Baking bread became my daily routine since I married 11 years ago. I didn't bake much bread back a long time ago before I married.

One, we (Asians) mostly eat rice and (or) noodles as the main carbohydrate source. 
We have bread as well mostly soft bread and it tastes somehow sweet. And we eat soft bread generally for snacking between the main mealtime or in our breakfast. 

Our bread mostly has various sweet toppings or filling even some use sausage and cheese as filling or topping.

Baking bread is an almost daily routine for me. Any kind of bread, Asian style soft bread until artisan European style bread with chewy texture cause my husband is a bread eater. 
My kid, she enjoys everything. She can enjoy food from my culture as much as she likes Turkish food.
Me as Asian, mostly consume rice or noodle but of course, I can not resist hearty warm delicious soup with warm bread in chill days 😍

And since she started school a few years ago, baking burger bun is become my routine for her lunch box or sometimes for the fathers too.
And just today I want to share also with you since I have documented in pictures this time. This recipe I use for few years already and it works for me and turns into nice beautiful buns just like storebought.

For you who never bake bread or bun before this recipe might be very easy for you to start. Here I make my own burger rings to get nice shape when it bakes but of course it's optional for you. İf you bake your own buns very often this ring pretty much help. You can get it ready at baking store but I prefer make them by my self.

Bread is a staple here at my house. I bake bread almost every day. Any kind of bread. For daily consume I bake no-knead artisan-style bread once in every two days-but if we get guess come over our house I bake more.

You can check my bread category to see my bread recipes.

Local bread here has like other European bread which has crusty exterior and chewy soft inside. Different from Asian style bread which mostly has cotton soft in texture and most probably has a slightly sweet taste.

Including Indonesian people. Bread is not staple for us. Yes sometimes we eat it for breakfast or brunch. But mostly we enjoy bread as snacking or "dessert" that is why our bread has soft in texture and slightly sweet. 
We vary our soft bread start from beef/ chicken floss until jam. Sausage, cheese, chocolate, banana, pineapple, meat, chicken... you mention .. we have all 😊

Simit....is  Turkish style bagel. 
Famous among all Turkish people or people who had visited Turkey. İt's very difficult to turn your head and did not find this- round, chewy inside, cover with sesame- bread. 
You can find it easily in every corner or mobile seller in Istanbul's street or any street all around Turkey.
I can say this bagel is Turkish's signature. Write this on your "must try" list when you plan to visit Turkey 😊

Every kid grew up with this simit. Every adult will miss this simit while they were away from their homeland. People can eat it almost every day, every morning, every afternoon with a glass of hot Turkish tea or cold ayran (Turkish yogurt drink).
This is one of fast-food breakfasts for busy workers or students in hurry to school.

Bread or ekmek we call in Turkish language is a staple of all food in Türkey as well very much important in Turkish culture.  Not just bread, we treat our food with respect. Wasting foods (bread) is disrespectful and günah or sin.

Eat and finish what you take.

Bread is always on our dinner table. Serve morning to evening. Dip in a hot creamy soup, eaten with Turkish köfte (meatball) in between or any meal. Or just simply spread it with salça (homemade tomato paste) for hurry brunch.

You can find a dozen types of ekmek/ bread in market or local fırın (bakery) which always serve fresh and hot bread from a traditional big stone oven. And there is one bread that is specially baked on a special occasion, Ramadhan or Ramazanİt's Ramazan pidesi.


There are many classic dishes that are associated with Ramazan in Turkey. But no other item signifies the breaking of the fast better than a loaf of pide (read; pee-deh).
Ramazan pidesi is round and flat in form and has a weave-like patterned crust shape by fingers.
Ramazan pidesi is made of wheat flour with yeast, rub with egg wash, and topped with sesame and black sesame seed.













It is traditionally served for the iftar and sahur meals during the holy month of Ramadan
is a highlight bread in turkey during Ramadhan month.


Bakeries all over Turkey provide this Ramazan pidesi hot and fresh about an hour or two before iftar time. So you will see a long queue in front of fırın/ bakery before iftar time to get this delicious pide hot from the oven during the month of Ramadhan.

