Pilaf wrap with Eggplant

It's been for a while I didn't post something new on my blog.... The reason friends, that's because I started to join Turkish language class here in my city. Actually I'm pretty late to join that class which special for foreigner.. the class will be over on this summer vocation, but it's okay, after summer holiday I can continue from the basic again. Class takes weekdays for few hours, so I'm a little bit busy and maybe a little bit late writing and sharing on my blog to you all my friends... But however, I'll try to keep writing and cooking and sharing... those are my great passion after all....

Another great thing I like is rice/ pilaf... in any ways, I just love it..  ..Cause maybe mostly we eat rice as primer food in my homeland. We eat everything with rice. And we have many variety of food make from rice/ pilaf. Maybe you already know about Indonesian Fried rice.. or you heard about "nasi Tumpeng" or "nasi Kuning" .. all of them made from rice.. so here another my favorite of pilaf.. wrap with eggplant.. it's great ! and it will soon become your family's fave too @(^,^)@


Servings 6 ~ 8
Ingredients:
- 2 kg eggplant. Peel and damping in salt water for a while.
- 250 gr lamb/ beef meat. Cut into small chunks.
- 2 cups long grain rice. Rinse and drain.
- 1 large onion. Chop finely.
- 2 cloves garlic. Crushed and finely chopped.
- 2 tablespoons pine nuts.
- ± 25 stalks celery,  just take 
leaves part. Chop roughly.
- 2 tsp all spice
- Homemade chili and tomato paste @¼ tbsp .
- 1 tsp pepper powder or to taste.
- Salt to taste.
- 3 ½ cups beef broth / hot water.
- Enough cooking oil.

Stuffed Cabbage in Tomato sauce

Another idea for stuffed cabbage. It inspired by Turkish cuisine, lahana sarması but this stuffed cabbage we will cook in tomato sauce, slightly gravy and I bet it will be repeatable menu on your family's dinner table later on.


Ingredients:

  1. *      One whole medium-size cabbage.
  2. *       ±200 gr minced beef.
  3. *      1 ½ cup rice. Wash and drain.
  4. *      1 big size onion. Finely Chopped
  5. *      Dried mint  ± 2 tsp
  6. *      Sweet red paprika powder  ± 2 tsp.
  7. *      Black or white pepper powder ± ½ tsp
  8. *      Enough salt to taste
  9. *      ½ Cup Olive oil.
  10. *      ± 2 Cup boiled water (or more if needed)

Steamed Fruits Sponge Cake / Steamed fruitcake

- 5 medium size eggs
- ¾ cup granulated sugar
- 1 package (5 grams) powder vanilla
- 1 teaspoon baking powder
- 1 ¾ cups all purpose flour
- 2 tablespoons cornstarch
- ½ cup vegetable oil.
- ½ cup raisins or sultanas, roughly chopped
- ½ cup mixed dried fruit.
- Enough butter or oil spray for greasing bundt pan.

Steamed Chocolate cake with Sun flower decoration

I believed that every woman is special, including you. And being a mother is a privileges "job" as well. 24 hours a day, 7 days a week, no work contract, and it'll be forever as long as your life. The first education of human being, is in Mother's hands . So as a mother we should have a good and sufficient education to create a better generation in future. Let's never stop learning anything MOMS! 😍


And To All Moms and women (becoming mom), I wish you happy mother's Day.


Description of cake:
Size 8 "
Steamed chocolate Cake as a base with chocolate frosting as layer and decoration.
For Sunflower decoration I use fondant plastic icing.

İngredients and how to make Steamed chocolate brownies:
- 4 medium size whole eggs
- Plus 2 medium egg yolks
- 1 cup (225 gr) caster sugar
- 1 cup ( 140 gr) all purpose flour
- 2 tablespoons cornstarch
- ½ cup (dark) cacao powder
- Pinch of salt
- ½ teaspoon vanilla essence
- 80 gr dark cooking chocolate (DCC)
- ¾ cup cooking oil





Method:
A. Grease 8" springform pan with margarine/butter, set aside. Sift together, flour,cornstarch, and cocoa powder. Set aside. Heat your steamer pan up to produce enough steam, medium heat only.
B. Double boil DCC until melted and mixed with cooking oil. Set aside. With electric mixer, beat eggs until fluffy,add caster sugar gradually. Combine salt. Whisk until pale and ribbon stage. whisk in vanilla essence.
C. Gradually, fold in flour mixture. Then fold in melting chocolate mixture, fold until blended and perform no lumps.
D. Pour into prepared pan and steam until done (approximately 45 minutes). Test with skewer, if it comes out clean when inserted in brownies, it means you done and you can remove the brownie from  steamer. Let cool to room temperature before unmold.


For chocolate frosting:
- 120 gr unsalted butter
- ½ cup cocoa powder
- 3 cups powdered sugar
- ½ teaspoon vanilla essence
- ½ cup whole milk.

