No, it's not just regular roll cake with butter cream or jelly filling.. it's roll cake made from spinach.

Yes... this is my kid's friendly roll cake recipe. İ was inspired by my previous Spinach Cake which liked by my picky kid. Also my spinach chiffon cake was become my family fave.
This spinach roll cake is easy to make also delicious. You barely can taste the spinach in it or smell it. No body will know it make with a lot of nutritious vegetable until you tell them 😍

İ am the mother who always struggled gave my kid vegetables. When she saw something green or red or anything not protein in her food..she would get rid of it 😵
That was until these lately..  me and her father slowly convince her about eating her Vegetable and fruits. Not all though, but she start to enjoy some. 
For example she will eat her çiğ köfte (meatless raw kofta) with lettuce. Or some broccoli but in small pieces form 😊

One vegetable she doesn't want to eat until now; Spinach!
So İ keep smuggle spinach in any thing she couldn't find or even taste it 😊 Like this Spinach Roll Cake. With delish cream cheese filling as her fave, she enjoy this cake 2 slices at same time 😏

So today I post this yummy recipe for you as well. İt's fail proof, easy and for sure,kid's friendly.. The cake was so moist and delicious...really..you will not take only one slice 😋

Spinach Roll Cake with Cream Cheese filling

For baking tray 35 x 35 x 4 cm Or 40 x 30 x 4 cm
İngredients for the cake:
💚 6 medium egg, separated yolks from white. Room temperature.
💚 70-75 g spinach, leaf part only
💚 60 g milk
💚 60 g vegetable oil
💚 ½ TBsp vanilli essence / extract/ paste
💚 110 g AP flour
💚 ¼ tsp salt
💚 110 g caster sugar

How to make:

1) Pre heat oven at160-170°C. Line baking tray with parchment paper. Using hand blender or blenjer jar, blend spinach with milk and oil util really smooth.

2) İn big bowl, mix egg yolks, vanilla and smooth spinach. Whisk until well blended. Then sift in AP flour, continue to whisk until smooth and well mixed. Set a side. See picture #1 and #2 below.

3) İn another grease free bowl, put egg white and salt then start to whip until really foamy. Gradually add in caster sugar in three stages while continue to whisk on high speed. Whisk the white until almost hard peak form. See pict #3. 

4) Add meringue to green batter in three batches. Fold nicely each addition. Pour into prepared pan. Rap the pan few times to remove air bubble traps in batter.

6) Bake in pre heated oven about 25-30 menit, or until inserted tooth pick comes out clean and when you gently touch the surface it will spring back.
Note: Recognize your oven condition. Every oven gives different baking result and time.

7) Remove from oven and let it rest over cooling rack. Spread the filling (recipe below) and start to roll from longer side. Roll it very tight and wrap with another baking paper. Keep in fridge about 30 minutes before slice it.

Cream cheese filling:
💚 250 g cream cheese, room temperature
💚 55 gr butter, room temperature
💚 1 tsp vanilla
💚 110-130 g icing sugar
💚 100 g white cooking chocolate, melted 

Beat cream cheese, butter and vanilla just until smooth, beat in icing sugar little by littie while whisking. Then whisk in melted white chocolate.

Sering berantem dengan si kecil nggak sih gara-gara ogah makan sayuran. Kadang saya gregetan dan capek kalau terus menerus paksa dia makan sayuran. 😄

Akhirnya selalu cari cara untuk menyusupkan sayuran ke makanan dia tanpa dia ketahui bahwa ada sayuran di makanan dia. Mulai dari makanan untuk lunch box dia sampai kudapan buat teman minum susu. 
Salah satu resep andalan saya ya ini. Bolu bayam, selain rasanya yang yummy, aroma dan rasa bayampun tidak kentara. Yuk dicoba juga. 👯

 Bolu gulung Bayam dengan cream cheese filling

untuk loyang 35 x 35 cm atau 40 x 30 cm
💚 6 telur ukuran sedang, pisahkan kuning dan putihnya, SUHU RUANG
💚 70-75 gr bayam bagian daun saja
💚 60 g susu cair
💚 60 g minyak
💚 ½ sdm vanilli essence / extract
💚 110 g terigu serba guna
💚 ¼ sdt garam halus
💚 110 g gula kastor (gula pasir butir halus)

Cara membuat:

1) Panaskan oven suhu 160-170°C. Alasi loyang dengan kertas baking, sisihkan. Haluskan daun bayam bersama susu dan minyak dengan blender hingga benar-benar halus.

2) Campur jadi satu; 6 kuning telur, vanilla dan bayam yang sudah diblender halus. Aduk dengan sendok kayu atau wire whisk hingga tercampur rata.
Ayak dan campurkan tepung terigu, aduk lagi hingga rata. Sisihkan.

3) Kocok putih telur dan garam dalam wadah yang bersih, kocok hingga berbusa banyak. Masukkan gula kastor sedikit demi sedikit sambil terus dikocok hingga stiff peak.

4) Campurkan meringue ke adonan kuning telur dalam 3 tahap, aduk balik tiap kali penambahan hingga rata.
5) Tuang ke loyang yang sudah disiapkan, ratakan ke tiap sisi loyang. Hentakkan loyang ke meja beberapa kali untuk mengelurkan gelembung dalam adonan.

6) Panggang pada suhu kurleb 25 menit, atau hingga permukaannya membal jika disentuh.
Note: kenali oven masing-masing, kondisi yang berbeda menghasilkan panas dan waktu memanggang yang berbeda.

7) Angkat dari oven dan dinginkan diatas rak pendingin. Balikkan dan kelupas kertas bakingnya, olesi dengan filling lalu gulung dan padatkan. Bungkus dengan kertas baking lain yang bersih dan simpan dalam lemari es kurleb 30 menit sebelum dipotong.

Cream cheese frosting:
💚 250 gr cream cheese, suhu ruang
💚 55 gr mentega, lembekkan suhu ruang
💚 1 sdt vanilla
💚 110-130 gr gula icing
💚 100 gr wcc, lelehkan 

Mixer cream cheese, mentega dan vanilla hingga lembut, masukkan gula icing sedikit demi sedikit sambil dimixer pelan hingga rata, sambil masukkan cokelat putih leleh. 
Penambahan gula icing bisa kurang atau lebih sesuai konsistensi frosting yang diinginkan.
Masukkan dalam piping bag dan simpan dalam lemari es hingga siap digunakan.
