Cara Membuat Tahu sendiri/ Homemade tofu



Have you eat tofu?- it's healthy.
Have you ever think to make your own tofu?- beside it's easy, it's also healthy because anything we make by our self, we can control what and how the ingredients we use.
Tofu was my daily food back when I was in Indonesia. I ate it almost everyday on my menu. You can eat it as  a snack or as side dish. So, when I'm living here I can not find ready tofu here in Turkey.. maybe nobody eat tofu here :))
Then I feel something missing from my menu... so here I am.. making my own tofu... Try it once and you will like it too.. ^,^



Things to Prepare:
1) a large pot at least 6 liters capacity
2) Sieve/ strainer
3) Cheese cloth to filter or can use a clean cloth thin cotton.
4) Blender/ food processor
5) Tofu mould-anything you have with holes.
6) Weight or press tools



  Ingredients:
• 500 grams of soybean
• Warm water
• ± 200 ml lemon / lime juice



How to make:
A) Rinse soybeans. Soak in plenty of water (see Figure 1). Soak overnight untill double its volume because absorbed water (Fig. 2). Rinse and drain (Fig. 3).


B) Blend soy bean with warm water, the ratio 1: 4 in volume = 1 for soybeans: 4 for water (Figure 4). Prepare a strainer and cheese cloth. Strain and wring out the blender yield (figure 5). You may keep the dregs and  used to make tempeh gembus.


C) Put all soy milk in big pan, heat until almost boiling (Fig. 6). You can cover with lid, but let it open a bit so it won't boil overt. After almost boiling, let stand briefly until lukewarm. Then slowly add lemon juice while stirring very slow until the soy agglomerate such as figure 7, Leave it up to room temperature and precipitation settled.


D) Prepare tofu mold like a figure 8, Cover with cheese cloth (cotton filtre). Slowly, pour the soy precipitation/ sediment into the mold (Figure 9) and cover with the rest of the filter cloth (Fig. 10). Give ballast like the picture 11. As you can see at Fig. 12, residu fluid drop down from the mold. This process  for about 3 ~ 5 hours.


E) If you want more dense tofu, Steamed after being pressed. 
The process of making yellow tofu, add a little salt, turmeric powder and garlic powder in the cooking process No. 6.

Membuat susu kental manis sendiri I / Homemade Sweet Condensed Milk I

Have you ever think to make your own sweet condensed milk? Maybe for you who can find it easily around corner in your place, making it at home will consuming a lot of effort and not practical at all. But for those who's just like me, finding this product is like finding a water in desert :))

Maybe because in Turkey not many people know and use this sweet condensed milk. And indeed, provide need demand, right? ^,^
In my homeland, mostly people using this, we call it "susu kental manis". Even you can find in economic packet for you to bring anywhere ^,^

Well, anyway... If you like to make everything by homamade, or you can't find it in your place, or you just want to try to make it.. here it is my recipe for homemade sweet condensed Milk


Yield ± 250 ml


What you need and how to make it:
 50 gr unsalted butter
 ¾ cup granulated sugar
 ¾ cup water
 1 cup powdered milk

AYRAN - Turkish Yogurt drink

Ayran: the perfect beverage
Ayran is a mixture of yoghurt, water and salt. The thickness may vary across Turkey with those down south preferring something a little firmer. Most commercial manufacturers add approximately 1 percent salt -- about 1 gram for every 100 milliliters of liquid. Unsalted versions are available and can be easily prepared at home. Ayran is the perfect accompaniment to kebabs, döner, lahmacun (very thin, flat-style pizza), gözleme (savory flat, phyllo-style pastry) and some pide (thicker-crust-style pizzas) and börek (savory pastry).
The potential health benefits attributed to the bacteria of yoghurt are related to the traditional, spontaneously fermented milks, not those soured with standard bacteria used in industrial production. Ayran purchased in sealed plastic and foil cups are unlikely to provide the sought-after gastrointestinal assistance; any bacteria present will not survive the harsh internal environment of the human body.
Ayran  is that the process of fermentation sees milk's natural sugar, lactose, broken down, used as food by the bacteria. This makes digestion of both drinks easier than their predecessor, milk. Their other nutritional benefits come from their abundant minerals; calcium, potassium, phosphorus, magnesium and vitamins riboflavin, B12, A, K and D.

Homemade Cherry Compote and some Facts about Cherry

As I said previously, for celebrating cherry season (read: Low price cherry) here in Turkey I will post some recipe using this fascinating cherry. And read some facts about this little cute fruit below that I copy from some sources.

 
Some great facts and advantages about this Cherry:
* Cherry contain anthocyanins which combat diabetes (lowers blood sugar levels)
* Consuming fresh Cherry also can reduce levels of cholesterol in the blood.



As reported by genius beauty, cherry juice can improve your sleep quality. Research has shown that people who had been drinking cherry juice without the sugar in the morning and evening, have better sleep than those who drink other juice in the same amount. The average duration of their sleep improved by 17 minutes after eating cherry juice.
The content of the cherry juice affects melatonin in the body. Melatonin is a hormone that regulates sleep and wake cycles, as manifested by Wilfred Pigeon, a psychiatrist the University of Rochester in New York
.