Melt butter, combine cocoa powder and stir until blended. Mix in powdered sugar and milk alternately, whisk until all well blended. Finally mix in vanilla essence.
If you want a thinner frosting, you can add small amount of milk. Or if you want a thicker frosting, you may reduce amount of milk.

Assembling:
Slice chocolate brownie horizontally into 2 parts (or 3 parts according to your desire). Grease each slice's surface with chocolate frosting and stack neatly. Cover entire surface of the brownies with remaining chocolate frosting and decorate with  fondant plastic icing.

Steamed Lemon Cake with Lemon Curd filling for B'day cake

Selam everybody...Merhaba from Turkey.

As my promise before to post my cake with lemon curd filling (and as topping too). It's Steamed lemon cake. Actually this cake is  order/ request from my friend for her husband's B'day. So I'm sorry I can not post picture when cake being cut...
But anyway, it's great lemon cake ever (My friends and her family said so)... the moist lemon cake (because I steamed it), combine with yummy lemon curd between 3 layers plus on topping... hmmm.. I'm thinking to make it again for my self @(^_^)@


Ingredients:
• 4 medium eggs
• ½ cup caster sugar (you can add up to ¾ cup if you like it sweeter)
• 1 ½ cups flour
• 2 tablespoons cornstarch
• ½ teaspoon baking powder
• Lemon Zest of 1 medium lemon.
• 3 tbsp lemon juice.
• 4 tablespoons olive oil (or other vegetable oil).

Lemon candied
For the garnishes and filling:
• Lemon curd (see recipe here)
• Candied Lemon (I use recipe from here)
• Butter cream icing or whipping cream icing
• Yellow and orange food color for whipping cream icing

 Method:
1) Cake: Mix and sieve together, flour, cornstarch and baking powder. Set aside. Mix together, Lemon Zest, lemon juice and olive oil, set aside. Grease pan your springform pan 8 "(18 ~ 19 cm) with butter. Set aside.
2) Prepare your steamer pot, fill with enough water and heat to produce a lot of steam.Whisk eggs with electric mixer, use low speed first. Combine caster sugar in 3 stages while beat until sugar completely dissolved. Higher the mixer speed. Beat eggs and sugar until pale and thick. Lower the mixer speed again and continue beating about 2 ~ 3 minutes more before turn off the mixer.
3) Fold in flour mixture and lemon mixture, folding until well blended and no lumps. Pour into prepare springform pan and steam until cooked about 40 minutes. Check with a skewer / stick, if it comes out clean, your lemon cake is done. Remove from pan and let chill at room temperature before unmold.


4) Cut the cake horizontally into three equal parts. Spread each surface with lemon curd,  neatly stacking each cake slices . Garnish with whipping cream or butter icing and lemon candied (as picture).
Store in refrigerator before cut / serving.

My Sausage Mushrooms PIZZA

Simple, quick and great meal in every time and every occasion, Pizza. Maybe the most repeatable dish on my dinner table is Pizza. Beside those facts I mentioned above, also that me and hubby like it so much. 
This another pizza version I made and different from other pizza I posted before.. try it.. maybe you'll like it as well

Ingredients: (Make about 4 round pizza ± 30 cm diameter) 
For pizza crust:
  • 3 cups all purpose flour 
  • ½ tablespoon of instant dry yeast 
  • 1 ½ tbsp sugar 
  • 1 teaspoon salt 
  • 2 cups warm milk 
  • 3 tablespoons olive oil 
Mix all crust ingredients, knead well, stretching the dough as much as possible, Until dough is firm and elastic. You May need additional flour or warm water to form soft dough. Cover with plastic wrap or kitchen towel and let it rest Until double in volume.


Ingredients for toppings:
  • ± 500 g beef sausage, cut round or cut into chunks. 
  • ± 300 g fresh button mushrooms, thinly sliced. 
  • 2 tablespoons homemade tomato paste (use 3 tablespoons if you do not use chili paste) 
  • 1 ~ 2 tbsp homemade chili paste (optional) 
  • Basil and thyme, ½ tablespoon each. 
  • 2 tablespoons olive oil 
  • 2 medium size onion, cut ring round. 
  • 3  red and green paprika medium size, cut into cubes. 
  • Salt and sugar to taste. 
  • Grated mozzarella cheese and cheddar or Edam cheese. 


Mix the tomato paste, chili paste, olive oil, sugar and salt with a little hot water, enough to form a paste and no lump. Add thyme and basil and stir well. Set aside.
Hit and flatten pizza crust dough to remove air, divided into four balls equally. Flatten with rolling pin about 1 cm a thickness and approximately 30 cm in diameter. Spread sauce mixture on pizza crust, sprinkle with sausage pieces, mushrooms, paprika, onion, mozzarella cheese and sprinkle with cheddar / Edam cheese.  Let them rest ±30 minutes. 

Preheat oven to 160 ⁰ C, cook pizza until the cheese melted and pizza crust done--I took about 20 minutes.

Enjoy while it's hot with tomato ketchup and mayonnaise.
