Bolu Kukus Mekar jeruk sunkist (Indonesian Orange steamed cupcake)

Selam everybody.... Merhaba from Turkey.

We call it "Bolu Kukus Mekar" in Indonesian language. Bolu means cake, Kukus= Steamed, and Mekar is blooming (like a flower). This is also one of the Indonesian traditional snacks that exists for a long time ago.

I remember my late grandmother made this so often for us, me and my siblings and aunties (we lived together at same house at that time). We love bolu kukus so much.
Then after my grandmother past away, my aunties usually made it for special occasion or just for tea time.

Old recipes mostly required local (Indonesian) soda drinks in the ingredients. But when I tried to make it here with local soda water/ drink, I never make it correctly. The "blooming" couldn't appear nicely like my grandmother/ aunties made. So I start to find a way how to make that "blooming" effect appear. One time I browsed the internet and find another Asian dessert similar with this cake called "huat kuih". That cake has a blooming appearance like our bolu, steamed also, but a totally different recipe, no emulsifier require. So I made that Huat kuih once ( I will post them later).. the texture and taste are different from our bolu kukus mekar which I'm  looking for. But I wonder how that Huat Kuih can have a "blooming effect".. Maybe it uses self-raising flour plus baking powder in it. 


So I dare my self to make this Bolu Kukus Mekar without soda water/drink. And since I have still some Oranges I want to make new variant also for this Bolu Kukus Mekar. This bolu taste is very nice, light and fluffy with strong orange and taste and flavor, so it's not just having orange color in it. And with chocolate strip adding more delish twist for this beautiful snack/ dessert. Try it..and tell me what you think.

Orange Swiss Roll Cake from egg white / Bolu gulung dari putih telur

Roll Cake agaaiinnn..! and yes...it's about orange still. After I made Orange Curd a day before I still have some orange left in my fridge. And also I have some left over egg white. Usually I made macarons with my left over egg white.. but I run out almond flour and I hesitate to grind my almond to make my own almond flour.


It's rainy and cold week end. Spring's rain getting more often these weeks, and sun more often out off the shadow of the clouds... I just love this transition time...And after this I can see many flower blooming everywhere...and what I love here in Turkey... Tulips everywhere..!!! Colorful and just beautiful ^,^
I just can't wait to welcoming summer already...

Even start from this Sunday,29 March, time changing to summer time. It means we turn clock one hour forward. It's about Daylight saving time (DST). For you who live in country which never use this DST-Just like me before- you can  read more about it here
Now I am 4 hour different only to my homeland Indonesia (^,^)  It's making us easier to arrange time if we want to make video conference between us here in Turkey and my family in Indonesia.

Orange Curd Recipe and seasonal Table list for fruits, vegetables and fish


Today I went to traditional market (turkish=pazar). In my neighborhood traditional market open every Wednesday. I had no idea what to buy because you know in Turkey (maybe in other 4 seasons country) people sell and buy what's in season. Me as tropical  person still hardly to adapt my mind on it-even I'm living here for 6 years! 
But for few things I already kept on my mind when it's really season so I can stock them as much as I can..what is that? Chilliiieees..!! Yes, I can not eat without chilly (^,^)
So I knew when chilly season start and when it's becoming very cheap.

Below my post I have a roughly estimate list what is in season. That table list actually for my self to reminder if I need to make/ cook/ baking something.

 And today in pazar I saw many cheap orange. Orange, as grapefruits and quince has peak season on January or February... I don't know if it's good orange or not since it's actually end of it's season..but I bought them anyway one kilo only for 1 TL. Still didn't know to do with those oranges until I saw my lemon curd on fridge. I made lemon curd often cause I love lemon so much and I can find fresh lemon almost everyday.

Lemon Macarons with lemon curd filling

Yaaayyyy...!!! Finally Macarons ..! ^,^ Yes, this is my first post and my first attempt making macarons... İ don't know why gets me so long to bake them.. İ just too busy reading and reading and comparing recipes.. search about this tiny delectable dessert which everybody crazy about...Yeaahh..İ was just too worry (almost afraid) that my first batch of macarons will be my nightmare..hahahahaha.. hyperbola indeed ^,^ .... No..it's true actually.. when it come about baking, İ'm kinda traumatic person... once (mostly first time) baking something and fail... need sssooo long time for bring my baking mood back again... 
Again..İ'm sensitive person ^,^ --even in baking.

