Membuat susu kental manis sendiri II / Homemade condensed milk II

Making your own condensed milk as not as complicated or difficult as your think. What I am going to share today is simple homemade condensed milk. You just need a pan, full fat milk and sugar, also some time to spend in front of your stove.

This is actually my second recipe of condensed milk. I have another version homemade condensed milk using powdered milk that you can check here.

Nothing fancy ingredients for making this homemade condensed milk, nor complicated method. Just put milk and sugar into a pan-I prefer heavy bottomed and wide pan- and continuously stirring over medium high heat until you get thicker and slightly yellowish yield. Then you may add vanilla essence to give aroma and butter to give more thickened liquid and rich condensed milk.

Adding butter is optional. I made my condensed milk using this recipe many times now. Some batches I added butter while some other batches I didn't use one. Both result are completely fine, but I prefer didn't add butter if I'm going to use my condensed milk for mixing on my drink for example.

Körili Tavuk ya da hindi / Easy chicken (or turkey) curry

If you ask me what one specific food which has many variation... my answer would be curry! Yep... you can find more than 500 kind variation of curry base on ingredients used until where it come from.
As Indonesian of course I like Asian curry- Indonesian, Malaysian, Vietnamese and Thailand curry are my fave!

The definition of curry it self; is name of various braised dishes cooked with some spices to have sharp ad spicy taste. It believed came from South Asia mainly from India which have been spread to all countries in Asia Pacific and Europe

Curry popularity has spread from the Indian subcontinent into the treasury of world cuisine. Every country has different types of curries a distinctive tailored to the tastes of people in the country. Kari has become the world's food, and adopted into Thai cuisine, English cuisine and other country's cuisine

And what I am about to share today is Turkish style curry or in local language they call it Körili TavukKörili literally means with curry (spice) and Tavuk means chicken. Even the popularity is less compare local cuisine, still Körili Tavuk has become cuisine alternative among them.

Usually local people here use double or single pour cream to mix in to their curry, but I use canned coconut milk as I cook my Indonesian curry.

Semprit susu / Condensed Milk Spritz Cookies (eggless)

If you are my regular reader of this blog you might notice that these couple weeks I post many cookies recipe. Yep... I made many cookies few days before Eid al Fitr as Indonesian and some other countries' tradition to celebrate Eid Mubarek.

Different from Turkish tradition that serve baklava and share a lot of candy to kids, in my homeland we welcome our guest with jars of various cookies. Check my Cookies category list to see other traditional and classic cookies I had made.

And what I am about to share today is semprit susu or milk spritz cookies made of condensed milk with cornstarch. I found the recipe from one cooking group in facebook. It become new fave and popular among Indonesian baker since it has melt in mouth texture as Indonesian prefer.

Making this cookies is super-easy. You just cream the butter with condensed milk. No electronic mixer require, if you beat the butter until pale and fluffy you might end up with flat cookie. Add in the cornstarch and just use wooden spoon or spatula to combine well. Add the essence as your prefer to give aroma to the cookies. Bake the cookies at low temperature.

Bubur Biji Salak Labu kuning / Indonesian pumpkin tapioca ball sweet porridge

Bubur biji salak literally means snake fruit's stone/seed porridge. 
It's one of the traditional Indonesian food made of tapioca starch mix with ketela/ ubi jalar (same to sweet potatoes). The mixture dough is then shaped like "salak" fruit's stone (slightly oval shape) and cook into boiling water until floating. The balls then cook in thick palm/ coconut sugar sauce, thicken by adding some tapioca/ cornstarch. Served with a tasty slightly savory thick coconut milk. So this dish doesn't use any salak fruit at all in it.

It looks like Bubur candil indeed, but the difference is bubur candil is made of glutinous rice flour. Check this link for making bubur candil.



Although it tastes sweet, this porridge is not categorized as a dessert. I usually like to eat this sweet porridge in the morning for breakfast only as a substitute for rice.

