Dutch Bitterballen recipe



Do you know that the Netherlands has occupied and ruled Indonesia in the past? During that time a lot of  Dutch influence almost everything including Indonesian food. And the other way around,  Indonesian taste also affected some Dutch foods - even up to this day. Several examples of classic Indonesian food which affected by Netherlands taste are: Kaastengels, Kroketten, Poffertjes, klaperrtaart, Spekkoek, Ontbijtkoek, Bruine soep, bifstuk, Fracadel (now popular as "perkedel" in Indonesia), Oliebollen, etc. 
Bitterballen which I make now and some other more. Those food are everybody's favorite till now.


Some I already posted here, and I try to make some other too.. ..I believe you will love them.

Bitterballen is small round-- meatball look-alike, coated with bread crumb and deep-fried in hot oil. Better serve it warm with mustard sauce or mix mayonnaise and tomato ketchup/ chilly.

Tumis Kacang Panjang (stir fried chinese long bean)



Another kind of Indonesian side dish. We usually serve it over warm steamed rice and "sambal" (ground hot chilly) company with other side dish like chicken/ meat or fried tofu/ tempe (fermented soy bean).

Ingredients:
 ± 300 g chinese long green beans, trim approximately 7 cm, washed
 ± 100 gr shrimp, discard head and tail, veined
 1 medium onion or 4 cloves small red onion, thinly sliced
 3 cloves garlic, smash and finely chopped
 1 medium tomato, thinly sliced
 2 ~ 3 long red chillies, thinly sliced
 1 bay leaves
 2 cm galangal, lightly smash.
 Sweet soy sauce 3 ~ 5 tablespoons (I use 5 tablespoon)
 Salt to taste
 enough Cooking oil for sauteing


How to cook:
Heat oil in a skillet, saute garlic and onion until fragrant and transparent, put tomatoes, chilly sliced, bay leaves and galangal, saute for few minutes. Mix in shrimp, stir-fry until shrimp change color, then put in long beans, soy sauce and salt. Pour enough water (about 1 glass) and cook until fresh long bean turn a bit soft and the water dried. 

I like my long bean stir-fry slightly crunchy.


Serve warm as a side dish with rice.

Cooking OKRA

I like vegetable, any kind of vegetables. Mostly I eat them raw and as salad.
 Talking about favorite vegetable, Okra is in season now days. We can find them everywhere in cheap price. 
If you like this Okra too just follow my tips: find fresh okra with firm (not soft) pod, it's good one. 
Then try my okra recipe for good menu on your dinner table (^,^).
Ingredients:
 ± 300 g okra pods
 ± 100 g beef, sliced ​​lengthwise (can be skipped if you want vegetarian version)
 1 medium onion, finely chopped
 2 ~ 3 cloves garlic, smashed and finely chopped
 1 medium tomato, peeled and finely chopped
 1 teaspoon ground red pepper / chilli powder
 2 ~ 3 tablespoons lemon juice of ½ medium lemon
 ½ tsp sugar
 2 tsp salt or to taste
 ¾~1 cup hot water (or broth)
 Enough Corn/ canola oil for sauteing

method:
1) Leave the okra whole without cut. If you cut them the mucilage will be out from them and make it slime. Wash the okra with salt water and rinse with clean water. Drain.
2) Heat enough cooking oil in a pan, saute the meat until cooked and tender. Stir in onion and garlic, saute until fragrant and transparent. Combine tomatoes and paprika powder, mix well. Mix in okra, sugar and salt, stir well.
3) Pour with ¾~1 cup water (broth) and lemon juice, stir and continue cooking over medium heat about 20 minutes or until okra is rather soft.

Serve warm.

