In Turkey there are a few types of Poğaça... some use yeast (they call mayalı Poğaça) and some use baking powder. My post now it's yeast poğaça type.

No yeast version close to pastry texture or shortbread more than bread-y texture. For the non-yeast version, you can visit my previous post here. Or Check the category section " Börekler" for more variation.

And as I mentioned before, my today post is poğaça with yeast- so I can call it breakfast bread. Because the texture is more to soft bread (typical Asian soft bread). Poğaça have many topping and filling variation.

And today I will share my repeatable poğaça recipe topped with sausage and cheese. I add some ketchup and mayonnaise to it to enrich the flavor. Believe me, you and your family especially kids will love them!

The recipe is very easy and failproof. Everybody can make it. It's a pretty straightforward recipe. You mix all wet ingredients first then gradually add the flour and salt at the end.
Make sure your yeast is still in a good condition and still active. 
How to check your yeast is just to mix a small amount in lukewarm water and let it sit for about 8-10 minutes (sometimes less). If it's bubbling, it means your yeast still active and you are ready to go.

Sosisli Peynirli Poğaça / Turkish style Sausage and Cheese Bread Pastry

Make 24 pcs

Ingredients:
🌭 200 gr warm water
🌭 200 gr warm milk
🌭 100 gr vegetable oil
🌭 3 tsp (11 gr) instant dry yeast
🌭 45 gr (3 Tbsp) sugar
🌭 675 gr AP flour (add gradually)
🌭 1½ tsp (10 gr) fine salt

Topping:
🌭 24 pcs mini beef/ turkey/chicken sausage
🌭 shredded mozzarella cheese
🌭 tomato ketchup
🌭 mayonnaise
🌭 dried thyme or parsley
🌭 ±3 Tbsp cream or milk

How to Make:

1) In a big bowl mix together warm water, warm milk, vegetable oil, yeast, and sugar. Using a spatula, mix well. Gradually add the flour and mix with a spatula until all flour is covered by wet ingredients. Then add in the salt.

2) Now start kneading the mixture. You use an electric mixer or knead by hand. Knead the dough until you get a smooth and elastic dough. Cover and let it rest until double in volume.

3)  Meanwhile, soak mini sausages in hot boiling water for a few minutes. Then drain well.

4) Take the dough and punch it. Lightly knead a few times before shaping into a ball. Divide the dough into 24 equal parts. I weigh my dough 50 gr each. Shape each part into a small ball using a rolling pin and flatten it into an oval shape (see my video on how to shape). Arrange it over a baking tray lined with parchment paper. Give enough space to each other.

5) Do the same procedure to the dough until finished. Loosely cover the dough with a plastic sheet/ kitchen napkin until noticeably puffy. Meanwhile, preheat the oven at 170-180℃.

6) Brush the dough with cream or milk. Place the mini sausage in the middle of the puffed dough, press down gently the sausage into the dough. Topped with shredded mozzarella. Then spritz alternately with mayonnaise and ketchup. Sprinkle with dried thyme or parsley.

7) Bake in preheated oven for 15 to 18 minutes, until golden. Turn the tray halfway on baking time.
Remove them from the oven, and brush the sides with melted butter (optionally). This will give the buns a satiny, buttery crust.
Cool the buns on a rack.
Note: Time and temperature of baking are only guidance, adjust to your own oven condition.

Pogačice (nama lain dari pogača) adalah sejenis pastry.
Poğaça juga umum ditemui di Bosnia Herzegovina, Bulgaria, Kroasia, Slovenia, Republik Makedonia, Serbia (di Serbia disebut roti Beograd), Montenegro, Hongaria, Yunani (di mana disebut Bogatsa Μπογατσα) dan Turki (di mana disebut poğaça) dengan variasi yang banyak. Di Austria disebut pogatschen.

Jadi makanan ini khas Eropa timur karena selain terkenal di Türki, juga menjadi makanan umumnya penduduk negara-negara tersebut diatas.

Poğaça biasa disajikan sebagai menu sarapan pagi hari. Atau ketika ada acara kumpul-kumpul para wanita Türki di siang hari disajikan dengan aneka salad, biasanya bulgur salad-kısır, salad kentang atau lainnya.

Biasa dijual di toko-toko roti dan pastry hangat-hangat di pagi hari sampai tengah hari saja bersama dengan menu sarapan pagi lainnya seperti simit (Turkish bagel).

Ada beberapa jenis poğaça yang umum ditemui disini. Selain variasi isiannya juga dari jenisnya. Ada poğaça yang menggunakan ragi, sehingga teksture poğaça jenis ini lebih seperti roti manis--seperti yang akan saya share hari ini.

Ada pula jenis poğaça yang menggunakan baking powder jadi tekturnya mirip short bread, seperti poğaça isi keju yang sudah saya posting sebelumnya.

Sosisli Peynirli Poğaça / Roti Poaca khas Turki topping sosis keju

Hasil jadi 24 buah

Bahan-bahan:
🌭 200 gr air hangat
🌭 200 gr susu hangat
🌭 100 gr minyak sayur
🌭 3 sdt (11 gr) instan yeast
🌭 45 gr (3 sdm) gula
🌭 675 gr terigu serba guna (tambahkan secara bertahap)
🌭 1½ sdt (10 gr) garam

Topping:
🌭 24 buah sosis mini (bisa ayam/ sapi/ kalkun)
🌭 Parutan keju mozarela
🌭 saus tomat
🌭 mayones
🌭 daun pasrley kering atau oregano
🌭 ±3 sdm krem encer atau susu 

Cara membuat:

1) Dalam mangkok/ baskom besar campur jadi satu; air hangat, susu, minyak goreng, gula, dan ragi. Aduk-aduk dengan spatula hingga tercampur rata.
Lalu masukkan terigu secara bertahap, aduk hingga semua tercampur rata. Terakhir masukkan garam.

2) Lalu uleni hingga donan kalis elastis. Bisa menggunakan elektrik mixer atau diuleni manual. Tutup dengan serbet lembab atau plastik wrap dan istirahatkan hingga mengmbang dua kali lipat.
Note: lamanya tergantung suhu dan kelembaban tiap ruangan ya, bisa cepat bisa lebih lama.

3)  Sementara itu, rendam sosis dengan api panas mendidih beberapa lama sampai airnya hangat. Tiriskan.

4) Setelah adonan mengembang, tinju untuk mengeluarkan udara. Lalu uleni pelan saja dan bulatkan. Bagi adonan menjadi 24 buah sama rata. Saya timbang adonan 50 gr per buah.
Bulatkan tiap bagian, lalu dengan rolling pin, gilas hingga pipih berbentuk oval agak panjang. Susun diatas baking tray beralas kertas baking. Beri jarak satu sama lain.

5) Lakukan hingga semua adonan habis. Tutupi dengan lembaran plastik atau serbet hingga terlihat mengembang.
Sementara itu panaskan oven suhu 170-180℃.

6) Setelah terlihat mengembang, olesi permukaan masing-masing dengan krem atau susu. Lalu tekan sosis mini dibagian tengah adonan sambil ditekan agar membentuk cekungan di tengah. Taburi parutan keju, semprotkan saus tomat dan mayones bergantian. Terakhir taburi parsley atau oregano kering.

7) Panggang dalam oven kurleb 15 to 18 menit, atau sampai matang. Angkat dari oven lalu segera olesi pinggirannya dengan mentega leleh (opsional). Taruh diatas rak pendingin.
Note: Suhu dan waktu memanggang sesuaikan dengan kondisi oven masing-masing.
