Pickle in Indonesian cuisine is part of side dish that complement main dish or other meal. Different from other type of pickle which brine in vinegar or other solution and ferment for period of times, Indonesian pickle is quick to make and consume it freshly after made.
Many vegetable and fruit we use for our fresh pickle e.g carrot, cucumber, bean sprout, cabbage, pineapple, shallot and more.
We also have cooked pickle and generally serve as side dish- we call it "acar kuning" or yellow cooked pickle.

So if you want to experience Indonesian food, here are I share some fresh pickles I made. You serve some pickle with fried rice, fried noodle, and some Indonesian foods.
Acar kuning/ Yellow cooked pickleSpices:
🍯 2 pcs candlenut🍯 4 cloves garlic
🍯 4 pcs shallots
🍯 2 cm fresh turmeric or 1 tsp powder
🍯 1 tsp salt or to taste
🍯 1 Tbsp sugar
Pickle ingredients:
🍯 some small red shallot, halved or whole
🍯 some bird eye chili, whole
🍯 2-3 medium size gherkin or english cucumber, seeded, julienne cut
🍯 2-3 medium size carrot, julienne cut
🍯 daun salam (bay leaf)
🍯 2 Tbsp fresh lime/ lemon juice or to taste
🍯 2 tbsp oil
How to make:
1) Pound the spices with mortar and pestle or with blender/ food processor. I prefer use my traditional pestle and mortar to do this job 😊. pound until smooth.
2) Heat about 2 Tbsp oil on a wok or pan. Stir fry the spice with bay leaves until fragrant and oily. Add in shallot, chili, carrot and cucumber. Pour about 2 cup of water.
Note: İ add my cucumber later after carrot slightly wilt
3) Mix in lime/ lemon juice, check the taste. İt should has balance flavor from salt, sugar and slightly sour. Do not cook too long, the vegetable should has slightly crunchy texture.
Remove from heat.

CABBAGE PİCKLE
Mostly serve together with mutton/ lamb fried rice or other fried rice you prefer.
How to make cabbage pickled
- shredded cabbage (about 1 cup)
- 1 cucumber (discard the seed then cubes)
- 2 medium carrot, cubes
- some bird eye chilly
- 1 Tbsp sugar
- 1 Tbsp salt
- 1 Tbsp vinegar
- 1 tbsp water
Toss everything together. Keep in clean jar and ready to use.
Keep in fridge and finish it within 3 days.
The following pickle is mostly served with sweet sour fish, vegetable stir fry ( cap cay), fried rice, fried noodle, Mutton stew and more. Check all my Indonesian food recipe here.
İngredients:
Mix and toss all ingredients and keep in jar with a lid. Serve immediately or keep n fridge up to 3 days.
Keep in fridge and finish it within 3 days.

- 2 medium carrot, cut matchstick/ julienne cut
- 2 medium cucumber, cored and cut matchstick
- 8~10 shallot, halved
- few birdeye chilli
- ½ Tbsp salt
- 1 Tbsp sugar
- 1 ½ Tbsp white vinegar
- 1 Tbsp water
Mix and toss all ingredients and keep in jar with a lid. Serve immediately or keep n fridge up to 3 days.
