#Homemade Apricot Jam with spice aroma

Summer peak.
Love anything İ find in my local market.
Fruits or vegetables. İ just love summer! 
And look what İ found today... apricot.. many apricot. We enjoy them simply fresh as it is also it's perfectly yummy as jam.

Since apricot is in peak season now... we can get them so cheap and they are so perfectly ripe, that's what İ am looking for perfect yummy apricot jam.

Different from apricot jam İ usual make, today İ will share my homemade apricot jam with Spice. 
The spice gives mild aroma to the jam which is wonderful.
İ love it!

But if you want to skip the spice, you free to go. Just add lemon juice and zet in it and you'll have yummy homemade apricot jam!

İ am making this pineapple jam for filling my Eid cookies- as our tradition- İndonesian Nastar or pineapple tart cookies. Those are only a few, besides pineapple jam filling you can also vary with cheese filling, chocolate or homemade apple jam filling. Please do check my "COOKİES" category and find my 60+ cookies collection.




This homemade thick pineapple jam is made for cookie filling, if you want to use it as spread you can make it slightly runny.

HOMEMADE BROWN SUGAR, make from just 2 ingredients.

Brown sugar is a sucrose sugar product with a distinctive brown color due to the presence of molasses. Brown sugar is often produced by adding sugarcane molasses to completely refined white sugar crystals to more carefully control the ratio of molasses to sugar crystals and to reduce manufacturing costs.
In general, the lighter the brown sugar, the more delicate the flavor. Very dark or old-fashioned brown sugar has a more intense molasses flavor.

And do you know that you can make this brown sugar at home.. as easy as flip your palm.. and quicker than you go to market! 😏

MY TURKISH SPICE MIX ( BAHARAT KARIŞIMI )

In general, Turkish food varies from region to region. Every region has it’s own characteristic soil and climate. Therefore, all the different varieties of products that are grown in every region effect the food culture within each region.


The cooking of Istanbul, Bursa, Izmir, and rest of the Aegean region inherits many elements of Ottoman court cuisine, with a lighter use of spices, a preference for rice over bulgur, koftes and a wider availability of vegetable stews, eggplant, stuffed dolmas and fish. The cuisine of the Black Sea Region uses fish extensively, especially the Black Sea anchovy (hamsi) and includes maize dishes. The cuisine of the southeast (e.g. Urfa, Gaziantep, and Adana) is famous for its variety of kebabs, mezes and dough-based desserts such as baklava, şöbiyet, kadayıf, and künefe.

Beside kecap manis/ sweet soy sauce and spicy chili sauce, teriyaki sauce is the staple sauce in my pantry. Those sauces I can use for almost any cook at any emergency time.

Anytime I back home visiting my family in Indonesia I usually bring some local product of teriyaki sauce and some other sauce. As Indonesian and Asian I have already gotten used to that local product name "saori". I think it's a local product with a Japanese license.

Of course, here there is some imported product as well and I already tested and compare some other teriyaki sauce with "saori" but still, I prefer my own teriyaki sauce taste.

And after some experiments tried to copy the taste of my fave teriyaki sauce so here is my recipe base on my preferred taste and as close as possible to that brand.

Assalamu'alaikum... Merhaba dari Turkey

Kali ini saya akan bagikan cara membuat tape ketan hitam. Saya suka sekali tape ketan hitam ini ~ selain tape singkong tentunya. Tapi sayang sekali tidak ada singkong di Turki jadi gak bisa bikin tape singkong.

Saya selalu bikin tape ketan hitam ini tiap 6 bulan sekali pas mendekati musim panas, sebab suka banget dibikin es tape ketan a la es doger. Atau bikin pas bulan Ramadhan untuk saya bikin madumongso...tahu kan madumongso?? itu lho..semacam jenang yang dibungkus macam permen... jajanan jadul khas embah saya dulu. Insyaalloh bikin madumongso juga ntar saya posying juga.