Traditionally biji salak made of ubi jalar/ sweet potatoes puree, but people now days vary it with other tubers like potatoes or pumpkin. And today I am going to share my Biji salak made of pumpkin. I use homemade pumpkin puree, but you can use the canned one.
Before use your pumpkin puree make sure you reduce the water content by cook it first until you get thick consistency.

Kari (kare) Udang terong / Shrimp and eggplant curry- my mom's style

I crave for curry for this couple weeks. I made chicken or fish curry mostly. Actually I miss my mom's crab curry with eggplant and long beans in it.
But what to do... sadly I couldn't find any big crab here in town I'm living. The last time I ate crab was 3 years ago when I was in my homeland.

After I checked up my freezer, I found a kilo of shrimps-I almost forgot I have a shrimp from last 2 months ago.
So I should cook them soon. And since I miss to eat my mom's crab curry, so I wanna try to substitute crab with shrimps for my mom's curry.

Immediately I whatsapp my sister asking mom's crab curry recipe--glad living in fast technology era--I got answer instantly for the recipe...But as usual (or like mostly 'homy chef'), mom's answer only the ingredients...not specify how much for each ingredients.
She said: "dikira-kira saja" means approximately/ as your prefer taste.

Well.... if you are asking any moms out there about their recipe they cook almost everyday for the family... probably you'll get same asnwer as mine (^,^)
All you should do is just remembering actual taste of the meal your mom cooked for you.

Yep..so here I am making my mom's version of crab curry using shrimps with ingredients "clue" from my mom with flavor/ taste I should adjust to make it same as my mom's.
And the result..... taaddaaa.... yes! I can feel like home when I eat it. So I can say It's my mom's curry indeed...
I wish my mom could taste it s well....... ☺

If you want veggie version of this curry, you can! Sometimes I made just with long bean or green bean and eggplant only. Add some fried tofu puff before serving and you'll get best veggie curry ever. But please don't skip the eggplant. 
Do you know that eggplant has ssooo many benefit and full of nutrient? Yep.. most of us should knew that all vegetables have many benefit and nutrition.

When latest week of Ramadhan like now days.... and when eid-el Fitr getting near...most muslim family in Indonesia would be very much busy to prepare  things for welcoming biggest Muslim religion festivals.

If you live in Indonesia, the vibrancy and spirit of Eid-el Fitr sorely can be felt from malls, supermarket, offices, terminals until kitchen at the last week of Ramadhan like now days.
Malls gets very much crowded triple like normal days. Kids are the happiest one cause they will have plenty of new clothes for Eid-el Fitr * I'm missing my childhood.
Hectic also increase at many terminals since people start flooded the terminal for travelling to their home town.

And since many family member mostly already home for spending last week of Ramadhan, the most busy person at home of course, MOMS! (^,^)



And part of the kitchen hectic in Indonesian families is making cookies. A lot of them. We make any kind of traditional cookies like Kaastengel, Nastar (pineapple tart), semprit butter cookies, and many others. Also this Putri Salju cookies. 
These cookies are like "must cookies" on our living room table during eid-el Fitr.

Bubur candil adalah salah satu makanan tradisional Indonesia yang terbuat dari tepung ketan. Diolah secara sederhana dengan menambahkan air hangat lalu dibentuk bulat menyerupai kelereng dan dimasak dalam saus gula merah yang legit. Disajikan dengan santan kental yang gurih.

Walau rasanya manis dan legit, bubur candil ini tidak dikategorikan dessert atau pencuci mulut karena sifatnya yang mengenyangkan. Saya biasanya suka makan bubur ini di pagi hari sebagai sarapan ringan saja sebagai pengganti nasi. 


Di bulan puasa bubur candil (juga beberapa jenis bubur manis lainnya) sering dasajikan sebagai takjil* atau makanan pembuka di kala iftar/ buka puasa.

(*) Ta'jil berasal dari bahasa Arab yang bermakna menyegerakan berbuka (puasa), jadi tidak ada hubungannya dengan makanan. Tapi di Indonesia istilah ta'jil menjadi umum digunakan sebagai ungkapan makanan pembuka iftar/ buka puasa yang biasanya manis. Nabi Muhammad s.a.w telah memberi tauladan memakan buah kurma sebagai awal iftar.

