Selam everybody.....Merhaba from Turkey.
This is my kind of comfort food. Nothing more indulges and fulfills my longing for my mom's cook than this hearty, warming and rich flavor of this curry noodle. This bowl always my number one choice whenever İ want to be "selfish" in my dinner table 😏
Selfish.... yes cause my husband doesn't like this kind of curry. He prefer simple food with "simple" flavor 😔
Whenever İ want to cook curry..İ always remember my mom. She is the best cooks around the house. İ learnt many foods from her. We (me and my siblings) all grew up with my mom's heavenly yummy food. İ Love and always remember her curries especially crab and seafood curry.
And my curry noodle also inspired by my mom's curry style. Traditionally we eat curry with white steamed rice. But today İ like to combine my mom's style curry with another İndonesian staple; Mie or Noodle
Mantis Shrimp / Udang Ronggeng |
So to spice up my mid-week İ make this Mantis Shrimp Curry Noodle. İ saw this edible creature at my local farmer market few days ago. And just like saw and old friend İ didn't meet long time, enthused İ bought them all 3 kilos! The seller already know me as their regular customer who loves seafood so much...much much more than local people here 😁 so they gave me pretty cheap price--- hhhhmm...maybe because no one else would buy this mantis shrimp that look "scary" for local people... hhhh 😁
Mantis shrimp or mantis prawn is exotic (scary thing to my lil daugther 😄 ) edible sea creatures that rarely seen on my daily menu. Mantis shrimp had several name around the world. İn İndonesian it’s called Udang Ronggeng (It moves similiar to Ronggeng dancer) , or Udang Sentadu or Udang Lipan/ centipede (It looks like a centipede).
So....if you love being a culinary tourist in your own kitchen! Try my Mantis Shrimp Curry Noodle and Spice up your taste with this deliciously fragrant broth packed with egg noodles and juicy mantis shrimp. You can replace egg noodle with vermicelli or rice noodle or udon or any kind of noodle as your liking.
İngredients:
- 10 mantis shrimp (about 800 gr)
- 100 -200 gr shrimp / prawn
- 2 kaffir lime leaves
- 1 lemongrass, crushed
- 500 ml coconut milk ( İ use coconut cream)
- about 3 cup shrimp broth or hot water (4 cup if you need more broth/ stew for your curry)
- salt and sugar to taste
- enough cooking oil for stir fry
- Egg noodle/ rice noodle/ udon
- vegetables; bean sprout, red radish, sorrel leaves, red onion slice or your own choice
- coriander leaves for garnish
- lemon/ lime
- 6 shallot / 1 medium red onion
- 6 cloves of garlic
- 2 cm ginger *
- 2 tbsp desiccated coconut /or fresh one *
- 3 candlenuts, toasted *
- 2 cm fresh turmeric, toasted* (or use 1 tsp powdered)
- about 2 tsp coriander seed, toasted *
- 4-5 red chili pepper
- some birds eye chili (depend on how spicy you want to go)
Use mortar and pestle to ground the spice or immerse blender or use spice/ coffee grinder. Make sure they have purée and smooth paste form.
How to cook:
1) Clean and wash mantis shrimps and cut them in half. Cook noodle per direction and set a side.
2) Heat about 4 tbsp oil in big pan and sauté curry spice paste with kaffir lime leaves and lemongrass until aromatic and oily- the paste looks separated from the oil. Add in mantis shrimps and prawn stir until they change in color. Add shrimp broth/ hot water stir to combine and close the lid and let it bubbling.
3) Mix in coconut milk and stir gently continuously until it bubbling again. Spice with salt and sugar, check the taste before heat off your stone.
How to serve:
Arrange noodle and other vegetables in a bowl, then pour with hot curry stew. Serve immediately with sprinkle of coriander leaves, lime juice and sambal as optional.

Udang ronggeng ada yang menyebutnya udang lipan atau udang sentadu. Bahasa İnggrisnya Mantis shrimp. Menu yang jarang-jarang saya temui sejak tinggal di Turki.
Jadi pas beberapa hari lalu ketemu udang ronggeng ini di pasar, senangnya minta ampun....sudah terbayang aneka menu exotic khas İndonesia buat tombo kangen akan kampung halaman dan masakan ibu saya.
Resep Mia kari udang ronggeng

Bahan-bahan:
- 10 ekor udang lipan/ udang ronggeng (kurleb 800 gr). Bersihkan dan potong menjadi 2 bagian
- 100 -200 gr udang
- 2 daun jeruk purut
- sereh, geprak
- 500 ml santan kental
- kurleb 3 gelas kaldu udang/ air panas (bisa ditambah 1 gelas lagi jika tdk ingin kuah terlalu kental)
- garam dan gula sesuai rasa
- minyak goreng untuk menumis secukupnya
- sayuran misal; taoge, irisan bawang bombay merah, kol atau sesuai selera
- daun ketumbar untuk taburan
- jeruk limau
- mie telur atau bihun atau bisa udon
- 6 bawang merah
- 6 bawang putih
- 4-5 cabe merah keriting
- 2 cm jahe, sangrai *
- 2 sdm kelapa parut, disangrai *
- 3 kemiri, sangrai*
- 2 cm kunyit, sangrai* (or use 1 tsp powdered)
- 2 sdt ketumbar, sangrai *
- cabe rawit sesuai selera pedasnya
Cara memasak:
Tumis bumbu halus dengan daun jeruk dan sereh hingga harum dan berminyak. Masukkan udang ronggeng dan udang, aduk hingga berubah warna. Masukkan kaldu udang/ air panas dan masak hingga mendidih.
Masukkan santan dan bumbuhi dengan garam dan gula, cicipi rasa sesuai selera. Masak hingga kuah kembali mendidih.
Masak mie telur atau bihun sesuai petunjuk.
Sajikan dengan mie dan sayuran lain sesuai selera. Taburi dengan daun ketumbar dan perasan jeruk nipis/ limau.