Anywaaaayyyy... today's post is my first macarons. And since İ still keep my lemon curd from last batch so İ had an idea to make lemony macarons to gets along with my lemon curd as filling later. The recipe İ took from many other's people journal about macarons..many people's note about it.. tricks and tips ... and mostly the came up with almost same recipe which you can browse also around the net. Just note from me: Don't be afraid baking your macarons, it's not as bad as you think ^,^ 

After succeed with my first attempt.. definitely there will be another second or third and fourth... need more practise to perfect my macarons.

How to Decorate Anniversary Cake

Maybe this is my last post in 2014 and also 1st post on 2015. Because İ was planning to post this lemon cake decoration for #YKMK challenge #8 for their 1st anniversary.
As İ mentioned in my previous post about this YKMK (Your Kitchen My Kitchen) is a Foodie community based in İndonesian language. 

And this very early 2015, 1st Jan.. they celebrates their 1st anniversary. And for celebrating it they gather an event challenge calls "B'day Cake". Every contestant should present 1 decorated cake--widely range from any cake decorating idea and ingredients e.g fondant, butter cream, ganache, whipped cream, etc... see the rules for joining this event... Hurry.. it's just starting and will end on last January 2015.

MOİST LEMON CAKE and tip how to bake cake flat

İf you want to make a cake to decorate later or even stack them later. You don't want to remove too much uneven risen swell cake to form it flat, right? Nice and even surface cake is everybody's ideal cake to decorate with.
İ saw on internet you can use a pan with a lid to make even your cake surface during baking. Or there is "strip bake even" from w*lto*. This strip you can Wrap around your pan during baking.

So İ want to have that nice flat surface too on my cake but İ don't purchase those things. So İ saw some people make their own strip.. yes, That's it. İf you don't have ready to use (and fancy) w*lto* "strip bake even" you can make it by your own. All you need is just old kitchen towel. Cut lengthwise (depend on your pan size)-- give some spare, you can always adjust the length later. Just before baking dump that towel with water and Wrap it around your baking pan.  And other thing you will need is a pin to secure the towel after you Wrap it on your pan. That's it...try it..and you will get perfect flat cake.

Lemon Curd Recipe II


Salam everybody. Merhaba from Turkiye.

My today post is my favorite one.....lemon Curd. Yes, this is my fave for anything. İ use it for jam on my soft bread. İ use as filling on my choux pastry, or my donut. And İ dip my croissant  in it ! Believe me, that so good! ^,^

This lemon curd is also my second recipe beside my other one here. And my today lemon curd İ use recipe from  here... İ think both recipe are great... you can use whatever you want if you will try to make your own lemon curd.

İ love lemon. No question about it cause İ know if you do love lemon too..you know how this shiny yellow fruit can give you many good things. Use it for infused water lemon--Like İ do every morning. Or put inside your hot tea (Love it!). Drink lemon juice with hot water and rock sugar=healthy . And İ love to make them in my cake recipe. Check my previous lemon cake recipe here.

Okay..okay ... you all know many benefits of this yummy sour fruit..now let's make this lemon curd.. try it also and tell me how you like it.

Hello again..how are you?? Any plan for your weekend? Me..İ will just relax stay home with my little fam. My little angel is a bit sick this whole week... cold and got red and itchy skin like allergic symptom--main reason we don't hang out outside as every weekend.

Now İ will talk about my today's post. This weekend post is flower cupcake bouquet. İ was so exciting when one of my friend text me message that she will give something to her dearest friend. They met when my friend worked in Turkey..now my friend already back to İndonesia. But seems their relationship develop into close and best friend. Best friend between two continental. Yes, a distance doesn't cut a friendship.... 
She ask me to make something special, unusual yet pretty and touchıng. Presenting friendship and caring. We talked many ideas then İ gave her this cupcake flower bouquet idea. She agree..then...voallaa..! İ did it ^,^

Lemon Curd Mousse Cake and 1 year Blog anniversary

Yes, today is my 1st Blog anniversary. Time seemed passed so quickly, I've been writing this blog for a year now. If there is anyone (my blog reader/ follower) follow this blog from start, you'll notice the beginning of my journey writing  this blog and some changes that to be a witness of this blog transformation/ journey.


