İ love apple.. specially green one..there's sour a bit sweet in it. Back few years ago.. İ remember İ ate green apple almost everyday before İ eat anything in my breakfast time. That's why there was always apples stock in my fridge. Nowadays İ still love to eat apple but if it's not season you hardly find any apple here... there is, but with triple or four time more expensive than when it's season.


Since İ like apple a lot..İ love to make them in many ways.... like making Oliebolen (Ducth donut balls) for example--my family love it that's why it become repeatable meal in our home. Or Apple pie with puff pastry, it's also great idea for special dessert. And some times İ just make apple jam as filling for my nastar cookies or mini apple pie ... And my today's post is apple strudel. İ make this apple strudel from baklavalık phyllo dough. This phyllo dough is usually for making baklava so it's very much thin and almost transparent. İ like using this kind of phyllo because gives crunchy layer on my apple strudel. My recipe below will make 2 logs apple strudel.


Baklavalık phyllo sheet

Ingredients:
  • 16 sheet baklavalık phyllo sheet--around 50 by 30 cm square (thinner than phyllo you make for börek)
  • about 600 gr apple (3 big apple). Peeled and slice thinly crescent
  • lemon juice from half lemon
  • 200 gr golden raisins
  • 200 gr dried blueberry
  • 100 gr chopped walnut (optional)
  • 50 gr fine grain breadcrumb
  • 100 gr brown sugar
  • pinch of salt
  • 2 tsp cinnamon powder
  • 150 gr butter, melted
For serve: Ice cream, heavy cream or whipped cream

How to:

Pre heat your oven at 160~170 C. Toss apples with lemon juice. Mix brown sugar and cinnamon, take about 4 table spoon from that sugar mixture and set a side. Mix in breadcrumb and salt into sugar-cinnamon mixture. Add apples, dried blueberry, raisins, and chopped walnut (if you use one). Toss to combine. Divide into 2 equal part.

Before you work with your phyllo sheet (or thaw it if it's frozen), get ready with damp towel cause this sheet will dry very quick! Take one phyllo sheet, put on your counter, cover your other phyllo with damp towel to prevent them drying. Brush phyllo sheet with melted butter then sprinkle with small amount of sugar cinnamon that you separated before. Do same procedure until you get 8 layer. You don't have to brush the 8th layer with butter and sugar. Scatter one part apple mixture at  1/3 part on phyllo sheet, roll once then fold both end side to sealed it.. continue roll until you get a log. Brush the surface with melted butter then sprinkle with sugar cinnamon. Do same method to other portion.

Bake for about 45~50 mnts or until surface are nice golden brown.

Serve warm with any cream / ice cream you choose.
