Tavuklu Ispanakli börek (Chicken and Spinach pastry)

Börek is one of my favorite meal in Turkey. It's kind of pastry with vary of contents. Previously I made börek with chicken mushroom filling, and this time I made it with spinach (ispanak-Turk) and chicken filling.



Ingredients:
- 1/2 recipe basic pastry dough
- 1 pound spinach. wash and cut into rough
- 300 gr chicken meat (meat chicken w / out bone). diced
- 1 medium onions. Finely chopped
- 1 clove of garlic. finely chopped
- Salt and pepper to taste
- 1 tablespoon margarine for sauteing.

- 1 egg yolk. whisk with 1 tbsp oil for brush topping.

Mini Apple Pie (Elma minic tart)


Ingredient:
apple filling ingredients:
-500 gr green apple ( or 4 medium apples).cut small cube/ chopped finely
-6 table spoon sugar
-1 tea spoon cinnamon
- 50 gr raisin
- 1/2 glass of water


mix and cook at low-medium heat all ingredients above until apple get soft and thickened.


pie shell ingredients:
165 g Flour
1 egg yolk
40 g  sugar powder
70 g butter


Method:

1 mix together ingredients, stirring with a pastry knife until the flour looks grained beads. Rest for 15 minutes and lid with the plastic.
2. Roll the dough within 1 / 2 cm thick, and lied on the pie molding.
3. Put filling of apple mixture inside the "pie cup"
4. cover the top with the dough, make it like basket (in picture) brush with egg yolk
5. Oven for 15 minutes or until golden brown.

Macharoni Schotel

Another variation from pasta family.

Ingredients:
- 250 gr macaroni pipe or coil form. Boil as instruction on packet just until 3/4 cooked. Set aside
Red Sauce:
- 1 carrot. diced or shape match
- 200 gr ground meat
- 1 medium onion. finely chopped
- 3 cloves of garlic. Finely chopped
- 1 large tomato fruit. skin peeled and finely chopped
- 1 tablespoon tomato paste. Dissolve a half cup water / broth
- Dried basil 1 / 2 tbsp.
- Sugar, salt and pepper to taste.
- 1 1 / 2 tablespoons butter for sauteing.

White Sauce:
- 1 1 / 2 cup whole milk
- Two eggs.
- 2 tablespoons bread crumbs
- Salt and pepper to taste.





- Mozzarella Cheese or cheddar (or any kind of topping cheese you like)

Direction:
Red sauce
1) Heat butter and saute the ground meat until brown. Add the garlic and onion, saute until wilted and fragrant. Add tomatoes, stirring until tomato is wilted.
2) Put carrots and cook until carrots are tender. Add dissolved tomato paste. Stir well. Seasoning with sugar, salt and pepper. Do taste test. Add dried basil leaves, stir and turn off the heat. Set aside
White sauce.
1) Beat eggs until loose, add milk, salt and pepper and bread 
crumbs. Stir until blended.


Pre heat oven at 160 deg C. Layered heat-resistant baking dish with butter. Arrange the macaroni, and put red sauce, pour with white sauce then sprinkle with cheese. Do the same up to three layers and all ingredients finish. Bake in oven 160 deg C until cooked (approximately 45 min)

Serve warm with chili sauce or tomato sauce



Bahasa Indonesia
Bahan-bahan:
- 250 gr macaroni pipa atau bentuk keong. Rebus hingga 3/4 matang saja. sisihkan
Saus merah:
- 1 buah wortel. potong kotak/ bentuk korek
- 200 gr daging cincang
- 1 bawang bombay medium. cincang halus
- 3 siung bawang putih. Cincang halus

- 1 buah tomat besar. kupas kulit dan cincang halus
- 1 sdm pasta tomat. Larutkan dengan 1/2 gelas air/ kaldu
- daun basil kering 1/2 sdm.
- gula, garam dan merica bubuk sesuai selera.
- 1 1/2 sdm margarine untuk menumis.
Saus putih:
- 1 1/2 gelas susu cair
- 2 butir telur.
- 2 sdm remahan roti/ panir
- garam dan merica bubuk sesuai selera.