İt's like a decade İ didn't post any bread recipe. Well... actually making homemade bread is part of my (almost) daily cooking as bread is staple in our house. İ bake mostly home style crusty bread for our daily meals.

As Asian İ prefer soft bread or soft buns with very light sweetness and soft crust. İn Indonesian we eat soft buns as breakfast (not everyday though) or accompany our tea/ coffee time. We call our buns "roti manis" means sweet buns.
Indonesia love their "roti manis" with shredded cheddar cheese. The combination of creamy cheese with sweet condensed milk are the most fave among us.


Talking about sweet buns, today İ am going to share one soft and sweet buns calls Buchta. İ found this bread similar to mostly Asian fave so İ eagerly give it a try. 
And İ've been reading a long the web about this yummy bun. Buchta, some call buchta or buchteln or Wuchteln in other place. 
Mostly mention it's Balkan countries origin (Bohemia-Czech). Spread around the neighboring countries like Austria, Hungary, Ukraine and further.

Buchty it's pull-apart style of soft yeast buns. Use many eggs to enrich the buns.  Traditional Buchteln is filled with plum Powidl jam. Buchteln are topped with vanilla sauce, powdered sugar or eaten plain and warm. But sometime it can be served with jam or sweet ground poppy seed.

Lahmacun tarifi / Turkish pizza lahmajoun recipe

LAHMACUN is an item of prepared food originating in the early Turkish cuisine of the Levant, consisting of a round, thin soft piece of dough topped with spicy minced meat (commonly beef and lamb). 
Lahmacun is often served sprinkled with lemon juice and wrapped around vegetables, including pickles, tomatoes, peppers, onions, lettuce, and parsley, cabbage salad or cilantro; a typical variants may be found as wraps for kebab meat or sauces.

It believed originate from South East of Turkey. The main ingredients are ground meat (beef/ lamb/ mutton), tomatoes, paprika, onion, salça and oil. Salça is thick tomato pasta (mostly homemade product) and prepared just before winter come when the tomato season in peak here in Turkey.
There are two kind of salça; damates salça (tomato paste) and biber salça (chili paste mostly made of capia peppers)


But the recipe might vary from each region. And what I want to share today is how commonly people in Bursa make it although some family from other region using a bit different. But still we all use same main ingredients as I mentioned above.


There are two process making this lahmacun, the dough and meat topping. After the dough doubles in volume, divide the dough into 10 to 15 equal parts. If you want a smaller diameter lahmacun divide it into 15. Then roll each part of the dough very thin, verry thin! Then spread evenly with a ground meat topping.

Roti Jala / Malay net pancake recipe

Roti Jala (also known as Roti Kirai or Roti Renjis), literally meaning Net Bread is a pretty dish that looks like a lace doily due to the way it is made.
In Indonesia this dish derived from the North Sumatra. Since geographically it closes to Malaysia so many Malay influence on that province including culture and culinary.



Roti jala usually is served alongside with curry dish/ curry sauce. In Deli  (Deli Serdang Regency) they serve it with famed lamb curry together with pickled pineapple.

According to the humanist M Muhar Omtatok, roti jala or net pancake is Malay food which could have been adapted from Indian element.
Roti jala also found in Riau Islands known as roti kirai.


And that's my friend what I am going to share today on my blog. Yes, Indonesian culinary is very rich and colorful due to we have many ethnic groups (more than 300) living from east to west Indonesian archipelago.
Indonesian cuisine varies greatly by region and has many different influences.

I made this roti jala to serve with my chicken curry, you can check my recipe here. But sometime I eat roti jala with different dipping sauce. Make slightly sweet version to go with your fruits jam or chocolate sauce, that's another ideas to enjoy roti jala.

Same as bread, pide is a staple dish in Turkey. People eat pide anytime, anywhere.  Pide is a Turkish pizza look a like-with Turkish flair. It has a chewy texture rather than 'bread-y'.

