Summer peak here in Bursa. With dry, no wind, and high humidity, I always find something to refresh our weekend dessert. And what do you think about fresh cold and fruity dessert?
And peach is everywhere now. I like the sweet with lightly sour of it. I can eat it just like that, with my own spicy sour palm sugar sauce, sometimes.
Pity, my husband doesn't like peach so much. He is just like my kid who eat some fruits after I cook into something that makes the fruits "disappear" or turn into something looks scrumptious for them. I'm telling you.... I am dealing with "two kids" when it comes to food.. picky..picky and picky..both my kid and hubby... sssgggh.
So I decided to make panna cotta as his favorite, and my kid would like something like pudding for her (^,^) This dessert base on my previous strawberry cheese panna cotta I made before. I recommend you to make it as well since for me it's my best panna cotta dessert.
This rich and delicious peach cheese panna cotta become an additional new dessert menu on our table now. You just simply vary with your favorite fruits. The cream cheese makes this dessert definitely be a repeatable menu for your family.
Serve up this delish tasty dessert to refresh your summer with family and friends.
Serve 4
Ingredients:
(A)
- 250 g (from about 2 big size) peach peeled and stoned
- 200 gr cream cheese
- 100 gr sugar (to taste)
- 2 ¼ tsp gelatin powder
- 3 tbsp milk
- 200 ml heavy cream
- 1 tsp vanilla essence/ pasta
- 150 gr sugar (to taste)
- 250 ml water
- 1 star anise
- 4 cloves
- 5 cm cinnamon
- 3 medium peach, cut into wedges
How to make:
- Prepare 4 x 250 ml ramekins or bowl/ glass. Cut the peach into chunks. Use blender and blend all ingredients (A) until very smooth. Set a side.
- In small bowl place 3 tbsp milk, sprinkle gelatin over the milk and let it stand for about 5 minutes.
- Heat heavy cream in medium pan until it's just simmering. Pour about ¼ part of the cream to the gelatin, stir until it dissolve and pour back into the pan. Add in vanilla essence/ pasta to the pan and stir to combine.
- Mix in peach and cheese mixture to the pan and stir to well combine. Pour into prepared ramekins or serving bowl/ glass. Let it set in refrigerator.
- For making peach syrup; in medium bowl put sugar, water, star anise, cloves and cinnamon, bring to boil. Turn off the heat and stir in peach wedges, gently stir to make all peach cover by syrup. Let it cold in refrigerator.

Panna cotta secara harfiah berarti " cream yang dimasak". Sajian ini sejenis pudding yang berasal dari Itali. Pada dasarnya panna cotta terbuat dari cream yang dimasak dan dikentalkan dengan gelatin.
Dari panna cotta dasar biasa diberi tambahan aroma seperti kopi, vanilla atau rhum. Dan kini banyak sekali variasi panna cotta seiring dengan berkembangnya selera dan kombinasi bahan yang ada.
Seperti yang saya buat hari ini, karena di kota saya sedang musim "peach" atau buah persik, kali ini saya ingin buat panna cotta dengan campuran dan syrup buah persik ini. Berbeda dengan basic panna cotta yang saya buat sebelumnya, hari inipun panna cotta saya tambahkan cream cheese untuk memperkaya rasa dan kandungan gizinya....
Soal rasa....jangan ditanya deh.....hmm...cobain deh.
Resep peach cheese panna cotta ini saya buat berdasarkan strawberry cheese panna cotta yang sudah saya posting sebelumnya.
Yukk...coba dibikin di dapur...
Bahan A:
- 250 gr buah persik, kupas dan buang bijinya,potong kecil
- 200 gr krim keju
- 100 gr gula pasir halus (bisa ditambah atau dikurangi sesuai selera)
Blender semua bahan A hingga halus lalu sisihkan.
Bahan B:
- 2 ¼ tsp gelatin powder
- 3 sdm susu
- 200 ml heavy cream
- 1 sdt vanilla essence/ pasta
Taburkan merata gelatin bubuk pada susu cair. Diamkan hingga mengembang (kurleb 5 menit).
Panaskan krim kental hingga hampir mendidih lalu tuangkan pada campuran susu-gelatin, aduk rata hingga gelatin larut sempurna.
Tip: Jika gelatin masih terlihat belum larut, panaskan diatas api sangat kecil sambil terus diaduk hingga larut saja. Segera angkat dari api begitu gelatin larut.
Penyelesaian:
Tuang campuran buah persik dan crem keju ke dalam campuran gelatin, aduk rata.
Tuang rata ke gelas saji / mangkok puding sama rata. Dinginkan dalam lemari es.
Bahan setup buah persik:
- 150 gr gula pasir (sesuai selera manisnya)
- 250 ml air
- 1 star anise/ pekak/ bunga lawang
- 4 cengkeh
- 5 cm kayu manis
- 3 buah persik ukuran medium, potong bulan sabit
Panaskan semua bahan kecuali buah persik diatas api sedang hingga mendidih. Matikan api, lalu masukkan potongan buah persik, aduk perlahan agar buah tidak hancur. Dinginkan dalam lemari es.
Hidangkan panna cotta dengan setup buah persik.
