Wingko Babat recipe / Indonesian Coconut base small pancake

Resep dalam bhs Indonesia ada dibagian bawah

This snack reminds me back at once upon a time in Jawa Island... a long time ago... Ooohh..where should I start... I have many memories blues my mind with this snack... Really... even when I start writing this post, my eyes already tears...I don't exaggerate it...maybe I just miss my homeland and my late father.

Back loongg time ago when I was a kid, my late father brought me,my smaller sister and big brother to his homeland, Tuban town. It's a small town in border of East Java and middle Java.
A small town with very big fishes from the sea--at least that was on my mind when I was a kid.
Because once my father took me to town's harbor to saw some fisherman with their bamboo fishing rod. They pulled one giant fish--bigger than me at that time from the sea! and I was so scary that time.
Then my father took me home again and bought me Wingko Babat from wingko seller at province's roadside, that seller was a boy, older than me I thought.
Can you believe how strong our childhood memory is? Even I remember every detail that time. Since that bite, I was instantly love that snack.

And when I was living in Jakarta, far away from my family in Surabaya and anytime I miss my mom and families I should take 12 to 15 hours train from Jakarta to Surabaya. And every time the train stopped at each town's station, there were always many Wingko Babat seller came into our train wagon together with many other sellers offered what they sold.
And usually, I bought Wingko Babat for my family at home. This "ritual" unexpectedly now became a valuable thing to remember.

One time I really want to take my husband and kid to travel by train as I did a long time ago before I marry him, and feel what I lived before.

Wingko Babat is one of Indonesian old traditional snack (jajan Pasar) which may already exist decades ago together with other some traditional snacks/ food. Made from grated coconut and glutinous rice flour as main ingredient. Wingko is very famous on the northern coast of the island of Java. This cake is often sold at train stations, bus stations or also in pastry/ snack shops. In Java, Wingko also often become "snack souvenirs" for the family, which makes this snack famous for a nostalgic snack.

Smoked Paprika Roasted Chicken and potato

Hello world..! Merhaba Turkey.. Welcome April..!
Blackout in Turkey yesterday, Tuesday, 31 March 2015, because electric cut out for almost one day in almost all Turkey provinces (79 from 81 provinces). I'm living in Bursa, the electric cut about 8 AM until 5 PM... then again at 7.30 PM to around 8.30 PM.
My husband called from his office that whole Turkey has blackout so he couldn't work and would go home early.

At first, Some rumors said about cyberattack at TEİAŞ (Turkish Electricity Production Company). But according to news on local televisions, Prime Minister Ahmet Davutoğlu said all possible causes of the outage were being investigated and sabotage was not being ruled out, but said trouble with transmission lines was the most likely reason for the problem

Imagine a country without an electric... chaos everywhere... traffic light off, all metro , tramway and high speed train service stop and cancel. Police officers were deployed to manage traffic at major junctions where traffic signals were disrupted. Firefighters were also called to rescue people stuck in elevators.

Those chaos were outside of my house... meanwhile me, husband and kid stayed did nothing but played ball inside house with our kid. No baking activity for me (^,^).. We just made simple dinner until electric brought a big smile again in our face....
I never imagine in older time before electricity being invested by Thomas Alva Edison.... What people did to their live? (^,^)
Well...that was yesterday chaos in Turkey..
Today everything back to normal again... Alhamdulillah... and I can notice that my kid didn't affected by unavailable of TV or youtube kids video from our computer at home... So I happily I can say she doesn't addicted by TV or video or any gadget.

And for today's dinner I made this smoke paprika roasted chicken, I complete it also with roasted potato. You can use sweet potato too if you like.

Orange Swiss Roll Cake from egg white / Bolu gulung dari putih telur

Roll Cake agaaiinnn..! and yes...it's about orange still. After I made Orange Curd a day before I still have some orange left in my fridge. And also I have some left over egg white. Usually I made macarons with my left over egg white.. but I run out almond flour and I hesitate to grind my almond to make my own almond flour.

It's rainy and cold week end. Spring's rain getting more often these weeks, and sun more often out off the shadow of the clouds... I just love this transition time...And after this I can see many flower blooming everywhere...and what I love here in Turkey... Tulips everywhere..!!! Colorful and just beautiful ^,^
I just can't wait to welcoming summer already...