With typical distinctive charcoal aroma from traditional stone oven pide easily can be found in every corner in Turkey. The topping and filling can be vary in each regions.

If you are my regular reader you should already know very well that I made and post many pide recipes. Because as I mentioned earlier this famed Turkish dish is a staple and daily meal here. I like pide especially with meat topping. I made pide at least once in week for our dinner or lunch.

Generally we eat pide with simple salad like mix of lettuce, tomatoes, green onion, olive or other vegetables, with simply olive oil, salt and lemon dressing. Or sometime with Ezme (similar to meze). Also to complete the whole dish we serve Ayran for the drink.

In Turkey, pita (called pide) has a soft, chewy texture. The pizza-like foods called lahmacun are made with oval-shaped pieces of pide dough topped with finely chopped meat and herbs before baking. Pide also refers to another pizza-like food made of pide dough topped with different ingredients. With distinctive charcoal aroma from traditional stone oven, makes this pide is a "must-try food" when you visit Turkey.

Regional variations in the shape, baking technique, and topped ingredients create distinctive styles for each region. Such pides can include chicken, beef, cheese, potatoes, garlic and many other ingredients. Postingan hari ini it's all about remake... Maksudnya bikin ulang makanan yang biasa kita nikmati di restoran. Karena tulisan ini saya sertakan untuk Indonesian Food Blogger Food Challenge dengan tema "Remake"
Untuk kalian para foodie yang pengen join challenge food bulan Maret ini bisa gabung di link Idfb sini.

Well... membuat makanan homemade bukan lagi hal yang jarang saya lakukan. Sejak tinggal di sebuah kota bernuansa tradisional dimana rata rata masyarakat lokal terbiasa menyajikan produk homemade bagi keluarga. Dan hampir semua yang tersaji di meja makan keluarga Turki adalah hasil olahan sendiri, maksud saya SEMUA! 
Serius. Mulai dari yogurt, keju, pasta tomat, pasta cabe, pickles/ acar, mayonese dan produk olahan lainnya. Kita senang sekali membuatnya di rumah!

Termasuk makanan lokal yang banyak disajikan di rumah makan siap saji atau restoran. Para wanita Turki senang sekali memasaknya dengan versi homemade. Karena setiap selesai menyantap makanan, setiap anggota keluarga akan memberikan ucapan terimakasih berupa "doa" kepada yang memasaknya dengan ucapan: "ellerinize sağlık" yang kurang lebih berarti "semoga tangan(mu) diberi kesehatan" ... Such a lovely thing isn't it? ^,^

Bread rolls/ Roll-ppang 롤빵

Since I live in Turkey, making bread is part of my daily work cause we eat bread in any ways almost everyday. Almost everyday or at least once in 2 days I always serve my family with fresh bread. Nothing can replace warm and fresh bread from oven serve at your family table... as warm as the togetherness it self..

As Turkish people mostly consume chewy (and slightly hard) bread so mostly I made that type of bread. Different type from Asian bread (which mostly I ate few years back) which has soft and spongy texture also mostly slightly more has sweet and milky taste. So of course my daily bread I made are more chewy and slightly hard in texture even once in a while we eat soft and spongy bread but I reduce as much as I can the amount of sugar in it.

In Turkey, the atmosphere welcoming Ramadhan is so warm and makes me feel a bit missing my homeland. Everywhere people say "Hayirli Ramazanlar" to each other as selam. I can feel that everyone rejoice to welcome this grace month......

And there is one bread which only found in Ramadhan month.... it's Ramazan pidesi (Ramadhan pide bread). Every public baker (halk fırını) or market sell this pide only in Ramadhan. It's slightly leavened flatbread with egg glaze and sprinkles with black and white sesame seeds. This pide is slightly more expensive compared to normal daily bread.

Here my recipe for you who want to make it at home. the method is the same as when you make bread, just you flatten it and glaze with egg yolk.... it's so fluffy and yummy to try...

