fry until golden brown surface and chicken is cooked. Just use medium heat so the chicken can be cooked up well.

Mushroom sauce:
1) heat the butter, put garlic, onions, saute until fragrant. put mushrooms, stirring about 5 minutes. Seasoning with 
Worcester sauce, soy sauce, sugar, pepper powder, and a pinch of salt. Stir until all ingredients mix well.
2) Put chicken broth (or you can use warm water and add stock block), add the flour solution. Stir until thick, taste it to control.

How to serve:
Place the chicken steak on a serving plate, pour the mushroom sauce. Serve with potatoes and other vegetables. Serve while hot.

Nar Ekşisi Salata

- 1 medium-size cucumber, seeded and diced
- 2 Pcs green onion, clean and chopped
- 2 medium tomato, diced
- 1/2 bunch parsley, clean, finely chopped
- 1/2 tablespoon mint
- 1 tablespoon pomegranate sour souce
- salt as taste

How to serve:
mix all ingredient, sprinkle with mint. Serve immediately.


Kısır is a traditional Turkish side dish made from fine bulgur, parsley, and tomato paste. The main ingredient, bulgur, is a cereal food generally made from parboiled durum wheat. For kısır, a finely grounded bulgur, unlike the coarse bulgur used for pilav, or sometimes couscous is used. Common additional ingredients include parsley, tomato paste, onion, garlic (in some regions), sour pomegranate juice (in southern regions of Turkey) or lemon, lettuce leaves, cucumber, and a lot of spices. It has a reddish color due to tomato paste admixture. It can be eaten cold and used as a salad or meze.

1 cup finely- bulgur soaked with 1 1/4 cup hot water and cover. Let stand until bulgur tender about 15-20 minutes.
- 1~2 tbsp Salça (tomato paste)
- 5 sheets of lettuce- finely chopped .
- 1 bunch green onions - 
finely chopped 
- 1 bunch celery - 
finely chopped 
- 1 medium tomato fruit - seeded and cut into small cube.
- 2 medium cucumber - seeded, cut into small cube.
- 1/2~1 lemon - take the juice (if there is a pomegranate acid sauce, can be blended and reduce the amount of lemon).
- If you like olives, can also be blended.

How to make:
Mix all ingredients and mix well. Can be served cold topping with red pepper powder


Martabak manis / Indonesian style thick pancake

Far away from my hometown make me miss some traditional Indonesian food, like this "martabak manis" . One main ingredient to make this "martabak manis" I hardly can find in Turkey, that is coconut milk. So I tried to substitute it with milk.. so.. Voallaaa..... ssooo nice and had same taste as original using coconut milk..Let's try to make...



· 1 kg chicken thighs (or mix with chicken wing)
· 1 medium size onion, grated
· 3 cloves garlic - grated
· 4 tablespoons pure honey
· ½-squeezed lemon juice
· 2 tbsp bbq sauce
· ½ teaspoon ground pepper
· Salt to taste

How to make:

Mix all ingredients and seasoning to the chicken that has been cleaned . Previously making scratches (slice) so that seasoning absorb well.Cover and let stand in refrigerator overnight. Chicken ready to be burned over coals or bake in oven.

More delicious served with chilli sauce and served with salad.


Resep Risoles isi Jamur / Mushroom Risoles recipe

This is one of Indonesian food, "risoles". We have many kind of "risoles"  depend on it's filling, today I made Risoles with mushrooms filling, different than other but still has real good taste.. let's try.

For skin dough.
- 250 gr AP flour
- 3 tablespoons margarine, melted (can be replaced with vegetable oil 5 tablespoons)
-1 Eggs
- Enough water (
± ¾ cup)
- pinch of 

How to make a skin:
- Beat the egg with fork, add flour, salt, oil/ melted margarine. Add water just until dough can be stirred (I use approximately ¾ cup of water). Whisk with balloon whisk until smooth.
Prepared nonstick fry pan, smears with oil a bit, make pancakes from the dough. Do not get too dry (over cook), remove from heat. Do it until the dough finish. Put a side, cover with kitchen towel.


Sigara börek.. Another Turkish food

- 3 lembar”yufka” atau filo dough ( di Indonesia bisa menggunakan kulit pangsit)
- Minyak sayur untuk mengoles permukaan filo dough secukupnya.
- 1 ikat seledri (sekitar 200 gr) –dicincang halus.
- 300 gr “lor peynir” atau bisa juga menggunakan keju parmesan, atau feta cheese-campur dengan seledri.
- 1 butir kuning telur untuk olesan atas
.- Wijen hitam atau wijen putih (seadanya) sekupnya untuk taburan atas.
Note: untuk membuat börek di Turki biasanya menggunakan wijen hitam.