Tapi hari ini saya postingkan cara membuat tape ketan hitam dulu ya. Bikinnya gampang kok, tidak serumit yang kita bayangkan.
Untuk membuat tape katan hitam ini, beras ketannya saya kukus saja, jadi tidak terlalu lembek. Tapi selama proses pengukusan sering-sering dipercik'i air secara merata dan kukus hingga beras ketan hitamnya mengembang hampir dua kali lipat dan lunak tapi tidak lembek.

Membuat susu kental manis sendiri II / Homemade condensed milk II

Making your own condensed milk as not as complicated or difficult as your think. What I am going to share today is simple homemade condensed milk. You just need a pan, full fat milk and sugar, also some time to spend in front of your stove.

This is actually my second recipe of condensed milk. I have another version homemade condensed milk using powdered milk that you can check here.

Nothing fancy ingredients for making this homemade condensed milk, nor complicated method. Just put milk and sugar into a pan-I prefer heavy bottomed and wide pan- and continuously stirring over medium high heat until you get thicker and slightly yellowish yield. Then you may add vanilla essence to give aroma and butter to give more thickened liquid and rich condensed milk.

Adding butter is optional. I made my condensed milk using this recipe many times now. Some batches I added butter while some other batches I didn't use one. Both result are completely fine, but I prefer didn't add butter if I'm going to use my condensed milk for mixing on my drink for example.

Yemeni Spice Hawaij

Did you hear about Hawaij spice before? Hawaij (spelled hawayej) is a Yemeni spices mixtures. There are two type of hawaij, both derived from the Yemenite kitchen: one is meant for soup, the other for black coffee. Spice mixture for soup are also used in stews, rice, vegetarian dishes and as barbecue spices rubbed into the meat. Basically this kind of Hawaij consists of cumin, black pepper, turmeric and cardamom. More intricate versions may also contain cloves, nutmeg, saffron, coriander and dried onions.

The mixture for coffee is made from anise seeds, fennel seeds, ginger and cardamom. Although it is primarily used in brewing coffee, it is also used in desserts, cakes and slow-cooked meat dishes. In Aden, the mixture is made with ginger, cardamom, cloves, and cinnamon for black coffee, and when used for tea excludes the ginger

This spice came to Israel along with immigrants from Yemen, and it is widespread among yemenites in Israel. 

Basically hawaij made by roasting – coriander seeds, cumin seeds, cardamom, cloves, cinnamon, whole black peppercorns  until aromatic and made into a powder. Very few and very basic spices are used for making the dish.

Homemade Pumpkin Pie #Spice Recipe

Spices is part of my culinary life. I am Indonesian with thousand of authentic spices on our foods enrich the flavor. 
We use spices almost in any meals. From herb drink, dessert until our main dish. So I love and enjoy spices in my meals.
We also have few basic spices for our main dish.. like you know Chinese spice or Moroccan spice basic that you can blend in many ways.
Talking about spice, my today post is pumpkin pie spice. It's famed spice blend which mostly people use to make pumpkin pie. The spices definitely enrich the pumpkin and twists it into delicious fave pie. If you search along the net you'll find many variation ratio of it, it really depend on your prefer how your spice will suit you.

Orange Golden Marmalade

This week is citrus season in my place. I can get cheapest price for mostly citrus family in farm market. Don't ask me how many kilos I bought.... I looovvveee orange, lemon, or any citrus. They are best fruits for vit C source and also my best favorite for making dessert.

My husband likes to drink simply fresh orange juice, no more adding sugar or any other sweetener... But I still have big problem with my kid.....aaarrrgghhh.. We keep "fighting" whenever I ask her to finish her juice. So for her sometimes I mix with yoghurt and honey or sometimes I made orange frozen yoghurt.

Since I bought many kilos orange few days ago now I am thinking and open my "orange recipe list" on my computer file.
And this golden marmalade from Annabel Langbein is my 1st choice to use my orange stock.

It's simple and quick to make (unless for soaking time). And the marmalade turns beautifully yummy. I love the exact sweet on this recipe. I only use orange and lemon for this recipe and skip the whisky cause we don't consume any alcohol.

