Dumpling is one of ancient food from east to west cuisine world. And it's lovable food to enjoy young to older generations.
Dumpling is my favorite choice when we talk about what food to accompany us for afternoon tea. Not only for snacking between lunch to dinner, but dumpling also satisfying meal for my brunch.

We can vary the dumpling filling start from fish, chicken, meat even vegetables. The cooking method also many, we can steam, boil, panfry (half boil), or even deep fry.

In Indonesia, we have many kinds of dumpling base on filling or how to cook it. Just like Bandung-style fish steamed dumpling "Siomay", with delicious umami peanut sauce, it's difficult to say no to the second plate.

Yes, I love fried dumpling indeed, it's so comforting food for me.

And today I will share another delicious fried dumpling made of shrimp. I mix it with chicken meat to balance the sweetness of shrimp and also to add texture to my dumpling. 
If using shrimp only the texture tends to be wet cause of the shrimp characteristic when it's grinding.

Making this is so easy and quick. Just prepare your shrimp pilled and cut chicken meat into small cubes. If you have minced chicken it's even better. I use boneless chicken thigh for my dumpling, but you can use the breast part as well.

For the wrapper, I use popiah wrapper. You can use wonton wrapper, store-bought, or make it homemade recipe here.

If you want to serve this dumpling right away, you can directly fry them right away. But this recipe can be made ahead and you can store them in the freezer. All you need to do is steam them after you wrap all the dumplings.

Fried Shrimp Chicken Dumpling

Ingredients:
🍤 300 gr chicken meat
🍤 200 gr shrimp
🍤 6 cloves of garlic, crushed
🍤 ½ red onion, shredded.
🍤 1 egg
🍤 5 Tbsp AP flour
🍤 1 Tbsp oyster sauce
🍤 1 Tbsp sesame oil
🍤 ½ tsp chicken bullion (optional)
🍤 1 Tbsp five spice mix
🍤 1 tsp pepper powder
🍤 2 tsp of salt or to taste
🍤 1 tsp sugar
🍤 3 spring onion, finely chopped
🍤 1 medium carrot, finely shredded
🍤 some wonton wrapper

How to make:

1) Place chicken meat, shrimp, crushed garlic, and shredded onion in a food processor then pulse until it smooth. 

2) Add in egg, flour, oyster sauce, sesame oil, five-spice mix, and chicken bullion (if using), and all other spices, continue to pulse until everything incorporated. At last pulse in chopped spring onion and shredded carrot. Check the taste by fry a small amount of dumpling dough. Correct the taste if needed.

3) Take one wonton/ popiah wrapper, spoon a small amount of dumpling dough, fold left-right sides like an envelope then roll tightly like mini popiah. Brush the end of the wrapper with egg white or flour+water to glue it.
Note: make-ahead tip. Heat a steamer pan until produce much steam, brush the steamer basket with cooking oil. Steam the dumpling for about 20 minutes. Remove from steamer basket and let it cool to room temperature. Layover a wide platter without touch each other and place inside a freezer for about 1 hour. Then move them into a ziplock bag and keep them in the freezer until you ready to fry. Defrost before frying.

4) Heat enough cooking oil in medium heat. Fry the dumpling until golden brown. Enjoy with sweet chili sauce or chili sauce and ketchup if you like.

Apa kabar? Inshaallah masih dikaruniai kesehatan ya. Di musim pandemi yang panjang ini menjaga kesehatan sangatlah penting dan menjadi agenda utama kita agar imun tubuh kita terjaga sehingga virus tidak gampang menyerang kita.
Selain menjaga sistem imun tubuh, kebersihan juga haruslah kita perhatikan. Mencuci tangah dan muka dengan sabun sesering mungkin.
Sebisa mungkin hindari juga kerumunan dan berada di tepat umum, sebab memutus rantai penyebaran adalah berusaha menghindari kontak fisik dengan orang lain.

