No knead Ramazan Pidesi / Turkish Pide bread (flat bread) with step by step pictures| Çitra's Home Diary


Bread or ekmek we call in Turkish language is a staple of all food in Türkey as well very much important in Turkish culture.  Not just bread, we treat our food with respect. Wasting foods (bread) is disrespectful and günah or sin.

Eat and finish what you take.

Bread is always on our dinner table. Serve morning to evening. Dip in a hot creamy soup, eaten with Turkish köfte (meatball) in between or any meal. Or just simply spread it with salça (homemade tomato paste) for hurry brunch.

You can find a dozen types of ekmek/ bread in market or local fırın (bakery) which always serve fresh and hot bread from a traditional big stone oven. And there is one bread that is specially baked on a special occasion, Ramadhan or Ramazanİt's Ramazan pidesi.


There are many classic dishes that are associated with Ramazan in Turkey. But no other item signifies the breaking of the fast better than a loaf of pide (read; pee-deh).
Ramazan pidesi is round and flat in form and has a weave-like patterned crust shape by fingers.
Ramazan pidesi is made of wheat flour with yeast, rub with egg wash, and topped with sesame and black sesame seed.













It is traditionally served for the iftar and sahur meals during the holy month of Ramadan
is a highlight bread in turkey during Ramadhan month.


Bakeries all over Turkey provide this Ramazan pidesi hot and fresh about an hour or two before iftar time. So you will see a long queue in front of fırın/ bakery before iftar time to get this delicious pide hot from the oven during the month of Ramadhan.

For some people eating offal or another part of an animal sounds gross. Or maybe some of you just don't know how to prepare or cook them.

Offal could be delicious as normal meat if we know how to cook it, for example, cow's feet (or legs) or (beef) tongue. You can be hooked once you taste a delicious meal using those animal parts because it is prepared correctly and cook in a clever way. 

Today I am going to share a tip on how to prepare and cook beef tongue. Beef tongue is lean meat that can be very tasty. But when you didn't cook it properly it can be pretty chewy and almost rubbery.

Since it's quite lean as I mentioned above, it'll take some time to cook to have a butter-soft texture which we look for. Some said 30 minutes per pound, some said an hour. 
Personally, I didn't really use a timer or whatsoever, İ just cooked and check my beef (ox) tongue periodically and test it by inserting a big fork in the thickest part of the tongue, when it easily slip off from the fork it's done.

İ enjoy and baking this cake since long time ago but still İ need to explore it more and try get along with it often 😊

Yes.. İ can't denied that İ fall in love in this red velvety color cake, with delicious slightly tangy of cream cheese frosting.
İ baked many RVC before and still want to bake more 😏

Red Velvet Cake With Cream Cheese Frosting


And today İ'll post my favorite Red Velvet Cake again. 
İ baked this seriously moist and delicious Red Velvet cake my my kid's birthday 🎂. And since this cake for her she was the one who decorated the cake with small colorful heart candy  😍 . her fave.

İ didn't decorate much, just thinly cover the cake with my cream cheese frosting, piped some star shape and using cake's crumb to make it more nice 😊

For the cake İ use 2 deep pans with diameter 18cm (about 8") and cut each cake into two. 
İ wrapped my baked cake with plastic film after cool and keep in refrigerator over night before frosting.

It is also has mixture and refinement of Central Asian, Middle Eastern and Balkan cuisines. Therefore it is impossible to fit Turkish cuisine into a short list.

İncluding my post today is one of daily meal which mostly Turkish mothers serve for the family. Köfteli patates is home style meal that served generation to generation. Every kids fan of their mom's version of this food 😍


İt's a potato cook in tomato sauce, adding small meatball to meet the family taste. Some version adding ground beef instead of meatballs. Sprinkle with dried mint leaves this meal is a must to try when you visit Turkiye.

My Homemade Plum sauce / Saus Buah Prem

Plum sauce, is one of staple condiment in Asian cuisine. İt's sweet and sour basic sauce can be used for cooking or dipping sauce such as spring roll, dumpling, fried chicken, roasted duck and more.

Store bought plum sauce mostly has viscous brown to dark brown in color. Unlike when we make it at home, the color tends to light red to dark one.. just like plum's color.
İ have no idea what kind of plum used for making plum sauce at manufacture so they can produce light brown to dark brown color.

Not so hot summer this June. And İ love it. Even İ am tropical person, summer in Turkey could be pretty much dry and boring. İ live in Marmara region and rain comes like every 2 or 3 days, so refreshing.
Just like this weekend, cloudy so heavy cloudy.

What is Kandil night?

No, it's not just regular roll cake with buttercream or jelly filling.. it's roll cake made from spinach.

