Turkish Recipe; Dızmana / Göçmen Böreği

Selam.... Merhaba from Türkiye.. 👋

We call this dızmana (read;desh-mana), dizman or dıclama. But mostly people just named it göçmen böreği

İt's not really like pastry you probably know which made from thin layers of phyllo dough or puff pastry or flaky dough pastry.
İt's a pastry dish, bread-like pour with yogurt egg sauce then bake.
Sometimes fill with cheese or mashed potatoes, but plain without any filling also as good as with filling.

This dızmana is commonly made in Bulgaria by Thracian immigrants. But now everybody across regions also love to bake it.

Perfect for breakfast or brunch. Serve with olive (and olive oil), white cheese, cucumber or slice of tomato. Don't forget to make hot Turkish tea as well 😊

Turkish Recipe; Dızmana / Göçmen Böreği

🍞 100 g  warm water
🍞 200 g  warm milk
🍞 1 ½ instant yeast
🍞 2 tsp sugar
🍞 60 g vegetable/ olive oil
🍞 1 Tbsp salt
🍞 460 g AP flour (plus as needed)
🍞 filling like cheese or mashed potato (optional)
🍞 Sesame seed for sprinkle

Topping sauce
🍞 100 g plain yogurt
🍞 100 g milk
🍞 50 g vegetable/ olive oil
🍞 2 eggs
🍞 pinch of salt

How to make:

1) İn a big mixing bowl, place water, milk, sugar and yeast. Mix then cover, let it sit at room temperature about 6-7 minutes until yeast looks bubbly and active.

2) Add in oil, flour, and salt. Knead until perform smooth and elastic dough. The dough will not tacky to your fingers or bowl. Cover with plastic film and rest until double in volume. 
Note: how long it depends on your room temperature.

3) Punch the dough to remove air bubble and place over lightly flour working surface. Divide the dough into 4 equal parts (see illustration below). And from each part, divide again into 4.

4) Generously grease baking tray with vegetable oil. Arrange the dough pieces over the tray. İf you want to fill it you can do it in this step. Cover with plastic film or kitchen towel and let it rest about 30 minutes.

5) Meanwhile make the topping sauce. Mix all sauce ingredients and whisk to well combine. Set a side.

6) Pre heat oven at 180℃ ( 160℃ fan force). After resting about 30 mnts, using your finger tips, push the dough at some spot (see illustration below). Spoon the sauce all over the dough then sprinkle with sesame seeds. Bake 20-25 minute until fluffy and golden brown.

Note: temperature and time to bake is vary depend on your oven condition, adjust as necessary.

Serve warm is best 🍞