- keju cheddar parut atau mozzarella

Cara Membuatnya:
Saus merah
1) Panaskan margarine dan tumis daging cincang. Masukkan bawang putih dan bawang bombay, tumis lagi hingga layu dan harum. Masukkan tomat, aduk hingga tomat layu.
2) masukkan wortel dan masak hingga wortel empuk. Masukkan pasta tomat yang sudah dilarutkan. Aduk rata. Bumbuhi dengan gula, garam dan merica bubuk. tes rasanya. Masukkan daun basil kering, aduk dan matikan api. Sisihkan

Saus putih.
1) Kocok telur hingga lepas, tambahkan susu cair, garam dan merica serta tepung panir. Aduk hingga rata.

Olesi pinggan tahan panas dengan mentega. Susun macaroni, beri saus merah, siram saus putih lalu taburi keju. Lakukan hal sama sampai 3 susun dan adonan habis. Panggang dalam oven 160 deg C hingga matang (kurang lebih 45 mnt)

Daging masak Jamur (Meat with mushrooms)

Meat can be substitute with chicken. Simple and quick meal to make for dinner.

Materials:
- 500 gr beef / lamb. Diced
- 300 g button mushrooms. Diced
- 4 peppers. Discard seeds and cut lengthwise
- 3 cloves of garlic. Finely chopped
- 1 large onion. roughly chopped
- 1 medium-size tomatoes. finely chopped
- 1 tablespoon soy sauce
- Salt, sugar and pepper powder to taste
- 2 tablespoons margarine for sauteing

Yaprak Sarması / Turkish grape leaves dolma

Yaprak Sarması is another Turkish traditional food. We can serve it in special occasion like Ramazan bayram (Muslim celebration after Ramadhan). But sometime we can just make and serve it on our family dinner table.




Ingredients:
- 1  kg of grape leaves that have been boiled and drained
- 200 gr ground meat
- 2  1/2 cup of rice. Wash and drained.
- 1 large onion. shredded
- 2 cloves garlic (optional). grated.
- 1 medium-size tomatoes. shredded
- 1 tablespoon tomato paste
- 1/2 tablespoon dried mint 
- 1 / 4 cup olive oil + 1/4 cup for boil with Sarma.
- 1 tsp "yenibahar" / allspice 
- Salt and pepper to taste

Sarımsağı Yoğurt (Yoghurt with garlic sauce)


Ingredients:
- 2 cloves garlic
- pinch of salt salt (to taste)
- 1 cup thick Turkish plain yogurt
- finely chopped dill (optional)


Method:
puree the garlic with salt. Combine the yogurt and add about 2 tablespoons water. Stir well and serve as sauce for some Turkish meals or other meals you like

Tahu Isi (Stuffed tofu)

Stuffed tofu or in Indonesia we called Tahu Isi, one from many kind favorite snack in Indonesia. Main ingredient, of course tofu. For the stuffing we can vary with many kinds as our favorite like vegetables, chicken, etc.
Today I made stuffed tofu with vegetables filling. Simple but enough to ease my homesick to Indonesia...
If you want to try to make it, let's start with the ingredients...



Ingredients:
- 4 cut out a square. cut into triangles and fry until cooked.
- 1 large carrot. coarse grated or cut into match shape.
- 2 tablespoons bean sprouts
- 3 stalks spring onions. minced
- 1 medium size onion. finely chopped
- 3 cloves of garlic. Finely chopped
- Salt and pepper to taste
- 2 tablespoons cooking oil
- 2 teaspoons flour

Chicken Mushrooms



Chicken mushrom's
Ingredients:
- 300 gr chicken ( w/out bone), cut cube
- 100 gr mushrooms ( chopped)
- 1 medium onion ( finely chopped)
- 2 small garlic (finely chopped)
- 1 medium leeks ( cut 2 cm)
- salt, pepper
- soya sosu or sweet soy sauce as taste
- 1 tbsp margarine.

Cooking Instruction:


Heat 1 spoon of margarine, put chicken and cook till done. put the onion and garlic, saute until tender and smell nice. add a little soy sauce, salt and pepper. 
then add mushrooms into that sauce pan. (add a little water, enough to wet the mushrooms). cook 10 mnt more and last add the leek before you turn off the heat.