Beef Saute in Pita Bread

I made Pita bread yesterday. And for filling I make beef saute with cumin for our iftar (breaking fast) menu today. Hubby said, why don't you try to make meatball for the filling next time?
Eh, why not.. ^,^  But I make this beef saute because inspired by döner kebab that he like so much. I slice the meat in very thin and wide, so it's döner look like (*_*), with strong cumin flavor which I like.. I'll bet You will get great menu for your lunch or dinner with this pita bread...
served 4~6

Ingredients for beef saute and how to make:
• ± 350 g beef, thinly widely sliced ​.
• 2 medium onions, finely sliced ​​half-ring shape
• 2 cloves garlic, crushed & finely chopped
• 1 medium size tomato, cut into small squares
• 2 carliston pepper, seeded, sliced ​​lengthwise
• ½ teaspoon pepper powder
• ½ tsp all spice powder
• 1 
½teaspoon ground cumin
• ⅛ teaspoon ground cinnamon
• 2 tsp salt or to taste
 
• Small amount of sugar
• Enough cooking oil for sauteing


Making beef saute:
Heat oil in a skillet, cook beef until tender--If necessary add small amount of water and cook until water dried again. Stir in onion and garlic, saute until fragrant and wilted. Combine tomatoes and carliston biber, continue stir frying until wilted. Put all other spices, check the taste. Remove from fire.
Other ingredients:
• 4 pieces of Pita bread (you can see recipe here), halved each
• Sliced ​​onions
• Sliced ​​tomatoes
• Lettuce
• Chili flakes for sprinkle on top


How to serve:
Arrange the salad inside slice of pita bread, give beef saute and sprinkle with chili powder/ flake if you like.
Serve warm immediately.

Ote-Ote / Koheci/ Weci/ Bakwan sayur / Indonesian Vegetable fritter





It's one of traditional Indonesian snack-favorite one. In some places people also eat them as side dish accompanying their main dish. Some areas have different name for it, some call it "Ote-ote" while other area call it "koheci" or "weci" or mostly people call it Bakwan sayur.
Content of mostly vegetables with flour to make thickened, some area put shrimp in it. But generally it's fried vegetables. Serve it warm is always better way to enjoy it, with sambal petis (dark shrimp paste sauce) and birdeye chilly


Ingredients:
• 1 cup fresh shrimp, discard tail and head
• 1 cup bean sprouts
• 1 cup julienn cut cabbage
• 1 cup 
roughly shaved carrot / cut into matchsticks
• 1 cup celery leaves chopped
• 1 ½ cup flour

• 1 small egg, beaten 
• Enough water 
• Enough Cooking oil for frying


Puree/ ground these spices:
• ½ medium onion (or 4 small red onions)
• 3 cloves garlic
• 1 ½ tsp peppercorn
• 1 tablespoon granulated sugar (or to taste)
• Salt and sugar to taste



How to make:
1) mashed/ puree: onion, garlic, pepper, salt and sugar. Puree also shrimp heads and tails into it.
2) In a large bowl, combine all vegetables, flour, baking powder, ground spices, shrimps and eggs. Give enough water slowly~just enough for wet the flour and all ingredients (not too watery). Stir it all until blended, sample a taste, give the broth flavoring if desired.
3) Heat oil over medium heat, fry the dough a spoonful after spoonful. Fry until pink and cooked through.


Note: if you want to have round shape like mine, heat serving soup spoon into hot oil, make sure the ladle is really hot (if not, the dough will be sticky on it). Then put the dough onto hot ladle, place shrimp on top and dip into the hot oil until the dough is separated by it self from the ladle.

Serve warm with chili sauce or birdeye chillies.

Stuffed Chicken Wings... and I'm back ! ^,^

 It's been for a while I've been absence.. I had some administrative things to do. I'd been to Ankara for few days. Beside went to my embassy, I met some other Indonesian friends there... lovely time. After from Ankara, I went to some other places too... hhh... thanks God, everything are finish now...

Well... after some time didn't write any post... today I started with one of my favorite.. I'm sure it will be your fave too after you try it ^,^

I love chicken, especially wing part.. I don't know why, I think it more crispy than other part, don't you think so? @(^,^)@
If you are boring just fried them, why don't you try this stuffed recipe or your chicken wing..