Well, after knowing the fact of these cherry.. let's make this one also, shall we? ^,^


Ingredients:
 500 grams of fresh cherry fruit, pitted and clean the stem.
 7 tablespoons granulated sugar (or you can use diabetes sugar for a healthy reason)
 ¾ tsp citric acid (or can be replaced with 2 tablespoons lemon juice)
 ¾ cup water
 ½ tsp Vanilla extract

In a heavy-bottom sauce pan, put sugar, water and citric acid, bring to almost boiling and  sugar dissolves. Put in fresh cherry, stir very gently until all cherries covered with the syrup, let it cook about 2 ~ 3 minutes.
If you cook it too long, cherry will soft and tend to crushed, but if you like it that way (slightly like jam), you can also cook them a bit longer.
Let stand until room temperature before storage in sterile jars. Keep refrigerated

(Yield about 700 gr). You can double the recipe to make more yield.

Lemon Curd I

Selam everybody...Merhaba from Turkey.

I was planning to make lemon cake.. and I thought it would be nice if I put lemon curd in between..hmm..must be Yummy !
so here it is my lemon curd. Soon I will post my lemon cake also along with it.
You Can use it as filling for cake, pastry or just as a simple dessert.


Ingredients:

  • 2 cups granulated sugar
  • 1 tsp  cornstarch
  • ¾ cup lemon juice ( do not use bottled)
  • 150 gr unsalted butter. Cut into chunks, Soften.
  • Lemon Zest from 1 medium lemon
  • 4 egg yolks.
  • 1 whole egg 



Method:
1) In heavy-base saucepan, combine sugar, cornstarch and lemon juice. Mix with whisker until sugar dissolves. Add eggs one at a time, continue to mix.
2) Add butter and lemon zest. Whisk until smooth and well blended. Put pan over stove and heat over medium heat. By manual whisker Stir and cook until thick and almost boiling (No need to boil).
3) Turn off the heat. Keep stirring until hot steam gone. Let stand to room temperature before being stored in a clean jar with lid. 
Make about 400 ml.

Homemade Soy Milk (Membuat susu kedelai di rumah)


Beside of main ingredients for making "tempeh" and tofu (Tahu-Indonesian), soy bean also can be processed into milk or soy milk. Making soy milk has been developed in China in the 2nd century BC. and went into Japan then Southeast Asian countries after World War II.

Soy milk has a protein content and amino acid composition similar to cow milk. Soy milk also non cholesterol. Protein content in soy milk are influenced by soy varieties. Soy milk can be used to improve the nutritional value of food protein in rice and other cereals.

There are many benefits of soy milk, such as reducing blood cholesterol levels,Prevents Arteriosclerosis, Hypertension, Coronary Heart Disease and Stroke, Prevent Diabetes Mellitus,  Anti-Cancer. and other benefits can we get from this soy milk.

Unfortunately with those all nutrients and benefits on soy milk, lots of soy milk made from genetically (non-natural) soybeans which is absolutely not healthy and dangerous.
If we want to get the maximum benefit from this soy milk, we can make our self at home with natural soy ingredients of our own healthy choice. So, my don't we try this healthy way, Homemade. @(^_^)@



Tools We need:
- Blender
- stainless steel pans
- Filter and cheesecloth (I just use thin cotton fabric)
- Clean Bottle to keep soy milk

Ingredients:
- Soybean
- Warm water


Method (You can also see illustration picture):
A. Soak soy bean at least 8 hours or overnight. Give much water because it will expand twice.
B. Wash Soy bean many times so that the soy milk later does not smell musty.
C. Drain the soy.
D. Using a blender, puree soybean with warm water, on ratio 1 : 2 (1 for soybeans and 2 for water)
E. Filter and separate the soy milk from the waste using a filter coated with cheesecloth.
F. And you get the soy milk as in illustration (F).
G. Heat over medium heat while stirring occasionally until boiling.


Let it chill. Store and keep in refrigerator. Better consumed not more than 1 months.

Making your own POMegranate Jam (Membuat selai Delima)

Pomegranate. I love it. I love the color and I love the sweet (slightly sour) taste. And do you know that pomegranate also can prevent prostate cancer and very much good for your heart?
Yes.. healthy and yummy at one packet! (^_^)
Few days ago I made my own pomegranate jam and it goes along lovely with some of my desserts, like Cheddar Cheese Cake with fruits ToppingBrownie Tangerine Cheesecake, Cheddar cheese cupcake. And I bet it will be suit with your other dessert too. In fact I'm planning to make some more dessert using this beautiful and healthy and delicious Pom jam :D

"Kompostosu" or "fruit soup". Like jams, tomato paste, chili paste, "kompostosu" is also mostly 'homemade' in houses at Turkey. Mostly made during summer time when a lot of fruit harvested that season ...
"Kompostosu" or in English compote Fruit stewed or cooked in syrup

Seftali is a Turkish name for peach. During this August summer (which coicendencly Ramazan month) I already made some Kompostosu from some vary fruits.. very refreshing for break the fast...



  • 6 peaches. peeled and wedge lengthwise.
  • 3 cups water. bring to a boil.
  • 1 +1/2 cup granulated sugar, if you want more sweet could be added.
  • yellow food coloring (optional). 
  • 1 teaspoon citric acid or can use one tablespoon of lemon juice.

Membuat mie telor sendiri ( #homemade egg noodles)

Homemade egg Noodle. Economic, safe, without preservatives .... one recipe made can last about two weeks in the refrig.




Ingredients:
- 4 cups wheat flour (I use a all purpose wheat flour)
- 4 eggs (beat)
- 3 tablespoons of tapioca flour ( or you can use cornstarch), plus more for sprinkle
- 2 tsp salt
- 1 / 2 teaspoon baking powder
- enough water (I use 1/4 cup water)
- small amount of cooking oil.