Puff pastry Basic dough ( Adonan Dasar Puff Pastry )

Puff pastry is known as Pâté feuilletée, in France and is used in the making of Napoleons, palmiers, croissants, allumettes, turnovers, en croute dishes, pithiviers, tartes tatain, beef Wellington, bouchées, and vol-au-vents.

With puff pastry basic dough we can variant with many kind of filling and creations.
Basic Puff Pastry Dough. Beside this recipe, you can check my other pastry dough recipe here.

Ingredients:
- 1/2 kg high protein wheat flour
-1 Eggs
- 1/2 teaspoon salt
- 200 ml cold water (ice water)
- 50 grams margarine
- 175 grams korsvet (pastry fats), cold.

Turkish dessert. Fırın #SÜTLAÇ / Turkish bake rice pudding

Fırın Sütlaç or bake rice pudding, one famous traditional dessert from Turkey. Can be served warm but much better after put inside refrig...
Some recipes can be vary from one cookbook from another. Some people may add cornstarch their recipe. 
Other type of this Sütlaç is non bake, but both are just great. Try it and I believe your family will like it as well.




Ingredients (for 6 remekins @250 ml):


- 1/2 cups rice (short grain),rinsed.
- 3 cups water
- 750 ml milk
- 1 cup sugar
- 3 tablespoons rice flour, dissolve it with 2 cups water
- 1 tsp vanilla
- Pinch of salt (optional)

Method:
1) Cook rice with 3 cups of water until rice is tender (if the type of rice you used is hard type, water may need to be added).
2) Mix in milk and sugar. Stir until cooked (there are small bubbles), add vanilla and salt , stir again.
3) Mix in rice flour solution, stir until boiling again.  use a medium-low heat 
for whole process of cooking.
4) Once cooked, put it in a heat proof bowl. Prepare the baking tray and fill with hot water. Place sütlaç filled bowls on baking tray with water and bake it at 180 deg C until golden brown surface.


Keep in refrig before served. Afiyet Olsun.

Bahan-bahan (untuk 6 mangkuk kecil):
- 1/2 gelas beras (pilih jenis yang lunak dan bulir kecil), cuci bersih.
- 3 gelas air
- 750 ml susu cair
- 1 gelas gula
- 3 sdm tepung beras, larutkan dengan 2 gelas air
- 1 sdt vanilli
- sejumput garam (optional)


Cara membuat:
1) Masak beras bersama 3 gelas air hingga beras lunak (jika jenis beras yang digunakan adalah jenis beras yang keras mungkin perlu ditambah air).
2) Masukkan susu dan gula. Aduk hingga matang (ada gelembung kecil), masukkan vanilli dan garam (jika tidak suka garam, tidak perlu ditambahkan), aduk kembali.
3) Masukkan larutan tepung beras, aduk-aduk kembali hingga mendidih. Seluruh proses memasak, gunakan api kecil-sedang.
4) Setelah matang, taruh dalam mangkuk tahan panas. Siapkan loyang panggang dan isi dengan air panas. Taruh mangkuk-mangkuk berisi sütlaç diatas loyang berisi air tersebut dan panggang dengan suhu 180 deg C hingga permukaan kecoklatan.


Dinginkan dalam lemari es sebelum dihidangkan.

Martabak Telor Homemade

Indonesian favorite food for accompany us to have evening tea with families

Ingredients :
- 5 eggs 
- 4~5 phyllo dough (ready to use or you can make it earlier)
- enough cooking oil for frying martabak
for stuffing:
- 3 stalks of leeks, cut into 2-3 cm
- ground beef  200 gr 
-3 garlic cloves medium size- chopped finely
- 1 medium onion- chopped finely
- Curry spice powder 2 teaspoons 
- 1/2 tsp ground pepper
- 1/2 tsp chilli powder (optional-if you like it spicy hot) 
- salt to taste.
- 3 tbsp vegetable oil for sauteing

Etli Taze fasulye (Green bean with meat)

This is one of daily meal from Turkey that we can find when we visit, stay and experience real Turkish tradition..


