Ladrang Jagung (Indonesian traditional corn snack)


Indonesia has many kind traditional food and snacks. We make it from various ingredients cause we have maannyy of them.. Before I made "Onde-Onde" ... now allow me to introduce you "Ladrang jagung". It's light snack made from fresh corn. Nowdays, this snack getting rare to find unless we make it homemade.

Ingredients:
- 3 pieces medium fresh corn.  shredded
- 1 ~ 1 1 / 2 cup flour
- 100 gr butter
- 1 egg
- Chili sauce to taste (I use chili paste 1 / 2 tbsp)
- Salt and sugar according to taste.
- Enough cooking oil to fry.

Kids' Party begin with My Mini Chocolate Potato Donuts (Donat kentang coklat mini)

It's (almost) too cute to be eaten....
Just one bite or two for their small cutey mouth :)
So colorful, sweet and so chocolate ! Which kid will refuse ..:))
Ingredients for Potato Doughnuts
Materials:
1 piece large size potatoes, steamed and mashed (about 250 g of potatoes)
500 g high protein flour
1 Package of instant yeast  (1 pack 10 g)
1 / 4 cup granulated sugar
4 egg yolks
50 g unsalted butter. cut into squares.
½ teaspoon salt
50 ml of water (if necessary)
Enough cooking oil to fry.

To garnish / topping:
300 g semisweet cooking chocolate.
Ready to use icing sugar to decorate.

How to make:
1) mix flour, sugar, instant yeast, mix well.
2) To flour mixture, add mashed potato and egg yolks, knead until blended and half smooth.
3) Add the unsalted butter and salt, continue to knead until smooth. Let stand 50 ~ 60 minutes.
4) roll the dough with a rolling pin and cut (formed) according to taste. Let stand another 30 minutes.
5) Fry over medium heat till golden brown. Remove and drain.
6) Garnish with chocolate and icing sugar after cool.

Lemon Honey Chicken Wings


I believe, this dish will certainly be a favorite. The combination of the sour taste of lemon, and sweet-savory of honey and garlic, will make everyone not enough just to eat one or two pieces only. More delicious again served with chilly sauce or tomato sauce..hmmm..just Yummy!

 Ingredients and how to make it:
- 12 pieces of chicken wings.
Mix all marinade ingredients:
- 2 tablespoons pure honey
- 2 tablespoons lemon juice
- 4 cloves of garlic. Bruised and finely chopped
- 1 teaspoon salt or to taste



Marinate the chicken wings with spices. The longer the better (I soak about 2 hours). Then Roast in oven 170 deg C for 40 minutes or until cooked. Or if you can make a grill / BBQ , this can be also be roasted over coals ....
Serve hot (warm)

Onde Onde / Indonesian fried glutinous dumpling



Indonesia is rich in diversity of traditional food. Start from Tuber-based, soy, all kinds of flour, until the food based from Indonesia's vast ocean.
Feels proud to have such a diversity of taste and incomparable culinary wealth.
One is  "Onde-Onde" ( funny name, isn't it? ..). My favorite snack from my childhood. Onde-onde made of glutinous rice flour, shaped round like small balls containing sweet mashed mung beans and covered with sesame seeds.


And being far from home makes me want a little nostalgic, slightly reducing the homeland missing I make them on my small kitchen ... while my glutinous rice flour supplies from Indonesia are still there.

Chicken Eggroll (served with Salad sauce mayonnaise)

Sometimes we Bored with the existing chicken menu .. So why don't we Try this chicken Variations,  guarantee, preferably by whole family member. Moreover served with Mayonese sauce salad. Serve warm with hot rice ... Just perfect dinner/ lunch :)

Ingredient I (for filling):
- 400 gr boneless chicken meat . finely minced or mashed.
- 4 cloves of garlic. Puree.
- 1 tsp pepper powder
- 1 teaspoon salt
- 1 teaspoon sugar
- 1  1/2 tablespoons sweet soy sauce
- 1 tablespoon salty soy sauce
- 2 tablespoons cornstarch
- 1 egg.