What you Need:
 10 clean chicken wings. Discard the bones inside the wings, coat with 2 tablespoons lemon juice and a pinch of salt, let stand minimum 30 minutes.
 ½ portion of boneless chicken breasts, minced. (Or you can use 300 gr minced beef)
 200 gr shrimp, discard head and tail, minced.
 2 large carrots, finely shaved.
 1 egg, lightly beaten.
 2 tsp oyster sauce
 1 teaspoon ground ginger
 3 cloves garlic, finely grated.
 Sugar, salt and black pepper powder to taste.
Other Ingredients for coating:
 2 eggs, beaten
 Bread crumb flour/ panko flour
 Cooking oil.

method:
1) In a bowl, mix together, minced chicken, shrimp, carrots, eggs and all seasonings,taste the flavor. Put the stuffing mixture into pipping bag and fill prepared chicken wings with it. Steam for 30 minutes. Allow up to room temperature before coating them.
2) Dip wings  into beaten egg, coat with panko flour, dip in beaten egg and coat with panko flour again. Do same to all wings. Heat oil in deep skillet, fry wings just until golden brown. Drain.
Serve warm with chili sauce and your favorite salad.

This is one of my favorite Indonesian Snack. I remember I always have it during my afternoon tea at office, sometime with other traditional Indonesian snack like "lemper ayam" (spicy Chicken shredded between sticky glutinous rice)  and "bitterballen", and other traditional Indonesian snack.

Ingredients and How to make:
  • 4 large potatoes or 5 medium sizes. Steamed and peeled, mash while it's hot
  • 2 tablespoons milk powder 
  • 2 medium-size carrots. Cut into very small cubes. 
  • 1 piece (about 200 gr) of chicken breast, boiled and cut into small cubes or shredded 
  • ± 10 stalks celery, chose leaves only. finely chopped. 
  • ¾ cup whole milk 
  • 4 tablespoons flour. 
  • 3 cloves garlic, crushed and finely chopped. 
  • 4 red shallots, finely sliced (or 1 medium onion)
  • Salt, ground nutmeg, pepper powder and sugar to taste. 
  • 1 tablespoon butter for sauteing.

Sigara börek.. (Fried Pastry with feta cheese)

This Fried Pastry, I guarantee you'll gonna love it ! It's easy and quick to make, light meal in any occasion. With hot tea or coffee as side dish I think you will have great time with it.

Ingredients and how to make:
 Several sheets of phyllo dough.
 Crumble Feta cheese.
 Dill or parsley, finely chopped.
 Enough Oil for frying.

Mix feta cheese with chopped dill or celery. If you use plain feta cheese, you can add salt if you like. Set aside.
Prepare the phyllo dough, cut lengthwise (about 10 x 15 cm). If you use round shape phyllo dough (like I did) you can cut it like the illustration below. Cut phyllo dough right in the middle into 2half-circle, then cut into 8 pieces.

Take one sheet of phylo pieces, place feta cheese mixture on the edge of phyllo (wider side-if you use round shape one), fold and roll it to form cigarette like. Heat enough oil, fry till golden red. Serve warm as snack complementary tea or coffee. You Can also serve them as your breakfast menu.

Lumpia sayuran dengan saus celupannya (vegetable springroll a la Indonesia with the dipping sauce)

Lumpia are pastries of Chinese origin similar to fresh popiah or fried spring rolls popular in Indonesia and the Philippines. The term lumpiaderives from Hokkien lunpia (traditional Chinese潤餅pinyinrùnbǐngPe̍h-ōe-jī: jūn-piáⁿ, lūn-piáⁿ), which is an alternate term for "popiah". The recipe, both fried and fresh versions, was brought by the Chinese immigrants from the Fujian province of China to Southeast Asia and became popular where they settled in Indonesia and the Philippines.
In the Netherlands and Flanders, it is spelled loempia which is the old Indonesian spelling for lumpia and has also become the generic name for "spring roll" in Dutch. A variant is the Vietnamese lumpia, wrapped in a thinner piece of pastry, in a size close to a spring roll though, the wrapping closes the ends off completely, which is typical for lumpia.

