Banana is always there in my table or my refrig. It's like a must fruit for every house because it fulls of benefits for our body.
There are hundreds of articles you can read about banana around the internet, magazine, or at the libraries.

A little bit about this humble fruit, bananas are known to reduce swelling, protect against developing Type 2 diabetes, aid in weight loss, strengthen the nervous system, and help with the production of white blood cells, all due to the high level of vitamin B6 that bananas contain.
Eating a banana between meals helps stabilize blood sugar and reduce nausea from morning sickness.
Bananas are high in antioxidants, providing protection from free radicals and chronic diseases.

That is why we should have bananas at home, every day. But sometimes we have an overripe banana on the table and we are not in the mood eating it. It happened to me a lot. Sometimes I froze it then end up making Double Chocolate banana muffin.
Or if you have overripe bananas and you love steamed cake, you should try my Steamed Banana Cake. Or try simple yet delicious snacks like Banana Fritters.

And today I will share my other favorite recipe using this favorite banana; Banana Chiffon Cake from (left-over egg white). So this recipe is a "keeper", especially for you who has much leftover egg white in your refrigerator.

Even make from just egg whites, I assure you this banana chiffon is delicious and full of flavor because banana enriches the taste and flavor on this spongy cotton soft cake. This cake also perfect for our tea/ coffee time, it soft and will not make you full because it is very light in texture.

Just like other European countries, bread is a staple for Turkish. Turkish people eat bread (turkçe: ekmek) start from breakfast to dinner. Bread is of such importance in Turkey that even to throw bread is an insult. No bread should ever go to waste

We eat bread with a slice of white cheese, dip it into olive oil for breakfast, spread with jam or tomato paste (salça). Eat with Turkish sucuk (dry spicy sausage) and eggs or just simply dip into a creamy soup.

Bread in Turkish culture varies according to the region, the way it is cooked, and its ingredients. Dor an example; Trabzon bread, one of the famous bread from Black Sea region. It differs from other bread it has long making process. 

There is also "bazlama" which is famous from Ankara. It's a single-layered, flat, circular, and leavened bread with a creamy yellow color, found in Turkey. It has an average thickness of 2 cm and diameters ranging from 10 to 25 cm, cook over pan instead of baking in the oven.
I will share this "bazlama" bread next time.

Gömeç ekmek (gömeç bread) also call "breakfast break (kahvaltı ekmeği), a specialty from Konya Province. It's a flatbread similar to ramazan pide (but different). Traditionally made by a group of women and bake in the public stone oven similar to the tandoori oven.

Pineapple tarts cookies are one of Indonesian traditional (and some neighboring countries) cookies that are commonly made and served during religious holidays such as Eid-el Fitr or Christmas along with many other traditional cookies like; kaastengelsputri saljupastel miniButter cokies or simple chocolate cookies and more.
In Indonesia it is called nastar which is the contraction of nanas tart (Ananas or pineapple tart).

Most of nastar in Indonesia have a round shape with a diameter of about 2 centimeters. The pineapple jam is filled inside instead of spread on top. The cookie is often decorated with small pieces of cloves or raisins on top of it.


We are never bored of it because we can vary it as much as we can. Just check my COOKİES CATEGORY to see my "nastar" variations. You can make many variations base on shape and filling. Adding some cheese into the dough definitely enriches the taste of this classic Indonesian cookies. 💙

The Eid el Fitr will come soon... After fasting one full month, Muslims around the world will celebrate the Eid-el Fitr holiday. 
Different from Turkey, Indonesian bake many kinds of cookies instead of Baklava. Cookie jars arrange on the table waiting for family, friends, relatives, and neighbors to come. 

But this year would be sadly different 😢
There won't be a family gathering due to the worldwide pandemic COVID-19. Gathering or meeting restrictions made to cut the spread of the virus.

