Soup Udang ( Shrimp soup )

Summer of 2010 will be over soon .. Cold north wind start to blows made the air become colder and as usual, cold makes my stomach is always hungry @(^_^)@  ..eager to eat flavorful seafood meal, spicy and hot ... and this Shrimp soup seems right choice ..


Ingredients:



  •  1 kg of fresh shrimp. Wash and clean the skin. (Head of the shrimp should not be discarded, can be used for soup stock)
  •  300 g fillet of fish (carp or salmon). cut into cubes.
  •  500 g Mushroom. cut into wedges.
  •  2 pieces lemongrass. Hit and softened the stalks and cut into three  parts.
  •  5 kaffir leaves
  •  1/2 cup cayenne small red pepper (or to taste). softened by hit.
  •  1 / 2 tablespoons fish sauce (oyster sauce)
  •  Sugar and salt to taste.
  •  1 1 / 2 liter of hot water.
  •  1 medium lemon, squeezed. (If you want more sour taste, can be added more)
Spice make puree:
- 3 candle nut
- 4 large red chilies
- 5 cloves garlic
- A little shrimp paste 

If you want a little hot spicy, you can also add cayenne pepper 5 pieces or more

->Ground all spices and sauteed until fragrant.


How to make:
1) Boil water and put shrimp heads to make the broth. Let it boil for some time and drain the shrimp heads.
2) Place the lemongrass and kaffir leaves. Let boil a few moments. and add chili.
3) Add fish fillets, mushrooms and shrimp.
4) Put sauteed spice, fish sauce (oyster sauce), salt and sugar according to taste. Cook over medium-low heat.
5) Finally add the lemon juice and taste it.

Serve hot with warm rice.

Musim panas 2010 akan segera berlalu.. cuaca mendung diselingi hujan membuat udara menjadi dingin...Ditambah dengan angin utara yang mulai bertiup dingin.. komplit sudah semuanya mendukung perut selalu lapar (^_^) ... Rindu makanan yang berkuah, pedas dan beraroma seafood ... nyam-nyam...


Bahan-bahan:
- 1 kg udang segar. Cuci dan bersihkan kulitnya. (Kepala udang jangan dibuang, bisa digunakan untuk kaldu soup)
- 300 gr fillet ikan (gurame atau salmon). potong kubus.
- 500 gr Jamur. potong-potong.
- 2 buah sereh. geprak tangkainya dan potong 3 bagian.
- 5 lembar daun jeruk nipis
- 1/2 gelas cabe kecil (atau sesuai selera). geprak ujungnya
- 1/2 sdm kecap ikan (saus tiram)
- gula dan garam secukupnya.
- 1 1/2 lt air panas.
- 1 buah jeruk nipis ukuran medium, peras . (jika ingin lebih rasa asam, bisa ditambahkan)


Bumbu dihaluskan:
- 3 buah kemiri
- 4 buah cabe merah besar
- 5 siung bawang putih
- sedikit terasi 
Jika ingin pedas bisa ditambah cabe rawit beberapa buah (saya gunakan 5 buah)


->Bumbu halus kemudian ditumis hingga harum.


Cara membuatnya:
1) Didihkan air dan masukkan kepala udang untuk membuat kaldu. Biarkan mendidih beberapa lama dan tiriskan kepala udang.
2) Masukkan sereh dan daun jeruk. Biarkan mendidih beberapa saat. lalu masukkan cabe rawit.
3) Tambahkan fillet ikan, jamur dan udang.
4) Masukkan bumbu yang sudah ditumis, kecap ikan (saus tiram), garam dan gula sesuai selera. Masak dengan api kecil-medium. 
5) Terakhir tambahkan perasan jeruk lemon dan cicipi rasanya.


Hidangkan panas dengan nasi hangat.
