Fındık Patatesli Tavuk Budu Paçası (Turkish Chicken thighs and potato)



Malzemeler:
  • 6 adet tavuk budu
  • 1 çay bardağı mısır yağı
  • 3 adet büyük domates (kabuğu soyulup kare doğranmış)
  • 3 adet soğan (ince doğranmış)
  • 8 diş sarımsak
  • 4 adet büyük patates
  • Tuz, karabiber
  • ½ demet maydanoz (İnce kıyılmış)
  • ½ demet nane (ince kıyılmış)
  • 2 çorba kasığı sirke
  • 2 su bardağı su
 Yapılışı :
Tencere içinde yağı kızdırın. Soğanı ve sarımsağı koyup. Karıstırarak biraz renk aldırın. Butlari ilave ettikten sonra. Agaç kaşık ile alt üst ederek biraz kızartın. Uzerine domates ve 2 bardak su ekleyin. Kaynamaya bırakın. Üzerinde olusan köpüğü alın. Patatesleri ilave edip.. 20 dakika kısık ateşte pişirin. Lezzetini kontrol ettikten sonra. Nane veya maydanoz serpiştirerek. Servis yapın.

Ingredients
  • 6 pieces chicken leg
  • 1 tea cup corn oil
  • 3 large tomatoes (chopped square shell peeled)
  • 3 onions (finely chopped)
  • 8 cloves garlic
  • 4 large potatoes
  • Salt and pepper to taste
  • ½ bunch parsley (chopped fine)
  • ½ bunch mint (finely chopped)
  • 2 tablespoons vinegar
  • 2 cups water

How to cook:
Heat oil in saucepan. Put the onion and garlic. Stir a little until transparent. add Chicken legs. With wooden spoon upside down and fry a bit. Add the tomato slices and 2 cups water. Let it boil. Remove the foam that might be appear. Add potatoes and stir again .. Cook on low heat 20 minutes. After checking the taste. Sprinkle with mint or parsley. Serve.

Sehriyeli Pilavı (Turkish Pilaf)

Turkish Pilavı or Pilaf  has a different cooking method compare to Indonesian rice cooking method, which through two stages (We're talking "old fashioned way", not using an electric rice cooker ). That is cooked 1st in boiling water until half cooked and then steam it.
Turkish Pilavı only through one cooking stage. Another difference is mostly Turkish pilaf used vegetable oil (or olive oil) and butter and adds arpa şehriye (orzo)





Ingredients and How to make:
- 2 cups of rice, wash and soak with warm water approximately 30. Drain.
- 1/2 cup 
arpa şehriye / 
orzo pasta
- 1/4 cup olive oil
- 2 Tbsp butter
- 4 cups hot chicken broth (can be replaced with hot water plus stock bullion). If the type of rice you used, will need more broth, can be added the amount.
- Salt to taste.



Heat olive oil and butter in a heavy-bottomed pot. Put arpa şehriye (orzo pasta) stir until dark brown color (do not let burn). Then add rice, stir again until rice mix with oil. Reduce heat to medium. Add hot broth and salt, stir well again. Close tight and shall not be opened until the water dries out about 10 minutes. 
Lowest the heat as possible you can, lid on again, and continue to cook over the lowest heat for approximately 15 min. 
Turn off the heat. But do not open the lid during the first 5-10 min.
After 5-10 min, the lid can be opened and Turkish Pilavı can be served warm.

Chicken Steak with mushrooms sauce.

Selam Everybody...Merhaba from Turkey...

One of my Favorite meal is Steak. Since I'm in Turkey, I hardly ever to find Steak restaurant in my city, maybe because people here prefer to eat local food or some worldwide food with local taste.. so, I tried to make my own steak in my small kitchen.. here the result.. Chicken steak with mushrooms sauce..




Ingredients:

For chicken Steak.
* 4 boneless chicken breasts-Gently smashed to slightly flattened.
¾ cup corn flour
¾ cups AP flour
* about 1 tbsp bread crumbs
* Pepper powder, salt, garlic powder.
* half lemon, juiced
* 50 gr of butter for frying.