İngredients II:
- 4 eggs
- 1 / 4 teaspoon salt
- 4 tablespoons flour, mix with few Tbsp water
- 2 tablespoons melted margarine or olive oil (vegetable oil)





How to make:
1) Mix all the ingredients I (for filling). Stir until blended. Set aside.
2) Mix and stir until homogeneous material II using a whisk.
3) Take non-stick pan. Make pancakes from the batter II (make for about 4 pieces of omelet)
4) Take 1 omelette, give filling mixture, spread all over omelet's surface, stacking with a second, give the filling mixture again, spread all over omelet's surface. and Roll. Make two rolls of the same way.
5) Steam for 15 ~ 20 minutes
6) Cut the omelet rolls about 2 or 3 cm thick. Fry until golden redness.

Keripik bayam ( Indonesian Spinach spiced chips)

Very popular and every body's favorite. Made from spinach, wrapped with combination of  rice and tapioca flour plus some spices. Fried in deep oil. so crispy... once you eat it.. you'll forget to stop 
Wanna try to make it?




Ingedients need to be prepared:
- 1/2 kg of spinach leaves. Wash and drain.
- 2 cups rice flour.
- 1 cup tapioca flour
- 3 cloves garlic
- 2 candllenut
- 1 /2 tbsp coriander seeds
- 2 kaffir leaves.
- Salt to taste
- Oil for deep frying


Method:
1) Pound and puree garlic, coriander, kaffir leaves, candlenut and salt.
2) Mix the rice and tapioca flour with ground spices above. Give SMALL AMOUNT of water. Be careful not too watery. The dough should be thick enough. Test the taste.
3) Heat much oil in a deep skillet/ pan. Dip the spinach leaves one at a time into the flour mixture and fry until yellowish. Use medium heat only so not to burn.


Store in a dry jar and cover tightly. Enjoy.

Soto Babat Sapi / Indonesian Beef Tripe Soup

Soto, sroto, or coto is a common dish to be found in various regional variations of Indonesian cuisine. It is a traditional soup mainly composed of broth, meat and vegetables. There is no clear definition what makes a soto, but normally all traditional soups are called soto, while western/foreign influenced soups are called sop. It might be considered Indonesia's national dish, served as it is from Sumatra to Papua and in enough variations to fill an entire cookbook. Soto is omnipresent in Indonesia, available in many an open-air eatery and on seemingly every other street corner.





Regardless of the definition of soto (soup). This time I miss and want to eat Indonesian beef tripe soup.Consisting of beef tripe (can be mixed with beef lung as well) and cooked with lots of broth and seasonings. Served with lemon, sambal Indonesian chilli sauce and fried shallot. More complete add with "Kerupuk" or Indonesian shrimp crackers..hhmm..yummy.. You should come to Indonesia to taste real soto ..^,^.... or just come to my house .. @(^_^)@


Ingredients I / bahan I:
- 500 gr beef tripe / 500 gr babat sapi
- 200 grams of cow lung (or heart)/ 200 gr paru atau jatung
- 200 g meat/ bisa dicampur daging sekitar 200 gr
- 3 ~ 4 daun salam /bay leaves
- 1 stalk lemongrass, bruised/ 1 sereh, geprak
- 1.7 lt ~ 2 lt water/ sekitar 2 lt air


Boil the beef tripe and  lungs/ heart in water with bay leaves and lemon grass until soft. / masak semua bahan I hingga babat lunak.


Strain the meat and offal, cut into bite size / Saring daging dan jerohan, potong kecil.

Soes Salad (Choux Pastry Salad)

Just love Choux pastry.. We can vary with any kind topping and even filling.. Today I made choux pastry and as filling I want something fresh and healthy..salad! yes, I combine it with fresh salad..have a try! it's healthy!

Ingredients:
For choux dough:
- 100 g unsalted butter (or margarine)
- 200 ml water
- 1 cup flour
- 1 / 4 teaspoon salt
- 4 eggs. Beaten.
- 1 teaspoon baking powder
- For sprinkling,enough of sesame seeds .


