You may remember my earlier post about homemade sweet chili sauce. I love that sauce. I can use it as a dipping sauce, brush it for my grilled corn or even marinate and cook.
Just like what I am going to share today. It's our favorite chicken in sweet chili sauce. I serve it with pasta and simple salad as a side dish.
It's actually my copycat version from one of the franchise restaurants here in Turkey. We love to go to that restaurant every weekend. The restaurant special serve fettuccine with any kinds of protein starting from salmon, beef, chicken, or turkey, serve with mix salad.
One of their menu which I love to order is "sweet chili soslu tavuk" or chicken in sweet chili sauce (picture below).

The restaurant version serves the chicken with fettuccine, but you can use tagliatelle, penne, or spaghetti. But if you want to substitute pasta with noodles, it!s absolutely okay. Sometimes I serve it with noodles as well.
If you use noodles, after you cook the sweet chili chicken, toss your cooked noodle in a wok/ pan which used for cooking the chicken before.
And making that menu at home is amazingly easy. Our family can save more than 100 turkish lira after making this at home.

Make 2-3 portions
Ingredients.
Marinate the chicken:
๐ฝ 400-500 gr chicken thigh, cut into strips (lengthwise)
๐ฝ 3 cloves of garlic, finely chopped
๐ฝ salt, and pepper to taste
๐ฝ 3 tbsp sweet chili sauce. Click here for homemade sweet chili sauce
For cooking:
๐ฝ 1 tbsp olive oil
๐ฝ 150-200 gr button mushrooms, sliced
๐ฝ ±¼ cup sweet chili sauce
๐ฝ Salt, and pepper to tasteFor pasta:
๐ฝ ±300 gr taglatele or fetuccine or spaghetti
๐ฝ generous amount of salt
๐ฝ olive oil
๐ฝ 200 ml cooking cream
๐ฝ fresh or dried parsley
How to make:
1) Marinate the chicken.
Cut the chicken thigh into long strips. You can use chicken breast as well if you like.
Place the chicken in a bowl, and add the chopped garlic, salt, and black/ white pepper.
Add about 3 tablespoons of sweet chili sauce. Toss well, cover, and let it marinate for at least 1 hour in the refrigerator.
2) Cook the pasta.
When you are ready to cook, boil enough water with a generous amount of salt.
Cook the pasta according to packet direction/ aldente.
Drain well and put back into the same pan. Add a generous glug of olive oil, and cooking cream toss well over the lowest heat. Cook for a few minutes only until the cream is absorbed by the pasta.
Remove from heat and add the chopped fresh parsley (or dried one). Set aside.
3) Cook the chicken.
While you are cooking the pasta you can cook the chicken on another stove.
Heat 1 tablespoon olive oil in a wok, saute sliced mushrooms until almost brown. Add in the marinated chicken and continue to stir fry until the chicken changes in color.
Check the taste, you may add more salt or pepper to your liking. Remove from heat.
4) Serve it.
Serve immediately with pasta and mix salad.

Masih ingat postingan saya yang lalu cara membuat saus sweet chili sendiri di rumah? Iya, salah satu saus yang serba guna dan cocok buat apa saja ya, baik cocolan maupun marinate.
Kalau belum coba, bisa diklik disini deh cara membuat sweet chili sauce sendiri di rumah. Itu bukan versi Thailand yang ada rasa asamnya ya, sweet chili saus yang saya bikin itu pedas manis saja. Jika ingin tambahkan rasa asam bisa ditambah sendiri sesuai selera. Tingkat kepedasannya bisa disesuaikan ya.
Naahhh... hari ini saya akan bagi resep kesukaan keluarga saya yang lain dengan memakai saus homemade sweet chili yang saya bikin sebelumnya ya.
Menu ini salah satu menu di restauran waralaba di Turki yang biasa kami kunjungi tiap akhir pekan.

Bahan.
Marinasi ayam:
๐ฝ 400-500 gr paha ayam, potong-potong (memanjang)
๐ฝ 3 siung bawang putih, cincang halus
๐ฝ garam, dan merica secukupnya
๐ฝ 3 sdm saus cabai manis. Klik di sini untuk homemade sweet chili sauce
Untuk ditumis:
๐ฝ 1 sdm minyak zaitun
๐ฝ 150-200 gr jamur kancing, iris
๐ฝ ±¼ gelas saus sweet chili
๐ฝ Garam, dan merica secukupnya
Untuk pasta:
๐ฝ ±300 gr tagliatele atau fetuccine atau spaghetti
๐ฝ garam secukupnya
๐ฝ minyak zaitun
๐ฝ 200ml krim masak
๐ฝ peterseli segar atau kering
Cara membuat:
1) Marinasi ayam.
Potong paha ayam memanjang. Bisa menggunakan dada ayam jika suka.
Tempatkan ayam dalam mangkuk, tambahkan bawang putih cincang, garam, dan bubuk merica hitam/putih.
Tambahkan sekitar 3 sendok makan saus sweet chili. Aduk rata, tutup, dan biarkan marinasi setidaknya 1 jam di lemari es.
2) Menyiapkan pasta.
Rebus air secukupnya dengan garam secukupnya.
Masak pasta sesuai petunjuk paket atau sampai aldente.
Tiriskan dan masukkan kembali ke dalam panci yang sama. Tambahkan minyak zaitun secukupnya, dan krim masak. Panaskan dengan atas api paling kecil. Masak selama beberapa menit saja sampai krim terserap oleh pasta.
Angkat dari kompor dan tambahkan peterseli segar cincang (atau kering). Sisihkan.
3) Memasak ayam.
Sambil memasak pasta, kalian bisa memasak ayam di kompor lain.
Panaskan 1 sendok makan minyak zaitun diatas wajan, tumis jamur iris hingga hampir kecoklatan. Masukkan ayam yang sudah dimarinasi dan terus diaduk hingga ayam berubah warna.
Tambahkan ¼ gelas saus sweet chili lagi dan lanjutkan memasak selama beberapa menit.
Cek rasa, bisa ditambah garam atau merica sesuai selera.
4) Sajikan.
Sajikan segera dengan pasta dan salad sayur.
