Paça means foot (or trotter) in Turkish language, çorba means soup. So paça çorbası is a hearty soup made from lamb or cow foot (trotter).

This kind of soup is generally served at the local restaurant here as "kelle paça çorbası" made from head and foot lamb/ cow. The queue in "kelle paça çorba" restaurant would be pretty long, especially in wintertime. 

Foot/ trotters soup is believed to contain many nutrients, especially minerals derived from the trotter's tissues. This may make trotters a useful nutritional supplement for us.

In Turkish cuisine, our kasap usta (butcher master) tried to produce and use as much as they can from the animal part. No wonder we can find any kind of offals, head, trotter, tail, or tongue. And all already in very clean sold in a special butcher shop calls "Sakatatcı", the butcher shop only sell offals.

The trotters do not contain any muscles or meat; other than bones and toe hoof, it mainly consists of skin, tendons, and cartilage
In cuisine, the trotters' cuts are mainly valued for their unique texture—a gelatinous rather chewy soft texture of its tendons and skin, and also a rich broth produced from its bones. 
Nevertheless, to acquire a pleasantly soft texture, a prolonged time of cooking, or a pressure cooker might be employed in the process, this will extract the gelatins out of the trotters into the soup.

The slow cooking process also renders out collagen. Collagen is responsible for nearly every possible health benefit of trotters, such as: maintaining healthy skin, relieving joint pain, and contributing to muscle gain

Boiling trotters in water with some vinegar helps release nutrients from the marrow into the bones as well as break down other tissues in the water. The result is the delicious and nutritious broth.

The bone itself is rich in vitamins and nutrients, including magnesium, calcium, and phosphorous, and the fermentation of connective tissue in the trotters supplies the body with natural compounds from cartilage.

There are two steps to make this healthy soup. first, prepare the foot/ trotters. Second, cook the trotters into a delicious soup. 
Do not worry about the process, it's actually easy. And I have a video to give you an illustration of how easy to prepare and cook this yummy soup.

Serve 4-5

🥣 6-7 lamb feet
🥣 ½ cup white vinegar (for soaking the trotters)
🥣 1 onion, wedges
🥣 3-4 cloves of garlic, crushed
🥣 half lemon, wedges
🥣 2 bay leaves
🥣 ±2 lt water

(B) "terbiyeli"
🥣 1-2 tbsp olive oil
🥣 3 tbsp flour
🥣 2 egg yolks
🥣 2 tbsp vinegar ( I use apple vinegar)
🥣 2 tsp salt or to taste
🥣 3-4 cloves garlic, finely chopped

(C) for serving
🥣 butter
🥣 smoked paprika
🥣 3-4 cloves garlic, finely chopped
🥣 4-5 Tbsp vinegar ( I use apple vinegar)

How to:

Clean and prepare the feet trotters.

1) Wash clean the lamb feet, scrubbed, and rinsed well. Then burn those feet over the stove to make sure to remove the remaining hair. 

2) After you burn over the stove, scrape the burnt hair using a knife. Wash and scrub again until clean. As you can see, I have clean feet already so not much hair left.

3) Place the feet in a big bowl, give water enough to cover all the feet. Add white vinegar from (A) ingredient list. Let it stand inside vinegary water for about 3 hours. 
Note: I usually prepare this at night and left it overnight to cook the next day.

4) Wash one more time. Now you have lamb feet/ trotters ready to cook.

How to cook the soup.

1) Slit the trotter/foot between the joints. Place them in a big pot. Add the ingredients from (A); onion wedges, garlic, lemon wedges, bay leaves, and about 2 liters of water. Close the lid and cook until the trotters tender. It took me about 2 hours. You can use a pressure cooking pan, but I prefer to cook slowly withoıt using a pressure cooking pan.

2) After the trotters are soft and cooked, remove the trotters from the broth. Strain and discard the herbs. Measure the broth, add more water up to 1,8 lt if needed.

3) Heat olive oil (from ingredient B) over medium heat. Stir in the flour and cook for a few minutes until the flour slightly changes in color, but do not burn it. Slowly pour in the broth and stir until all the flour is dissolved. Keep stirring until boiling.

4) Whisk egg yolks with a few tablespoons of water. Add about a half cup of boiling broth, mix well too combined. Then pour back into the boiling broth through the strainer. Mix well. Then add in the trotters/ foot followed by vinegar. Mix well.

5) Season with salt and continue cooking until bubbling. Just before you turn off the heat, add in the chopped garlic. Cover the lid and remove it from the heat.

How to serve the soup.

1) From ingredient (C), mix the chopped garlic with vinegar, set aside.

2) In a small pan, heat enough butter with smoked paprika until the butter completely melts and starts to boil. Remove from heat.

3) Serve the soup, add a few teaspoons of melted butter+paprika in it. Serve with vinegary garlic and chili flake if you like.

Dalam bahasa Turki paça berarti kaki (atau kikil), sedangkan çorba berarti sup. Jadi paça çorbası adalah sup yang terbuat dari kaki domba/ kambing atau sapi.

Sup ini umumnya disajikan di restoran lokal di Turki sebagai "kelle paça çorbası" yang dibuat dari kepala dan kaki domba/sapi. Antrian di restoran "kelle paça çorba" ini akan cukup panjang, terutama di musim dingin karena diyakini sebagai sumber vitamin dan mineral sebagai pembantu imun tubuh.

Sup kaki/kikil diyakini mengandung banyak nutrisi, terutama mineral yang berasal dari jaringan kikil itu sendiri. Inilah yang menjadikan kikil sebagai suplemen nutrisi yang berguna bagi tubuh.