Ingredients for salad:
- 1 carrot medium size. peeled and cut into matchsticks or grated coarse.
- 3 ~ 4 pieces of cabbage leaf. cut very fine.
- 1 small size red bits. peeled and cut into matchsticks or grated coarse
- 3 tablespoons of canned sweet corn.
- Enough lettuce leaf
* Combine all ingredients for salad (except lettuce). Set aside and keep in refrig.


dressing for the salad:
- 3 tablespoons mayonnaise.
- 1 tbsp tomato sauce
- 1 / 2 tbsp caster sugar
- 1 / 4 teaspoon salt
- 1 ~ 2 tbsp lemon juice


* Mix and stir ingredients for sauce. Set aside and keep in refrig.


How to make:
1. Boil butter and salt in water. Stir until boiling. Turn off the heat.
2. Turn on small heat. Pour the flour gradually, keep on stirring until the dough is completely smooth and no lump. Remove from heat and chill.
Note: As you chill the dough, keep stirring the mixture in order to make nice hollow choux shell.

3. Once completely chill, add baking powder, eggs gradually, keep stirring. Stirring can use a wooden spoon, electric mixer or manual whisk.
4. Grease some pie mold with butter. Put small amount of the dough inside that mold. Sprinkle with some sesame seeds.
5. Bake for about 25 min with a temperature of 180 deg C.
Note: Know the condition of your own oven. The size and condition of  your oven, produces different heat result.


How to serve:
Mix salad ingredients and salad dressing until blended. Cut choux shell in half horizontally. Cover the bottom side with lettuce and  fill with salad mixture. Cover with the top part.


Note:
Mix salad and fill the choux with it just before serving so it will be more fresh and choux shell will not wet quickly.

Cake Nanas (Classic Pineapple Cake Upside down )

Just like this cake.. so moist and creamy...it's classic recipe I got from very old Indonesia cooking recipe book...even I lost it's cover ...@(^_^)@ . It's "cake nanas" means Pineapple cake... Simple and not much ingredients being used.. have a try!


Things should prepare:
- Pineapple. Cut a circle and holes in the middle. Soak in sugar water overnight. Or if you want more easily and quickly you may use canned pineapple, drained.
Ingredients:
- 250 gr unsalted butter + for grease the pan. Softened at room temperature.
- 3/4 cup caster sugar.
- 7 egg yolks
- 5 egg whites
- 1 cup plain flour
- 1/2 teaspoon baking soda
- Pinch of salt.

Kue kering #nastar bentuk daun/ Leaf shape pineapple cookies

One among many other Indonesian classic cookies. With pineapple jam as filling, just nice thing to be side of your coffee/ tea cup d(^_^)b


Ingredients:
- 500 grams of flour
- 200 gr cornstarch
- 250 gr butter
- 250 g margarine
- 120 grams of milk powder
- 200 gr powdered sugar
- 1/2 tsp powdered Vanilla
- 4 egg yolks

Choux pastry in Chocolate flush (Turk:Profiterol)

Another kind of 'Choux' variation... fill with vanilla custard and flush with plenty of chocolate sauce...hmm...seems sssooo..tempting right?

One of  husband's fave dessert ...







Easy to make..


Materials used:
- 1 basic choux pastry dough recipe. You can check here

For the custard:
- 500 ml of milk
- 1/2 cup granulated sugar
- Pinch of salt
- 1 + 1/2 tablespoon cornstarch, mixed with 1 tablespoon flour and dissolved it with enough water
- 1 teaspoon vanilla
- 1/2 tablespoons margarine
- 2 egg yolks. Beaten.