In my homeland, famous Lumpia mostly from Semarang (it's one city in central Java), so we call it Lumpia Semarang. Originally we stuffed it with young bamboo shoot (we call it "bung")  together with other vegetables. But since in Turkey I can not find young Bamboo shoot, I replace it with jerusalem artichoke... Nice though, using exactly same seasonings as the original Lumpia in my homeland, this Lumpia has satisfied my craving about my Indonesian food..

My Super Crispy Fried Chicken

This one absolutely my favorite since I was a kid. But my mom can not made them so crispy like we ate at franchise restaurant. We usually eat it with hot white steam rice and hot chili sauce. 
When I marry my husband I tried to vary the ingredients and method to make my mom's crispy fried chicken become MORE crispy @(^_^)@ .. *sorry Mom, you still the best in some other traditional Indonesia food :p 
And now... Voallaaa.... hubby likes it ssoo much! We eat it with fried potato sometime or steamed white rice or mashed potato and salad as side dish.... it's ssooo Yummy!
 and now this crispy fried chicken recipe become my recipe from now on. Hubby put the "brand" CFC or CITRA FRIED CHICKEN ... hehehehehe...


Ingredients:
  • 6 pieces of chicken thighs or and (mix) with wings. 
  • 2~3 tsp hot chili powder or sweet chili powder (as you desire)
  • 1 egg, beaten. 
  • 1 cup whole milk 
  • 2 ½ cups flour 
  • 1 teaspoon baking soda 
  • ± 2 tsp garlic powder. 
  • ± 2 tsp salt or to taste plus more for marinate the chicken.
  • ± 1 tsp pepper powder or to taste plus some more for marinate the chicken.

Bidaran Keju (Indonesian fried cheesy snack)

I was looking for something light and salty cheesy snack to accompany my afternoon tea. I don't know, it's like a habit for me, I can not drink tea or coffee without something beside it d(^_^)b ... 
I like something cheesy and salty, like this one. My fave when I was in Indonesia ...

materials:
- 2 cups tapioca flour
- 2 large whole eggs
- 1 cup grated Edam cheese (or cheddar cheese)
- 1 teaspoon salt
- Vegetable oil for frying
Method:
1) In medium bowl, whisk egg and salt. Add tapioca flour and mix well using your clean hand until all tapioca wet. Mix in grated cheese, mix (knead) until incorporated (picture 1).
2) Take small amount of dough (smaller than marbles.) and twist like figure 2.
3) Then put in a cold frying oil. Arrange so they are not overlapping one another-see Figure 3. 
After full one pan, heat that pan over medium fire. Do not stir first before they floats and slightly hard. Fry until golden red. Do same way until all dough finish.
Drain well on paper towel before store them in air tight jar.

Enjoy with your evening tea and coffee.

Onion Rings


What you need:
- 2 ~ 3 large onions. Peel and slice into ring approximately 1.5 cm  thickness, separate each ring.
- 1 egg, beaten.
- 3/4 cup whole milk
- 3/4 cup flour
- 1/4 cup corn meal
- 2 tablespoons cornstarch
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- pinch of salt
- Enough Cooking oil for deep frying


How to make:
1) Whisk together flour, corn meal, cornstarch, salt, baking powder and baking soda. Stir in the egg and gradually milk. Do not pour all milk if you feel the dough is enough thick and not too thin. 
2) Heat enough cooking oil in deep skillet. Take onion and dip into the dough one at the time and fry until crisp and golden brown over medium heat.
3) Drain from remaining oil. Serve immediately with your favorite dipping sauce.

I Fu Mie (read: Ee fu mee) / crispy noodle served with stir fry mix vegetable-Indonesian food



Back when I was a single and lives in Jakarta, this menu almost became a regular dish in every dinner. Each night a lot of non-permanent stall-We call it "Warung Makan" which provides many kinds of Chinese food or seafood on the roadside. After office hours on my way home, I just park my car at the curb and got many favorite menus-without to bother cooking by myself.