Even start from this Sunday,29 March, time changing to summer time. It means we turn clock one hour forward. It's about Daylight saving time (DST). For you who live in country which never use this DST-Just like me before- you can  read more about it here
Now I am 4 hour different only to my homeland Indonesia (^,^)  It's making us easier to arrange time if we want to make video conference between us here in Turkey and my family in Indonesia.

Orange Curd Recipe and seasonal Table list for fruits, vegetables and fish

Today I went to traditional market (turkish=pazar). In my neighborhood traditional market open every Wednesday. I had no idea what to buy because you know in Turkey (maybe in other 4 seasons country) people sell and buy what's in season. Me as tropical  person still hardly to adapt my mind on it-even I'm living here for 6 years!
But for few things I already kept on my mind when it's really season so I can stock them as much as I can..what is that? Chilliiieees..!! Yes, I can not eat without chilly (^,^)
So I knew when chilly season start and when it's becoming very cheap.

Below my post I have a roughly estimate list what is in season. That table list actually for my self to reminder if I need to make/ cook/ baking something.

And today in pazar I saw many cheap orange. Orange, as grapefruits and quince has peak season on January or February... I don't know if it's good orange or not since it's actually end of it's season..but I bought them anyway one kilo only for 1 TL. Still didn't know to do with those oranges until I saw my lemon curd on fridge. I made lemon curd often cause I love lemon so much and I can find fresh lemon almost everyday.

Kıymalı börek (Turkish style minced meat pasty)

Merhaba From Türkiye 👋

First of all, I'd like to thank you for visiting my blog. Please come back, again and again, to check up on any beyond Indonesian or Turkish food or something sweets that you might love. Your comments and emails brighten my days and make this simple blog thing worthwhile 😍💛
And make sure you subscribe to my Youtube channel and turn on the bell sign to get more video recipes.

Börek in Turkish refers to any meal made from Yufka (phyllo dough). Thinly rolled pastry, often the paper-thin variety known as yufka, is wrapped around various savory fillings or arranged in layers . The myriad types of börek are unmatched delicacies when cooked to perfection. Boreks can be fried, baked, cooked on a griddle or boiled. Traditionally it was said that no girl should marry until she had mastered the art of börek making. Preferred fillings are cheese, minced meat, spinach and potatoes. In the form of rolls filled with cheese or minced meat mixtures and fried, böreks are known as "Sigara (cigarette) boregi". Böreks should be light and crisp, without a trace of excess oil.

Börek's type also named by it shape... Like I made today known as Kol böreği  is prepared in long rolls, either rounded or lined. Generally filled with minced meat or you can vary them with feta cheese, spinach or others. This Börek is commonly eaten during breakfast or brunch with hot Turkish-style tea or with ayran.

Now I will share my recipe how to make this Börek at home

 Ingredients for filling:
- about 500 gr minced meat (you can use beef or lamb)
- 2 big onions, finely chopped
- 2 stalks of leek, finely chopped
- salt and pepper to taste
- 1 tsp cumin powder
- 1 tbsp butter

Green Tea Macarons with Green Tea Chocolate filling recipe

It's like a curse for me.... or you can call it addicted.... I'm talking about baking (and eat) macarons (^,^)

Yes, once I successfully baked nice macarons these previously weeks... my mind keep thinking to bake them again and again with many idea on flavors and variation. But I'm still afraid to try other recipe .... maybe next time. You know..after long journey with many recipe's trial and error until I finally decided this recipe which suit for me... I don't think I have any dare to try other method in this nearly time....hehehehe..
Even Actually I want to try Italian meringue method for making my next macarons. But major reason is I still don't purchase candy thermometer yet.... Maybe next time , Inshaallah (^,^)

Do you like green tea? Green tea is made from the leaves from Camellia sinensis that have undergone minimal oxidation during processing. Green tea originated in China, but it has become associated with many cultures throughout Asia. Green tea has recently become relatively widespread in the West where black tea has been the traditionally consumed tea.

Green tea has become the raw material for extracts used in various beverages, dietary supplements, and cosmetic items. Many varieties of green tea have been created in the countries where it is grown. These varieties can differ substantially due to variable growing conditions, horticulture, production processing, and harvesting time.

