Susamli Patetes Poğaça / Turkish pastry filled with potato


Pogačice (diminutive of pogača) is a type of puff pastry. PogačaPoğaça or Pogacha (Cyrillic: Πогача) is a type of pastry eaten inBosnia and Herzegovina, Bulgaria, Croatia, Slovenia, Republic of Macedonia, Serbia (in Serbia, traditional in Belgrade bakeries),Montenegro, Hungary, Greece (where its called Bogatsa Μπογατσα) and Turkey (where it is called poğaça) with variations. It is calledpogatschen in Austria. Pogača is sometimes served hot as an appetizer instead of bread. Hot pogača filled with sour cream (or fetacheese in Turkey and Bulgaria) is considered a particularly delicious specialty.

You can vary this Poğaça stuffing with your other favorite filling, such as cheese, sausage or even minced meat or chicken (sometimes I fill it with chicken mushrooms too). It's great menu for your kid's lunch box. Or just carry out for brunch or tea break in husband's office.


Ingredients (make about 15 pieces)
Ingredients A:
 3 tablespoons flour
 1 cup warm milk
 1 package (10 grams) dry yeast
 3 tablespoons granulated sugar
Ingredients B:
 3 cups flour (few spoon more if necessary)
 1 teaspoon salt
 1 egg, beaten.
 ½ cup olive oil
 ½ ~ ¾ cup warm water
Ingredients C:
 2 medium-size potatoes. Steamed / boiled and mashed.
 ± 150 g cheddar cheese. grated/ shaved.
 ½ bunch dill or parsley, finely chopped (optional)
 Salt to taste.
 Combine all ingredients C and mix well as filling/ stuffing. Set aside.
Ingredients D (for topping):
 2 tablespoons molasses, mixed with 1 tablespoon water.
 Sesame.

Method:
1) Mix all ingredients A and mix well as a starter. Cover with towel and let stand in warm place until fluffy (I need ± 20 minutes)
2) Mix all ingredients B (except warm water). Mix in the starter (ingredients A) and knead until smooth. If necessary add warm water little by little while knead the dough until smooth and not sticky at your hand (or you can use your electric kneading mixer). Cover with plastic wrap or towel and rest the dough in warm place until doubles (I need ± 45 minutes)
3) Hit the dough to remove air and divide them into 13 ~ 15 small balls. Fill with stuffing mixture and shape round oval form (or according to your taste). Cover with towel and let them rest again about 30 minutes.
4) preheat oven to 180 º C. Place dough on baking sheet cover with baking paper or coated with margarine. Grease top of each dough with molasses mixture and sprinkle with sesame. Bake 15 ~ 20 minutes or until golden color. 
::Note
 Rocognize your own oven's condition is recommended. Different size and condition gives 
different heat result.

Pırasa Böreğı / Turkish Leek pastry And award from my sweet friend

Börek (also burek and other variants) is a family of baked or fried filled pastries made of a thin flaky dough known as yufka (or phyllo). It can be filled with cheese, often feta, sirene or kaşar; minced meat, or vegetables. Probably invented in Anatolia in the early Ottoman period, it became a popular element of Ottoman cuisine.
A börek may be prepared in a large pan and cut into portions after baking, or as individual pastries. The top of the börek is often sprinkled with sesame seeds.
Börek is very popular in the cuisines of the former Ottoman Empire, including North African cuisine. The Northern Slavic cuisines, historically developed by people living in close contact with the Turkic peoples of Asia and Europe, also feature derivatives of the börek. In Israel, börek is part of Mizrahi, Sephardic, and Palestinian traditions.



Pırasa = means Leeks. This pastry is made from leeks as filling. Combination of savory and lightly sweet taste from the leeks made into good combination for this pastry. No wonder this Pırasa Böreğı become one of favorite Börek here.

Sausage Pastry

From Pastry basic batter we can vary many kind of pastries... like this one, I fill it with sausage, as my husband favorite.
It's simple and ready anytime for breakfast or afternoon tea...



Ingredients:
- 1 recipe pastry dough  Or you can use ready use pastry dough
-800 Grams of sausage. Slightly slices the surface
- Salt and pepper to taste
- 2 egg yolks
- Sesame black or white sesame seeds for topping

Method:
 - Boil 1/2 liter of water add salt and pepper. Put sausage and cook until the spices marinated the sausage. Set aside.
- Roll pastry dough using rolling pin approximately 1 cm thick and cut them into squares (adjusted with the size of the sausage). Then wrap the sausage into triangle form.
- Preheat oven to 160 deg C. rubbing the surface of a sausage pastry with egg yolk and sprinkle with sesame seeds. Bake until golden yellow.

Gül Böreğı (Turkish "Rose" pastry)


Gül=Rose Böreğı= (Turkish) pastry. If you look at the picture below, I think you already have an idea why this meal named "Gül Böreğı"
Mostly use cheese as filling combine with dill or parsley, sometime mix with ground meat as well.