But Here .... I've never met a Chinese Restaurant, not yet maybe. So to satisfy my longing for this Chinese food, there is no other way than "a little effort" to make it by myself in my small kitchen. @(^_^)@

Ingredients:
- about 500 gr fresh egg noodles
- about 200 gr boneless chicken. Cut into bite-size.
- about 200 gr shrimp.
- about 100 gr mushrooms. Chop roughly.
- about 1/2 cup green peas.
- about 200 grams of cauliflower, cut roughly.
- 1 large carrot. Cut round.
- 4 ~ 5 cloves of garlic. crushed and finely chopped.
- 1 medium onion, finely chopped.
- Salt and pepper to taste
- about 1 tablespoon oyster sauce
- Cornstarch 1/ 2 tbsp. Dilute with a little water.
- Enough Cooking oil.


How to cook:

1) Heat oil in a deep skillet. Divide noodles into 3 portions. and fry each portion in hot oil until dry and crispy. Drain from remaining oil and set aside.

2) Heat enough oil in a saucepan. Saute garlic and onions until fragrant and transparent, put in chicken and shrimp, stir-fry until chicken is cooked. Add carrots, cauliflower, mushrooms, and peas pour about 2 cups hot water/ chicken broth (enough to make gravy). Cover the pan and let all vegetables cooked.

3) Seasoning with salt, pepper, and oyster sauce. Test the taste. Pour the cornstarch solution and stir until thickened. Remove from heat.
Fry noddle in deep oil until crispy.
How to serve:
Place the noodles in the serving dish and flush with a hot vegetable mix. Serve immediately with pickled as a companion.

Triangle Fried Sausage Pastry (Paçanga Börek)

Crispy and tasty savory pastry is always my favorite. Always suit with my brunch tea or evening coffee. Or any gathering occasion with family and friends. And this fried sausage pastry is now becoming favorite among my friends, neighbors and family. They just love it with hot Turkish tea when they visit. @(^_^)@ 




 I shape this fried pastry with triangle shape, seems pretty and I love it. But if you want to make roll or other shape, it's oke too actually, but triangle shape is just suitable cute for this pastry d(^_^)b
Ingredients and how to make:
- a few sheets of fillo dough. Cut lengthwise about 4 fingers width and 15~20 cm length.
- 250 gr sausage (I use mix beef and chicken sausage). cut into small cubes.
- 2 large green pepper (paprika). Seeded and cut into small cubes.
- 1 large size tomato. Cut into small cubes.
- 2 large size onions. Cut into small cubes.
- 2 ~ 3 cloves garlic. finely grated.
- 4 ~ 5 tablespoons olive oil
- a little salt and pepper to taste.
- Enough Cooking oil for frying.

Resep Ikan Acar Kuning / Indonesian Yellow Pickled Fish recipe

Selam everybody...Merhaba from Turkey...

It's Fish cooked in yellow spicy pickled and It's one of Indonesian traditional food. We usually use fresh water Milkfish (ikan bandeng) to make this meal, since there is not one here I use sea bass fish that I think more or less has similar taste and texture with Milkfish. Cooked in yellow pickle. This dish is one of my favorite during chill days because it taste slightly sour, and fresh, and if you want it a little bit hot spicy, you can add more chillies.

I remember my mom usually made this with "belimbing wuluh" to give natural sour and fresh taste. You cut this "belimbing wuluh" or Averrhoa bilimbi (that it's beautiful name) into small round pieces and cook with all vegetables and fish....hmmm... my mouth watering just remember how sour this "belimbing wuluh".

Serve while it's hot with warm steam white rice, that's we normally eat it.

Here I also share my mom's recipe with step by step picture to give you  illustration how to cook it and you will experience another Indonesian food @(^_^)@


Ingredients needed: 
Serve for 4
- About 700 gr any fish you prefer (or about 2 large size) - better use milkfish. Here I use sea bass. Clean and wash them, cut in half.
- 1-2 large red bell pepper (cabe merah besar)
- 2 medium size cucumber, seeded and roughly julienne cut
- 3 medium size carrots, peel and roughly julienne cut
- some birdeye chilly (to taste) (cabe rawit)
- 3 ~ 4 Indonesian bay leaves (daun salam)
- If you can access to "Belimbing wuluh " or very sour starfruit, you will need about 6 or 7 depending how sour you wanna go. usually I use it in Indonesia. But here I use 2 ~ 3 tbsp lemon juice as substitute.
- 5~8 shallots (bawang merah), halved
- Enough Salt and sugar to taste.