Many claims have been made for the beneficial health effects of green tea consumption, but they have generally not been borne out by scientific investigation; excessive consumption is associated with some harmful health effects.

My today post is Matcha/ Green tea macarons with matcha Chocolate filling. The aroma during I bake this macarons it's just like soul therapy for me (^,^) . It has mild refreshing scent inside my house and since it's winter now, I didn't open any window, the scent stay long about few hours more... hhmmmm... I think you should try it too (^,^)
And here my recipe that I've been using until now before I decide to use other recipe/ methos (^,^)

Selam everybody...Merhaba from Turkiye.. (^,^)

I know many people love Roll Cake aka swiss roll....and I guess not a few of us either got struggled to make it one perfectly.
Some end up with crack during rolling it--that's common problem on making roll cake. I know.. I've been there before..or even until now sometimes I have that problem.

But I never give up on things...no no no..not me! (^,^) . I kept learning, trial and error on some recipe and technique so I can determine what kind factors which make sad face on us when making this unique delicacy dessert. I am not an expert person who can tell you what to do or not to do to make roll cake perfect. And I'm not guarantee either after you read my review you will 100% success making it... I just share according my last trial and error making this roll cake.. So if you have something on your mind...speak out to me..I'll be very happy and thankful.

Bolu Gulung Keju / Swiss Roll with cream cheese filling
The recipe in my humble opinion is one important key to make perfect roll cake. Most roll cake recipe require less flour than liquid (from eggs, oil/ melted butter, etc) to make it flexible enough to handle.... But again..I'm not expert in this field. You may do trial and error also on some different recipes.

İşkembe Çorbası / Turkish style tripe soup

Merhaba From Türkiye 👋

First of all, I'd like to thank you for visiting my blog. I hope you can come back, again and again, to check up on any beyond Indonesian or Turkish food or something sweets that you might love. Your comments and emails brighten my days and make this simple blog thing worthwhile 😍💛

Beside in Turkey, this tripe soup is a common meal in Balkan area, Bulgaria, Greek and eastern Europe. Made of cow's tripe (dana İşkembe-turk) cooked in terbiyeli sauce and served with garlic-vinegar sauce. Terbiyeli sauce made from mixture of egg yolk, lemon juice, garlic, and flour.

The taste of this soup is simply fresh and comfort meal during winter like nowadays. I serve it with sprinkle of parsley and a lot of flake red chilly.... hhhmmmm.....My husband can drink this soup with one loaf of medium bread alone without anything else, he just loves it!  it's instantly become my first favorite Turkish soup as Asian person

In Bursa, there are some lokanta (restaurant) which serve only soup as their menu. Their special menus are İşkembe Çorbası and Kelle paça çorbası (sheep head meat soup) and they are remarkably good! And if you eat something very delicious in a restaurant, you couldn't ask the chef what's ingredients he putted there and how to cook it nicely , could you? (^,^) --which I sometimes do to street food vendor..with a joke of course. Sometimes, they answer my question..sometimes they answer it with SMILE only (^,^)

Well, this İşkembe Çorbası recipe I get from searching on Internet, watching Turkish cooking show on TV, asking around my Turkish friend, my mother in law and neighbors (which mostly they don't cook this at home so they mostly don't have any idea exactly how to cook it ). The taste I tried to resemble as close as I can like at the restaurant. Try it, and I believe you will like it too (^,^)

Balado Tempe (Indonesian Tempeh cooked in sambal sauce)

Tempeh (/ˈtɛmp/), is a traditional soy product originally from Indonesia. It is made by a natural culturing and controlled fermentation process that binds soybeans into a cake form, similar to a very firm vegetarian burger patty. Tempeh is unique among major traditional soy foods in that it is the only one that did not originate from the Sinosphere cuisine.

It originated in today's Indonesia, and is especially popular on the island of Java, where it is a staple source of protein. Like tofu, tempeh is made from soybeans, but it is a whole soybean product with different nutritional characteristics and textural qualities. Tempeh's fermentation process and its retention of the whole bean give it a higher content of protein, dietary fiber, and vitamins. It has a firm texture and an earthy flavor which becomes more pronounced as it ages. Because of its nutritional value, tempeh is used worldwide in vegetarian cuisine, where it is used as a meat analogue.

