İ always love roll cake.
İt's like enjoy b'day cake with delish buttercream or whipped cream in a small version.

And nothing more refreshing and indulging our summer taste than a fluffy and soft sponge cake rolled with sweet whipped cream and fresh strawberries.
This combination has a perfect balance between sweet and sour, fluffy and creamy and fruity. It’s amazing with a cup of tea in a sunny breezy summer day 😃


İ really enjoy trying and playing with many various recipes for my Swiss Roll Cake. İt gives me many experiences of knowing many roll cake type as much as İ can.

#Homemade Apricot Jam with spice aroma

Love anything İ find in my local market.
Fruits or vegetables. İ just love summer! 
And look what İ found today... apricot.. many apricot. We enjoy them simply fresh as it is also it's perfectly yummy as jam.

Since apricot is in peak season now... we can get them so cheap and they are so perfectly ripe, that's what İ am looking for perfect yummy apricot jam.

Different from apricot jam İ usual make, today İ will share my homemade apricot jam with Spice. 
The spice gives mild aroma to the jam which is wonderful.
İ love it!

But if you want to skip the spice, you free to go. Just add lemon juice and zet in it and you'll have yummy homemade apricot jam!

Wingko Babat is one of the old Indonesian traditional snack (jajan Pasar) which may already exist decades ago together with other some traditional snack/ food. Made from grated coconut and glutinous rice flour as main ingredient. Wingko is very famous on the northern coast of the island of Java.

Check category Indonesian Snack (jajan pasar/ kue) for more Indonesian Kueh or snack.

The most famous Wingko is made in Semarang. It causes a lot of people who think that wingko also came from this city. Nonetheless, wingko babat actually comes from small town calls "Babat" . It is a small area in Lamongan, East Java. 

Wingko mostly has round shape but is sometimes presented in small square chunks at warm or room temperature. Has a slightly soft yet somewhat chewy texture. Sweet taste and is so aromatic from vanilla or sometimes pandan.


Today I'm going to share this favorite ever of mine in Pandan taste. You can check my previous Wingko Babat recipe for the original taste here. For this pandan flavor İ bake in oven and cut into portion, different from pancake version. But if you want to cook over pan / round shape feel free to do so, check the link İ give above.

Some of you may doesn't like macarons-even İ doubt it 😖. And İ believe many of you loovvveee macarons or even addicted to it.

Me; İ am addicted too ... but more on baking them. İ like macarons so much of course but İ try to limit my self to eat sweet things too often or too much. 



İ also addicted to take pictures of them. İ guess you already know how cute and adorable this sweet little thing in front of camera 😍. Aren't they just photogenic? 😃



İ have a pot of lavender flower in my balcony which beautifully bloom in this June, so İ took the flower for these pictures. So what you see here are real lavender flower. But İ use dried lavender tea from local seller for the recipe.

İf you are my regular reader you should probably familiar with my labneh cheese recipe. You may already know (or tried-maybe) my latest Labneh souffle cheesecake with spicy warm honey fig.
What about my fave dessert ever; Three tone Labneh "Cheese" Chocolate mousse . Or simply delicious Yogurt "Cheese" Souffle Cake
Well yes..İ am using labneh a lot daily not even for dessert but also for soup and other cooks.

What is labneh cheese? it's yogurt that has been strained to remove its whey, resulting in a thicker consistency than unstrained yogurt. Due to the straining process to remove excess whey, even non-fat varieties of strained yogurt are much thicker, richer, and creamier than yogurts that have not been strained.

Fresh labneh, made from yogurt with live or active cultures are a very healthy food that contain probiotics, that enhance the immune system, lower cholesterol, aid in digestion, protect against constipation, protect against diarrhea, improve lactose digestibility.
Labneh is like yogurt is an excellent source of protein, casein, whey, beneficial fats, carbohydrates, as well as vitimins and minerals (B12, Calcium, Phosphorus and Riboflavin.) Labneh has less lactose and sugar than regular yogurt.

Hazelnut Macarons With Nutella Filling

İt has been for a while İ didn't post any macarons recipe since my last "Rose Macarons with Rose Raspberry buttercream filling" İ didn't post any macarons not because İ didn't bake one, in fact İ start receive some macarons order since few months ago.

İt happen unexpectedly after one staff of baking distributor where İ usually buying my baking ingredient asked my phone number. She said some people who came to their store often ask her how to make macarons or are they selling one. Yes İ know they don't sell any macarons but some wonderfully delish chocolate. She asked me some questions whether İ can receive some order for macarons so she can give my contact to their customer as well.....