For chocolate sauce:
- 100 gr dark cooking chocolate, chopped
- 2 tablespoons cocoa cream (or you can vary with peanut butter)
- 1/2 tablespoon granulated sugar
- 5 tablespoons milk

#KAASTENGELS cookies ... Classic Indonesian Cheesy Cookies


Every "Hari Raya Iedul Fitri" (Islam celebration after Ramazan) in my homeland, this cookies always served. Every house me and family visit always made this as homemade and still become our number one cookies of all. It's becoming like tradition cookies ever. And last "Bayram Ramazhan" (Turkish language for same feast), I just wanna "feel Home" and made these cookies in my table beside Turkish Baklava and other Turkish delight @(^_^)@

It's Just simple cookies for tea or coffee companion if you want to try it also. Cheese based cookies definitely will become favorite of each person .. easy to make and easy to find all ingredients  .....why don't we try?


Ingredients:
  • 300 gr unsalted butter
  • 2 egg yolks
  • 500 gr flour
  • 25 gr cornstarch
  • 25 gr milk powder
  • 1 teaspoon baking powder
  • 100 gr Parmesan cheese
  • 50 gr white cheese or cheddar cheese
For topping/ toppings spreads:
  • 1 egg yolk, beat with 2 teaspoon water.
  • Enough mozzarella Cheese for sprinkle-grated.

Method:

1. Beat butter and egg yolks until fluffy and pale. Add cheese and stir until smooth and well blended.
2. Mix in flour, milk powder and cornstarch, mix slowly until all well blended
3. Form dough as desired, use cookie cutter or milled with rolling pin and cut lengthwise
4. Arrange on baking pan, basting the surface with egg yolk and sprinkle with grated cheese
6. Bake in oven with temperature of 160 ° C until golden yellow/ done.


Store cookies in clean and airtight jar.

Nastar isi Apel / Apple tart cookie

"Lebaran" (Iedul Fitr Feast) this year I spent in Turkey with husband .. It feels so nostalgic feel the atmosphere of  Iedul Fitr Feast a la Indonesia .. Many kind of cookies, "ketupat"(*) eat with Indonesian traditional food (sayur santan), homemade syrup, together with family in Indonesia ....

In Turkey, every Iedul Fitr feast (Ramazan bayram) there always been "baklava"  serve at every house in Turkey ... Unlike in Turkey, "lebaran" feast in Indonesia feel it is incomplete without cookies and other snack, also "ketupat" as the main dish at every homes in Indonesia ... Ooohh ..how I miss Indonesian "ketupat" ....

Trying to ease a little bit homesick at Iedul Fitr feast, I made some traditional "lebaran" cookies also, like this one: "NASTAR" . Nastar is cookies fill usually with homemade pineapple jam, but since I hardly ever to find pineapple this summer -unlucky me :( , so I made it with homemade apple jam.. not bad as well, indeed can be as variation of 'new' nastar after all  d(^_^)b

Sambal Badjak / Sambal Bajak (Indonesian traditional chilly condiment)

"Sambal" or ground hot spicy chili  most always served in Indonesian traditional family's dinner table. In Indonesia we can make this hot  sauce from bird eye hot chili as main ingredient throughout the year (all seasons). Different from country with four seasons,this small hot chili we usually find only in summer.

 

We have many kinds of chilli sauce from various regions in Indonesia from eastern Indonesia to the western tip of Indonesia.



Since this summer in Turkey I could find bird eye chili, this time I want to make sambal Badjak ... If other Turkish women will make tomato pasta for next winter stock,I'll  make a little more my own hot and spicy chilly sauce to be stored during the winter .. d(^_^)b


You will need:
-Bird eye chilli pepper 200 gr, the more you use it, the more hot spicy you'll get.
-Big-red chilli pepper 100 gr.
-1 large tomato. If you don't like too hot, tomato can be added.
- 4 cloves of garlic.
-Belacan/ terasi (shrimp paste) to taste (I use 1 tbsp)
-Sugar and salt to taste. (I use 1/2 tbsp coconut Java sugar/ palm sugar)


ground and puree all ingredients above until smooth with food processors or a manual with mortar and pestle.

After finely ground. Heat enough cooking oil. Cook the sauce with additional:
- 3/4 cup coconut milk
- 2 pcs Bay leaf
- 1 small size galangal (optional)
- Lemongrass, bruised white part


Cook everything over a low heat until thick and boiling.

