The Eid el Fitr will come soon... After fasting one full month, Muslims around the world will celebrate the Eid-el Fitr holiday. 
Different from Turkey, Indonesian bake many kinds of cookies instead of Baklava. Cookie jars arrange on the table waiting for family, friends, relatives, and neighbors to come. 

But this year would be sadly different 😢
There won't be a family gathering due to the worldwide pandemic COVID-19. Gathering or meeting restrictions made to cut the spread of the virus.

Generally, the case in Turkey per 21 May showed positive grafik. The case getting low and lower daily. Per May, Turkey confirmed a total of 149,435 coronavirus cases as of Sunday. 109,962 of them have fully recovered while the death toll stands at 4,140.

Turkey has been one of the countries detecting COVID-19 cases the most rapidly and it took an important step by starting treatment at an early stage, the nation’s health minister told Monday the World Health Assembly (WHA).

"It is among the best-performing countries in terms of mortality rate and burden on the health care system. Thanks to the measures taken, Turkey was able to delay the arrival of the virus for three months and used this time to prepare its hospitals and health care system for the outbreak," Fahrettin Koca said.

He noted that the occupancy rate in Turkey's hospitals is still below 40% and below 60% in intensive care units.

"Turkey is one of the few countries providing all services to its citizens free of charge under universal health coverage. We are always ready to exchange knowledge and experiences," said the minister.--

So, I am trying to cheer up the days and upcoming Bayram holiday by keep bringing the holiday atmosphere to our house. Cook and bake as I was cooking for the Eid-el Fitr holiday for my family at home. Clean up and decorate our house as if many guests will come 😃
But since nobody will come I bake a small batch only. Just enough for us for this holiday.

So today I will share another cookie recipe. It's a very easy and failproof recipe. You can ask your kids to make this cookie, I am sure they will be happy to do it 👦👧

CHUI KAO SO Cookies. Easy and fail-proof recipe.

Ingredients :
🍪 500 gr all-purpose flour
🍪 160 gr caster sugar
🍪 ½ teaspoon baking powder
🍪 ½ teaspoon fine salt
🍪 2 teaspoons vanilla powder
🍪 170 gr of vegetable/cooking oil
🍪 2 egg yolks
🍪 100 gr of butter, room temperature

Dissolve and set aside:
🍪 4 tablespoons water
🍪 1 teaspoon baking soda

For topping:
🍪 2 egg yolks
🍪 2 tablespoons cooking oil
🍪 White + black sesame for sprinkling

How to make :

1. Prepare a baking tray lined with parchment paper and preheat the oven to 170℃

2. Dissolve 1 teaspoon baking soda in 4 tablespoons of water, stir until dissolved and set aside, some baking soda might not dissolve all but it's okay.

3. Mix dry ingredients; flour, caster sugar, baking powder, fine salt, vanilla powder. Make a well in the middle and add oil, butter, and egg yolks, stir well and knead until evenly mixed see pict #2. The dough may look crumble.

4. Then slowly add the baking soda mixture. Add a spoonful at a time while continuing to knead until the dough starts to come together. You may not use all the baking soda liquid, stop until you have a shapeable dough. See picture #3

5. Take a little dough (about half a tablespoon), shape it like a small ball then lightly flatten it with your palm. Do it to the remaining dough. Arrange over a prepared baking tray. Brush with egg yolk + oil mixture and sprinkle sesame seeds. See picture #5 and #6

6. Bake in preheated oven about 20 minutes or until golden. 
Note: Time and temperature are just guidance, adjust the temperature, and baking time according to your oven condition.

Biasanya minggu-minggu akhir Ramadan gini seisi rumah udah mulai sibuk bebikinan untuk menyambut lebaran kan... Aneka #kuekeringlebaran pasti udah ngantri dibikin ya. Atau bahkan udah mulai abis separuh toples karena dicomoti anggota keluarga? 😤
Gak usah emosi ya Moms... bikin lagi aja 😊

Omong-omong kue kering, udah pernah coba kukis yang sempat ngehits sejagat instagram belom? Chui Kao So.. pasti udah pada tahu kan. Ternyata memang repeatable ya. Walau gak gak lebaran saya udah sering bikin kukis ini lho... buat isi toples dan teman ngemil sore 😊

Resep cookies yang enak ini saya sadur dari ig nya mbk Riyas Irmadona dengan modifikasi. Mungkin karena jenis tepung dan kandungan airnya yang berbeda, pertama kali saya coba resep yg persis, hasil adonannya sangat berminyak dan tidak bisa dibentuk. Pas ditambahi air soda..bukannya menggumpal malah lembek tak bisa dibentuk.
Lalu saya coba tambahi tepung, sedikit nambah gula dan modifikasi minyak-saya pakai gram. Hasilnya adonannya pas dan enak sekali ketika dimakan. Akhirnya resep ini yang "repeatable" saya buat di rumah.
Bener-bener "repeatable" lho kukisnya.. sampai hari ini saya udah bikin berkali-kali. Karena tiap kali bikin 1 resep selalu habis 1 jam setelah bikin, akhirnya tiap bikin saya doble dari resep awal.

Bahan :
🍪 500 gr terigu serba guna
🍪 160 gr gula pasir halus (gula kastor)

🍪 1/2 sdt baking powder
🍪 1/2 sdt garam halus
🍪 2 sdt vanilla bubuk (resep asli tdk pakai)
🍪 170 gr minyak sayur/goreng
🍪 2 kuning telur
🍪 100 gr mentega, suhu ruang

Larutkan dan sisihkan:
🍪 4 sdm air
🍪 1 sdt baking soda

Untuk olesan:
🍪 2 kuning telur
🍪 2 sdm minyak goreng
🍪 Wijen putih + hitam utk taburan

Cara buat :

1. Siapkan loyang dan panaskan oven suhu 170-175℃

2. Larutkan 1 sdt baking soda ke dlm 4 sdm air, aduk hingga larut dan sisihkan.

3. Campur bahan kering; terigu, gula kastor, baking powder, garam halus, vanili bubuk.

4. Masukkan minyak, mentega dan kuning telur, aduk rata dan uleni hingga tercampur rata.

5. Lalu masukkan larutan baking soda sesendok demi sesendok sambil terus diuleni sampai adonan bisa dipulung. Larutan soda mungkin tidak terpakai semuanya, jangan dituang sekaligus semuanya.

6. Ambil sedikit adonan, bentuk bulat lalu pipihkan dengan telapak tangan. Lakukan hingga adonan habis. Olesi dengan campuran kuning telur+minyak dan taburi wijen

7. Panggang kurleb 20 menit dengan suhu 170-175 derajat℃ atau sampai golden. Waktu dan suhu sesuaikan dengan oven masing-masing ya.
Diamkan sampai suhu ruang (uap panas hilang) baru disimpan dalam toples.