Well....İt was just starting like that. İ was so..so..so exciting (almost nervous) when İ got my 1st call for the macarons 😄


Actually İ received pre order for making some food or cakes with personal touch. Just like this Flower Bouquet cup cake, some one ordered it for her special friends. Or yummy black Forrest cake for anniversary someones special to their anniversary. Just check my "CAKE GALERY" section to see some of my collection. Sorry if İ didn't update picture with new one.

Anyway..... Let's back to my post today. Yep....Another macarons! But wait, this time is different one. İ use hazelnut meal instead of almond meal which İ usually use. No reason, almond meal getting expensive now on my local.. more expensive than pistachio (medium grade. Higher grade pistachio still more expensive) or hazelnut. So this is one of my reason to try hazelnut meal for my macarons. Actually trying hazelnut meal for macarons already on my waiting list since long time ago and now İ think the right time to give a shoot.

İt had been a while İ didn't post any roll cake since my last Zebra pattern roll cake with cooked dough method few months ago. No reason why, İ am just not "in a mood" baking one.  Until my husband asked me in  one rainy Sunday why there is no any cake to enjoy with our tea. İ answered and gave him a jar of cookies but he went; would be nice if there is a cake.

No...no rolling eyes really 😤. İ am glad he missed my cake and İ miss making one as well. İ was going to make butter bundt cake but İ feel İ want to eat light. So İ decided to make roll  instead. İ don't have any jam left in my refrigerator and making buttercream would take another effort. So My roll cake this time just use nutella as filling.

One of repeat request snack in my house is this potato doughnut. İf you never make potato doughnut before you might try this soon. The mashed potato using here is adding the fluffy -ness of these donuts. Believe me, it will be a new fave around your house soon as well.



From this basic recipe you can freely shape your donut as your liking. topping them with anything your fave or even fill it with any filling you want. But this donut hole in skewer is the most request from my daughter. İ just simply coat them with icing sugar and cinnamon

Who doesn't love delish creamy and yummy little tart for after dinner dessert. This is our kind of fave dessert. My family and I love it so much. Combination of melt in mouth pie shell together with silky cream condensed milk custard as filling would indulge our appetite as dessert should be.

This is my another ultimate zebra cake from egg whites. If you are my regular reader of my blog you might already familiar with my previous Zebra cake from egg white as well with steamed methodOr you might notice that I had posted so many cake/ dessert using left over eggwhites, just check my "egg white" category on this page.

We use many recipes using only egg yolks, but unfortunately not so many of us have recipe using egg whites only other than macarons and maybe angelfood cake. 
Why don't you try this gorgeous and delicious zebra cake, I'll guarantee you gonna love it and it will be on your repeatable cake to make.

Marble Ogura Cake recipe

Ogura cake, aka 相思蛋糕 / Xiāngsī dàngāo . No official sources why this cake name Ogura (Japanese language). Is it coming from Japan or invented in Japan or whatsoever. It's just this cake become very popular among Asian baker and Asian cake lover. The texture incredibly cotton soft, light and smooth texture with moist crumb. Rich in flavor yet light in sweetness.

If you are my regular reader you might notice that I only post one ogura cake previously, check my blood orange ogura cake here. And this post is my second post about ogura. Yep, I didn't bake that cake often it's not because I don't like ogura cake. I lllooovvveee it! I love anything light and not make my stomach full as dessert (cake).

I didn't bake it so often because until now I got pretty nervous baking it and still looking for perfect recipe that match with the pan size I have. I'm telling you..I don't purchase much baking equipment /baking pan like mostly Asian baker I know. In Turkey it's hardly to find many kind baking pan I need e.g removable NON non stick chiffon pan, or simple square NON non stick baking and some other more. Which if I'm in my homeland so easy to find. Using NON non stick baking pan is the best way to bake this cake~ which the most suitable one.

Do you like baking? Or do you always have some leftover egg white on the fridge? That's me. And more especially days start cold like nowadays, when I cook creamy soup to warm up our family dinner table, I use mostly yolks on my soup. Check my "soup" category to see our soup menus.

And since I always have one or two jars of leftover egg white on my fridge,I have many recipe using leftover egg whites. Start from macarons and some cakes. Check my zebra steamed cake or other cake recipes using only egg white here. And this angel food cake was on my baking list for some time. 

I love baking with matcha/ green tea. Beside the taste which I like, I'm also enjoying during baking time, my house will  full of fragrant aroma from the green tea. Not yet mention about it benefit. 

So today I bake Matcha angel food cake for our tea/ coffee time at home. Well... actually I wanna make classic white angel cake, but these days I'm enjoying matcha in any ways, baking or just simple make it latte.

Cheesecake is the most repeatable cake I bake in these 6 years. Since I baked first time for my husband at early year our marriage, he fell in love with it. I'm big fan of cheesecake, especially cotton soft one like this Japanese style cheesecake.

