Çökertme kebabı (pronounced 'Ch'kertme kebab') is a type of kebab from Anatolia. It's a lamb or veal or beef steak served with fried potatoes, garlic yogurt and tomato sauce. Grilled tomato and banana chili pepper also served as a side.
This dish is famous from Bodrum and Muğla province area of South West Turkey.
The dish's name derived from a village's name in the Milas district of Muğla province, Çökertme köyu.
This dish is a restaurant-style that now people choose to make it at home.
The dish has four elements to prepared; The lamb/ beef strip steak, tomato sauce, garlic yogurt sauce, and fried potato.
To serve it, simply arrange the fries on the plate then flush with garlic sauce. Add the meat steak on to it then pour with tomato sauce. To get the real deal of Turkish food, hot boiling good quality of butter pour over the dish right away before eating it. It's optional for you if you want to skip the boiling butter, but as I said nothing can compare the sound and smell of butter heat your dish, it's Turkish food signature.

Even there are four elements to prepare, this dish is actually super easy and quick choice for the dinner menu for a big crowd.
You can make garlic yogurt sauce and tomato sauce in ahead. Sometimes I use a store-bought frozen potato to cut the time.
Marinate the steak at least 4 hours or overnight to get a deep flavor.

Ingredients:
🍴 500 gr lamb or beef sirloin, cut into thin long strip
Make about 4 shares
🍴 500 gr lamb or beef sirloin, cut into thin long strip
🍴 4-5 Tbsp olive oil
🍴 1 tsp salt or to taste
🍴 1 tsp black pepper powder (or white)
🍴 1 tsp smoked paprika powder
🍴 pinch of cumin powder
🍴 generous pinch of dried/ fresh thyme
🍴 2 Tbsp of butter (for stir fry)
Marinate the meat:
Mix everything except butter in a bowl. You can keep in a sealed plastic bag and keep in the refrigerator at least 4 hours.
for tomato sauce:
🍴 2 big tomatoes, skin off and finely grated
🍴 2 cloves of garlic, pureé
🍴 1 Tbsp of tomato paste ( you can mix with chili paste)
🍴 1 cup of water
🍴 1 tsp salt
🍴 1 tsp sugar
Potato fries
🍴 about 500 gr potato ( you can use store-bought), cut into thin match stick
🍴 Enough oil for deep fry
🍴 2-3 cloves of garlic
🍴 pinch of salt
🍴 1 cup of thick yogurt
Making garlic yogurt sauce:
Using mortar and pestle puree garlic and salt. Add yogurt and mix. Set aside.
About 250 gr good quality butter for serving
How to make:
When you are ready to cook, you can multiple tasks, by making the sauce, fry the potato, and making the kebab together.
Cut the potato into thin julienne cuts. Wash until the water clear from the starch. Drain and layover a clean kitchen towel.
Meanwhile, heat enough cooking oil for deep fry. Fry the potato until golden brown and crunchy. Set aside.
Make the tomato sauce:
Mix everything and place it into a dip saucepan. Cook over medium heat until bubbling. Set aside.
Make the steak:
Heat the butter in a pan over high heat, then cook the meat until changed in color, and water from the meat gets dry. Stir fry until meat tender and cooked. You may add a little amount of water if your meat not yet tender. Check the taste, you may add more salt or pepper.
How to Assemble the dish:
Place the fries on the plate then flush with yogurt sauce. Pour with tomato sauce. And Add the meat on top.
You can melt some butter, add red chili flake for adding some heat. When butter bubbling pours over the dish.
Serve hot immediately with ember-roasted banana chili pepper.

