Kastengel or kue keju is Dutch-Indonesian cheese cookie in the form of stick, commonly found in the Netherlands and Indonesia. The name describe its ingredients, shape and origin; kaas is Dutch word for "cheese", while stengels is also Dutch word for "stick". Unlike most cookies, kaasstengels taste savoury and salty instead of sweet.
In Indonesia, owed to its colonial links to the Netherlands, kaasstengels, together with nastar and kue putri salju are the popular kue kering (dried kue or cookie) during festive occasion, such as Natal (Christmas) and Lebaran(Eid al Fitr).
Kaastengels on the other hand, refer to Dutch hapjes (snacks) of "cheese-fingers", derived from Dutch kaas (cheese) and tengels (fingers). It is a small spring roll or loempia-like crepe of the size of a finger, filled with gouda or edam cheese, which have been deep fried and served with a small bowl of a spicy chili sauce.
Even though it derived from Dutch, Indonesian kaastengels cookie a bit different from the Dutch version which is fried. But still it's cheesy snacks and it's gooooddd!
And today I am going to share my kaastengels but on flower shape, so maybe the name become kaas-bloeien (flower) not kaastengels anymore...... 😂

Anyway..this recipe I copy from one Indonesian cooking club, NCC. So let's grab some ingredients and let's make kaastengesl cookies with me (^,^)
KASTENGELs BUNGA ALA NCC
Ingredients :
1. Pre heat oven at 120~130°C (me; 130°C fan force). Cream butter and egg yolk just until combine. I use low speed mixer only.
2. Mix in grated cheese, use spatula o wooden spoon to mix well. Then sift in AP flour, mix to well combine.
3. Roll with rolling pin about 7 mm thick (not more than 1 cm). Use wide parchment paper or plastic sheet to prevent dough sticky on your table, and roll your dough between that plastic sheet. Cut the rolled dough using flower shape cookie cutter (or just cut classic rectangular shape)
5. Bake at 120-130°C (me; 130°C fan force) until golden brown.
Update ( 25 January 2019): Sometimes I bake 150°C for about 20 minutes (or until golden brown) then lower 130°C continue baking about 10 minutes. Result same.
6. Cool on a cooling rack until completely cool before storing into an airtight jar.

- 200 g Edam cheese, finely grated (you can use other old cheese type~like parmesan, I use it sometimes)
- 400 g AP flour
- 2 tbsp powdered milk
- 2 medium egg yolk
- 2 egg yolks
- some grated cheddar cheese ( I use edam)
- 2 tsp cooking oil (optional, original recipe didn't use it)
- 1 tsp honey (optional, original recipe didn't use it)
Method :

4. Arrange over baking tray line with parchment paper, brush with yolk glaze and top with grated cheese ( see my note below*)
5. Bake at 120-130°C (me; 130°C fan force) until golden brown.

6. Cool on a cooling rack until completely cool before storing into an airtight jar.
(*)Note:
- I arrange my cookies without yolks glaze & cheese and bake at 130°C for about 40 minute or until golden brown and crunchy. Then lower my oven at 110°C. I glaze my cookies with yolk and topping with grated cheese then bake at low temperature for about 15 minutes or just until golden red on the surface.
- Recognize your own oven. Different oven gives different heat result.
BAHASA INDONESIA
KASTENGEL BUNGA ALA NCC Bahan :
- 300 gr butter
- 200 gr keju tua, parut (saya pakai edam)
- 400 gr tepung terigu
- 2 sdm susu bubuk
- 2 butir kuning telur
- Olesan dan taburan :
- 2 kuning telur, kocok lepas keju cheddar parut secukupnya
Cara Membuat :
1. Kocok butter dan telur sebentar saja, asal tercampur rata. Matikan mixer.
2. Masukkan keju parut, aduk rata kemudian masukkan tepung terigu. Aduk rata kembali.
3. Tipiskan adonan kemudian cetak sesuai selera.
4. Tata di loyang yang sudah dioles tipis margarin, olesi kuning telur dan taburi keju cheddar parut.
5. Panggang dalam oven dengan suhu 120-130'C hingga matang dan berwarna coklat keemasan.
6. Angkat, dinginkan di cooling rack baru kemudian dimasukkan ke wadah kedap udara.

DeleteHello Citra, if you still want to know, bloeien actually means blooming. The word flower you are looking for (in Dutch) is bloem or bloemen (plural). And the word stengels (plural form of stengel) in kaasstengels means stems. So kaasstengels literally means cheese stems or batang keju in Indonesian. :D
