My today's menu is just simple and fast. İt's ayam (Chicken) Goreng (fried)  Mentega (butter). This meal is part of peranakan food in İndonesia. You can find it easily in Chinese restaurant or stall everywhere in İndonesia. But some people make it at home too due too some reasons (halal issue mostly). 

And today İ will share my recipe for you who wants to experience Asian cuisine in your family dinner table.


Ayam goreng Mentega / Spiced butter fried chicken| Çitra's Home Diary

Serve 5~8 big portion

What you need:
  • About 1 kg chicken thighs and wings (you use whole chicken too in medium size, cut into 8 to 10 pcs).
  • Juice from half medium lemon
  • Salt and pepper to taste.
  • enough cooking oil for fry
Toss chicken with lemon juice. let it sit about 30 minutes then wash and drain them. Season with salt and pepper. Let it sit about 30 minute.
Heat cooking oil in a wok, fry chicken in medium-high heat until chicken cook thoroughly. Remove from heat and drain the oil.

Sauce İngredients :
  • 1 big onion, crescent cut
  • 3 cloves of garlic, bruised and minced
  • about 100 gr butter
  • 2 Tbsp Worcestershire sauce 
  • 6 tbsp sweet soy sauce (kecap manis)
  • 5 tbsp water
  • 1 tsp salt or to taste
  • 1 tsp black pepper or to taste 
  • 1 tsp sugar
  • 2 stalk green onion, cut lengthwise
Heat butter in a wok. Sauté onion and garlic until aromatic for 2 or 3 minutes. Stir in Worcestershire sauce, kecap manis, water, salt, pepper, and sugar. Stir until the sauce is slightly thickened. Add the chicken and green onion, toss until all chicken is covered and mingled with the sauce for 1 minute. Turn off the heat.

Serve hot immediately with steamed white rice. Sprinkle with some chopped green onion.

BAHASA INDONESIA

Bahan Ayam goreng mentega:
  • Ayam 1 kg, bisa ayam utuh yang dipotong menjadi 10~12 bagian atau bagian paha saja
  • perasan jeruk limau
  • garam dan merica secukupnya
  • minyak untuk menggoreng
Lumuri ayam dengan perasan setengah jeruk limau, diamkan sekitar 30 menit. Cuci dan tiriskan, bumbuhi dengan gaam dan merica.
Panaskan minyak secukupnya dalam wajan, goreng ayam hingga matang.

Bahan saus mentega:
  • 1 bawang bombay ukuran besar, iris memanjang
  • 3 siung bawang putih, geprak dan haluskan
  • kurleb 100 gr mentega
  • 2 sdm kecap inggris 
  • 6 sdm kecap manis tambahi sesuai selera
  • kurleb 5 sdm air
  • 1 sdt garam atau sesuai selera
  • 1 sdt merica bubuk atau sesuai selera
  • 1 sdt gula / gula merah
  • 2 batang daun bawang, potong memanjang untuk disajikan
Panaskan mentega dalam wajan. Tumis bawang bombay dan bawang putih hingga layu saja. Masukkan kecap inggris, kecap manis, air, garam, merica dan gula. Masak sebentar sebelum memasukkan ayam. Aduk-aduk hingga ayam terlumuri saus, masak hingga kuah agak mengental dan bumbu meresap.

Sajikan hangat dengan potongan daun bawang.