Ingredients:
- 5 pieces of "yufka" / phyllo dough (width and has circle shaped)
- 2 eggs
- 1 tablespoon plain yogurt
- 1 cup whole milk
- 1 / 2 cup olive oil
- Enough Feta cheese
- Enough Parsley or dill, chopped

Tavuklu Ispanakli börek (Chicken and Spinach pastry)

Börek is one of my favorite meal in Turkey. It's kind of pastry with vary of contents. Previously I made börek with chicken mushroom filling, and this time I made it with spinach (ispanak-Turk) and chicken filling.



Ingredients:
- 1/2 recipe basic pastry dough or store bought
- 1 pound spinach. wash and cut into rough
- 300 gr chicken meat (meat chicken w / out bone). diced
- 1 medium onions. Finely chopped
- 1 clove of garlic. finely chopped
- Salt and pepper to taste
- 1 tablespoon margarine for sauteing.

- 1 egg yolk. whisk with 1 tbsp oil for brush topping.

Sigara börek.. Another Turkish food


Bahan-Bahan:
- 3 lembar”yufka” atau filo dough ( di Indonesia bisa menggunakan kulit pangsit)
- Minyak sayur untuk mengoles permukaan filo dough secukupnya.
- 1 ikat seledri (sekitar 200 gr) –dicincang halus.
- 300 gr “lor peynir” atau bisa juga menggunakan keju parmesan, atau feta cheese-campur dengan seledri.
- 1 butir kuning telur untuk olesan atas
.- Wijen hitam atau wijen putih (seadanya) sekupnya untuk taburan atas.
Note: untuk membuat börek di Turki biasanya menggunakan wijen hitam.

Cara membuatnya:
1) Buka lembar filo dough, olesi permukaannya dengan minyak sayur. Lalu lipat menjadi dua sehingga bentuknya setengah lingkaran. Dari bentuk ½ lingkaran ini potong-potong membentuk segitiga panjang menjadi 8 atau 9 bagian (seperti pada gambar ilustrasi)

2) Isi dengan campuran isi (keju dan seledri) secukupnya dibagian lebar filo dough, sekitar 1 sendok teh, lalu gulung hingga ke bagian segitiga yang menyempit membentuk seperti rokok. Olesi ujungnya dengan putih telur agar lengket. Lakukan hingga adonan isi habis.
3) Letakkan di Loyang, olesi bagian atasnya dengan kuning telur dan taburi wijen hitam. Panggang di oven hingga kuning keemasan (sekitar 25 menit)

Salamlı börek







This time I made another kind of börek. I made with "salam" as filling. "Salam" is almost like sausage but a little different in taste. Have bigger shape than normal sausage. We can bake this Salamlı börek or we can fry it, both of ways are same delicious but I prefer fry because more simple (no need brush egg yolk and black sesame seeds) and the filo dough became more crispy.. Let's try to make it...
Fried Börek


Ingredients:
-Salam or you can use sausage 100 gr-chopped small cube
-vegetable oil for brush filo dough
-3 pcs Filo dough
-1 big onion-chopped finely
-2 pcs garlic (optional)- chopped finely
- 5 long green banana pepper(or bell pepper)-clean the seeds and chopped small cube
-1 big tomato-chopped small cube
- salt as taste
:: If you want to fry this börek to fry, you need vegetable oil to fry in deep pan

:: If you want to bake this börek to bake; You will need other materials:
- 1 egg yolk
- Black sesame seed (or any sesame you have)



How to make:
1) For filling: mix all ingredients (but filo dough)
2)Unfold 1 pc of filo dough, brush with vegetable oil and fold it become half round. Cut it into 8 pcs (become triangle shape). see the Illustration picture
3) brush again the surface with vegetable oil and fill with "salam" filling. Fold and roll like a picture.

::If you want to bake-> Brush the surface with egg yolk and spread with black sesame seeds. Then bake 160 C around 20 mnt or until golden.
Bake  börek

::Easy if you want just fry. Heat a bit much vegetable oil on deep pan. fry the börek until golden brown.

Tavuklu Mantarlı börek (Chicken mushrooms pastry)


Börek is one of favorite food in Turkey. Many kind of börek we can make. Main ingredient for börek is "Yufka" or filo dough. Turkish ussually make börek with cheese and parsley or spinach with cheese. This time I make börek with chicken and mushrooms filling, new taste maybe for some people but once you try.. I bet you will love to make it again for your family  d(^_^)b


Ingredient
For Filling :
- 5 pcs Filo dough or "yufka"
- 250 gr chicken fillet-minced
- 300 gr mushrooms-finely diced
- 1 big onion-chopped finely
- 2 cloves of garlic-chopped finely
- 1/2 tsp pepper powder
- salt as your taste

- 2 tablespoon cooking oil/ olive oil