If you have orange and don't have any idea what to do... try this too. Keep in sterilized jar it will stand in your fridge for weeks even months.

Best Homemade Playdough

It's all about Children,

Children... they are in fact who always wiser and more mature than us, the parents.

They are actually who teaching and mentoring us to be a better person everyday.

No matter how bad we are as their parents, they are always be the best children we ever have.....

We owe to them always... Children who everyday become the victim from how bad we control and manage our own emotion.

The children who burnt by residue of our incompetence for trying to be an adult human being.
Actually the children who suffer and endure the consequences of worst days we made day by day...

The children who probably sacrificed their future just because we couldn't contrive our own.

But they are still laughing and giving us so much love.. They always make our life happy and bright.

Cold and mostly cloudy and rainy days.. sunny and warm day outside no longer there accompany our kids playing outside the house. My kid is pretty much active and easy to get bored in something, so outdoor activity is her favorite thing to do. But this mid fall when raining almost everyday make her outdoor activity (mostly in playground) become muddy and wet.. I don't mind the dirty part... but when it follow by illness and flu after it...that makes me try to keep my daughter stay inside for a while.

Homemade pumpkin Puree

Today I'll share my homemade pumpkin puree. Maybe because pumpkin pie or anything using pumpkin puree is not popular dessert/dish here in Turkey, canned pumpkin puree is not something easily to find here. 
So this makes an advantages for me living here, I can learn making anything from scratch. Just like I make my Indonesian food e.g tofu and tempeh and many other more--things I never made before in my life when I was living in my homeland!

So here I am today make my own pumpkin puree. I found pumpkin is in season this fall.... since I live in Turkey I learnt about what fruits, vegetables or fish available on farmer market base on it's season. I made a list here too.

Living in four season country adjust me on some new skills and knowledge.. of course I enjoy it as much as I love living in my own homeland. While something in season here the price is cheap so I learnt to store things in season now and keep in my freezer--but of course with certain long life for consuming.
Just like this pumpkin now. I make them puree and store in my freezer so I have ready use pumpkin puree anytime I need it.

Membuat lontong di magic jar (how to make rice cake in rice cooker)

Ingredients:
  • 2 cups rice, wash and drain
  • 8~10 cups of water (water can be reduced according to how hard rice cake you wanna go)
  • half lemon juice (optional). this helps your rice cake has a longer life time

Things you'll need
  • 1 loaf pan (10x20x7 cm)
  • plastic wrap larger than loaf pan ( I use plastic pouches and cut the sides to open wide)
  • rice cooker.
How to:
  1. Put all ingredients in your rice cooker. Push the "cooking" mode button and let it cook until the button up to "warm" mode. 
  2. Open the lid, with wooden spoon mix the rice inside rice cooker while push the soft rice between back of wooden spatula and rice cooker pan in order to make it almost like a puree. Close the lid and push button to "cooking" mode again. Let it cook until button goes up to "warm" mode.
  3. Do same method like no.2. Repeat 3 times or 4 times.
  4. Cover you loaf pan with plastic wrap, move your puree rice one wooden spoon at a time while press it hard to compress the rice cake and make it solid mass. Cover with plastic wrap and once again press it hard with something flat and let it cool at room temperature. 
  5. The rice cake will harder after keep in fridge few hours. Your rice cake is now ready to eat.

  • 250 gr all purpose flour
  • 50 gr tapioca starch, more for sprinkling
  • 6 gr salt
  • 15 ml cooking oil

Orange Curd Recipe and seasonal Table list for fruits, vegetables and fish


Today I went to traditional market (turkish=pazar). In my neighborhood traditional market open every Wednesday. I had no idea what to buy because you know in Turkey (maybe in other 4 seasons country) people sell and buy what's in season. Me as tropical  person still hardly to adapt my mind on it-even I'm living here for 6 years! 
But for few things I already kept on my mind when it's really season so I can stock them as much as I can..what is that? Chilliiieees..!! Yes, I can not eat without chilly (^,^)
So I knew when chilly season start and when it's becoming very cheap.