Homemade Pizza with mix topping

It's one late post from my kitchen's note. Actually I made this homemade pizza yesterday, one slightly cloudy, rain and cold early spring day.
This is request from my husband since he likes pizza so much--any kind of pizza. Mostly I made Turkish style pizza calls pide with variant topping (or even filling)... Pide is the most favorite meal here beside Köfte (Turkish style meatball) and become big part of Turkish cuisines. You can check my Pide/ Pizza recipe on "PIZZA" category.

Joining a group/ club could be very fun. It can be cheer up a bit our boring days sometimes (^,^) and sometimes we can find some new friends from those groups and of course a lot of new experiences we get from them. New point of view, new experiences, and who knows..new challenge! (^,^)
For that we must join a group which has same as our interest or hobbies. Just like recently I did-I join a group based on cooking and baking-- as my hobby, named "Your kitchen-My Kitchen" from Facebook page. It's a group to whom enjoying their time in kitchen cooking and baking. For culinary lover across the globe. This group wants to introduce especially Indonesian culinary to the world.
You must do same thing especially if you have a blog page, beside can increase your page's reader (stat), joining one or two or more group had more positive things more than I mentioned above (^,^)

What I like about this group is they regularly gathering an event challenge to their member. And more fun is they provide some gift/ reward for the winner!...yyyaaiiii ! (^,^) ...who doesn't like gift? But for me it's more on that challenge thing--as I always mentioned, I love challenge ^,^ And this time YKMK (Your kitchen-My Kitchen) make an event challenge: BREAD !

Garlic Butter Pizza Bread Stick

Happy Saturday. May you have a great weekend with your family and everybody you love. 

Since having a growing child in our house, I start a little bit busy making "schedule" to provide her snack or food start from breakfast till dinner. I think you are too when you have one like me :)

I never want my kid to eat any store bought snack-- try not too much though. That's why I regularly make something for her. Some food which I can make a head and can be stored in freezer. I think making our own snack (food) is more healthy-- that's my 1st concern about food for my kid. And other reason is maybe more economical in budget :)

Well, talking about snack today I want to share one of our fave one. It's surprisingly become new favorite in our house, not only by my kid, but also for her baba :)
Try it, maybe it'll become most request also in your house :)

You can use any pizza dough recipe you have--or you can browse my other pizza dough recipe in Basic dough label. Or you can use recipe below..it's just incredibly easy and fun for cooking project with your little one too. :) 


Make about 23 sticks

Ingredients:
For Basic Pizza Dough:
  • 1 cup warm milk (or water)
  • 1 tsp instant yeast
  • 1 Tbsp glucose / honey / sugar ( I use honey)
  • 340 gr all purpose flour 
  • 1 tsp table salt
  • 1 Tbsp olive oil other vegetable oil

For topping:
  • 3 cloves of Garlic. finely grated/ chopped
  • 100 gr salted butter, room temperature. (if you use unsalted butter, add pinch of salt, or no need more salt if you have strong salty cheese)
  • 2 tsp sweet paprika powder 
  • 1 Tbsp dried thyme
  • 1 Tbsp dried basil

Kastamonu Etli Ekmeğı

Kastamonu is one city in Turkey where this meal originally came from. It's half round shape bread bake in traditional stone oven filled with meat. At home people also can make them by roasted the bread over wide griddle and basting the bread once it remove from oven/ griddle.
If you are food adventurer, try this traditional Turkish meal in your kitchen and experience Turkish taste with your family...

• 4 cup all-purpose flour (plus if needed)
• 3 tsp instant yeast

"Simitçi Geldiiiiiiii....!! Simitçi Geldiiiiiiii....!!" ... That's the simit seller who always comes every morning in my alley. Yes... he sells that popular Turkish-style bagel only in the morning which he brought fresh from the nearest public oven in my area.

People here love to enjoy them at breakfast or brunch time. You can find Simit sellers mostly in the early morning at streets or any other places in Turkey. And some breakfast cafes provide them while they are hot and fresh from the oven in the morning only. With hot tea accompany it make this "bagel" very popular as a breakfast/ brunch menu in Turkey.
And you can make them at home too for your family, it's easy and economic though.