Ramadhan tahun ini saya lagi pengen makan segala macem bubur manis khas Indonesia. Beberapa hari lalu saya bikin bubur ketan hitam yang sudah menjadi favorit mulai kecil, resepnya bisa dilihat di link ini.

Kali ini saya postingkan bubur candil yang penuh kenangan masa kecil juga. Biasanya saya beli bubur manis dan gurih dari penjual bubur khas Madura. Macem bubur Madura itu banyak banget, ada bubur sumsum, bubur ketan hitam, bubur srontol, mutiara dan bubur candil ini juga salah satunya.

Bubur Ketam Hitam / Indonesian Black glutinous rice porridge in coconut sauce

We are welcoming Ramadhan this early June. It is so much full of joy and blessing that we still can meet Ramadhan again this year, Alhamdulillah (^,^)

If you were living in Indonesia, you will feel how Ramadhan atmosphere affects in almost any routine activities. Usually students have shorter time at school. Some offices (not all though) also change their working hour earlier so they can finish their work earlier as well so they can have iftar with family at home.

When it comes to the fasting month of Ramadhan, most of Indonesians can get more excited, I am talking about their appetite of food. The Moms at home prepare many meals more than they usually serve daily. We try to complete our iftar table start from ta'jil*, entree until dessert and even snacks. Things that we hardly ever do daily. (^,^)

*Ta'jil (read; taqjeel) is from Arabic language means to hasten the fast break. But lately now days often defined as food for breaking the fast. In Islam it is recommended before having meal to eat snack first, preferably something sweet like dates as exemplified by the prophet Muhammad SAW



When we are talking about ta'jil, today I am going to share "bubur ketan hitam" literally mean black glutinous porridge. In Indonesia, especially in Java island it’s known as Bubur Ketan Hitam. In places with thick Malay influences (such as Sumatra and small islands around it) this is called Bubur Pulut Hitam. Meanwhile in Bali island people calls it Bubur Injin

Just like making other porridge, black glutinous rice cooked in a lot of water (some people cook in thin coconut milk) until it tender and gets porridge consistency. Adding gula jawa / coconut palm sugar as sweetened  then serve with thick light savory coconut milk.

If you are a peanut butter lover, you should love these cookies. It's my new fave! The texture is so perfect, it will melt in your mouth with a light sweetness. I use crunchy peanut butter with tiny chunks in it, so it even gives me an additional crunchy texture in every bite. 
If you can't find crunchy peanut butter you still can make this with smooth peanut butter.

And do you believe that I made these yummy cookies from leftover egg white which stays in my fridge for a while. Well... I'm kinda not in the mood making macarons lately, so I decide to use my leftover egg white for baking some cookies. After all, Eid-al Fitr will come in a couple of weeks and Eid-al Fitr is always celebrating with jars and jars of cookies in my house (^,^)

I was so exciting dengan tema Idfb bulan ini sebab daily I cook Turkish food! Makanan dan kebudayaan Turki sangat kental dengan pengaruh Timur Tengah, terutama di daerah South east. Karena wilayah geografi Turki yang berbatasan dengan beberapa wilayah bekas Uni Soviyet (north east), Timur tengah (south east) dan Eropah (bagian barat), menjadikan Turki sebagai negara yang unik baik dari segi kebudayaan dan cuisine nya. Banyak sekali hal yang bisa digali dan diketahui dari negara asal suami saya ini.

Awalnya saya ingin menampilkan cuisine dari negara tetangga middle east yang lain yang juga sangat mendunia kelezatannya. I like Moroccan Lamb yang dimasak dalam tagine. Atau Chicken Mandi dari negara Yaman yang sudah saya bikin sebelumnya. Atau saya ingin sertakan Palestenian Musakhan, bahkan famous Hawawshi dari Mesir...ppffff.... 
Semua masakan middle east are rich! seperti kaya-nya masakan Nusantara kita. We should digging deeper to their history... so you'll find keanekaragaman makanan mereka.

