Pizza with mix topping

Sometimes I make and stock some pizza dough in case I need to make something quickly and I have no time. Just like Pizza. Once you have pizza dough on your refrig, you can grab and topping it as fast as your family order, bake it and voallaa... serve it hot immediately  

Prepare your Pizza basic dough  here. You might need only half recipe if you want.

For the sauce:
-2 cloves of garlic. crushed and finely chopped
-1 small onion. very finely chopped
-1 tablespoon dried basil leaves
-1 tablespoon dried thyme
-3 tbsp tomato paste (I mix with chilly paste). Dissolve in 1 cup warm water.
-salt and pepper to taste
- enough cooking oil (I use 2 tbsp olive oil)
For topping
- sausage, cut to taste
- sweet corn
- 1 tomato medium size. seeded and dice finely
- bell pepper, seeded and dice finely.
- cheddar cheese as much as you like. shaved
- mozzarella cheese as much as you like the. shaved

Almond Chocolate Swiss Roll Cake / Bolu gulung cokelat almond

For me making roll cake was very tricky. Sometimes end up with "cracking" in some part, other time end up 'shrinking' after comes out the oven. And after some bad experiences, finally I learn something for making this good looking cake.
Type of cake to make this roll cake is "airy" foam cake like sponge cake base recipe because it's flexible enough to being roll. So if you find "crack" on your roll cake it means your dough isn't moist and flexible enough when it being roll. Sprinkle your towel/napkin surface with icing sugar can help moist still during rolling process. And more important thing to make your dough moist is egg beating. The air 'trap' in the batter make cake flexible and moist. One more thing is baking condition. Do not bake it too dry but correct heat to make cake perfectly done. Tricky? NO, Just don't stop learning things d(^_^)b

My wish now, I can have very BIG steamer to make steamed roll cake .. *pray mode on  d(^_^)b



Ingredients:
- 6 eggs. Separate the yolks from whites.
- 1/2 cup caster sugar
- 100 gr dark cooking chocolate. Melt over double boiler.
- 1/2 cup almond meal (ground almond)
- 1 tsp almond extract
- 1/2 cup all purpose flour
- a pinch of fine salt
- Enough icing Sugar for dusting over napkin/ towel.
For cream and garnishes:
- Enough whipped cream ( I use about 400 ml) whipped until stiff
- Canned Cherry
- Cocoa powder (optional)

Blood orange upside down pudding

Selam everybody...merhaba from Turkey

Pudding and syrup are really perfect for this weekend evening dessert today, but I am a little disappointed with the Candied orange blood. There is a slight bitter taste in it, I have no clue about it. I peeled it's skin, has been seeded as well, but after I candied them, I tasted slightly bitterness :(

But overall, my husband and I are satisfied with the look and taste .. Maybe anyone can help me to avoid the bitter taste in Candied (blood) orange in my recipe?


 Blood orange candied ingredients:
- 1 cup granulated sugar
- 1 / 2 cup water
- 2 tsp lemon juice
- 1 / 2 tablespoons unsalted butter
- Food yellow / orange color (if desired). I do not use it, so mine is clear colorless syrup.
- 2 pieces of blood orange large size. Peeled. Slice crosswise about 1.5 cm thick (1 orange into 4 or 5 slices). Discard any seeds.

Kue Bolu Coklat (Chocolate Sponge Cake)

I remember once my late grandmother making this cake when I was young once and started to like making something simple in the kitchen. There were currently no electricity mikser that time, so my grandmother only use manual eggbeater that looks like a circular and supple pear, but strong. Too bad we do not keep it anymore. "Kue Bolu" is just we always call. 
Now with the various developments and culinary techniques this sponge cake now beginning to develop into a modern recipe with the addition of several 'emulfier' and other additional materials sponge cake is more popular and varied from simple old recipes. 

Trying again this old recipe without emulfier, this time I make chocolate version because my first intention is going to make tiramisu later from this basic sponge cake


Ingredients:
For pan size of 22 cm round.
-1/2 cup flour
- 1 +1/2 tablespoons cocoa powder
- 5 egg yolks
- 4 egg whites
- 1/2 cup caster sugar
- 100 gr unsalted butter. Melted.

Stuffed Tuna Pizza

Instead topping this pizza, I stuffed it !
Pizza variations can be quite variety ... start the variation of 'topping' up to the variations of pizza skin / bread  .. This time I make pizza with pizza basic dough II, which I mixed with basil and thyme in its bread / skin. And other variations are tuna and cheese, not as a topping, but as 'stuffing' ... hmmm ... yummy and would soon become a new favorite in your family


Ingredients:

For stuffing / filling
- 300 g canned tuna
- Cheddar cheese (as much as you want)
- Olive oil (or other vegetable oil) to spread

Brownie CheeseCake.

Another variation of Cheese Cake. Biscuit crumbs mostly used as a base of Cheese cake. This time I want to try using chocolate Brownie as a heavy foundation of cheese cake a la  New York cheese cake . And the Brownie I copy from "Aneka resep Brownies" (Brownies recipe book) published by 'Gramedia' Indonesia.
And the result ... hmmmm ... combination of sweet chocolate brownies and soft new york cheese cake .. guaranteed will not simply  take just one piece.

