As İ mentioned on my previous post, chicken and poultry are most repeatable menu on our dinner table. İt's cheap and my kid's fave protein source.
And my İndonesian grilled chicken is my fave! Please check my post here and here for the recipes.
And today İ will share another delicious grilled chicken with Piri piri marinate sauce İ made before. The spicy savory sour of the piri piri sauce adding the fiery on your chicken (or poultry). You gonna love it.
Making this piri piri chicken is pretty simple, also faster if you have ready to use piri piri sauce you make in ahead before. Check this link for making piri piri sauce in advance.
Every 1 kg chicken (other poultry) you will need about ½ cup of piri piri sauce plus for basting during grilling. Or one whole chicken (about 2 kg) you will need about 1½ cup plus basting during grilling.
Marinate the chicken with the sauce and keep in fridge at least 3 hours before grilled / roasting.
You may prepare the marinating a night before to be grilled in the next day.
İngredients and how to make:
- 1 kg chicken thigh and leg
- pinch of salt and black pepper
- ½ cup piri piri sauce and more for basting
Keep in refrigerator at least 3 hours or over night.
Grilled over char coal until done. Basting with the remaining piri piri sauce during grilling.
Roast the chicken using oven. Pre heat oven at 190-200°C. Roast chicken for about 25-30 minute or until done. brush with remaining sauce during roasting.

Assalamu'alaykum.... Merhaba dari Türki.
Hari ini saya bikin ayam bakar piri piri yang rasanya gak asing bagi lidah İndonesia saya. Enak banget. Perpaduan bumbu pedas yang 'garlicky' dengan paduan rasa asam 'savory' bikin ayam bakar piri piri ini menjadi menu yang sering saya sajikan bagi keluarga.
Piri piri chicken adalah sajian ayam bakar yang berasal dari Portugis. Diyakini meyebar hingga ke Afrika sampai Afrika selatan, makanya Piri piri ini juga lazim dan umum menjadi masakan beberapa bangsa di benua Afrika.
Rasa bumbu ayam bakar piri piri ini sekilas mirip ayam bakar khas İndonesia, makanya saya suka sekali dan keluarga saya juga bisa menikmatinya karena rasanya tidak terlalu pedas.
Karena sering bikin nih ayam bakar... akhirnya saya bikin bumbu marinate yang siap pakai kapan saja. Dengan bumbu piri piri sauce ini masak ayam bakar jadi lebih ringkas dan cepat.

Untuk 1 kg ayam diperlukan kurleb ½ cup piri piri sauce siap pakai plus untuk olesan selama dibakar. Tapi untuk 1 ekor ayam ukuran besar (kerleb 2 kg) pakai bumbunya sekitar 1½ cup plus untuk olesan.
Bahan dan cara membuatnya:
- 1 kg paha dan kaki ayam
- garam dan merica bubuk secukupnya sesuai selera
- ½ cup piri piri sauce plus untuk olesan selama dibakar
Bumbuhi ayam dengan garam dan merica secara merata.
Masukkan kedalam plastik ziplock lalu masukkan bumbu marinate, balurkan dan pijat supaya bumbu meresap.
Simpan dalam lemari es kurleb 3 jam atau semalaman sebelum dipanggang/ bakar.
Bakar diatas arang hingga matang sambil diolesi sisa bumbu.
Jika dibakar dalam oven, panaskan dulu oven suhu 190-200°C, lalu panggang ayam kurleb 25-30 menit atau sampai matang. Olesi sisa bumbu selama dipanggang.