Hari ini saya ingin berbagi salah satu masakan tradisional Turki "Çökertme Kebab". Nama makanan ini konon diambil dari nama sebuah desa di provinsi Muğla bernama Çökertme köyu--asal muasal makanan ini. Köy berarti desa dalam bahas Turki.
Makanan ini juga terkenal dan banyak dimasak oleh penduduk kota Bodrum yang lokasinya memang masih dalam wilayah Turki barat daya.
Makanan ini terdiri dari steak domba/ kambing atau sapi yang disajikan dengan kentang goreng, saus yogurt bawang putih, dan saus tomat. Biasanya disajikan bersama cabe hijau besar dan tomat bakar.
Hidangan ini adalah menu restoran yang kini banyak dipilih orang untuk dibuat di rumah juga.
Memasaknya terbilang mudah, hanya saja butuh kesabaran karena makanan ini terdiri dari 4 komponen yang nantinya disusun diatas piring ketika akan disajikan. Dinikmati bersama roti khas Turki. Sebelum disajikan siram dengan mentega yang dipanaskan hingga mendidih.
Apa saja yang perlu disiapkan?
1. kentang yang diiris menyerupai korek api lalu digoreng.
2. Saus tomat homamde (bukan saus toat botolan itu ya),
3. Saus yogurt berbumbu bawang putih.
4. Steak daging.
Naahh.. bagi kalian yang pengen coba makanan Turki, sekarang saatnya.
Resep masakan Turki; Çökertme Kebabı

Bahan-bahan:
🍴 500 gr daging kambing atau sapi. Iris tipis memanjang.
kentang goreng
🍴 500 gr daging kambing atau sapi. Iris tipis memanjang.
🍴 4-5 sdm minyak zaitun
🍴 1 sdt garam atau sesuai selera
🍴 1 sdt merica bubuk
🍴 1 sdt bubuk smoke paprika
🍴 sejumput kecil cumin bubuk
🍴 kurleb 1 sdm daun thyme kering
🍴 2 sdm mentega (pisahkan untuk menumis)
Campur semua bahan diatas kecuali mentega untuk menumis. Rendam (marinate) daging minimum 4 jam agar meresap.
Saus tomat:
🍴 2 buah tomat ukuran besar, kupas kulit dan parut halus
🍴 2 siung bawang putih, parut halus juga
🍴 1 sdm pasta tomat (bukan saus tomat)
🍴 1 gelas air
🍴 1 sdt garam
🍴 1 sdt gula
kentang goreng
🍴 kurleb 500 gr kentang ( bisa juga pakai kentang frozen), potong korek api
🍴 minyak goreng untuk menggoreng
Saus yogurt bawang:
🍴 2-3 bawang putih
🍴 sejumput kecil garam
🍴 1 gelas yogurt tawar kental (khas yogurt Turki)
kurleb 250 gr mentega kualitas bagus (untuk disajikan)
Pasta tomat / salça |
Cara membuat:
Jika semua bahan diatas sudah siap dan waktunya masak, kita bisa multi fungsi masak semuanya hampir bersamaan.
Membuat saus yogurt:
Haluskan bawang putih bersama garam. Lalu campurkan yogurt, aduk rata. Sisihkan.
Membuat kentang goreng:
Kupas dan potong kentang bentuk korek api lalu cuci beberapa kali sampai airnya bening. Tiriskan dan keringkan dengan handuk dapur/ tissue dapur.
Goreng hingga garing. Sisikan.
Membuat saus tomat:
Campur semu bahan untuk membuat saus tomat daiam panci saus, lalu masak dengan api sedang sambil diaduk hingga mendidih. Sisihkan.
Memasak steak daging:
Panaskan mentega, lalu masak daging yang sdah direndam bumbu. Masak hingga matang dan empuk. Jika masih keras bisa ditabah air secukupnya sampai daging empuk. Cicipi rasanya. Pada tahap ini bumbu-bumbu bisa ditambahkan sesuai selera. Bumbunya sama dengan yang dipakai merendam.
CARA MENYAJIKAN
Taruh kentang goreng diatas piring saji lalu siram dengan secukupnya saus yogurt. Susun daging steak diatasnya lalu siram dengan saus tomat.
Segera panaskan mentega (kualitas harus bagus) hingga mendidih lalu segera siramkan diatasnya secukupnya saja.
Sajikan segera bersama tomat bakar dan cabe besar hijau bakar. Biasa dinikmati dengan roti khas Turki.
