My today today post is another Surabaya-nese ( if I may say so for things from Surabaya 😊 )

Surabaya is the capital city of East Java province and it's my homeland. The second largest city in population after Jakarta.

And as other regions/cities in İndonesia Surabaya is also famous for the richness of its own typical cuisine. Talking about Surabaya food is like holding a very long shopping list that you want and need them all! Surabaya foods are rich and full of flavor distinguish from other cuisines from other İndonesian cities/regions.
And one of the typical ingredients from Surabaya (and neighboring towns) is "petis". Petis is a product ingredient made of shrimp in paste form. Some call it shrimp paste butcall İ  it just "petis" so not being confuse with "terasi" or "belacan" (another shrimp product). Below here you can see the difference between "petis" and "terasi/belacan".
But both shrimp products are staple ingredients in most İndonesian cuisines. İ brought them from İndonesia last year during my family visit.

İt had been a while İ didn't post any roll cake since my last Zebra pattern roll cake with cooked dough method few months ago. No reason why, İ am just not "in a mood" baking one.  Until my husband asked me in  one rainy Sunday why there is no any cake to enjoy with our tea. İ answered and gave him a jar of cookies but he went; would be nice if there is a cake.

No...no rolling eyes really 😤. İ am glad he missed my cake and İ miss making one as well. İ was going to make butter bundt cake but İ feel İ want to eat light. So İ decided to make roll  instead. İ don't have any jam left in my refrigerator and making buttercream would take another effort. So My roll cake this time just use nutella as filling.

Question of the day; what chicken part is your favorite?

Telling you honestly..... I love chicken feet. İ know..İ know.. some of you maybe will stick your tongue out 😝 😝 . İt sound gross for some of you. Cause maybe you never eat that or even think to eat it. But believe me it's good! Mostly İndonesian and some Asian countries eat chicken feet.
Chicken feet rich of glucosamine chondroitin, collagen and trace minerals. Moreover, a chicken feet stock is an excellent source of calcium

Sadly İ can not find any chicken feet in Turkey from any butcher here so İ won't talk more about it and İ should wait until İ get home to İndonesia soon 😊

Second list of my fave chicken part of course wings! Who doesn't love wings.
The yummiest chicken part and every body's favorite snack however people cook it or whatever glazing sauce with it.

My daughter is very much picky on food and doesn't eat too much, but whenever there is chicken wings she could eat them more as İ thought. So almost once in few days İ cook chicken wing just for her.
Sometimes İ made her crunchy chicken wing and she loves to dip it in cheese sauce. Or simple Honey garlic chicken wings. But most of her fave is this Fırında Kızarmış Tavuk kanat literally mean oven roasted chicken wings.


This chicken wing is actually my copycat taste from rotisserie chicken wing seller here in city where İ live (or maybe other cities in Turkey). And make them at home is satisfy me not just in fresh taste but also much saving in budget.
By making it at home we can control the freshness of chicken wings we use, of course.

This is super easy and simple soup yet healthy and of course repeatable one.


Cauliflower potato soup

serve 5-6 portions

İngredients:
  • 350 gr cauliflower/about half head of medium one, roughly chopped
  • 200 gr potato, peeled and small diced
  •  cup red lentil
  • 1 medium yellow onion, finely chopped
  • pinch of drıed oregano (you can use fresh one)
  • 2-3 tbsp olive oil
  • 1100 ml (±200 ml) broth, depending on how thick you wanna go (chicken or beef or vegetable)
  • 1 tsp salt or to taste
 for serving:
  • olive oil or melted butter
  • oregano
  • lemon

The cooking of Istanbul, Bursa, Izmir, and rest of the Aegean region inherits many elements of Ottoman court cuisine, with a lighter use of spices, a preference for rice over bulgur, koftes and a wider availability of vegetable stews, eggplant, stuffed dolmas and fish. The cuisine of the Black Sea Region uses fish extensively, especially the Black Sea anchovy (hamsi) and includes maize dishes. The cuisine of the southeast (e.g. Urfa, Gaziantep, and Adana) is famous for its variety of kebabs, mezes and dough-based desserts such as baklava, şöbiyet, kadayıf, and künefe.

Indonesian cuisine is one of the most vibrant and colorful cuisines in the world, full of intense flavor. It is diverse, in part because Indonesia is composed of approximately 6,000 populated islands of the total 18,000 in the world's largest archipelago, with more than 300 ethnic groups calling Indonesia their home. Many regional cuisines exist, often based upon indigenous culture and foreign influences. Indonesia has around 5,350 traditional recipes, with 30 of them considered the most important.

My today post is one of the famous İndonesian cuisine called Ayam bakar kecap. Ayam bakar literally means grilled chicken, kecap is sweet soy sauce. This sweet soy sauce (kecap manis) is one of the staple condiments in İndonesian cuisine especially in javanese cuisine. Traditionally the chicken grilled over charcoal and brushed with spiced kecap manis during the grilling process which gives more intense flavour.

In Java, ayam bakar usually tastes rather sweet because of the generous amount of sweet soy sauce either as marination or dipping sauce, while ayam bakar Padang, Bali, Lombok and most of Sumatra are usually spicier and more reddish in colour due to the generous amount of chilli pepper, turmeric and other spices, and the absence of sweet soy sauce.


Ayam bakar is usually served with sambal terasi (chilli sambal with terasi) or sambal kecap (sliced chilli and shallot in sweet soy sauce) as dipping sauce or condiment and slices of cucumber and tomato as a garnish as well as a side dish.

Sambal terasi

Sambal is a staple condiment in most İndonesian cuisine. Almost all İndonesian food requires sambal  to be served together with it. 

Sambal is a hot sauce typically made from a mixture of variety of chili peppers with secondary ingredients such as shrimp paste, garlic, shallot,  palm sugar, lime juice, kecap manis (sweet soy sauce) and rice vinegar or other vinegar. 
Sambal is an Indonesian loan-word of Javanese origin (sambel). It is native to the cuisines of Indonesia and neighboring countries like Malaysia, Singapore, Thailand and Brunei. It has also spread through overseas Indonesian populations to the Netherlands and Suriname.

Various recipes of sambals usually are served as hot and spicy condiments for dishes such as lalab (raw vegetables), ikan bakar (grilled fish), udang goreng (fried shrimp), ayam goreng (fried chicken), ayam penyet (smashed chicken), iga penyet (ribs) and various soto and soup.
