Banana Chiffon Cake Recipe with video

A chiffon cake combines methods used with sponge cakes and conventional cakes. It includes baking powder and vegetable oil, but the eggs are separated and the whites are beaten before being folded into the batter, creating a rich flavor like an oil cake, but with a lighter texture that is more like a sponge cake.

The cake tin is not lined or greased, which enables the cake batter to stick to the side of the pan, giving the cake better leverage to rise, as well as support in the cooling process when the cake is turned upside down to keep air bubbles stable.

And today I will share another Chiffon cake recipe. Each of my chiffon recipes has its own feature with various tastes, so you don't have to worry about flat and same boring cake each time.
Just like my ultimate Banana Chiffon Cake this time. Bananas are rich in nutrients that are good for health, such as potassium, carbohydrates, minerals, vitamin C, vitamin B6, potassium, and magnesium. Bananas also have many properties, such as lowering high blood pressure to warding off free radicals. 

I combine the banana flavor with cinnamon also, I enrich the texture and flavor with cocoa powder to layer inside the cake. You will see how beautiful and delicious this chiffon cake will be 🍌

So let's gather some ingredients and start to bake for your family or friends.
Here I give you two different measurements for 2 kinds of tube pan capacity; 24 cm and 18 cm. If you have a 20 cm pan you can use an 18 cm ingredients list but with a shorter result.

Method:

1) Preheat your oven to 160°C. Prepare one ungreased removable tube pan. Sift together all-purpose flour, cornstarch, cinnamon, baking soda, and baking powder, set aside

2) In a big bowl, mashed bananas and sugar with a fork until smooth. Whisk egg yolks and cooking oil, whisk until combined. Then sift in the flour mixture, whisk to well combine. Set aside.

3) In a big clean (probably aluminum/ glassware) bowl, with an electric mixer whip the egg white, salt, and cream of tartar till foamy. Gradually (in 3 batches) add caster sugar while continuing to beat until its stiff peak. 

4) Add the meringue into banana mixture in 3 batches, fold to combine in each addition 

5) Pour the batter about 1/3 part into the prepared tube pan, sift in dark cacao+cinnamon powder over the batter to cover its surface. Pour another 1/3 part of the batter over the cocoa powder. And sprinkle /sift cacao powder again. And pour the last 1/3 batter. Bang the pan gently against the table to remove air bubbles. 

6) Bake about in the preheated oven for 50~60 minutes or until the skewer inserted comes out clean. Once it's done, remove it from the oven and immediately invert the tube pan upside down until the cake completely cools down. You might need something like a wine bottle or any bottle with a "neck" suit to your tube pan.
Let it completely cool before you unmould it.
Note: Adjust baking temperature according to your own oven condition. 
Baking time needs to be adjusted as well depending on the pan you use, the bigger pan needs a longer time. Just check the cake by inserting a skewer into the cake. 
İf you are using a small pan, you may need a shorter baking time.

7) How to unmold the cake; run a thin knife or spatula around the edges, pressing against the sides of the pan. Invert the cake to free it from the sides of the pan, tapping the base to help release. Then run the knife or spatula around the base to release the funnel.

Serve it as like that or dusk with icing sugar or any fruits/ chocolate sauce as your like.

Buah pisang salah satu buah yang paling rutin ada di rumah saya. Buah yang selalu ada di pasar atau supermarket disegala musim (walau musim dingin harganya agak mahal), jadi bisa dipastikan buah yang kaya kalsium ini selalu ada di meja makan.
Pisang kaya akan kandungan nutrisi yang baik untuk kesehatan tubuh seperti potassium, karbohidrat, mineral, vitamin C, vitamin B6, kalium, dan magnesium. Pisang juga memiliki banyak khasiat misalnya menurunkan tekanan darah tinggi sampai menangkal radikal bebas.

Disini buah pisang hanya ada satu jenis saja, berbeda dengan di Indonesia yang bisa mendapatkan berbagai macam jenis pisang sesuai selera dan kebutuhan. Jadi kangen pisang kepok yang bisa digoreng atau dibikin aneka kudapan manis.
Kebanyakan pisang yang dijual dan dibudidayakan di Turki sejenis pisang cavendish. Dengan kulit kuning bersih ukuran sedang dan buahnya lembut. Cocok untuk dikonsumsi langsung atau dibuat cake. Gak bisa digoreng karena akan "benyek" dan bikin minyak kotor karena terkaramelisasi dengan cepat. Karena tekturnya yang lembek dibuat kudapan khas Indonesia jg kurang cocok.

Kadang kita bosen juga konsumsi pisang begitu aja, jadi alternatifnya ya dibikin cake atau donat aja. Seperti hari ini, saya bikin chiffon cake pisang. Biar gak "mati gaya" saya tambahin motif tapo map atau ala "alunan kasih" dengan bubuk kakao plus kayu manis.

Chiffon Cake Pisang

Untuk satu loyang chiffon ukuran 24 cm (atau dua loyang 16 cm)

Bahan A:
🍌  7 butir kuning telur
🍌 400 gr pisang matang, haluskan
🍌 40 gr gula pasir halus/ gula kastor
🍌 95 gr minyak sayur
🍌 150 gr terigu serba guna
🍌 15 gr pati jagung (misal maizena)
🍌 10 gr (1 sdm) bubuk kayu manis
🍌 1 sdt baking powder
🍌 ¾ sdt baking soda

Bahan B:
🍌 8 butir putih telur, suhu ruang
🍌 120 gr gula pasir halus (gula kastor)
🍌 2 sdt perasan jeruk lemon (atau 1 sdt krim tartar)
🍌 sejumput garam halus


Untuk taburan:
🍌 bubuk kakao campur dengan kayumanis bubuk (bisa pakai bubuk kakao saja)




How to make:
  1. Panaskan oven suhu 160~ 170°C. Siapkan loyang tanpa dioles apapun.
  2. Campur pisang yang sudah dihaluskan dengan 40 gr gula kastor, dan minyak sayur gunakan wire whisk dan aduk sampai rata. Lalu Masukkan kuning telur dan aduk rata. Ayak campuran tepung terigu, pati jagung, kayu manis, baking soda dan baking powder. Aduk rata dan sisihkan.
  3. Kocok putih telur dalam mangkok bersih yang lain bersama perasan jeruk limon (atau cream tartar) dan garam, kocok hingga berbusa. Lalu masukkan gula (bahan B) secara bertahap sambil dikocok kecepatan sedang hingga meringue menjadi stiff peak (jambul petruk 😊 ੭ )
  4. Campurkan putih telur ke dalam adonan pisang dalam tiga (3) tahap. Aduk balik tiap penambahan hingga tercampur rata. Saya gunakan wire whisk untuk mengaduk penambahan kesatu dan kedua. lalu saya pakai spatula untuk penambahan ketiga. Hentakkan adonan ke meja kerja agar gelembung besar hilang.
  5. Tuang adonan ¾ bagian lalu taburi dengan campuran bubuk kakao+kayumanis. Tuang lagi ¾ bagian lalu taburi lagi dengan bubuk kakao+kayumanis. Terakhir tuang sisa adonan. Hentakkan loyang ke meja kerja untuk mengurangi air bubble. 
  6. Pangang dalam oven 160~170°C kurang lebih 45~50 menit. Cek dengan tusuk sate / lidi. Note: Waktu dan suhu sesuaikan dengan kondisi oven masing-masing ya.
  7. Keluarkan dari oven dan balikkan loyang sampai cake benar-benar dingin baru dikeluarkan dari loyang.