Siapa yang nggak kenal Baklava? Kenalan dulu yuk buat yang belum pernah dengar ..... hehehe...😄  Sebab baklava ini termasuk dalam top famous dessert around the world lho. Baca link nya disini, disini dan disini juga. Jadi hampir semua orang sudah familiar, pernah mencicipi atau ingin mencicipi baklava ini. 
Oleh karena 'pesona' baklava yang sudah terkenal selevel Angelia Jolie.. (hahahaha...apa'an sih?!) maka saya pengen tampilkan baklava ini di even Idfb kali ini.

This is actually very late post. I made this potato doughnuts last weekend, but since the pictures and recipe slipped somewhere in my computer, I just found it today and want to share it with you right away.

This potato doughnut is pretty familiar among Indonesian food bloggers. We use almost same source of recipe and method and we are all very much happy with the result. The doughnut it self keep fluffy and yummy even 2nd or sometimes 3rd days when you keep tightly in airtight container in fridge.

But I think no yummy yet fluffy doughnut can survive up to 2nd or 3rd day, right? The recipe I adapted totally from Ibu Fatmah Bahalwan (Natural Cooking Club owner).

You can just simply enjoy the doughnuts with icing sugar or any topping you like. Even you can flatten the dough and make your filling doughnut. So here the recipe.

Ikan Bakar Bali sambal matah / Balinese grilled fish with sambal matah

Indonesian cuisine often demonstrates complex flavour,acquired from certain ingredients and bumbu spices mixture. Indonesian dishes have rich flavours; most often described as gurih (savory which equate to umami) and pedas (hot and spicy), and also combination of basic tastes such as manis (sweet), asin (salty), asam (sour) and pahit (bitter). Seven main Indonesian cooking methods are goreng (frying), bakar (roasting) or panggang (grilling), tumis (sautéing), sangrai (roasted), rebus (boiling) and kukus (steaming).

My post today is about indulge my craving of Indonesian food. It has been a while I didn't spoil my self with this best fave of mine ; Balinese grilled fish / Ikan Bakar khas Bali with sambal matah.

This grilled fish is commonly found when you were visit Bali. I think most of you already know where Bali island is. Sambal matah is Balinese style raw sambal. With sharp lemongrass and kaffir leaves flavor distinguish this sambal from other sambal types we have. And this sambal matah always serve with that full tropical flavors of Balinese grilled fish. Enjoy them with warm steamed rice, some raw vegetables salad, you'll get best Balinese grilled fish on the planet 😃




You can prepare the fish marinate 1st a night before if you plan having bbq/ grill time the next day. The fish should marinate in bumbu /spice at least 2 hours before the get best flavor mingle in fish meat. 
For fish I use local çipura/ çupra balık (gilt-head bream). You can sea bream or sea bass or snapper or yellow tail fish.

The best way to grill this fish is over charcoal-like my mom always does. Take your grilling stove outside and invite your neighbours with this fabulous fragrant of this Balinese grilled fish ^,^

Lokma /Turkish donuts in simple syrup

What I am going to share with you today is Lokma.

Lokma is a traditional Turkish dessert made of flour, sugar, yeast and salt bathed with syrup or honey. Lokma was first cooked by the sultan's cooks at Ottoman Empire palaces, and for centuries, it was unknown how it was made. After the 20th century, it became a tradition for Turks to cook and serve lokmas to neighbours.

This lokma is also can be found around neighbouring countries like in Greek called loukoumades. Or Zeppola of Italy and in Iran or Iraq, called luqmat al-qadi from Arabic language  لقمة القاضي


These luscious bites — the word lokma means “a bite” or “a morsel” — are the doughnuts of the Orient, crispy on the outside, with a melt-in-your-mouth texture on the inside. Served hot as they emerge bubbling from the pot, sprinkled with a dusting of pure cinnamon, they are also found in markets, more commonly in Izmir, the third largest city of the nation.

Kıymalı means (with) meat in Turkish language. Biber means pepper and Dolması/ dolma means stuffed. So Kıymalı Biber Dolması literally means stuffed pepper with meat.