Cake Wortel Kurma(Carrot Cake with dates Fruit)

Today's Cake is other than healthy-because it uses carrot as ingredient- also really simple and quick to make . Guaranteed .. children who do not like vegetables, will not realize they've been eating their carrots in cake :))
Ingredients:
- 3 medium size carrots.  coarsely Grated
- Lemon Zest of 1 lemon.
- 5 eggs
- 1  1/2 cup brown sugar
- 1  1/2 cup cooking oil (I use vegetable oil)
- 1 package (10 grams) baking powder
- 1 teaspoon baking soda
- 1 package (11 grams) vanilla powder
- 2 cups all-purpose flour
- Some dates, seeded and cut into small squares. Coat with enough flour (optional)

Method:
1) Grease a 27 cm baking pan size with margarine and sprinkle with a little flour.Set aside.
2) Mix the flour, baking soda, baking powder and vanilla powder. Set aside
3) Using a whisk, beat eggs and brown sugar until sugar dissolves. Put vegetable oil. Stir until well blended and mixed.
4) Slowly add the flour mixture while stirring. Mix until completely blended.
5) Add grated carrots, lemon Zest and dates. Stir again until mixed perfectly.
6) Pour into baking pan and bake at 170 deg C oven about 45 minutes (Test with a toothpick. If the toothpick comes out clean means the cake is cooked)
Note: Know the condition of your oven. Different size and condition will give different  heat result.

"Turkish Pizza". Yumurtalı Sucuk 'Pide'

A nice meal to start your day with this breakfast. You can prepare the 'Pide' bread night or a day before.. and put some Sucuk (Turkish Sausage) and eggs on it.. Then bake..
You and your family ready to move!


Ingredients for 'pide' bread:
- 2 cups flour
- 2 teaspoons instant yeast
- 1 / 2 tbsp caster sugar.
- 1 / 2 teaspoon salt
- 4 tablespoons olive oil
- 3 / 4 cup warm water

For the topping:
For each small (around10 cm) baking pan requires:
- A few pieces sucuk (Turkish sausage). Slices about 2 cm thick.
- 2 large chicken egg. Whisk the eggs (reserve 1 yolk) with salt and red chilli powder flake

Özel Kıymali Pide (Turkish style "Pizza")-Homemade

Another traditional Turkish meal, Pide. Made from flour dough-almost like-pizza with various topping like egg, sucuk (turkish sausage),ground meat, etc. 
But mostly people here love ground meat as topping. 
Today's menu on my dining table is "Özel Kıymalı Pide" Or Special 'Pide' with ground meat (as topping). I call it special coz it's different from ordinary 'Pide' in Turkey, I inserted cheese in the edge of 'Pide' bread... 
I got that idea also from one kind of pizza too @(^_^)@ .. so maybe I can call it's Turkish style pizza...

Ingredients for 'pide' bread:
- 2 cups flour
- 2 teaspoons instant yeast
- 1 / 2 tbsp caster sugar.
- 1 / 2 teaspoon salt
- 4 tablespoons olive oil
- 3 / 4 cup warm water
- Enough Cheddar or mozzarella cheese to insert at the edge of bread dough.

Mini Apple Pie (Elmalı mini turta)






Ingredient:
apple filling ingredients:
-500 gr green apple ( or 4 medium apples).cut small cube/ chopped finely
-6 table spoon sugar
-1 tea spoon cinnamon
- 50 gr raisin
- 1/2 glass of water


mix and cook at low-medium heat all ingredients above until apple get soft and thickened.


pie shell ingredients:

  • 165 g Flour
  • 1 egg yolk
  • 40 g  sugar powder
  • 70 g butter



Method:

1 mix together ingredients, stirring with a pastry knife until the flour looks grained beads. Rest for 15 minutes and lid with the plastic.
2. Roll the dough within 1 / 2 cm thick, and lied on the pie molding.
3. Put filling of apple mixture inside the "pie cup"
4. cover the top with the dough, make it like basket (in picture) brush with egg yolk
5. Oven for 15 minutes or until golden brown.

Puff pastry Basic dough ( Adonan Dasar Puff Pastry )

Puff pastry is known as Pâté feuilletée, in France and is used in the making of Napoleons, palmiers, croissants, allumettes, turnovers, en croute dishes, pithiviers, tartes tatain, beef Wellington, bouchées, and vol-au-vents.

With puff pastry basic dough we can variant with many kind of filling and creations.
Basic Puff Pastry Dough. Beside this recipe, you can check my other pastry dough recipe here.

Ingredients:
- 1/2 kg high protein wheat flour
-1 Eggs
- 1/2 teaspoon salt
- 200 ml cold water (ice water)
- 50 grams margarine
- 175 grams korsvet (pastry fats), cold.

Eggless Chocolate muffin (coklat muffin tanpa telur)


One of my friend asked me whether I have non-egg cake recipe due to she has allergic to egg.. Oh, I just realize that somebody could allergic with egg .... Must be a little bit tricky for ones who has allergic to some kind of food.. And I admire to those who can survive choosing what they can eat to keep them healthy as always..
After searching on my file, I finally found some recipe that I haven't try it-egg less... so I have a reason now to try that recipe...




Ingredients:
Material I:
- 1 cup rice flour
- ½ cup granulated sugar
- 1 ½ tablespoons cocoa powder
- Almond powder 2 tbsp (optional)- I use finely crushed nuts
- 1 teaspoon baking powder

Material II:
- Corn oil ½ cup (can use melted margarine)
- 1 ½ tablespoons grape vinegar (or balsamic vinegar)
- ½ cup milk.

How to cook:
1) Preheat oven to 160 º C. Mix all ingredients I, and stir well.
2) Add corn oil and vinegar, continue to whisk.
3) Gradually mix in the milk, do not let the batter's too thin.
4) Pour into muffin tins and bake until cooked about 30 min.
5) Let it chill before you garnished with whipped cream and toppings according to your taste.

And the result ... Equally delicious with ordinary muffin using eggs . Have a try...
