The combination of geographic and cultural diversity in Indonesia has resulted in one of the most unique cuisines in the world. In addition, Indonesia is rich in spices and herbs.
Foods vary from one region to another. The food from the east is really different from west Indonesia. Sumatran cuisine, for example, often features Middle Eastern and Indian influences, such as the use of curry spices in meat and vegetable dishes, while Javanese cuisine evolves from indigenous Indonesian cooking techniques.











Just like what I am going to share today. "Pecak ikan" is a dish made from fried/grilled fish (any kind of fish) then flush with "pecak" spicy dressing. The spices used for "pecak" dressing are very typical of Javanese food.
This dish easily can be found in West Java, Jakarta, and regions surrounding it like Cirebon town, Tasikmalaya, or even Tegal town.

Some recipes might be slightly different from each region. Some use coconut milk while others do not. Jakarta (Betawi) style uses ground peanut in their "pecak" dressing. But what makes this dish has the same and " a must" herb is "kencur" or sand ginger or kaempferia galanga.

Kaempferia galanga or sand ginger (Kencur)

This sand ginger is a typical herb that has been used in Javanese and Balinese cooking. The herb gives distinguish aroma and taste in food.

This "Pecak ikan" is served with steamed rice, fresh and or boiled vegetables as a side dish. Commonly boiled cassava leaves, boiled long bean, fresh cucumber, and any vegetable you like.

PECAK IKAN/ FISH WITH SPICY DRESSING

Serve 2-3

Ingredients:
🐟 800 gr fish (I use seabass. You can use any kind of fish)
🐟 fresh squeezed lemon juice
🐟 2 cloves of garlic
🐟 1 tsp powdered coriander
🐟 1 tsp (or to taste) salt
🐟 enough cooking oil for fry

For the "pecak" gravy
🐟 5 cloves of garlic*
🐟 3 small shallots*
🐟 2-3 cm kencur/ sand ginger*
🐟 5 cm turmeric*
🐟 3 candlenuts*
🐟 3-4 pcs birds eye chili (depends on how spicy you wanna go)*
🐟 5-6 red chili peppers*
🐟 2 pcs kaffir lime leaves
🐟 1 lemongrass, bruised white part
🐟 1 cup (225 ml) thin coconut milk
🐟 1-2 tsp salt or to taste
🐟 1 tsp sugar
 🐟 4-5 tbsp oil for stir fry the spice

Note: Roast all ingredients with mark (*)

How to make:

Prepare the fish.
1. Squeeze lemon juice over the fish then let it sit for about 3-5 minutes. Wash and set aside.
2. Using mortar and pestle, mash garlic, salt and coriander until smooth. Add a small amount of water and mix well. Marinate the fish with this mixture and let it sit at least 5 minutes.
3. Heat enough cooking oil in a wok/ pan. Fry the fish until golden brown on each side. Drain excess oil and set it aside.

Make "pecak" dressing.
1. Heat a pan over medium heat, roast the ingredients with mark (*) above until fragrant and lightly brown- don't burn. Then blend them until pureé smooth.
2. Heat 4-5 Tbsp vegetable oil in a wok/ deep pan, saute the pure spice above together with lemongrass and kaffir lime leaves until aromatic and oily.
3. Add in coconut milk, salt and sugar. Continue to cook until boiling, check the taste, you may add salt as your taste. Take off from the heat.

How to serve.
Arrange fish on the serving plate then generously flush with "pecak" gravy.

Serve warm with steamed rice and vegetables as a 
side dish.

Seperti resep yang akan saya bagikan hari ini. "Pecak ikan" adalah hidangan yang terbuat dari ikan goreng/panggang (bisa pakai jenis ikan apa saja) kemudian disiram atau dimasak dengan bumbu khas"pecak". 
Bumbu yang digunakan untuk bumbu pecak ini khas dan identik dengan masakan Jawa.
Hidangan ini dengan mudah ditemukan di Jawa Barat, Jakarta, dan daerah sekitarnya seperti kota Cirebon, Tasikmalaya, atau hingga kota Tegal.

Beberapa resep mungkin sedikit berbeda di setiap daerah. Ada yang menggunakan santan sementara yang lain tidak. Pecak khas Jakarta (Betawi) menggunakan kacang tanah dalam bumbu "pecak" yang dipakai. Namun yang membuat masakan ini memiliki kesamaan dan bumbu "wajib" adalah kencur.

Kencur ini adalah salah satu rempah khas yang banyak dipakai dalam masakan Jawa dan Bali. Rempah ini juga yang memberi aroma dan rasa khas pada makanan.

Pecak ikan ini disajikan dengan nasi putih, sayuran rebus atau kadang sayuran segar sebagai lalapannya. Biasanya daun singkong rebus, kacang panjang rebus, timun segar, dan sayur apa saja sesuai selera.

PECAK IKAN
Oleh: Çitra's Home Diary

Bahan-bahan:
🐟 800 gr ikan (saya pakai ikan seabass/ sejenis kakap putih)
🐟 Perasan jeruk limau/ lemon
🐟 2 siung bawang putih
🐟 1 sdt bubuk ketumbar
🐟 garam sesuai selera
🐟 mnyak untuk menggoreng

Bumbu pecak
🐟 3-4 sdm minyak
🐟 5 siung bawang putih*
🐟 3 siung bawang merah*
🐟 2-3 cm kencur*
🐟 5 cm kunyit*
🐟 3 butir kemiri*
🐟 3-4 buah cabe rawit (sesuai selera)*
🐟 5-6 buah cabai merah*
🐟 2 lembar daun jeruk
🐟 1 batang sereh
🐟 1 gelas santan encer
🐟 Gula, garam, kaldu bubuk secukupnya
Note: sangrai bumbu bertanda (*) diatas

Cara membuat:
1. Lumuri ikan dengan perasan jeruk limau atau lemon. Diamkan beberapa menit lalu cuci bersih.
2 Haluskan bumbu bawang putih, garam dan bubuk ketumbar, tambahkan sedikit air. Rendam ikan dalam bumnu marinasi dan diamkan paling tidak 5-10 sampai bumbu meresap. Lalu goreng ikan hingga matang dengan api besar.
3. Haluskan bumbu yang disangrai dengan 3-4 sdm minyak hingga halus. Lalu tumis bumbu halus dengan daun jeruk dan sereh yang digeprak. Tumis hingga harum dan berminyak. Masukkan santan, bumbuhi garam dan gula. Masak hingga mendidih. Cek rasanya sesuai selera.
4. Masukkan ikan dalam bumbu pecak. Atau bisa juga tata ikan goreng diatas piring saji lalu siram dengan bumbu pecak panas-panas.

Sajikan hangat segera.