Generally, the case in Turkey per 21 May showed positive grafik. The case getting low and lower daily. Per May, Turkey confirmed a total of 149,435 coronavirus cases as of Sunday. 109,962 of them have fully recovered while the death toll stands at 4,140.

Turkey has been one of the countries detecting COVID-19 cases the most rapidly and it took an important step by starting treatment at an early stage, the nation’s health minister told Monday the World Health Assembly (WHA).

"It is among the best-performing countries in terms of mortality rate and burden on the health care system. Thanks to the measures taken, Turkey was able to delay the arrival of the virus for three months and used this time to prepare its hospitals and health care system for the outbreak," Fahrettin Koca said.

He noted that the occupancy rate in Turkey's hospitals is still below 40% and below 60% in intensive care units.

"Turkey is one of the few countries providing all services to its citizens free of charge under universal health coverage. We are always ready to exchange knowledge and experiences," said the minister.--

So, I am trying to cheer up the days and upcoming Bayram holiday by keep bringing the holiday atmosphere to our house. Cook and bake as I was cooking for the Eid-el Fitr holiday for my family at home. Clean up and decorate our house as if many guests will come 😃
But since nobody will come I bake a small batch only. Just enough for us for this holiday.

Turkish (flat bread) Ramadan Pide with #poolish method / Ramazan Pidesi (poolish ön mayası) | Çitra's Home Diary

Ramadan pide, is one of the Ramadan staples here in Turkey. It's a traditional soft-leavened Turkish bread. Round or oval and rather flat in form, and having a weave-like patterned crust, Ramazan pidesi is made of wheat flour with yeast and topped with egg glaze and sesame and or nigella sativa seeds.
It is traditionally served for the iftar and sahur meals during the holy month of Ramadan.


With Ramadan starting, everyone is waiting for the moment they get a hot Ramadan pide for iftar (fast-breaking meal) and put butter on it or dip into a hot soup (çorba). Enjoying the enchanting smell before eating the whole piece in a second. 

And seeing a long queue in front of fırın/ public bakery before iftar time to get this delicious flatbread fresh from the oven is a common view. But since the COVID-19 pandemic, people hesitate to go out and no crowd being allowed.
Most public bakery already produces this pide bread before 6 PM and are already wrapped up waiting for people to buy or they will distribute to the neighborhood. 


Baking bread at home has also become more popular these days. During the pandemic, people tend to cook or make anything at home including baking bread.
But for me, baking bread it's not about a trend. I love baking my own bread cause my husband loves to eat homemade bread.

We are enjoying the month Ramadan in Muslim world right now. So, we are cooking and baking Ramadan recipes at home. For Turkish, the dinner table (iftar safrası) in Ramadan should always be special. More special than the daily table.

We start the iftar dinner with hurma (date) as our sunnah. Then soup ( turkçe; çorba) as our appetizer. Then we will have an entreé complete with salad as a side dish. Then dessert (tatlı) is served most probably a few minutes after iftar (break the fast) together with tea time sometimes.



Since we had our iftar (break the fasting) full flavors, we serve them in small portions or as a personal preference. And we want our dessert is light.
Just like what I am going to share today. It's a light, creamy yet delish Turkish milk pudding called süt helvası. Süt in Turkish means milk. Helvası from the word "helva" means halvah or sweet/ dessert. This dessert is famous from Bursa, the city I!m living in now.
This dessert is one of a repeatable menu in my house, I made this many times since it's my husband's fave. You can check my previous Süt Helvası here.

Kue is an Indonesian bite-sized snack or dessert food. Kue is a fairly broad term in Indonesian to describe a wide variety of snacks; cakes, cookies, fritters, pies, scones, and patisserie. Kue is made from a variety of ingredients in various forms, some are steamed, fried, or baked. Kue are popular snacks in Indonesia, which has the largest variety of kue.

Pukis is made from yeast mixture, egg, sugar, flour, and coconut milk. The mixture then poured into a half-moon mold and baked over a fire stove (not an oven). The traditional way, it's cooked over charcoal.