Yes... this is my kid's friendly roll cake recipe. İ was inspired by my previous Spinach Cake which liked by my picky kid. Also, my spinach chiffon cake has become my family fave.
This spinach roll cake is easy to make also delicious. You barely can taste the spinach in it or smell it. Nobody will know it make with a lot of nutritious vegetables until you tell them 😍



İ am the mother who always struggled to give my kid vegetables. When she saw something green or red or anything not protein in her food..she would get rid of it 😵
That was until these lately..  me and her father slowly convince her about eating her vegetables and fruits. Not all though, but she starts to enjoy some. 
For example, she will eat her çiğ köfte (meatless raw kofta) with lettuce. Or some broccoli but in small pieces form 😊

Actually this is my late post. İ made this cake few weeks ago and posted on my instagram to joined one Giveaway baking group. The theme was Red Velvet cake.

So İ baked this yummy sponge red velvet pair with cream cheese.

What İ am going to share today is my fave one. İ made this recipe since İ enjoy red velvet cake but İ don't like the bitterness taste that mostly İ found in RV cake recipe.
İt's sponge cake base cake still, with separated egg yolk method. No Baking soda added.

For me cooking is about my taste.. my personal flavor. İ add or didn't add anything that did not meet my palate. 😋

İ made mini version of naked red velvet cake. İt's simple yet beautiful enough to enjoy with your mate. 
İ simply baked my cake in wide baking tray (40x30x4 cm) then using ring cutter (diameter 12 cm) to cut my sheet cake.
You can also use 4 (four) mini springform diameter 12 cm.

İt's like a decade İ didn't post any bread recipe. Well... actually making homemade bread is part of my (almost) daily cooking as bread is staple in our house. İ bake mostly home style crusty bread for our daily meals.

As Asian İ prefer soft bread or soft buns with very light sweetness and soft crust. İn Indonesian we eat soft buns as breakfast (not everyday though) or accompany our tea/ coffee time. We call our buns "roti manis" means sweet buns.
Indonesia love their "roti manis" with shredded cheddar cheese. The combination of creamy cheese with sweet condensed milk are the most fave among us.


Talking about sweet buns, today İ am going to share one soft and sweet buns calls Buchta. İ found this bread similar to mostly Asian fave so İ eagerly give it a try. 
And İ've been reading a long the web about this yummy bun. Buchta, some call buchta or buchteln or Wuchteln in other place. 
Mostly mention it's Balkan countries origin (Bohemia-Czech). Spread around the neighboring countries like Austria, Hungary, Ukraine and further.

Buchty it's pull-apart style of soft yeast buns. Use many eggs to enrich the buns.  Traditional Buchteln is filled with plum Powidl jam. Buchteln are topped with vanilla sauce, powdered sugar or eaten plain and warm. But sometime it can be served with jam or sweet ground poppy seed.

There is İzmir köftesi origin from İzmir city (see recipe here), or when you visit Bursa you should try Pideli Köfte, it's a small flat meatball served over pide flatbread flush with yummy tomato sauce then "fizz" with hot melted butter. You can check how to make it home here. There is another köfte from İnegöl town named İnegöl Köfte.
Each köfte (meatball) has its own type.

And today İ'd like to share my family's favorite; Köfte Kebabı or Kofta (meatball) kebab. At a glance, it may look alike Adana Kebab, but it's totally different.
This is just simply meatball wrap over 2 cm wide bamboo skewer then grill or roast in oven/grilling. The spice used for this köfte is more simple than Adana Kebab, but believe me, it is still packed with the flavor of Turkish cuisine.

Indonesia has many....probably hundreds of variants of snacks. Start from traditional snacks e.g many kind of kueh basah (literally means wet/moist snacks), fried snacks (in Indonesian call gorengan) and other type of jajanan (snacks) mostly known as street food/ snack; for example batagor, siomay, kerak telur and more. 
Kueh basah are more often steamed than baked and usually has a sweet taste, but some are also savory. But not all of them use steamed method, named kue basah mostly because they are moist. 

Check category Indonesian Snack (jajan pasar/ kue) for more Indonesian Kueh or snack.

Just like what İ want to share today. İt's including in kue basah- calls Serabi Kinca. İt's a pancake-like, served with sweet coconut milk sauce. Traditionally the pancake is cooked on a clay concave wok and heat over a traditional clay stove with charcoal called an anglo stove.

Unfortunately, mine was broken during my flight from İndonesia to Turkey few years ago. So İ made this favorite kue basah using small teflon pan diameter ±13cm. İf you have iron cast pan it will work as well.

Indonesian cuisine often demonstrates complex flavor, acquired from certain ingredients and bumbu spices mixture. Indonesian dishes have rich flavors; most often described as gurih (savory which equate to umami) and pedas (hot and spicy), and also combination of basic tastes such as manis (sweet), asin (salty), asam (sour) and pahit (bitter).