And because tempeh has become part of our people in ages, we have so many kind of menu variant made of this tempeh. Start from light snack until the main course with variety in process and spices. You will never boring with this full of nutritious meat substitute.

Selam everybody.....Merhaba from Turkey.

Are you parent who frustrated dealing with your kids who hated their vegetables? Welcome on my board ... ! My kid, made me so proud  when she was easily eat her carrot or enjoyed her greens, tomato and more, but that was when she's around 30 months old!

I remember her 1st solid food at 7 month old was spinach rice porridge with chicken liver. And during that complementary feeding, she ate many kind of food without rejected anything. I know, if she didn't like something, she gave me sign with her "wanna vomit" expression. I mean, she was not really picky on food, until she turns 2 yo.

Well...now I'm dealing with picky, easy to boring and difficult to eat the greens and fruits. She only like eats carrot but it is also not much... She loves chicken only. Sometimes eats sausage much, sometimes hate it. Sometimes like to eat fish, sometimes throw it away..... 😩

What to do?? I just try to understand her and keep trying changing as many menu as I can. and try to put any vegetables in every meal I made as much as I can. I made banana cake, carrot cake, fried crispy fish, spinach pastry, leek pastry..anything! Some recipe I already shared here, you can browse around if you would.

Rose Flavor Swiss Roll Cake / Bolu gulung Mawar

Hai everybody..... Merhaba.
It's nice weekend today. Yes, even temperature outside still around 10 or 15 Celsius but sun so bright and cloud. Just hoping spring will come soon ^,^
Last two days ago I got migraines :( . Migraine is a condition that causes attacks (episodes) of headaches. Other symptoms such as feeling sick (nausea) or being sick (vomiting) are also common. Between migraine attacks, the symptoms go completely.

Very rarely I get it since last year, it was very disturbing  and annoying you know since I have active kid who needs me all day long, so I couldn't really rest. I didn't want to consume any painkiller or any drug whatsoever. I just drank warm milk with honey and ginger cause I think it was just because "period thing" ... I need to keep my body warm and relax, that's all... Hope I will not get it so often.

Well, Alhamdulillah today I feel better and what's make me more vibrant is sunny day !(^,^) So before going out to park with my kid, I try to make something for tonight dessert. Then I'm thinking to make swiss roll cause some FB friends have something like cooking/ baking together event with 'pink roll cake theme'... so why don't I join that also.... so voalllaa.. I make this Swiss Roll Cake with Rose flavor. I use rose aroma drop which very common to use here in any turkish dessert. For filling I use rose jam and whipped cream. If you want to use this recipe of course you can vary the rose flavor and jam with other flavor you like.

Actually is very fresh yet cold today due to snowing today, so I decided to walk out of house a little with my kid..then suddenly end up to butcher because I remembered I didn't have meat stock and I want to make something that my husband likes it's, Hünkar Beğendi

Hünkar Beğendi, literally means Sultan(king)'s Favorite. So maybe this meal was one of Sultan's favorites during the Ottoman emperor. I can not find any further literature about this meal, so if you, my readers know more about it, please do share with me here😊

Hünkar Beğendi is a puree made of roasted eggplant served with gravy meat over it. Traditionally people use lamb or goat meat for the gravy but some also using beef meat.
Anywaaaayyyyy...... this Sultan's favorite is also one of my husband's favorite also. so I call this also "Husband Beğendi" haha..... 😊

Do you my readers, ever get same problem with me now? Is she boring with her menu? I always try to change menu everyday, even in one day, she will eat 2 or 3 different type of meal plus fresh juice, yogurt and milk.

I didn't want to push her too much. I just try to give her food again after 2 or 3 hours later. Or I will feed her quickly. Dak Bulgogi / Korean Chicken BBQ

I don't know why I crave Korean food recently... I think Korean Food has kickin' my taste to the heart (^,^)  It's not because I've been in Korea before or I see Korean Drama or whatsoever.
I just sometimes miss my time when I stayed in Jakarta, me and friends sometimes in weekend or weekday find something different for dinner.. Beside Japanese foods, we loved to try Korean foods. There were some Korean restaurants at that time and we kept changed places and kind of foods which suit for our taste and budget (^,^)

