Sausage Bread Roll / Roti gulung Sosis

Selam. Merhaba from Türkey everybody 🙋

Bread is a staple here at my house. I bake bread almost every day. Any kind of bread. For daily consume I bake no-knead artisan-style bread once in every two days-but if we get guess come over our house I bake more.

Local bread here has like other European bread which has crusty exterior and chewy soft inside. Different from Asian style bread which mostly has cotton soft in texture and most probably has a slightly sweet taste.

Including Indonesian people. Bread is not staple for us. Yes sometimes we eat it for breakfast or brunch. But mostly we enjoy bread as snacking or "dessert" that is why our bread has soft in texture and slightly sweet. 
We vary our soft bread start from beef/ chicken floss until jam. Sausage, cheese, chocolate, banana, pineapple, meat, chicken... you mention .. we have all 😊




Just like what I am about to share today, is mini sausage roll soft bread. İt's perfect for lunch box or picnic box. 
You can freeze them if you have left over but I doubt you will have left over cause this mini delish roll bread is ssoo Goodd 👍


Sausage Roll-Soft Bread recipe

Make about 18 mini sausage roll 
İngredients:
🍞 300 g bread flour (or just AP flour if you don't have one)
🍞 10 g milk powder
🍞 40 g sugar
🍞 5 g ( 1 tsp) dry yeast
🍞 1 medium egg
🍞 170 gr milk
🍞 35 gr butter, soften
🍞 1 tsp salt
🍞 some mini sausage, soak in boiling water for a few minutes, drain.

For spread over the bread after bake:
🍞 butter, soften

How to make:

1) İn a mixing bowl, mix the flour, milk powder, sugar, and yeast. Make a well in the middle and pour milk and egg. Start to knead until it comes together. Knead in butter and salt. You can use an electric mixer or manual. Continue kneading the dough until it really smooth, elastic, not tacky on your finger, and reach windowpane stage. 
How to perform windowpane stage: take a piece of your dough then stretching it out wide until it is nearly translucent without ripping.
You want to do this to make sure that your gluten is sufficiently developed on. This stage is important to make your bread really soft as cotton longer.

2)  Round the dough and place over lightly grease bowl, cover with damp towel kitchen or plastic film and rest it until double it size. How long it will be depend on your room temperature. Just place it in the warmest place in your house.

3) Flatten the dough to remove air bubble then divide the dough into equal part. I weigh my dough 30 gr each. Using your palm roll each ball into long resemble log (about 15 cm long). 
Wrap each sausage with the rolled dough leave about 2 cm unwrap each side. Arrange the roll over baking tray lined with parchment paper.
Let them rest again about 20 minutes.

4) Pre heat your Oven at 170-180°C. Brush the roll with milk before bake. Bake your roll about 20-25 mnt or until golden brown.
Note: Adjust temperature and baking time according to your oven condition.

Immediately brush the roll with soft butter right after out from oven. Chill over cooling rack.

Assalamu'alaykum........Merhaba dari Türki semuanya.

Pernah mati gaya nggak sih mom urusan isi lunch box si bocah? Bingung variasi menu yang enak, mengenyangkan sekaligus hygienis. Kalau masalah hygienis sih homemade inshaallah lebih terjamin ya moms... Secara kan kita sendiri yang bikin, kualitas bahan dan kebersihan memasak sudah tentu kita yang jaga.

Naahh..kali ini saya ingin bagi resep sosis roll bread mini yang biasa saya buat untuk keluarga. Suami saya suka banget.... anak saya apalagi. Terutama pas hangat-hangat keluar dari oven... anak dan bapaknya bisa abisin 5 potong masing-masing sekali makan 😤

Roti sosis ini termasuk cotton soft, beda banget dengan roti untuk makanan pokok orang Turki yang berkulit crusty dan keras tapi liat cenderung lembut bagian dalamnya. Kalau roti empuk seperti roti sosis ini cuman untuk sarapan atau camilan saja....kurang nendang katanya...hihihihi...😤

Saya bikin roti sosis dengan resep ini sudah sejak 9 tahunan dan sudah pas lah. Simple bikinnya seperti roti manis kebanyakan. Ukurannya saya pakai gram semua biar gampang.
Kadang saya pakai resep ini juga untuk isian keju atau coklat.. tinggal divariasikan saja ya moms.

Resep Roti gulung Sosis Mini

Menjadi kurleb 18 mini roti sosis
İngredients:
🍞 300 g tepung terigu serba guna
🍞 10 g susu bubuk
🍞 40 g gula
🍞 5 g ( 1 sdt) ragi instant
🍞 1 telur
🍞 160 g susu cair
🍞 35 gr mentega, suhu ruang
🍞 1 sdt garam
🍞 sosis mini, rendam dalam air mendidih beberapa mnt, saring dan sisihkan.

Olesan setelah baking:
🍞 mentega suhu ruang

Cara membuat:

1) Dalam wadah besar atau bowl mixer, campur semua bahan kering; tepung, susu bubuk, gula dan ragi instant. Buat lubang ditengah-tengah. Tuang susu dan telur. Lalu uleni hingga tercampur rata (belum elastis). Lalu campurkan mentega dan garam. Lanjutkan mengulen sampai elastis, tidak lengket di tangan. 
Moms bisa gunakan electric mixer. Atau kalau gak ada, resep ini "kneading friendly" kok..alias mudah diulen manual aja.
Terus uleni sampai adonan mencapai tahap windowpane. Lihat gambar dibawah untuk ilustrasinya.
Cara mengetes apakah adonan sudah windowpane:  ambil adonan dan coba rentangkan lebar tanpa robek. Kalau sudah mencapai tahap itu berarti pengulenan selasai.
Note: Proses menguleni hingga tahap windowpane ini memastikan gluten dalam adonan sudah terbentuk sempurna. Proses ini penting untuk menghasilkan roti dengan tekstur halus dan lembut/ cotton soft yang lebih awet.

2) Bulatkan adonan dan taruh dalam wadah bersemir minyak tipis. Tutup dengan plastik film dan istirahatkan hingga mengembang dua kali lipat volumenya. Lama proses fermentasi tergantung dari suhu dan kelembaban ruangan masing-masing ya mom.

3) Kempiskan adonan dan timbang masing-masing 30 gr. Gilas memanjang dengan telapak tangan saja memanjang kurleb 15 cm an. Lilitkan pada sosis, sisakan kurleb 2 cm di tiap sisi. Atur diatas loyang beralas baking paper. Atur jaraknya agar tidak berdekatan. İstirahatkan lagi kurleb 20 menit.

4) Panaskan oven suhu 170-180°C 10 mnt sebelumnya. Olesi roti dengan susu UHT atau susu cair dan panggang 20-25 mnt atau sampai golden brown/ kecoklatan. Begitu keluar dari oven langsung olesi permukaannya dengan mentega. Dinginkan diatas rak pendingin.