Jika semua ihktiar sudah kita jalankan, tinggal kita banyak-banyak berdoa agar Allah menjauhkan kita dari segala macam penyakit. Mudah-mudahan pandemi ini segera berlalu ya. Rasanya sudah menjemukan dengan segala pembatasan-pembatasan selama musim pandemi ini. Sejak awal tahun 2020 lalu ya.... hingga awal 2021 ini. Kasihan anak-anak juga tidak bisa sekolah dan belajar tatap muka secara aman. Proses belajar tidak bisa maksimal kalau terus menerus dilakukan online.
Ekonomi juga pastinya bergerak lambat dan banyak usaha kecil yang terdampak pandemi ini.

Ya... topik favorit semua orang, makanan! 😃
Disini sedang musim dingin tapi cuaca tak menentu. Hujan jarang turun, apalagi salju... belum nongol tanda-tandanya. Padahal sungai dan wadu debitnya udah sangat memprihatinkan. Tiap Jum'at di masjid-masijid sini dipanjatkan juga do'a meminta hujan. Pemanasan global dan "climate change" itu nyata terasa disini teman. Kita (saya dan keluarga) mulai tahun lalu udah mulai sangat berhati-hati dalam memakai air.
Lho.. kok topiknya ganti "climate change" sih... hahahaha...Dasar emang saya nih... lagi doyan ngobrol ajah 😃. Maaf ya.

Kembali ke musim dingin artinya musim ngemil bagi saya...hahahaha... *alesan ya.
Wes pokoknya kali ini saya mau berbagi salah satu makanan terfavorit deh yaitu lumpia udang. Suka banget dengan lumpia udang ini, dicocol pake saus cabe ditemani secangkir teh panas... Masyaallah..nikmatnya.
Bikinnya pun gampang dan gak ribet. Tinggal masukin semua ke food prosesor lalu dibungkus pake kulit lumpia atau kulit pangsit lalu goreng deh.

Tapi kalau ingin simpan dan bikin stok, saya biasanya kukus dulu lalu simpan dalam freezer.
Jika ingin makan, diamkan dulu sampai suhu ruang lalu goreng dalam minya panas sedang.
Yuk, yang pengen coba juga, dijamin enak kok.


Lumpia Ayam Udang Goreng

Bahan-bahan:
🍤 300 gr daging ayam tanpa tulang
🍤 200 gr udang tanpa kulit
🍤 6 siung bawang putih,haluskan
🍤 5-6 siung bawang merah, haluskan
🍤 1 telur
🍤 5 sdm (60 gr) terigu
🍤 1 sdm saus tiram
🍤 1 sdm minyak wijen
🍤 ½ sdt kaldu bubuk (opsional)
🍤 1 sdm bumbu ngohiong (opsional)
🍤 1 sdt merica bubuk
🍤 2 sdt garam halus atau sesuai selera
🍤 1 sdt gula
🍤 3 daun bawang, iris kasar
🍤 1 wortel ukuran sedang, parut halus
🍤 kulit lumpia/ wonton secukupnya

Cara membuat:

1) Haluskan daging ayam dan udang dalam food prosesor. Masukkan bawang putih dan bawang merah halus, proses lagi sampai halus.

2) Masukkan telur, terigu, saus tiram, minyak wijen dan semua bumbu lainnya. Proses lagi sebentar asal rata. Terakhir masukkan daun bawang dan wortel, proses kembali hingga tercampur rata. Goreng sedikit untuk mencicipi rasanya, koreksi rasa sesuai selera.

3) Siapkan kulit wonton/ lumpia, sendokkan secukupnya adonan ditengah kulit wonton/lumpia. Lalu lipat seperti amplop sisi kanan-kiri lalu gulung menyerupai lumpia mini. Lakukan hingga semua adonan habis.
Tip: Lumpia udang bisa disimpan dalam freezer. Olesi kukusan dengan minyak titpis-tipis lalu kukus lumpia kurang lebih 20 mnt. dinginkan suhu ruang lalu susun di loyang datar jangan saling menempel dan simpan dalam freezer kurleb 30 menit. Setelah beku baru masukkan semuanya dalam kantok ziplock dan simpan dalam freeer sampai siap digoreng. Jika ingin menggoreng, cairkan hingga suhu ruang sebelum digoreng.

4) Panaskan secukupnya minyak. Goreng lumpia udang hingga matang. Sajikan dengan saus cabe atau saus tomat sesuai selera.