Cara membuatnya:
1) Buka lembar filo dough, olesi permukaannya dengan minyak sayur. Lalu lipat menjadi dua sehingga bentuknya setengah lingkaran. Dari bentuk ½ lingkaran ini potong-potong membentuk segitiga panjang menjadi 8 atau 9 bagian (seperti pada gambar ilustrasi)

2) Isi dengan campuran isi (keju dan seledri) secukupnya dibagian lebar filo dough, sekitar 1 sendok teh, lalu gulung hingga ke bagian segitiga yang menyempit membentuk seperti rokok. Olesi ujungnya dengan putih telur agar lengket. Lakukan hingga adonan isi habis.
3) Letakkan di Loyang, olesi bagian atasnya dengan kuning telur dan taburi wijen hitam. Panggang di oven hingga kuning keemasan (sekitar 25 menit)

Salamlı börek

This time I made another kind of börek. I made with "salam" as filling. "Salam" is almost like sausage but a little different in taste. Have bigger shape than normal sausage. We can bake this Salamlı börek or we can fry it, both of ways are same delicious but I prefer fry because more simple (no need brush egg yolk and black sesame seeds) and the filo dough became more crispy.. Let's try to make it...
Fried Börek

-Salam or you can use sausage 100 gr-chopped small cube
-vegetable oil for brush filo dough
-3 pcs Filo dough
-1 big onion-chopped finely
-2 pcs garlic (optional)- chopped finely
- 5 long green banana pepper(or bell pepper)-clean the seeds and chopped small cube
-1 big tomato-chopped small cube
- salt as taste
:: If you want to fry this börek to fry, you need vegetable oil to fry in deep pan

:: If you want to bake this börek to bake; You will need other materials:
- 1 egg yolk
- Black sesame seed (or any sesame you have)

How to make:
1) For filling: mix all ingredients (but filo dough)
2)Unfold 1 pc of filo dough, brush with vegetable oil and fold it become half round. Cut it into 8 pcs (become triangle shape). see the Illustration picture
3) brush again the surface with vegetable oil and fill with "salam" filling. Fold and roll like a picture.

::If you want to bake-> Brush the surface with egg yolk and spread with black sesame seeds. Then bake 160 C around 20 mnt or until golden.
Bake  börek

::Easy if you want just fry. Heat a bit much vegetable oil on deep pan. fry the börek until golden brown.

Fried Cauliflower

Sometimes we are boring to eat vegetable, other than stir fry or just make salad or boil. This time I tried to fry Cauliflower .. And it turned great meal. Better enjoy while it's hot

All purpose flour , fine cornmeal , tapioca,with ratio 1:1:1

garlic powder, ground pepper, and salt.

1 medium egg .
2 tablespoon of water.

Soak the Cauliflower for about 10-15 min in hot water. Drain.
Beat eggs, mix all ingredients add ground pepper, garlic powder and salt. taste before mix the cauliflower.
fry until yellowish red color.

Served while hot

Kolay Kırmızı biber fırında tavuk. just as simply as it is...

I love simple and quick meal. Not much time to make it and I will not have much dirty dishes (*_*). Like this one. Just prepare all ingredients and marinate the chicken and GO !
So, let's go to make it...  @(^_^)@

-1 kg of chicken meat cut it into some pieces (you can just wing or chicken thighs)
- 1Medium-size onions, chopped big cubed
- 1 medium-size potato, peeled and cut cubed.
-2 Tablespoons olive oil (or vegetable oil)
- 2 cloves garlic, grated or finely chopped.
-4 Teaspoon ground red pepper (sweet chili powder )
- 1 teaspoon dried basil leaves (fesleğen-turk )
-1 / 2 tsp ground pepper to taste. 

- Salt to taste.

mix all ingredients above. And marinate the chicken (I put all in clear plastic and mix until all ingredients blend well). Leave it in the fridge +/- 60 min. Put in the heat-resistant bowl, cover with aluminum foil and roast in the oven for about 45 min 180 C Or until chicken done.
Take off the cover and roast again for another 5 minutes

Bon apetite. afiyet olsun.