For the mushroom sauce.
* 300 g button mushrooms, washed and chopped.
* 2 cloves garlic, finely chopped.
* 1  medium onion, finely chopped
½ tbsp flour, dissolve with ½ cup water.
Worcester sauce and light soy sauce (each about 1 tablespoon)
* Pepper powder, sugar, and salt to taste.
½ cup chicken broth or bouillon block.
* 1 tablespoon butter for sauteing.


How to make the steak:
1) Rub chicken with lemon juice, salt, garlic powder, and pepper. Let stand until the spices soak, keep in the refrigerator.
2) Mix all the flours. Coat the chicken with the flour both side and fry until golden brown surface and chicken is cooked. Just use medium heat so the chicken can be cooked up well.

Mushroom sauce:
1) heat the butter, put garlic, onions, saute until fragrant. put mushrooms, stirring about 5 minutes. Seasoning with 
Worcester sauce, soy sauce, sugar, pepper powder, and a pinch of salt. Stir until all ingredients mix well.
2) Put chicken broth (or you can use warm water and add stock block), add the flour solution. Stir until thick, taste it to control.

How to serve:
Place the chicken steak on a serving plate, pour the mushroom sauce. Serve with potatoes and other vegetables. Serve while hot.

Nar Ekşisi Salata



Ingredient:
- 1 medium-size cucumber, seeded and diced
- 2 Pcs green onion, clean and chopped
- 2 medium tomato, diced
- 1/2 bunch parsley, clean, finely chopped
- 1/2 tablespoon mint
- 1 tablespoon pomegranate sour souce
- salt as taste

How to serve:
mix all ingredient, sprinkle with mint. Serve immediately.

Kısır



Kısır is a traditional Turkish side dish made from fine bulgur, parsley, and tomato paste. The main ingredient, bulgur, is a cereal food generally made from parboiled durum wheat. For kısır, a finely grounded bulgur, unlike the coarse bulgur used for pilav, or sometimes couscous is used. Common additional ingredients include parsley, tomato paste, onion, garlic (in some regions), sour pomegranate juice (in southern regions of Turkey) or lemon, lettuce leaves, cucumber, and a lot of spices. It has a reddish color due to tomato paste admixture. It can be eaten cold and used as a salad or meze.






Ingredients:
1 cup finely- bulgur soaked with 1 1/4 cup hot water and cover. Let stand until bulgur tender about 15-20 minutes.
- 1~2 tbsp Salça (tomato paste)
- 5 sheets of lettuce- finely chopped .
- 1 bunch green onions - 
finely chopped 
- 1 bunch celery - 
finely chopped 
- 1 medium tomato fruit - seeded and cut into small cube.
- 2 medium cucumber - seeded, cut into small cube.
- 1/2~1 lemon - take the juice (if there is a pomegranate acid sauce, can be blended and reduce the amount of lemon).
- If you like olives, can also be blended.

How to make:
Mix all ingredients and mix well. Can be served cold topping with red pepper powder

Martabak manis / Indonesian style thick pancake



Far away from my hometown make me miss some traditional Indonesian food, like this "martabak manis" . One main ingredient to make this "martabak manis" I hardly can find in Turkey, that is coconut milk. So I tried to substitute it with milk.. so.. Voallaaa..... ssooo nice and had same taste as original using coconut milk..Let's try to make...

CHICKEN WITH HONEY BBQ SAUCE



Ingredients:
· 1 kg chicken thighs (or mix with chicken wing)
· 1 medium size onion, grated
· 3 cloves garlic - grated
· 4 tablespoons pure honey
· ½-squeezed lemon juice
· 2 tbsp bbq sauce
· ½ teaspoon ground pepper
· Salt to taste

How to make:

Mix all ingredients and seasoning to the chicken that has been cleaned . Previously making scratches (slice) so that seasoning absorb well.Cover and let stand in refrigerator overnight. Chicken ready to be burned over coals or bake in oven.

More delicious served with chilli sauce and served with salad.