- Enough cooking oil.

Indonesian Beef Stir Fried Noodle (in hot plate)

One of my favorite dish for dinner. I love it more when served on hot plate or if you don't have hot plate, it's really no problem you can serve it at once while it's hot. Add sprinkle of fried red onion and serve with pickle and other fresh salad plus small cayenne pepper if you like.


Ingredients:
- 150 gr beef meat. Diced.
- 200 g egg wet noodle. If you use dried one, cook it in hot water 1st (According to packet direction)
- 1 leek. rough cut.
- Soy sauce/ sweet soy sauce to taste
- Sugar and salt to taste.
- Enough Cooking oil.
Mashed and make puree these spices:
- 2 cloves garlic
- 2 small red onions.- 1 teaspoon pepper seeds.- 1 / 2 teaspoon dried shrimp (or you can use some fresh shrimp)
- 2 pieces of large red cayenne pepper

Ladrang Jagung (Indonesian traditional corn snack)


Indonesia has many kind traditional food and snacks. We make it from various ingredients cause we have maannyy of them.. Before I made "Onde-Onde" ... now allow me to introduce you "Ladrang jagung". It's light snack made from fresh corn. Nowdays, this snack getting rare to find unless we make it homemade.

Ingredients:
- 3 pieces medium fresh corn.  shredded
- 1 ~ 1 1 / 2 cup flour
- 100 gr butter
- 1 egg
- Chili sauce to taste (I use chili paste 1 / 2 tbsp)
- Salt and sugar according to taste.
- Enough cooking oil to fry.

Kids' Party begin with My Mini Chocolate Potato Donuts (Donat kentang coklat mini)

It's (almost) too cute to be eaten....
Just one bite or two for their small cutey mouth :)
So colorful, sweet and so chocolate ! Which kid will refuse ..:))
Ingredients for Potato Doughnuts
Materials:
1 piece large size potatoes, steamed and mashed (about 250 g of potatoes)
500 g high protein flour
1 Package of instant yeast  (1 pack 10 g)
1 / 4 cup granulated sugar
4 egg yolks
50 g unsalted butter. cut into squares.
½ teaspoon salt
50 ml of water (if necessary)
Enough cooking oil to fry.

To garnish / topping:
300 g semisweet cooking chocolate.
Ready to use icing sugar to decorate.

How to make:
1) mix flour, sugar, instant yeast, mix well.
2) To flour mixture, add mashed potato and egg yolks, knead until blended and half smooth.
3) Add the unsalted butter and salt, continue to knead until smooth. Let stand 50 ~ 60 minutes.
4) roll the dough with a rolling pin and cut (formed) according to taste. Let stand another 30 minutes.
5) Fry over medium heat till golden brown. Remove and drain.
6) Garnish with chocolate and icing sugar after cool.

Vegetable Spring roll with sweet chili dipping sauce / Lumpia sayuran

I love vegetables much!.. so I always try to make variation of vegetable dishes in my small kitchen .. Now, made simple and quick one.. spring roll vegetables.. but the taste I think it's not simple :)




Ingredients:
- 2 sheets phyllo dough (or can use spring roll skin 18 ~ 20 pieces)
- 2 cups bean sprouts
- 2 medium carrots. Cut into matchsticks or roughly shredded .
- 1 cup sweet corn.
- 5 ~ 6 pieces of cabbage. Thinly sliced
- 1 medium sized turnip. Cut into matchsticks or roughly shredded.
- 1 medium shallot. Chop roughly.
- 3 cloves garlic, bruised, finely chopped.
- Salt, sugar and pepper to taste
- 1 teaspoon ground ginger.
- 1 tablespoon soy sauce
- Enough Cooking oil for frying