Karnıyarık / Turkish stuffed eggplant

-4 pcs eggplant, peeled in stripes lengthwise
-300 gr ground meat
-2 onions, cubed
-1/2 bunch parsley, finely chopped

-1 big tomato, small diced (for the stuffing)
-1 tomato, sliced crescent shape (for the top)
-green banana peppers, as many as eggplants
-2 tbs olive oil 

- Enough frying oil for deep fry
-hot water

How to Cook:
-Peel eggplants leaving lengthwise stripes and then put them in salty water for 10 minutes. Dry them well and fry them as a whole in a deep pot corn or vegetable oil. (Make sure oil is really hot before you place eggplants, otherwise eggplants will soak many of oil)
-Once they're fried, first soak the excessive oil by resting them on a paper towel, and then place eggplants on an oven dish.
-In other frying pan, heat olive oil. Add onions and stir for 3-4 minutes.
-Add ground meat. Cook until ground meat soaks all the juice it lets out.
-Add diced tomato.Stir until cooked. add salt Turn fire off.
-Add chopped parsley, Mix well.
-Slit eggplants into two (you can do it with two spoons). But leave the tops and bottoms attached. 

-Stuff eggplants with ground meat filling.
-Place a slice of half moon shaped tomato and a green pepper on top of each stuffed eggplant.
-Pour 1 cup of hot water on baking tray/ dish and bake them in preheated oven at 160 C until green peppers are nicely baked.

Bahasa Indonesia

-4 buah terong, kupas dalam garis-garis memanjang
-300 gr daging sapi cincang
-2 bawang bombai, potong dadu
-1 / 2 ikat peterseli/ seledri, cincang halus
-1 tomat, potong dadu mungil (untuk isian)
-1 tomat, iris bentuk setengah bulan (untuk bagian atas)cabe hijau paprika, sebanyak jumlah terong untuk bagian atas
-2 sdm minyak zaitun
-minyak goreng
- air panas

Cara masak:
-Kupas terong meninggalkan garis-garis memanjang (seperti zebra) dan kemudian memasukkannya ke dalam air asin selama 10 menit. Keringkan dan goreng terong dalam wajan yg dalam dengan minyak jagung atau minyak sayur, mana saja yang Anda suka. (Pastikan minyak benar-benar panas sebelum Anda menempatkan terong, jika tidak terong akan menyerap banyak minyak)
-Setelah terong digoreng, serap terlebih dahulu minyak berlebihan dengan handuk kertas (kertas tissue tebal), kemudian tempatkan terong di piring oven.
-di tempat lain, panaskan minyak zaitun (atau minyak sayur)masukkan bawang bombay dan aduk selama 3-4 menit sampai bawang layu.
-Tambahkan daging sapi. Masak sampai air dari daging keluar dan kering.-Tambahkan tomat yang dipotong potong dadu. Aduk sampai matang.Lalu tambahkan garam. Mematikan api. -Tambahkan peterseli cincang. Aduk rata.
-Dengan bantuan dua sendok, celah terong menjadi dua memanjang. Tapi tinggalkan bagian atas dan bawah tetap utuh tidak terpotong.
-Isi terong dengan campuran isi tadi.
taruh sepotong tomat berbentuk bulan sabit dan cabe hijau panjang di bagian atas setiap terong yang sudah diisi tadi.
-Tuang 1 cangkir air panas di piring ovennya dan panggang dalam oven at 160 C sampai paprika hijau kelihatan coklat terpanggang.

Bisa disajikan dengan Turkish pilav dan yoghurt.



- 2 cups rice (rinsed and drained)
- 2 onions (finely chopped)
- ½ kg lamb meat (cut into small pieces)
- 200 g margarine
- Salt
- 1 dessert spoon thyme
- 1 tsp cinnamon powder
- 1 cup raisin (washed)
- 1 tsp pepper powder
- 1 dessert spoon dried basil
- 1 bunch of 'dill' (minced)

How to cook:
Heat  margarine, put onions and meat, stir 10 minutes. Add water, reduce heat, simmer for 15 minutes. Mix in rice and other ingredients except 'dill' and raisin, stir again. test the taste and cook again 10 minutes over low heat. If rice is soft, just mix in 'dill' and raisin, stir well ..... 

enjoy while it's warm.
- 2 su bardağı pirinç (ayıklanıp yıkanmış)
- 2 baş soğan( ince doğranmış)
- ½ Kg kuzu eti( küçük kuşbaşı)
- 200 gr margarin
- Tuz
- 1 tatlı kaşığı kekik
- 1 çay kaşığı tarçın
- 1 su bardağı siyah üzüm (yıkanmış)
- 1 çay kaşığı karabiber
- 1 tatlı kaşığı feşleğen
- 5 su bardağı su
- 1 bağ dereotu (ince kıyılmış)
