In Indonesian culture, nasi kuning has favourable symbolic meanings. The yellow-coloured rice is perceived to look like a pile of gold,so it is often served in festive occasions; including parties, housewarmings, welcoming guests and opening ceremonies – as a symbol of good fortune, prosperity, wealth and dignity.
Nasi kuning is quite widespread and commonly found in Indonesian culture. It can be found from Java to Sumatra, Bali and Sulawesi. However, it is most strongly associated with Javanese and Minahasa traditions. In Java, nasi kuning might come in the form of a cone called a tumpeng and is usually eaten during special events. The top of the tumpeng is customarily given to the most senior person in attendance. One of the most popular nasi kuning variants comes from Manado in North Sulawesi, which employs cakalang (skipjack tuna).
The rice is cooked in coconut milk, turmeric, lemongrass, and kaffir lime leaves. The lemongrass and kaffir lime leaves give the rice a nice aroma and flavor.
Making this aromatic turmeric rice actually very simple. All you need is a steamer basket and pot because the process to cook this is only a steaming process.
So After rice washed, steam it over boiling water in high heat so it will slightly tender. After that, mix the rice with hot coconut milk+turmeric until all rice absorbs all coconut milk. The last process is to steam it again until the rice completely fluffy.
Some recipes nowadays use a rice cooker for practical reasons. But for me using double steam process like my late grandmother did still my best choice to get a fully aromatic and authentic flavor. If you can access fresh coconut, use fresh-squeezed of coconut milk it's the best. The thicker coconut milk the better, cause it produces natural coconut oil during the cooking process that makes your yellow rice so much tastier and flavorful.
To enjoy this nasi kuning you will need some side dishes like fried noodle, Spicy fried tempeh (kering tempe), fried egg omelet, Indonesian potato patties (perkedel kentang), shrimp cracker (kerupuk udang), and fried or grilled chicken. You can add some cucumber slices or pickles.
Also, I will share my simple and quick version of Indonesian Ayam bakar kuning or Grilled yellow chicken. Check the recipe at lower part.
Indonesian turmeric rice/ Nasi Kuning

Ingredients :
🍚 800 gr long grain rice
🍚 200 gr glutinous rice
🍚 1,200 ml medium thick coconut milk
🍚 5-6 cm fresh turmeric, finely shredded (or 2 tsp powdered one)
🍚 2 Tbsp salt
🍚 4 pcs Indonesian "daun salam" (you can use bay leaf)
🍚 1 pc pandan leaf (skip if you don't have it)
🍚 2 lemongrass, bruised the white part
🍚 1 tbsp fresh lemon juice
How to make :
Ingredients :

How to make :
1) Mix rice and glutinous rice, wash until the water clear. Drain it. Meanwhile heat water in a steamer pan until bubbling. Place the rice over steamer basket and steam for about 30-40 minutes. Remove from heat.
2) In another pan, put coconut milk and turmeric. Simmer at medium heat until coconut milk turns into yellow then strain it.
Replace coconut milk onto a pan again together with "daun salam", pandan leaf, lemongrass and salt. Cook to boil and turn off the heat.

3) Mix in the rice into hot coconut milk, add the lemon juice. Mix it very well, make sure all rie covered by the coconut milk. Cover the pan and start heat your steamer pot.
Note: The rice and coconut milk should be still hot when you mix them.
4) Move the rice into a steamer basket then steam over high heat for about 25 minutes or until rice nice and fluffy.
Remove from steamer and enjoy.
Simple Indonesian grilled (or fried) yellow chicken recipe

Ingredients:
🐔 1 Kg chicken ( I use leg and thighs)
🐔 half lemon, take the juice
🐔 half yellow onion, finely shredded
🐔 6-7 cloves of garlic, finely shredded
🐔 1 tsp turmeric powder
🐔 1 tbsp coriander powder
🐔 2 tsp of salt or to taste
🐔 3-4 tbsp of oil
How to:
Clean the chicken and add lemon juice. Add other ingredients spices and mix well. Cover and let it rest at least 3 hours or overnight in the refrigerator.
When you are ready to cook, preheat the oven at 200℃ and roast the chicken for about 35-45 minutes or until done. Rotate once halfway.

Merhaba dari Türki semuanya 👋
Selamat berakhir pekan semuanya. Akhir pekan di rumah saya identik dengan sesuatu yang istimewa, sedikit "lebih ribet" dari hari biasa 😃. Sebab kan hari libur semua di rumah, maunya makanan atau camilan lebih dari biasanya. Mulai beberapa hari lalu anak saya minta dibikinin nasi kuning lagi.
Dia bilangnya nasi yang warnanya kuning 😃. Dia sukanya pake ayam goreng dan mie.
Kebetulan ada stok kering tempe yang memang sering saya bikin. Ya udah.. tinggal bikin ayam bakar kuning yang gampang aja dan mie goreng sederhana saja.
Resepnya saya masih suka pakai punya Bu Fatma NCC karena rasa dan teksturnya mirip banget dengan almarhum nenek yang dulu suka bikin nasi tumpeng kuning untuk ultah cucu-cucunya.

Bahan :
🍚 800 gr beras putih (sy pakai beras jasmin)
🍚 200 gr beras ketan
🍚 1200 ltr santan
🍚 2 ruas jari kunyit, parut (atau 2 sdt kunyit halus)
🍚 2 sdm garam
🍚 4 lbr daun salam
🍚 1 lbr daun pandan (sy skip krn gak ada)
🍚 2 batang sereh
🍚 1 sdm air jeruk nipis.
Cara Membuat :

🍚 1200 ltr santan
🍚 2 ruas jari kunyit, parut (atau 2 sdt kunyit halus)
🍚 2 sdm garam
🍚 4 lbr daun salam
🍚 1 lbr daun pandan (sy skip krn gak ada)
🍚 2 batang sereh
🍚 1 sdm air jeruk nipis.
Cara Membuat :
- Campur beras dan beras ketan, cuci bersih tiriskan, kukus.
- Sementara itu campur kunyit dan santan, masak sampai berwarna kuning lalu saring dan buang ampas kunyit.
- Masak kembali santan bersama daun salam, pandan dan sereh. Tambahkan garam. Masak hingga mendidih. Matikan api.
- Masukkan beras yg masih panas kedalam santan, aduk rata. Biarkan hingga santan terserap habis, dan beras menjadi aron. Tuangi air jeruk nipis. Aduk rata.
- Kukus beras aron selama 20 menit, angkat.
- Bisa dicetak dalam cetakan tumpeng, atau disajikan dengan lauk pendamping sesuai selera.
