Gado gado is one of the popular Indonesian dishes. It is on the list of Indonesian national dish among with others.
It's a dish consisting of mixed pre-boiled vegetable and fried tofu (or sometimes with tempeh) and dressing with creamy umami peanut sauce then served with kerupuk (shrimp cracker or other types of cracker). Lontong or rice cake also serves as a compliment. Adding simple chili sambal is most people's choice to enjoy this delicious and healthy gado gado.

We have a dozen types of gado gado. Every region has its own version of gado gado. From East Java, Surabaya gado gado is most popular. İt is slightly different from gado gado in Jakarta / Betawi. In middle java, people also serve different kinds of gado gado. But all gado gado uses one same ingredient; Peanut sauce as dressing.

Surabaya gado gado uses coconut milk to make the sauce and then cook and thicken by adding a small amount of rice flour solution.
While Jakarta/ Betawi style gado gado, peanut sauce grind with fresh garlic, chili, and palm sugar. Besides tamarind paste, Jeruk nipis (kaffir lime juice) is added into it so the taste is slightly sweet, umami with a sour touch of tamarind and jeruk nipis. If you don't have kaffir lime simply use lemon or lime juice instead.

And today I will share Betawi/ Jakarta style gado gado. For the vegetables, I use all what I have in the refrigerator. As traditionally Betawi gado gado is served with any kind of boiled and fresh vegetables e.g boiled carrot, boiled chayote, boiled water spinach, boiled long green bean, boiled corn, boiled potato, boiled white cabbage, blanched bean sprout, and fresh cucumber.
Fried tofu and tempeh are also served with a boiled egg. And kerupuk (Indonesian shrimp/ garlic cracker) is always there.
Making this gado gado is very simple. Once you have the peanut sauce dressing, you are halfway to go. This gado gado is generally served with steamed rice or rice cake (ketupat/ lontong)
Don't be afraid of a long list of the ingredients which might hesitate you for making this dish, as I mentioned above it's only vegetables and complementary. You can use any vegetable available in your fridge.

Serve about 4-5 portions
Ingredients
For Peanut Sauce:
🥗 150 gr fried/ roasted peanut
🥗 3-4 red chili peppers
🥗 8-9 birds eye/chili padi peppers (depends on how spicy you want)
🥗 6-7 cloves of garlic
🥗 2-3 tbsp tamarind paste
🥗 2 tsp (or to taste) salt
🥗 150-200 gr gula jawa ( coconut/palm sugar)
🥗 1 lime/ lemon juice
🥗 some water ( I use about 450 ml-add gradually)
How to make peanut sauce:
1. Fry or roast raw peanut until reddish and golden brown. Then grind it with a food processor until fine. From this grinding peanut, you can make per portion or as much as you can.
2. You can use a (hand) blender to make this peanut sauce. In that video, I make per portion using my mortar pestle. Blend all ingredients except lemon juice and water, until finely smooth.
3. Add water gradually until you get a thick but pourable consistency. Lastly add the lemon juice, mix well.
Check the taste, you may need to add some salt or sugar, or lemon juice. The taste should be balanced between savory and lightly sweet with a touch of sourness.
Your peanut sauce is now ready to serve.

🥗 Chayote, boiled, cut into bite-size ( I don't use)
🥗 Boiled corn ( I didn't use today)
🥗 Cucumber
You can use any vegetables you have.
How to serve
Place all vegetables, fried tofu, tempeh, and boiled egg then generously flush with peanut sauce. Serve it with shrimp cracker and fried shallot.

Gado gado, makanan populer yang disukai banyak orang. Ternyata makanan ini mempunyai banyak versi di tiap daerah. Seperti misalnya gadi gado betawi berbeda dari gadi gado khas Surabaya. Tapi satu kesamaan yaitu semuanya menggunakan kacang sebagai bahan bumbu utamanya.
Bumbu gado gado Surabaya dimasak dengan santan dan disiramkan ke sayuran ketika dihidangkan. Tapi bumbu kacang gado gado betawi tidak perlu dimasak dengan santan, cukup diulek bersama cabe dan bawang putih juga asam jawa, diencerkan dengan sedikit air sebelum sayuran yang sudah direbus terlebih dahulu dicampurkan seperti membuat rujak di Jawa Timur. Biasanya perasan jeruk limau ditambahkan dalam ulekan bumbu.

Sedangkan sayuran untuk gado gado betawi cukup banyak variasinya, mirip rujak saja kalau di Jawa Timur. Selain tahu, tempeh juga suka ditambahkan. Emping tidak ditambahkan dalam gado gado Betawi.

Hasil jadi 4-5 porsi
Bahan-bahan
Bumbu kacang:
🥗 kurleb 150 gr kacang tanah
🥗 3-4 biji cabe merah keriting atau sesuai selera
🥗 8-9 cabe rawit (pedasnya sesuai selera ya)
🥗 6-7 bawang putih
🥗 2-3 sdm air asam jawa kental (1 sdm asam jawa direndam sedikit air panas)
🥗 2 sdt garam atau sesuai selera
🥗 150-200 gr gula jawa
🥗 1 jeruk limau/ lemon, ambil juice nya
🥗 Air secukupnya ( Saya pakai kurleb 450 ml-ditambahkan bertahap saja)
Cara membuat bumbu kacang:
1. Goreng kacang tanah hingga matang. Lalu ulek hingga halus. Bisa pakai food prosesor. Sisihkan. Dari kacang tanah halus ini bisa dibuat gado gado per porsi atau buat sekaligus semuanya.
2. Membuat bumbu gadi bisa menggunakan ulekan atau dengan blender. Haluskan bawang putih, semua cabe, garam dan air asam hingga halus. lalu masukkan kacang tanah yang sudah dihaluskan sebelumnya. blender/ ulek sampai benar-benar halus. Tambahkan air sedikit demi sedikit sampai bumbu agak encer tapi tidak terlalu encer (sadang saja). Beri perasan jeruk limau, Cicipi rasanya. Bisa tambah garam, gula atau perasan limau sesuai selera.
Bumbu kacang siap digunakan.
Pelengkap:
🥗 Tahu goreng cara membuat tahu sendiri disini.
🥗 tempe goreng
🥗 kerupuk udang/ bawang
🥗 telur rebus
🥗 bawang goreng
🥗 Lontong atau nasi putih
sayuran:
🥗 Wortel rebus
🥗 kangkung rebus (saya pakai bayam)
🥗 taoge (siram air panas)
🥗 kentang rebus
🥗 kol iris tipis, rebus
🥗 kol iris tipis, rebus
🥗 kacang panjang rebus
🥗 labu siam rebus (saya tidak pakai)
🥗 Jagung rebus (saya tidak pakai)
🥗 mentimun
Siapkan semua sayuran dan pelengkap lainnya. Campurkan dengan bumbu gado gado, aduk rata dan hidangkan dengan taburan bawang goreng dan kerupuk juga telur rebus.
