It is very quick and absolutely easy to make.
In Asian cuisine, sweet chili sauce has a tangy taste cause it has vinegar in it. We use it in almost every meal we have in Asia, commonly in Indonesia, Malaysia, Vietnam, Thailand, and neighboring countries.
You may like this Peach syrup for iced tea also
But today I will not share the tangy version of sweet chili sauce. This is my own version of sweet chili sauce which I adjust to my family (read; husband) taste bud. Also, some brands I bought from the local market here have veerrryyy light tangy taste (almost not tangy at all) with a light spiciness as well.
Maybe next time I will share my version of Asian spicy sweet chili sauce which I generally use.
What can we enjoy with this sweet chili sauce?
We can use it as a marinade, a dip, or just added to it:
- Chicken/meat/seafood kebab
- Chicken nuggets
- Chicken Wings
- Grilled, baked, or fried chicken
- Grilled shrimp/ salmon
- Grilled corn
- Vegetable salad
- Mix fruit salad
- Meatballs
- Fried calamari
- Onion rings
- Mozzarella sticks
- Steamed/ fried dumplings
- Wontons
- And more...!

HOMEMADE SWEET CHILI SAUCE.

Make about 500 ml
Ingredients:
🌶 1 sweet chili pepper
🌶 8-10 dried long cayenne chili peppers, soak in hot water*
🌶 4-5 (depends on how spicy you like) dried birdseye chili peppers, soak in hot water*
🌶 6-7 cloves of garlic
🌶 pinch of salt
🌶 ¾ cup sugar
🌶 ¾ cup water
🌶 1 Tbsp soy sauce
🌶 1½ Tbsp cornstarch, dilute in a few tbsp waters
Note(*): you can use fresh one if available
Method:
Before you start anything get ready with two 250 ml jars (with lids) cleaned and boiled few minutes in hot water. Drain well.
1) Blend the sweet chili pepper, cayenne chili pepper, birdseye peppers, pinch of salt, and garlic. You can use mortar and pestle or a blender.
2) In a medium saucepan, put sugar, and water. Heat over medium heat. Add the chili blend, stir continuously and cook until bubbling. Add in the soy sauce, stir well.
3) Dilute cornstarch in a few tablespoons of water, stir into the chili sauce. Mix well until the sauce thickens and boiling.
4) Store in prepared jars (or bottles). Keep in refrigerator and consume within a week.

Hari ini saya akan berbagi salah satu sauce yang selalu ada di lemari es buat stok, yaitu saos sambal manis-- spicy sweet chili sauce.
Saus ini versi keluarga saya ya, beda dengan saus sweet chili sauce khas Asia (Indonesia/Thailand/ Vietnam) yang mempunyai rasa asam yang khas selain pedas dan manis.
Disini sweet chili sauce cenderung tidak berasa asam, tidak terlalu pedas dan pastinya memang manis.. semanis saya...😄
Untuk tingkat kepedasan, bisa disesuaikan sendiri ya. Mau tambahin cabe rawitnya juga boleh. Kalau versi keluarga saya (baca; maunya suami dan anak), tidak terlalu pedas. Jadi saya kurangi jumlah cabe rawitnya, juga sebagian cabe saya buang isinya.
Saus sambal manis ini cocok banget buat marinasi, atau saus cocolan maupun ditambahkan saja pada masakan ini:
- Aneka kebab dan sate
- Chicken nuggets
- Chicken Wings
- Ayam bakar/ goreng
- Udang/ ikan bakar
- Jagung bakar
- Aneka salad sayur/ buah
- Meatballs/ bakso bakar
- Cumi goreng tepung
- Onion rings
- Mozzarella sticks
- Anake dumpling dan pangsit goreng/ rebus
- Wonton
- Dan masih banyak lagi...!

HOMEMADE SWEET CHILI SAUCE.

Hasil jadi ±500 ml
Bahan-bahan:
🌶 1 buah cabe manis /Kapia chili pepper (lihat note*)
🌶 8-10 cabe merah keriting (lihat note*)
🌶 4-5 cabe rawit, jumlahnya bisa ditambah sesuai kepedasan yang diinginkan
🌶 6-7 siung bawang putih
🌶 sejumput kecil garam
🌶 ¾ gelas gula pasir
🌶 ¾ gelas air
🌶 1 sdm kecap asin
🌶 1½ sdm pati jagung (larutkan dengan sedikit air)
Note(*):Jika tidak ada, bisa tambahkan jumlah cabe merah keritingnya.
Cara membuat:
Sebelum mulai membuat, siapkan dulu 2 buah botol/ toples ukuran 250 ml. Cuci bersih lalu rebus dalam air mendidih bersama tutupnya sebentar. Tiriskan kering.
1) Haluskan cabe manis/ kapia pepper, cabe keriting, cabe rawit dan sedikit garam. Bisa gunakan blender atau food prosesor.
2) Panaskan gula dan air dalam panci saus. Masukkan cabe yang sudah dihaluskan tadi. Masak hingga mendidih sambil diaduk agar tidak meluap. Tambahkan juga kecap asin. Lanjutkan memasak sampai mendidih sambil sesekali diaduk.
3) Masukkan larutan pati jagung ke dalam saus sambal, aduk-aduk sambil tetap dimasak sampai saus mengental dan mendidih.
4) Lalu panas-panas masukkan ke toples/ botol yang sudah disiapkan. Tutup rapat.
Saus sambal manis siap digunakan kapan saja.
Bisa tahan dalam kulkas kurleb 2 minggu.