Below my post I have a roughly estimate list what is in season. That table list actually for my self to reminder if I need to make/ cook/ baking something.

 And today in pazar I saw many cheap orange. Orange, as grapefruits and quince has peak season on January or February... I don't know if it's good orange or not since it's actually end of it's season..but I bought them anyway one kilo only for 1 TL. Still didn't know to do with those oranges until I saw my lemon curd on fridge. I made lemon curd often cause I love lemon so much and I can find fresh lemon almost everyday.

How to Decorate Anniversary Cake

Maybe this is my last post in 2014 and also 1st post on 2015. Because İ was planning to post this lemon cake decoration for #YKMK challenge #8 for their 1st anniversary.
As İ mentioned in my previous post about this YKMK (Your Kitchen My Kitchen) is a Foodie community based in İndonesian language. 

And this very early 2015, 1st Jan.. they celebrates their 1st anniversary. And for celebrating it they gather an event challenge calls "B'day Cake". Every contestant should present 1 decorated cake--widely range from any cake decorating idea and ingredients e.g fondant, butter cream, ganache, whipped cream, etc... see the rules for joining this event... Hurry.. it's just starting and will end on last January 2015.

Lemon Curd Recipe II


Salam everybody. Merhaba from Turkiye.

My today post is my favorite one.....lemon Curd. Yes, this is my fave for anything. İ use it for jam on my soft bread. İ use as filling on my choux pastry, or my donut. And İ dip my croissant  in it ! Believe me, that so good! ^,^

This lemon curd is also my second recipe beside my other one here. And my today lemon curd İ use recipe from  here... İ think both recipe are great... you can use whatever you want if you will try to make your own lemon curd.

İ love lemon. No question about it cause İ know if you do love lemon too..you know how this shiny yellow fruit can give you many good things. Use it for infused water lemon--Like İ do every morning. Or put inside your hot tea (Love it!). Drink lemon juice with hot water and rock sugar=healthy . And İ love to make them in my cake recipe. Check my previous lemon cake recipe here.

Okay..okay ... you all know many benefits of this yummy sour fruit..now let's make this lemon curd.. try it also and tell me how you like it.

Homemade Egg Noodle and simple fried noodle / membuat mie telur sendiri

Noodle.. in Bahasa Indonesia I call it Mie [read: mee] . Is a long, thin rolled dough and cooked in boiling water. Arabic, Chinese and Italian claimed that they are noodles' inventor, although the oldest written about mie come from the Eastern Han Dynasty, between AD 25 and AD 220. In October 2005, the oldest noodles estimated 4,000 years old was found in Qinghai, China. (source:Wikipedia)

Anyway, regardless of the first inventors of noodles ... let's us make our own egg noodles at home ... this might be the first favorite in your home. And for more how to use (cook) this homemade noodle, I also include one simple fried noodle recipe below. 


Before making favorite noodle recipe you have.. let's make our egg noodle. I have my pasta rolling machine to help me doing rolling and cut the noodles. But don't worry if you don't have one, you can just simply roll the dough with rolling pin and cut the dough with sharp knife. You can see my other homemade egg noodle post without pasta rolling machine here.

Easy Strawberry Ice cream (No machine required)

Ramadhan comes in summer this year 2014... Long day for fasting and so hot outside... May Allah gives us more 'pahala' (reward). And I think nothing more comfort and refreshing us after iftar in this Ramadhan than a cup (or more) of strawberry ice cream. I have no ice cream machine at home but it can't stop me to festive our summer days in this holy month.
You can make this also for your family.




Make about 800 ml
Ingredients:
- about 400 gr fresh strawberry ( you can use frozen one too)
- Condensed milk about 1 cup
- Thick cream 1 cup
- Sugar about 4~5 Tbsp (according your taste) -- I used 4 because I add strawberry jam in my ice cream.
- few tsp homemade or store bought strawberry jam (optional)