Ingredients:


- 300 gr green beans - cut into 5 cm
- Beef / lamb 100 grams - small diced or grated
- 1 medium size onion - finely chopped or grated
- 2 cloves garlic (optional) - finely chopped
- 1 medium tomato - finely chopped
- 1 / 2 tbsp tomato paste - dissolve it with 1/2 cup water
- Pepper and salt to taste
- 2 Tbsp olive oil for sauteing

Corn Flour Fried Chicken

Simple and quick meal to make. you can dipped it in tomato or chilly sauce or sour sweet green pea sauce that I also made.



Ingredients:

  • 1 kg chicken fillet, diced 
  • 3 tablespoons of corn flour. 
  • 1 tablespoon cornstarch 
  • 2 tablespoons bread flour 
  • Half tablespoon garlic powder 
  • 1 teaspoon ground pepper 
  • 1 tablespoon lemon juice 
  • 1 egg 
  • Salt to taste 
  •  Enough vegetable oil for frying
How to make:
1) Mix together: corn flour, cornstarch and flour bread, sprinkle with a little salt and pepper.Set aside.
2) Marinate chicken with lemon juice, garlic powder, salt and pepper. Allow about 30 minutes in the refrigerator.
3) cracked egg and beat well. Mix with chicken marinated earlier. Then roll in flour mixture.
4) heat the oil over medium heat, fry until golden brown (until cooked)

Fried chicken ready to served.



With dipping sauce

Sour and sweet sauce with green pea

Easy to make:
Heat margarine in a sauce pan. Put onion and garlic, saute until fragrant. Put tomato paste which diluted with water previously, add sugar, salt and ground pepper. test the taste. Add the green pea and cook until soft / green pea cooked and sauce slightly thick

Sauce is ready to serve as dipping sauce.


ingredients:

-1 tablespoon margarine for sauteing

- 1 medium onion, -wedge chopped
-2 cloves garlic, finely chopped
-1 tbsp sugar
-1 tbsp green pea
-1 tbsp tomato paste, dissolve it with 3/4 cup water
- salt and ground pepper to taste

Membuat mie telor sendiri ( #homemade egg noodles)

Homemade egg Noodle. Economic, safe, without preservatives .... one recipe made can last about two weeks in the refrig.



Ingredients:
- 4 cups wheat flour (I use a all purpose wheat flour)
- 4 eggs (beat)
- 3 tablespoons of tapioca flour ( or you can use cornstarch), plus more for sprinkle
- 2 tsp salt
- 1 / 2 teaspoon baking powder
- enough water (I use 1/4 cup water)
- small amount of cooking oil.

Islak kek (Wet cake) from Turkey

One from many cake recipe from Turkey call Islak kek (mean wet cake) because after bake, we'll make it 'wet' with chocolate mixture. cake texture and taste almost like brownies, soft... just nice for tea or coffee companion...


Ingredients:
- 4 eggs
- 1 cup granulated sugar
- 1 cup whole milk
- 3 /4 cup melted butter (or vegetable oil)
- 2 tablespoons cocoa powder
- 1 package of baking powder (10 gr)
- 1 teaspoon vanilla
- 2 cups all purpose flour

Eggless Chocolate muffin (coklat muffin tanpa telur)


One of my friend asked me whether I have non-egg cake recipe due to she has allergic to egg.. Oh, I just realize that somebody could allergic with egg .... Must be a little bit tricky for ones who has allergic to some kind of food.. And I admire to those who can survive choosing what they can eat to keep them healthy as always..
After searching on my file, I finally found some recipe that I haven't try it-egg less... so I have a reason now to try that recipe...




Ingredients:
Material I:
- 1 cup rice flour
- ½ cup granulated sugar
- 1 ½ tablespoons cocoa powder
- Almond powder 2 tbsp (optional)- I use finely crushed nuts
- 1 teaspoon baking powder

Material II:
- Corn oil ½ cup (can use melted margarine)
- 1 ½ tablespoons grape vinegar (or balsamic vinegar)
- ½ cup milk.

