We have many kinds of snacks or we call them "kue" or "jajanan"
Kue in the Indonesian language is used to refer to not only these kinds of traditional snacks, but also all types of cake and some types of pastries. Kue is more often steamed than baked and normally has a sweet taste, but some are savory. Kue is categorized under " jajanan pasar" (market buys) or street food.
Just like what I am going to share today. It is called "otak-otak".
What is "otak-otak"?
Otak-otak is one of the popular Indonesian street-food.
Otak literally means brain in the Indonesian language. But this food is not made from the brain what so ever.

We have two kinds of otak-otak based on how we cook them, bakar and goreng. While bakar means grilled or barbecuing, goreng means deep fry.
You may love this Indonesian kue recipe: "LUPIS" (glutinous rice cake with palm sugar syrup)
It is made from fish paste (usually from mackerel), mixed with mashed shallots and garlic, green onions, also some herbs/ spices.
Egg white, coconut milk, and tapioca flour are also added to make this fish cake. This mixture is then wrapped in banana leaves and subsequently grilled to perfection.
This snack is very popular not only in Java island, otak-otak also very common and enjoyed in Sumatra islands such as Palembang which is famous for fish and seafood dishes.
"Otak-otak" in Java island is served with peanut sauce or "sambal kacang" as dipping sauce while "Cuko" serves as a dipping sauce in Palembang.
"Cuko" is a sweet and sour sauce made from palm/coconut sugar with tamarind and some herbs for spiciness.

"Otak-otak"/ Indonesian Grilled Fish Cake in banana leaf

Make about 30 pcs
Ingredients:
π 400 gr mackerel fillet
π 5 pearl red shallot
π 4 cloves of garlic
π 200 gr coconut cream/ milk, cold
π 2 egg whites
π 150 gr tapioca starch

π 1 spring onion. finely chopped
π 2 tsp salt or to taste

π 1½ tsp white pepper powder

Peanut dipping sauce:
π₯ 1 cup of fried/ roasted peanut
π₯ 2-3 red chili pepper (add some chili padi for spiciness)
π₯ 3-4 garlic
π₯ 1 kaffir lime leaf
π₯ 1 tsp salt
π₯ 2 tbsp brown sugar
π₯ 1 ½ tbsp tamarind paste

How to make:
1) mashed pearl shallot and garlic. You can use mortar & pestle or fine grater.
2) In a food processor, place fish fillet, mashed shallot+garlic, coconut milk/ cream, egg whites, salt, sugar, and white pepper powder.
3) Process everything until very smooth. Then add in chopped spring onion and tapioca starch. Pulse a few times just until well combined.
Note: You can check the taste in this stage; take a small pinch of the batter then fry it. Adjust the taste according to your liking. Add salt, sugar, or pepper powder if needed.
4) Move the fish cake batter into a bowl and start to wrap them in banana leaves.
Take one piece of banana leaf and place about 1 tablespoon of the batter over one side. Then start wrapping it by rolling the banana leaf from the long side. Sealed both sides with toothpick or staplers. Easy!
Do the same thing to all the batter until finished.
5) Heat the grill or grilling pan over medium heat. Brush the grilling pan with oil is optional. Grill the fish cake, for 5-7 minutes on each side or until cooked through.
Enjoy it warm with peanut sauce with freshly squeezed lemon/ lime juice.

Otak-otak Ikan Bakar

Hasil jadi kurleb 30 biji
Bahan-bahan:
π 400 gr daging ikan tengiri
π 5 siung bawang merah
π 4 siung bawang putih
π 200 gr santan kental, dingin
π 2 putih telur
π 150 gr tapioka

π 2 sdt garam atau sesuai selera

π 1½ sdt lada bubuk

Sambal kacang:
π₯ 1 gelas kacang tanah goreng
π₯ 2-3 cabe merah keriting atau sesuai selera pedasnya
π₯ 3-4 siung bawang putih
π₯ 1 daun jeruk purut
π₯ 1 sdt garam atau sesuai selera
π₯ 2 sdm gula merah atau sesuai selera (bisa pakai gula putih)
π₯ 1 ½ sdm asam jawa

Cara membuat:
1) Haluskan bawang merah dan bawang putih.
Masukkan semua bahan ke dalam food prosesor daging ikan, bawang merah+putih, putih telur, santan, garam, gula dan lada bubuk.
2) proses hingga semua halus. Lalu masukkan irisan daun bawag dan tapioka. Proses lagi cukup hingga tercampur rata saja.
Note: Cek rasa pada tahap ini. Ambil sedikit adonan dan goreng. Tambahkan garam atau merica bubuk atau msg jika suka.
3) Ambil kurang lebih 1 sdm adonan, bungkus/ gulung adonan dengan daun pisang. Lakukan hingga semua adonan habis.
4) Panggang diatas arang. Atau diatas wajan grill hingga matang sempurna. saya panggang kurleb 5-7 menit tiap sisinya. Sesuaikan kondisi masing-masing, yang penting matang sempurna.
Nikmati selagi hangat dengan sambal kacang dan perasan jeruk nipis/ lemon.