Dolma, Turkish term for stuffed vegetable dishes common in the Middle East and in Mediterranean countries including the Balkans, the Caucasus, Russia and Central Asia.

Common vegetables to stuff include tomato,pepper, onion, zucchini, eggplant, and garlic. The stuffing may or may not include meat. Meat dolmas are generally served warm, often with tahini, egg-lemon or garlic yogurt sauce; meatless ones are generally served cold.

Strawberry Cobbler with Oatmeal streusel

Just before strawberry out of season soon and they will be more and more expensive, yesterday I bought another kilo of fresh strawberry. Yes, I love and enjoy eating them fresh or make it for delightful dessert. 

Strawberry with crunchy flaky pie is my number one favorite. But of course together with Panna cotta would be a fancy and special dessert for your romantic dinner.

And today I made this delish strawberry cobbler. What's special about my cobbler this time is I add some yummy crumbly oatmeal streusel on top of it. So you can imagine the crunchiness topping twisted with delicious sweet slightly sour strawberry filling inside.

My family like it, especially that topping. So I am thinking to make other cobbler with other filling later. Cherries maybe?

Today I am going to share one delicious middle eastern dish calls, Chicken Mandi. It's one of popular traditional dishes from Yemen.

Mandi is now popular among other Arab countries as well. Traditionally, the meat is slow-cooked in a tandoor (underground oven) which makes the meat extremely tender and delicious and served over aromatic rice.

The spice rub used to marinate the meat (lamb or chicken) is called Hawaij– coriander seeds, cumin seeds, cardamom, cloves, cinnamon, whole black peppercorns are roasted till aromatic and made into a powder. See also how to make hawaij spices mixture in my previous post.


This is a very mild dish, not spicy at all. The rice was extremely aromatic and tasted very flavorful. Enjoy this Mandi in its authentic way! 
My husband loves it and me as Asian also enjoy it very much. And since it's not hot spice at all, my kid eat her portion happily.

Yemeni Spice Hawaij

Did you hear about Hawaij spice before? Hawaij (spelled hawayej) is a Yemeni spices mixtures. There are two type of hawaij, both derived from the Yemenite kitchen: one is meant for soup, the other for black coffee. Spice mixture for soup are also used in stews, rice, vegetarian dishes and as barbecue spices rubbed into the meat. Basically this kind of Hawaij consists of cumin, black pepper, turmeric and cardamom. More intricate versions may also contain cloves, nutmeg, saffron, coriander and dried onions.

The mixture for coffee is made from anise seeds, fennel seeds, ginger and cardamom. Although it is primarily used in brewing coffee, it is also used in desserts, cakes and slow-cooked meat dishes. In Aden, the mixture is made with ginger, cardamom, cloves, and cinnamon for black coffee, and when used for tea excludes the ginger

This spice came to Israel along with immigrants from Yemen, and it is widespread among yemenites in Israel. 

Basically hawaij made by roasting – coriander seeds, cumin seeds, cardamom, cloves, cinnamon, whole black peppercorns  until aromatic and made into a powder. Very few and very basic spices are used for making the dish.

Rose Macarons with rose jam butter cream filling

As spring blooms in every corner of my town, these eye catching rose macarons beautifully bloom with perfect feet in my oven. My overwhelming happy heart because I can add more collection for my macarons flavor. And proudly I can pass another macarons baking without fail.

This is true story... once you succeed baking nice, perfect and yummy macarons. I'll tell you, YOU CAN NOT STOP! ^,^
And you better start to find some new friend to enjoy them together. Or... maybe you start thinking to make money by selling them among friends and relatives.. why not? 


Macarons is very expensive here. Once I tried to buy from local patisserie at one mall, I must paid 25 TL (Turkish lira) for 4 small macarons! Just convert it to your own money.
And for me nothing so special about that macarons I bought but they came with nice pastel color which I like, that's all.

And it was too sweet for me. 