One year ago, My Blog name was NEVER ENDING LEARNING OF SIMPLY ME, as you can see picture below. I named it like that because indeed I'm still learning anything including cooking/ baking, etc.. learning process for me is never ending.. until now.

 After for a while I change my blog name few times as well as my blog page appearances. Before I finally change this blog into : "My Home diary in Turkey".. my blog name was Indonesian in Turkey. 


During one year writing this blog, some awards and appreciations came from other blogger friends and food site I've joined, all those record you can see it here
Thank you to all my readers and friends for the support for me.. Really I appreciated it. If there is one or two award passed to me but I didn't pass to other friends yet.. please be patient, I never mean to keep it for my self.. I just need more time to sit down longer in front of my computer to do so... be patient :)


Up to now, I already posted 201 posts in this blog.. hopefully there will be another more qualify and better post in future.. I just need your support friends :)


Well, and here is another post for celebrate my blog: Lemon Curd Mousse Cake.. this is my 1st attempt of mousse cake. Learning from other page and many source of making this mousse cake, here it is I share my version of lemon curd mousse cake...

Ingredients:
For the crust base:
 1 ½ cup biscuit crumb
 15 g butter, melted


Mousse Ingredients:
 1 cup lemon curd. Recipes can be found here.
 3 ½ tsp powdered gelatin
 5 tablespoons water
 2 medium size whole eggs
 
½~¾ cup granulated sugar ( I use only ½ cup)
 1 package (75 gr) powdered whipped cream and whisk with ½ cup cold milk until thick (soft peak). Store in refrigerator until ready to use.
Or you can use 1 ½ cup chilled whipped cream, beat/ whisk  until thick (soft peak) and store in refrigerator until ready to use.


Topping ingredients:
 ¾ cup lemon curd
 ½ tsp powdered gelatin
 3 tablespoons water
The process:
1) Prepare springform pan 8" size (diameter ± 20 cm). Mix  biscuit crumbs with melted butter, then press evenly on the bottom pan. Set aside in refrigerator until ready to use.


2) Make the mousse: Pour 5 tablespoons water in small sauce pan and sprinkle with gelatin powder, set aside for ±15 minutes to make gelatin soft. Place lemon curd in a medium size saucepan and warm over a very low flame (be careful not to burn it). Remove from heat.


3) Heat soften gelatin over very low heat, stir until gelatin becomes clear solution (do not boil), then immediately pour into warm lemon curd in another pan. Stir well. Set aside.


4) Simmer some water over another pot. Mix eggs and sugar in a heat-resistant bowl or stainless steel, whisk over that simmer water (double boil), beat until sugar dissolves completely (about 4~6 minutes). Remove from double boil.


5) Gradually fold that beaten egg mixture into lemon curd alternately with whipped cream, fold through until all blended and smooth. Pour into the prepared springform pan. Cover with plastic stretch and store in refrigerator.

6) Make the lemon curd topping: the process almost same as step #2 and #3 above. Soften gelatin with water in a small saucepan, let stand ± 15 minutes. Warm the lemon curd in another pan. Then heat the gelatin until clear (do not boil) and mixed with warm lemon curd and stir well. Let it chill for few minutes until hot steam gone before poured over chill mousse.


7) Finishing: Take chill mousse from fridge, pour with topping, cover again with plastic stretch and refrigerate for minimum 8 hours to overnight.
Garnish with lemon wedges or lemon candied.

Lemon Bundt Cake with Lemon Curd Glazed

 I don't like too sweet cake for my tea/ coffee time. Just simply fresh for dessert also. And this one is easy and quick one to make. You can serve it with additional lemon curd on your dessert plate.. Perfect one to entertain your family.