Different from New York style, this cheesecake has very light cottony texture. The topping and can be vary start from lemon curd until your favorite jam. Please do check my other cheesecake posts to see the variation here.



And my post today is Japanese cotton light cheesecake with matcha (green tea) marble. The recipe I adapted from Diana Dessert's with minor adjustment using matcha marble. Original recipe using 8" round baking pan, but here I use 9" (about 24 cm in diameter) fixed base pan. Next time I will use 8" for taller cheesecake. Just need to lightly grease and line the side of pan with baking paper/ parchment paper few cm higher than the pan.



This time I grease the bottom and side of my 9'' fixed base pan and line with parchment paper. I bake this cheesecake with water bath method as original recipe calls, but I put low and small rack over water bath pan so the bottom of my baking pan barely touch the water. Well.... I pour hot water maybe not more than half cm high from my baking pan's bottom side. See the illustration below.



If you use removable pan, it's important to line the outside of pan with double heavy duty aluminum foil, or few sheet thinner aluminum foil to make sure no water seep into your cheesecake during water bath baking.



Another note, to prevent sudden change of temperature that may cause the cake to shrink drastically, you should let the cake cold down inside the oven with ajar. But actually It’s normal for Japanese cheesecake that will shrink about ½ inch after cooling, don't be alert.

Today's post is another swiss roll cake. It's like almost too long I didn't bake any roll cake. No reason, I just busy enjoying some small crafting projects with my kid. And winter will come in shortly so I'm now doing some new crochet projects for upcoming winter~as usual ^,^ . You can check my other Swiss roll Cake I made before here.

If you read the title with "cooked dough" method, some of you might say..."what..??" Or some of you might already familiar with it.
Cooked dough method is cooking flour in hot oil/ butter, giving such a moist, less crust and more flexible for the cake. Because cooked flour has ability to absorb more water / moistness

Those characteristic so much suit for making roll cake. I got this recipe from one Singaporean food blogger which is already mastered in baking; Kenneth Goh with his page Ghuai Shu Shu.

And today I am going to share one of his recipe making so flexible (he call it yoga cake) Swiss roll cake. The cake so flexible to roll in, roll out and roll in again without any crack. Isn't it sound fabulous recipe for rolling cake? It is! So happy I found his recipe.

Actually this is my second time using same recipe. The 1st one I made plain (no pattern) with black berry jam filling, but I didn't take any picture since the cake already gone before I could capture it with my camera (^,^) Yep..it is delicious!


And this 2nd attempt, I try to make zebra pattern which I'm not really sure is it really look like zebra or not....hehehehe... 😄 I'll do better next time. Of course the pattern is optional for you. You can skip the pattern and just make it plain or any other pattern you love.

The filling also absolutely depend on your prefer. Today I filled it with chocolate butter cream. You make choose any filling you like such as jam, or whipped cream.

In Turkey, strained yogurt is known as süzme yoğurt ("strained yogurt") or kese yoğurdu ("bag yogurt"). Water is sometimes added to it in the preparation of cacık, when this is not eaten as a meze but consumed as a beverage. Strained yogurt is used in Turkish mezzes and dips such as haydari.

In Turkish markets, labne is also a popular as dairy product but it is different from strained yogurt; it is yogurt-based creamy cheese without salt, and is used like mascarpone.

Frankly speaking, I use this labneh cheese from strained yogurt a lot in my daily cook. Since cold soup made from this süzme yoğurt ("strained yogurt") until dessert. And I am pretty satisfied with using it. Beside richer in texture, I can reduce the sourness in it, so creamy yet healthy.

Summer peak here in Bursa. With dry, no wind, and high humidity, I always find something to refresh our weekend dessert. And what do you think about fresh cold and fruity dessert? 
And peach is everywhere now. I like the sweet with lightly sour of it. I can eat it just like that, with my own spicy sour palm sugar sauce, sometimes.

Pity, my husband doesn't like peach so much. He is just like my kid who eat some fruits after I cook into something that makes the fruits "disappear" or turn into something looks scrumptious for them. I'm telling you.... I am dealing with "two kids" when it comes to food.. picky..picky and picky..both my kid and hubby... sssgggh.

So I decided to make panna cotta as his favorite, and my kid would like something like pudding for her (^,^)  This dessert base on my previous strawberry cheese panna cotta I made before. I recommend you to make it as well since for me it's my best panna cotta dessert.

This rich and delicious peach cheese panna cotta become an additional new dessert menu on our table now. You just simply vary with your favorite fruits. The cream cheese makes this dessert definitely be a repeatable menu for your family.