Long long time ago when I was visiting my sister who lived in Kajang, Malaysia at that time, I remember I ate macarons at Kuala Lumpur, in one cafe  inside petronas tower. . . I remember I ate chocolate macarons with chocolate filling. The tart was perfect and the sweet was just balanced with the bitterness of the chocolate. And that was I think best chocolate macarons I ate until.. I can bake it by my self.. lol.

Should I fly to Paris to taste better macarons? 😍 ^,^

Well.... just go to your local market to grab some almond meal. Then go to your kitchen to start baking them by your self. You will get cheap yet yummy macarons without flying to France.

Strawberry yogurt cupcake with strawberry buttercream

What I like about yogurt cake is very simple and quick to make. Like this fresh strawberry yogurt cupcake I made today. The cake was so fresh with fresh strawberry chunk inside yet fluffy and moist cake.

Every evening after dinner we-like other Turkish family- always have our Turkish tea time. For me drinking tea without any snack along with it, is just not like my style, so these strawberry cupcake are perfect for our tea time cake in front of TV.

Also if you are coffee lover, you should make them also. Cause these delish cupcake it's just perfect for afternoon coffee. Enjoy it with your favorite coffee, on your very comfortable couch with unfinished fave book. ^,^
Strawberry yogurt cupcake with strawberry buttercream
For the complete beautiful touch I made fresh strawberry butter cream icing for garnish and enrich this tasteful strawberry yogurt cupcake.
Look at them with that high cone ice cream-look alike..aren't they just adorable? Almost too cute to eat.... ALMOST. 😍

But if you want to skip the butter cream it's okay, replace it with some strawberry or lemon icing glaze. They are still tasty as should be.

Ikan means Fish in Indonesian. Saus Lada hitam means black pepper sauce. The humble of lightly crushed black peppercorn mix with oyster sauce and ginger-garlic spices is a fusion of Indonesian flavor with Chinese influence. The sauce mixture in this dish make it so special and really gets along with fish or any seafood you cook with this sauce. Eg, crab, calamari, lobster, or prawn.

This dish is one popular as street food along with other kinds. If you were live in big city like surabaya, jakarta and some other cities, you might find some Chinese food street vendors along the main street open their "kitchen" after the afternoon. And also you can find at some Indo-Chinese restaurants which open mostly almost 24 hours.

But even it's popular as street food, still some moms-like my mom- sometimes cooked it for us at home. Usually, she uses crab for this black pepper sauce. Yes, this black pepper sauce is just perfect for crab.

And since I couldn't find any crab until now in Bursa I want to fulfill my craving on some my homeland food like this crunchy fish cooked in black pepper sauce. Making it is actually very simple and quick for prepare-as many types of Indo-Chinese food.

İzmir Köfte / Turkish Izmir Kofte (meatballs)

Köfte is a meatball made of ground meat, lamb, or beef. However, it can be made without any meat, like patates köftesi ( from potato) or mercimek köftesi (lentil).

The word köfte is sometimes preceded by the name of a town, which refers to the technique for cooking it or the ingredients or spices specifically used in that region, for example; İnegöl köftesi, İzmir köfte , Akçaabat köfte, pideli köfte (Bursa), Filibe köfte, Tire köfte, Islama köfte (mainly in Sakarya province) etc. 

It's main ingredients are minced meat, parsley, bread-egg (not necessarily, usually homemade köfte contains egg yolk and some crumbled bread) and a range of spices: cumin, oregano, mint powder, red or black pepper powder with onion or garlic. 

Kadınbudu köfte is another traditional specialty; minced meat is mixed with cooked rice and fried. 
Içli köfte can be described as a shell of "bulgur" filled with onion, minced meat and nuts. 
Çiğ köfte is a meze from south-eastern Turkey meaning raw meatballs, prepared with "bulgur" and raw minced meat. 
Terbiyeli Sulu Köfte is another meatball speciality cooked with flour, tomato paste and water in which lemon and egg sauce is added.

And today I made İzmir köfte or famed köfte from Izmir. İzmir is a metropolitan city in the western extremity of Anatolia and the third most populous city in Turkey, after Istanbul and Ankara. It is one of the most westernized cities in Turkey.
