Assalamu'alaikum.... Merhaba from Turkey

Sesuai janji saya sebelumnya, saya akan bagi salah satu lauk pelengkap lontong cap gomeh yang saya buat untuk menu lebaran Idhul Fitri kemarin.. yaitu telur masak kecap. Menu ini salah satu menu favorit saya. Biasanya saya menyantapnya dengan nasi hangat dan kerupuk udang saja.

Dulu saya biasa menambahkan irisan cabe rawit hingga mendapatkan pedas kesukaan lidah Surabaya saya... Tapi belakangan ini sejak saya juga harus share masakan yang saya bikin dengan putri batita saya... saya kurangi rasa pedas baik dari merica atau cabe rawitnya supaya dia juga bisa menikmati makanan khas Indonesia seperti ibunya ^,^

Syukur Alhamdulillah dia suka semua jenis makanan lho...baik makanan Turki atau tahu-tempe-krupuk yang Indonesia banget... tinggal ngelatih lidah dan perut dia dikit-dikit agar sukai pedas juga, biar bisa nge-rujak bareng sama Mommy nya ntar....hehehehehe...

Ini resep yang biasa saya pakai (juga ibu saya) dari dulu. Untuk kemiri kadang saya tambahkan..kadang juga saya tidak pakai (tapi nambahin jumlah cabe merah dikit). Dan untuk kuahnya suka-suka juga ya..mau yang agak banyak atau kental banget (masaknya agak dilamain biar kuahnya nyusut)...




Bahan-bahan:
  • 10~15 butir telur, direbus hingga matang, kupas.
  • 2 ruas laos/ lengkuas, geprak
  • 2 lembar daun salam
  • 1 sdm gula merah sisir
  • 3~5 sdm kecap manis
  • 1 sdm garam atau sesuai selera
  • cabe rawit sesuai selera (optional)
Bumbu dihaluskan:
  • 5~6 cabe merah besar sekitar 150 gr
  • 2~3 butir kemiri
  • bawang putih 5~6 siung
  • bawang merah 5~6 siung
  • 1 sdt merica butir (bisa tambahin merica bubuk jika ingin lebih pedas)
  • minyak untuk menumis
Cara membuat:
  1. Tumis bumbu halus bersama, daun salam, laos dan cabe rawit (jika pakai), tumis hingga harum dan berminyak. 
  2. Masukkan telur rebus, gula merah, garam dan kecap manis. Tambahkan air sekitar 400 ml, aduk perlahan. Masak beberapa menit hingga kuah mendidih dan bumbu meresap, gunakan api kecil saja agar bumbu meresap sempurna. Cicipi rasanya, jika perlu tambahkan merica bubuk atau garam sesuai selera.
Siap disajikan.












RECIPE IN ENGLISH

This is one of my fave side dish. Usually I just simply eat this with hot steamed rice together with shrimp cracker. How to cook it's very simple. You should hard boil some eggs first. Then stir fry the spice paste with other ingredients (bay leaves, galangal, etc) then mix that boiled egg and kecap manis (sweet soy sauce), cook until spice permeate to eggs. You can see my egg's picture here.. when you halved the egg, white part gets brown, it means the spice really seep inside egg.

Ingredients:
  • 10 ~ 15 eggs, hard boiled, peeled.
  • 2 cm galangal, bruised
  • 2 bay leaves (daun salam)
  • 1 tablespoon palm sugar (you can use brown sugar)
  • 3 ~ 5 tbsp kecap manis (sweet soy sauce)
  • 1 tablespoon salt or to taste
  • birdseye chillies to taste (optional)
Ground Spices:
  • red chili 150 gr (5~6 )
  • 2 ~ 3 candlenuts
  • 5 ~ 6 garlic cloves
  • shallots 5 ~ 6 cloves
  • 1 tsp peppercorns (add more powdered black pepper if you prefer spicy)
  • oil for stir fry
How to:
Heat enough cooking oil (about 3 tbsp) on a wok. Stir fry ground spices together with bay leaves (daun salam), galangal, birdeye chillies (if use) until fragrant and oily. 
Mix in boiled egg, kecap manis, palm sugar and salt. Add approximately 400 ml water, gently stir and cook over very low heat until it boiling and thicken. Check the taste, you might add some black pepper powder or salt.

Serve warm with rice, sprinkle with fried shallot is even better.