Dalam masakan Turki, kasap usta (tukang daging) mencoba memproduksi dan menggunakan sebanyak mungkin bagian dari hewan untuk dikonsumsi- sama dengan di Indonesia ya.
Tidak heran kita dapat menemukan segala jenis jeroan, kepala, kikil, ekor, atau lidah. Dan semuanya sudah dalam kondisi sangat bersih  dan siap untuk diolah. Dijual di toko daging khusus yang disebut "Sakatatcı", atau toko daging khusus yang menjual jeroan dan sejenisnya saja.

Nah, hari ini saya akan berbagi salah satu masakan khas Turki menggunakan kikil kambing, namanya "paça çorbası". Membuatnya mudah, dan rasanyapun segar, menghangatkan, pas sekali dikonsumsi ketika musim dingin seperti saat ini.

Saya memasak kikil kambing ini tidak menggunakan panci pressure ya, saya suka dengan proses memasak yang cukup lama ( kurleb 2 jam saja) sehingga semua nutrisi yang ada di kikil bisa keluar maksimal di kuahnya.

Yuk... sesekali kita coba masakan khas Turki ini.

Paça Çorbası (Sup Kikil khas Turki)

🥣 6-7 kikil kambing *
🥣 cuka masak (untuk merendam kikil)
🥣 1 bawang bombay, potong jadi 4 bagian
🥣 3-4 siung bawang putih, geprak
🥣 ½ bagian jeruk lemon, potong dua
🥣 2 bay leaves (daun salam)
🥣 2 lt air untuk merebus kikil

*Note: bisa pakai kikil sapi 2 buah

(B) "terbiyeli"
🥣 1-2 sdm minyak zaitun
🥣 3 sdm terigu
🥣 2 kuning telur, kocok dengan sedikit air
🥣 2 sdm cuka masak ( saya pakai cuka apel)
🥣 2 sdt garam atau sesuai selera
🥣 3-4 bawang putih, cincang halus

(C) untuk topping ketika disajikan
🥣 mentega
🥣 bubuk paprika
🥣 3-4 siung bawang putih, cincang halus
🥣 4-5 sdm cuka (saya pakai cuka apel)


Membersihkan kikil dan merebus.

1) Cuci bersih kikil kambing sambil digosok, lalu bilas sampai bersih. Kemudian bakar kaki tersebut di atas kompor untuk memastikan untuk menghilangkan sisa rambut. Disini saya dapatkan kikilnya sudah dalam kondisi sangat bersih jadi tidak banyak yang perlu dibersihkan.

2) Setelah kikil dibakar di atas kompor, bersihkan sisa bulu yang terbakar menggunakan pisau dengan cara dikerok. Cuci dan gosok kembali hingga bersih. 

3) Taruh kikil dalam baskom, beri air secukupnya hingga kikil terendam saja. Tambahkan cuka putih (kerleb setenagh gelas) dari daftar bahan (A). Diamkan di dalam air cuka selama sekitar 3 jam atau semalaman.
Note: Saya biasanya menyiapkan tahap ini di malam hari untuk diolah keesokan harinya.

4) Cuci sekali lagi. Sekarang kikil benar-benar bersih dan siap untuk dimasak.

Cara memasak sup.

1) Kerat kikil di antara sendi lalu taruh dalam panci besar. Tambahkan bahan dari bahan (A); bawang bombay, bawang putih geprak, irisan lemon, daun salam (bay leaf), dan air sekitar 2 liter. Tutup dan masak sampai kikil empuk. Butuh waktu sekitar 2 jam. Moms bisa menggunakan pressure pan juga ya, tetapi saya lebih suka memasak perlahan seperti ini agar nutrisinya keluar lebih banyak.

2) Setelah kikil empuk dan matang, pisahkan dari kaldu. Saring dan buang bawang  bumbu-bumbu tadi. Ukur kaldu, jika perlu tambahkan air hingga total 1,8 lt.
Note: Jika pakai kikil sapi, kikil bisa dipotong-potong sesuai selera.

3) Panaskan minyak zaitun (dari bahan B) di atas api sedang. Aduk tepung dan masak selama beberapa menit sampai tepung sedikit berubah warna, tetapi jangan sampai gosong. Tuang kaldu kikil dan aduk sampai tidak ada gumpalan tepung lagi. Aduk terus hingga mendidih.

4) Kocok kuning telur dengan sedikit air. Tambahkan kurleb setengah cangkir kaldu yang sudah mendidih, aduk rata juga. Kemudian tuangkan kembali ke dalam kaldu mendidih dalam panci sambil disaring. Aduk cepat. Kemudian tambahkan kikil lalu tambahkan cuka. Aduk rata.

5) Bumbui dengan garam dan lanjutkan memasak sampai mendidih. Sesaat sebelum api dimatikan, masukkan bawang putih cincang. Tutup tutupnya dan angkat dari api.

Cara menyajikan sup.

1) Dari bahan (C), campur bawang putih cincang dengan cuka, sisihkan.

2) Dalam panci kecil, panaskan mentega dengan paprika bubuk sampai mentega benar-benar meleleh dan mulai mendidih. Angkat dari api.

3) Sajikan sup dalam mangkok, tambahkan beberapa sendok teh mentega leleh+paprika ke dalamnya. Sajikan dengan cuka bawang putih dan serpihan cabai jika Anda suka. Sajikan panas-panas segera.