Ready to served.
Or you can store it in clean sterilized jar, keep in refrig for not more than 2 month.

Daging masak Jamur (Meat with mushrooms)

Meat can be substitute with chicken. Simple and quick meal to make for dinner.

Materials:
- 500 gr beef / lamb. Diced
- 300 g button mushrooms. Diced
- 4 peppers. Discard seeds and cut lengthwise
- 3 cloves of garlic. Finely chopped
- 1 large onion. roughly chopped
- 1 medium-size tomatoes. finely chopped
- 1 tablespoon soy sauce
- Salt, sugar and pepper powder to taste
- 2 tablespoons margarine for sauteing

Tahu Isi (Stuffed tofu)

Stuffed tofu or in Indonesia we called Tahu Isi, one from many kind favorite snack in Indonesia. Main ingredient, of course tofu. For the stuffing we can vary with many kinds as our favorite like vegetables, chicken, etc.
Today I made stuffed tofu with vegetables filling. Simple but enough to ease my homesick to Indonesia...
If you want to try to make it, let's start with the ingredients...



Ingredients:
- about 500 gr firm tofu. cut into small triangles and deep fry .
- 1 large carrot. coarse grated or cut into match shape.
- 2 tablespoons bean sprouts
- 3 stalks spring onions. minced
- 1 medium size onion. finely chopped
- 3 cloves of garlic. Finely chopped
- Salt and pepper to taste
- 2 tablespoons cooking oil
- 2 teaspoons flour

Martabak Telur Homemade

Indonesian favorite food for accompany us to have evening tea with families

Ingredients :
- 5 eggs 
- 4~5 phyllo dough (ready to use or you can make it earlier)
- enough cooking oil for frying martabak
for stuffing:
- 3 stalks of leeks, cut into 2-3 cm
- ground beef  200 gr 
-3 garlic cloves medium size- chopped finely
- 1 medium onion- chopped finely
- Curry spice powder 2 teaspoons 
- 1/2 tsp ground pepper
- 1/2 tsp chilli powder (optional-if you like it spicy hot) 
- salt to taste.
- 3 tbsp vegetable oil for sauteing

Membuat mie telor sendiri ( #homemade egg noodles)

Homemade egg Noodle. Economic, safe, without preservatives .... one recipe made can last about two weeks in the refrig.




Ingredients:
- 4 cups wheat flour (I use a all purpose wheat flour)
- 4 eggs (beat)
- 3 tablespoons of tapioca flour ( or you can use cornstarch), plus more for sprinkle
- 2 tsp salt
- 1 / 2 teaspoon baking powder
- enough water (I use 1/4 cup water)
- small amount of cooking oil.

Cheese Stick

One of my favorite for spending my weekend in front of TV all day. With big cup of tea or coffee, I can eat one whole jar alone. Simply to make and quick... let's prepare.

Ingedients:
- 250 grams  flour
- 50 grams  Tapioca.
- 1/ 4 teaspoon baking soda
- 50 ml of cooking oil.
- 1 egg
- 25 ml water
- 100 grams of cheddar cheese, grated
- 1/ 4 teaspoon pepper
- 1/ 2 teaspoon of garlic powder.
- 1 teaspoon salt
- A little bulyon block (optional)

How to make:
1. Mix flour, tapioca and baking soda, set aside.
2. Stir in cooking oil, eggs and water until blended. and add into the flour mixture.
3. Add the other seasonings and cheese. Knead until smooth. In this process there may be additional wheat flour if the dough is not yet smooth. Let stand for 15 minutes.
4. Milled dough thin and cut into pieces. Fry in hot oil until golden brown and crispy.
5. After the cold keep into airtight  jar and serve.

Martabak manis / Indonesian style thick pancake



Far away from my hometown make me miss some traditional Indonesian food, like this "martabak manis" . One main ingredient to make this "martabak manis" I hardly can find in Turkey, that is coconut milk. So I tried to substitute it with milk.. so.. Voallaaa..... ssooo nice and had same taste as original using coconut milk..Let's try to make...
