Today's post might be a bit longer than usual. Cause I will tell you a little more about Indonesian cuisines- my beloved country 💓

Last Friday I was lucky enough to be a guest cook for Beyond Kitchen by young chef and gastronomy - Mohammad Alard. We cooked and served some Indonesian menus for our expat fellows in Istanbul.

Beside cooking, I also presented and tell to the guests about the dishes they enjoyed that night. And I am going to share to you as well 😊




Well, where can I begin?
Indonesian has the most unique cuisine in the world due to the combination of cultural diversity and its geography.
Most Indonesian food is prepared with contrasting flavors, such as a spicy-sweet or hot sauce served over a bed of plain white rice, a popular meal throughout the country.

We serve simple foods in general, but using plenty of herbs, various roots, spices, leaves and grasses adds zest to most of our meals. Some of you may think that Indonesian foods are spicy and hot because we use chili pepper on mostly every dish. But it's not really true. In fact, the most widely used spices are cumin (caraway), coriander, and ginger. All relatively mild spices and give such a mild aromatic dishes.

Some other countries have bread as a staple food. In Indonesia, rice is the most important staple food. We eat it for breakfast until dinner. İt normally accompanies every meal too. For daily consume we eat steamed white rice. Even you may find some other type of rice such as white Glutinous rice and black glutinous rice. But those glutinous rice usually being used for our snack (jajan) , cakes or on sweet treats. check Indonesian food category  and Indonesian snack (kue) for more.

But rice is not the only staple for All Indonesian. In eastern Indonesia, like Maluku, we can find sago as their staple food. And some other regions people eat cassava and corn as main staple. 

The most common method for preparing food is frying, sautéing, and steaming. Although of course grilling, simmering, roasting, and even baking are also popular. 

Besides famous with a variety of spices and herb, using coconut is commonly find in mostly Indonesian foods. We use coconut start from its flesh, its water, coconut milk, until its leaves. Coconut used in main dishes, side dish until sweet treat.

I am pretty sure that you’ve heard of Indonesia or maybe some of you think that Bali is somewhere near Indonesia and thought that it is a country of its own. Maybe it was all because the diversity of Indonesian culture that made us (or some of us) think that way. 
Well, for you who didn't know yet, Bali is one of Indonesian islands among more than 17.000 others.

There are so many ways to explore Indonesia and if you have little time to actually travel to the beautiful Indonesia, you can do it by tasting our FOOD! 😊

Indonesian cuisine often demonstrates complex flavor, acquired from certain ingredients and bumbu spices mixture. Indonesian dishes have rich flavors; most often described as gurih (savory which equate to umami) and pedas (hot and spicy), and also a combination of basic tastes such as manis (sweet), asin (salty), asam (sour) and pahit (bitter). 


Seven main Indonesian cooking methods are goreng (frying), bakar (roasting) or panggang (grilling), tumis (sautéing), sangrai (roasted), rebus (boiling) and kukus (steaming).
Talking about how rich İndonesian food is... today İ'll share you one of İndonesian favorite; Sate Lilit Bali. It's one of famous food from Bali island, beside Balinese grilled fish ( ikan bakar) or urap sayur and ayam pelalah (spicy shredded chicken).


The various spices used to make this meal so rich and umami. The herbs and fresh vegetables added also enrich and distinguish this dish from other places in Indonesia.

Köfte (or kofta) is a family of meatball or meatloaf dishes found in the Indian subcontinent, South Caucasian, Middle Eastern, Balkan, and Central Asian cuisines. In the simplest form, koftas consist of balls of minced or ground meat—usually beef, chicken or lamb—mixed with spices and/or onions.

In Turkey, köfte is one of traditional staple. There are hundreds of different varieties and vary greatly in size and shape. 
Some are long and thin- we call it parmak köfte, typical to İnegöl Köfte. 
Others are balls, and others are patty shaped typical to kasap köfte or Pideli köfte.

Or when you visit Bursa you should try Pideli Köfte, it's a small flat patty shape meatball served over pide flat bread flush with yummy tomato sauce then "fizz" with hot melted butter. You can check how to make it home here
There is another köfte from İnegöl town named İnegöl Köfte. Each köfte (meatball) has own typical.


Köfte variant also can be determined  base on meat used. It can be made from beef, lamb, or a combination of the two. Sometimes chicken or turkey (in Turkish language we call it "hindi tavuk" 😊)

Pasta in Turkey, we call it "makarna" is like second staple beside bread. Together with bulgur wheat , couscous and rice, pasta also favorite food especially in big cities. 
The most favorite pasta type is spaghetti. 

Most pasta consumption in Turkey is in Marmara Region, Aegean second, took third place is Central Anatolia. This was followed by the Mediterranean, Black Sea, Southeast and Eastern Anatolia Regions. It was seen that pasta consumption was lower in the regions where local dishes and traditional tastes were in the foreground.

And the most popular sauce to cook with spaghetti is simple tomato sauce.

Tongue is a very well-used muscle and it needs to be cooked for a long time over low heat to become tender, and it can be very tasty.

I cooked beef tongue so many times, at least twice or three times in a month. My family enjoy it as well, especially this oven roasted beef tongue. The spices so simple and once you have precooked tongue in your fridge, you are ready to go with any recipes using this delicious beef tongue.

İt's moist, full with many dried fruits, and do not skip the spices aroma which definitely reminds you of the real holiday in a place called HOME 🏡💟

A fruitcake should be rich, it should taste like dried fruit and spices. My fruitcake uses raisins, canned cherries, diced dried apricots, dates, and some orange juice with dark brown sugar and some spice. Pinch of salt in this recipe could bring up every sweet and sour from the fruits and compact the cake to perfection every bites. It should be dense and moist crumb.

Another homemade noodle! ... yaayy....
After my last spinach homemade noodle, I and my little girl can not stop to make another experience with homemade noodles.
İf you are my regular reader you might remember my very old post of making this egg noodle here and here
At that time I didn't use a pasta machine to make these egg noodles. 

But today's egg noodle is slightly different in ingredients. Instead of using a whole egg, today I use only egg white. If you can find duck egg that's even better, unfortunately, I hardly can find duck eggs in my local market. I heard duck egg can add a springy and chewy texture to noodles.

But it's okay also if you just use chicken egg, follow my step here and you will get the right texture you want. The key here is not to make your dough too wet. Just enough wet ingredients to pull all flour together- incorporate any clumps of dry flour, that's all. You don't have to knead the dough too much cause it will be very hard to knead.

The kneading process is actually on the rolling process. So we must roll it again and again until the strong gluten develops and gives the chewy texture.



What is noodle? noodle made from an unleavened dough of a strong wheat flour mixed with water or eggs and formed into sheets or various shapes, then cooked by boiling or baking. In Asia there are many kind of noodle-based on ingredients, there is an egg noodles, rice noodle, or glass noodle made from starch (such as mung bean starch, yam, potato starch, or cassava starch), and water.
