Resep Risoles isi Jamur / Mushroom Risoles recipe

This is one of Indonesian food, "risoles". We have many kind of "risoles"  depend on it's filling, today I made Risoles with mushrooms filling, different than other but still has real good taste.. let's try.


For skin dough.
- 250 gr AP flour
- 3 tablespoons margarine, melted (can be replaced with vegetable oil 5 tablespoons)
-1 Eggs
- Enough water (
± ¾ cup)
- pinch of 

How to make a skin:
- Beat the egg with fork, add flour, salt, oil/ melted margarine. Add water just until dough can be stirred (I use approximately ¾ cup of water). Whisk with balloon whisk until smooth.
Prepared nonstick fry pan, smears with oil a bit, make pancakes from the dough. Do not get too dry (over cook), remove from heat. Do it until the dough finish. Put a side, cover with kitchen towel.


For filling.
- 250 gr fresh button mushrooms (finely diced)
- 1 medium carrot (optional), cubed
- Milk 1 cup
-1 Tbsp flour, dissolve it with ½ cup water
- Salt, pepper powder to taste

- 2 cloves garlic (finely chopped).
- 1 big onion (finely chopped)

How to make filling:
saute garlic and onion until fragrant, add carrot and mushrooms, stir until water from mushrooms dry up and carrot get soft (add a little water if carrot not yet soft-cook until carrot become soft). Add milk, salt, pepper powder, check the taste-you may add salt or pepper. Then add flour mixture. stir until thickened.

For final touch:
- Enough bread crumbs / panko flour 
- 1 egg beats with 2 table spoon of water

Assembling :

Put filling to the pancake skin . folding (like folding the envelope). Roll in bread crumbs , then dip into beaten egg then roll again in bread crumbs flour. fry in deep pan until golden brown.Really nice served with tomato ketchup or chilly sauce while it's hot.




Bahasa Indonesia

bahan untuk Kulit:
-250 gr Tepung trigu
- 3 sendok makan margarine cair ( bisa diganti dengan minyak sayur 5 sendok makan)
-1 btr telur
- air secukupnya
- garam sedikit (ujung sendok teh).

Cara bikin kulit:
- kocok lepas telur, masukkan tepung trigu sedikit demi sedikit, garam, minyak/ margarine cair. Beri sedikit air hingga adonan agak cair ( saya pakai kurang lebih ¾ gelas air). Aduk hingga kalis menggunakan pengaduk telur
-siapkan wajan teflon, olesi sedikit margarin. bikin dadar dari adonan. Jangan terlalu kering, angkat. Lakukan sampai adonan habis. sisihkan.

Isi:
-200 gr Jamur kancing (cincang dadu)
- 1 buah wortel (jika mau), potong dadu
- susu cair 1 gelas air
-1 sdm tepung trigu garam, mrica,
- 2 siung bawang putih (cincang halus).
- 1 bawang bombay uk besar (cincang halus)

Cara bikin isi:
tumis bawang putih dan bwng bombay hingga harum, masukkan wortel, jamur kancing, aduk hingga air dari jamur habis (jika wortel belum lunak bisa ditambahkan sedikit air hingga wortel lunak). lalu masukkan susu cair, garam, mrica bubuk. Cicipi rasanya. Terakhir masukkan terigu yang sdh dilarutkan dlm air, aduk2 hingga mengental.

untuk sentuhan akhir:
- tepung panir secukupnya untuk lapisan luar
- 1 butir telur, kocok dengan 2 sendok makan, air.

Touching akhir:
masukkan bahan isi ke kulit yang udah dibikin dadar sebelumnya. lipat (seperti melipat amplop). gulingkan di tepung panir, basahi dalam telur dan gulingkan di tepung panir kembali. Goreng dalam minyak yang banyak hingga kuning kecoklatan.
Sangat nikmat disajikan hangat dengan saus tomat atau saus cabe.