Ingredients:
- 3 medium size eggs, beaten.
- ¾ cup caster sugar
- 3 tablespoons milk
- 1 ½ cups flour, sifted.
- 170 g unsalted butter, plus for smear the bundt pan.
- ½ teaspoon baking soda
- ½ tsp fine salt
- Lemon Zest of 1 medium lemon



For Glazed:
Lemon Curd, you can use your own lemon curd or you can make and see recipe here.

Method:
A) Pre-heat oven to 160 ⁰C. Grease your bundt pan (about 1½ liters capacity) with butter/ margarine.
B) Whisk eggs, milk and lemon Zest. Set aside. With electric mixer, whisk : flour, sugar, salt and baking soda.


C) Beat in butter and half of egg mixture into the flour mixture, beat with a low speed until well blended. Add the mixer speed and beat in remaining egg mixture. Whisk until blended about 1 ~ 2 minutes. Pour into the prepared pan and bake for 40~ 55 minutes (depending on your oven conditions). Check with a skewer inserted in middle of cake comes out clean. Let cool to room temperature before glazed it with lemon curd.


Enjoy and serve with lemon curd.

Lemon Curd I

Selam everybody...Merhaba from Turkey.

I was planning to make lemon cake.. and I thought it would be nice if I put lemon curd in between..hmm..must be Yummy !
so here it is my lemon curd. Soon I will post my lemon cake also along with it.
You Can use it as filling for cake, pastry or just as a simple dessert.


Ingredients:

  • 2 cups granulated sugar
  • 1 tsp  cornstarch
  • ¾ cup lemon juice ( do not use bottled)
  • 150 gr unsalted butter. Cut into chunks, Soften.
  • Lemon Zest from 1 medium lemon
  • 4 egg yolks.
  • 1 whole egg 



Method:
1) In heavy-base saucepan, combine sugar, cornstarch and lemon juice. Mix with whisker until sugar dissolves. Add eggs one at a time, continue to mix.
2) Add butter and lemon zest. Whisk until smooth and well blended. Put pan over stove and heat over medium heat. By manual whisker Stir and cook until thick and almost boiling (No need to boil).
3) Turn off the heat. Keep stirring until hot steam gone. Let stand to room temperature before being stored in a clean jar with lid. 
Make about 400 ml.

Cheese Pound Cake with Lemon Glazed


Beside chocolate, I love cheese in anyway, moreover if it's combined with lemon... hmm..imagine how yummy it will be....  @(^_^)@ 
Just Like I made this time, it's cream cheese pound cake with lemon glazed.....And this evening I eat it with my warm lemon tea... wow, it's just perfect . Try one and tell me if you agree with me d(^_^)b 


Ingredients:
make 10 " bundt pan. 
For cheese pound cake: 
- 200 g cream cheese, room temperature. 
- 325 g unsalted butter, room temperature. 
- 2 ½ cup granulated sugar.
- 1 teaspoon salt. 
- 3 cups flour.
 - 1 package (5 g vanilla powder) or you can use vanilla extract.
- 6 eggs, room temperature. 
- 1 teaspoon baking powder 
- 1 teaspoon baking soda 
- Lemon Zest from 1 medium lemon.

Blood orange upside down pudding

Selam everybody...merhaba from Turkey

Pudding and syrup are really perfect for this weekend evening dessert today, but I am a little disappointed with the Candied orange blood. There is a slight bitter taste in it, I have no clue about it. I peeled it's skin, has been seeded as well, but after I candied them, I tasted slightly bitterness :(

But overall, my husband and I are satisfied with the look and taste .. Maybe anyone can help me to avoid the bitter taste in Candied (blood) orange in my recipe?


 Blood orange candied ingredients:
- 1 cup granulated sugar
- 1 / 2 cup water
- 2 tsp lemon juice
- 1 / 2 tablespoons unsalted butter
- Food yellow / orange color (if desired). I do not use it, so mine is clear colorless syrup.
- 2 pieces of blood orange large size. Peeled. Slice crosswise about 1.5 cm thick (1 orange into 4 or 5 slices). Discard any seeds.