How to cook:
1) Preheat oven to 160 º C. Mix all ingredients I, and stir well.
2) Add corn oil and vinegar, continue to whisk.
3) Gradually mix in the milk, do not let the batter's too thin.
4) Pour into muffin tins and bake until cooked about 30 min.
5) Let it chill before you garnished with whipped cream and toppings according to your taste.

And the result ... Equally delicious with ordinary muffin using eggs . Have a try...

Inegöl Köfte ( Inegöl Meatball)

Menu Ineğol Köfte in my table
Köfte or meatball is number one favorite meal locally here in Turkey. Me my self and husband also fan of it  ^_^     as kebab, köfte  also has many kind. In Bursa (city I live in now) famous with some traditional Turkish food, one of them is Inegöl Köfte... Inegöl is name of  small town about 1 hour away out of Bursa, maybe this köfte came from there. 
Main ingredient of köfte is ground meat mix with other some spices and grilled.
Let's try to make it...

Ingredients:
* 0,5 kg ground meat
* 1/2 teaspoon carbonate
* 1 big onion (grated)
* 1/2 cup old bread , inside part (grated)
* salt to taste


Mix and knead all ingredients above until well blended. Let it stand for about 30 mnts before you shape it long round or oval shaped. Cook over grill. You can add grilled green banana chillies, eggplant and tomato also.


Server while it's hot with fried potato or turkish pilav

Kırmızı biber siş kebab (siş kebab with ground red paprika/ pepper)

When summer came, and long vacation arriving for the family, many families used to go to picnics to many public gardens that provided by local governments in each city in Turkey.Maybe on another occasion I will share the atmosphere in the parks in Turkey when summer, really nice. They bring all the equipment from Cay damlık (traditional Turkish tea pot), up to manggal (bbq equipment) with favorite menu along them namely Kebab or köfte (typical meatball Turkey)

Many kinds of kebabs from Turkey, among others, siş kebab. Siş kebab can make of beef / lamb or turkey stabbed with bamboo or metal and burnt over charcoal.
This time I try to make this siş kebab seasoned with red parika powder (ground red pepper)or in Turkish language called " Kırmızı biber". This red pepper powder give 'ferocious' red tint but it was not hot spicy. siş kebab I make with these ingredients using turkey meat and beef.


Materials (about 10 sticks):
* 1/2 kg beef/ lamb, cut into chunk
* 1/2 kg turkey (chicken can also be used), cut according to taste.
* 5 tablespoons olive oil (or you can use regular cooking oil)
* 1 tablespoon smoke paprika

* 1/2 tablespoon cayenne pepper (to taste)
* 1 /2 tablespoon dried basil leaves (fesleğen: Türkçe)
* 1/2 teaspoon red chili pepper flake

* 1 teaspoon garlic powder (optional)

* Bamboo/ metal Skewers 

Additional:
Onions, large green chillies, tomatoes and vary according to family tastes.



Mix all ingredients and marinate chicken/ turkey
or meat whole night
 How to make:
Mix all ingredients above and apply (marinate) on the chicken (turkey)/ meat. Allow to soak. I made the night before, so it's perfect. Roasted over a coals.
Additional materials are also roasted on coals.



Enjoy it while it's hot. I'm thinking to gather family picnic soon with this :D

Lemon Squash, great summer beverage

Early August, the weather so hot without wind, make me and husband hesitate to go out even just go to market... We just laying down on carpet in front of TV with full big jar of.... Lemon Squash ! hhmmm.... just so nice for cool down a lil bit hot temperature in our body....
It's nice to cool down body temperature on summer
Things you should prepare:

-1 big jar 
-3 big lemon (before you squeeze lemons, grate lemon rinds/ make lemon zest)
-200 gr sugar ( dissolve with 300 ml water) or you can use colorless vanilla syrup.
-1 lt soda water.

How to make is easy. mix all together the materials, taste the sweetness as you like, you may add some sugar or syrup. Put on big lemonade jar. Keep in refrig.
Add some ice cube when you will serve it, garnish with lemon slice.

Enjoy your summer.