I remember Kimchi is my first fave, then Korean fried chicken...like it much..and I remember also Bulgogi, it's bbq meat with Korean spice.
Last time I already made my Kimchi, you can check how to make Kimchi here. But my today's post is Dak Bulgogi. Dak means Chicken in korean.. so it's chicken version of bulgogi for which use beef. For Dak Bulgogi you can use chicken thighs, boneless breast or a combination of both parts.
Next time maybe I'll make that famous Korean Fried Chicken... You'll love it also (^,^)

Bihun Goreng udang / simply my shrimp fried rice vermicelli noodle (bee hoon)

Merhaba From Türkiye 👋

First of all, I'd like to thank you for visiting my blog. I hope you can come back, again and again, to check up on any beyond Indonesian or Turkish food or something sweets that you might love. Your comments and emails brighten my days and make this simple blog thing worthwhile 😍💛
And make sure you subscribe to my Youtube channel and turn on the bell sign to get more video recipes.

I just made simple and quick menu for my self and my kid. It's fried vermicelli noodle a la me. This food is kinda comfort food for me especially if I don't really want to eat rice nor bread. My fave actually vermicelli noodle with a little gravy in it- thick and spicy gravy. Very great food especially in cold days like now.

But my kid doesn't like gravy one so I decide to make fried version. It's very simple to make and definitely great meal for you who crave asian flavor. You can skip the shrimp at all or just use chicken meat, it's up to any ingredients you have on fridge.

So here the recipe a la me (^,^)

Make about 5 share

Ingredients:
  • 1/2 packet rice vermicelli (about 200 gr)
  • 1 Tbsp soy sauce or kecap manis/ sweet soy sauce
  • 1 Tbsp sesame oil
  • 1 bowl shredded cabbage (about 300 gr)
  • 1 small bowl shrimp (about 200 gr), remove the head but do not discard, it will mashed with spices
  • 2 stalks celery, finely chopped
  • 1 stalk leek, roughly chopped
  • 2 tsp salt or to taste
  • 1 tsp sugar (optional)
  • about 3 Tbsp cooking oil
ground spice:

Donat Pisang / Banana Fritters

Assalamu'alaikum...
Merhaba from Turkiye.. Hope you are all happy and in well healthiness...
Warm and shinny weekend here in my place. But my husband must go for work overtime due to many jobs calls him for working this weekend... kinda lonely cause we can not spend our weekend as usual together.

My daughter kept asking me to go out to park because maybe she was boring playing without her baba in home. So we went out just for fresh air. Then I saw a truck seller selling banana, maybe they brought those banana directly from it farmer (Banana field in Tukey mostly in Mersin area).
They were selling banana quite cheap than usual I bought from market or traditional market. They sold 2,75 tl per kilo (usually banana price can be 3,5 up to 5 tl per kilo).. I didn't know why they were selling cheap...But anyway I bought almost 2 kilo for 5 tl (turkish lira)

So here it is.... banana fritters for our weekend snack (^,^) . First, I want to make Indonesian style banana fritter cause I miss that snack, but since the type of banana here is different from our banana using fritter in Indonesia, I know it will end up messy on my frying pan ( I tried once before). So I was thinking to make different batter for this type of banana (which I thought it will not messy or become flabby when frying). Then I got the idea to cover the banana with doughnut batter. The batter will fluffy cover the banana during frying process and it won't make my banana too much messy/ flabby.

Kapuska #turkishfood ( Turkish style Cabbage stew)

Selam.....Merhaba from Türkiye

Yesterday I went to the local market in our neighborhood and found many cabbages in low price. It seems cabbage season is on the air..hehehe.. In Turkey, we only can find cabbage mostly during winter together with broccoli, cauliflower.

For very big size of cabbage (around 4 kg) I got only 3 tl. So maybe I will post many things using cabbage after this 😃

And today I made this Kapuska or Cabbage stew. The kapuska name is derived from the Russian language mean cabbage, but although the name is imported, the dish is a Turkish version of a cabbage stew common in Russia and Eastern Europe. Kapuska is widely known and eagerly consumed in Thrace, as a result of Eastern European impact and Albanian and Bulgarian immigrants, and is consumed in the Black Sea region of Turkey neighboring Russia.

Kapuska is cooked in different ways in Turkey: with garbanzo beans, bulgur, rice, ground meat, lamb, beef, or vegetarian.
